천연감미료(天然甘味料) Stevia 첨가(添加) 두중차(杜仲茶)가 Alloxan 당뇨가토(糖尿家兎)의 혈당(血糖) 및 혈청성분(血淸成分)에 미치는 영향(影響) (Effects of the Du-Chung Tea Added Raw Sweetening Stevia Leaves on the Blood Sugar Level and Blood Constituents of Alloxan-Diabetic Rabbits)

  • The purpose of this paper is to find out whether Du-chung tea and Du-chung tea added with Stevia leaves are suitable for everyday use of diabetics. For this purpose, states of diabetic rabbit, induced by giving alloxan to normal rabbit, were examined in two cases. One was to administer Du-chung tea sweetened by sugar to the above same animal and the other to apply Du-chung tea sweetened by Stevia leaves, instead of sugar, under the equal condition. A study was carried out to determine the effects on blood sugar level, contents of BUN (blood urea nitrogen) and total cholesterol, and GPT (glutamic pyruvate transaminase) activity in both groups. The following results were obtained. 1) Sweetness of Du-chung tea added with 0.3-0.5% Stevia leaves was never to the standard sweetness. 2) Sweetness of Du-chung tea with 2% sugar plus 0.2% Stevia leaves was the nearest to the standard sweetness. 3) Du-chung tea with 0.5% Stevia leaves was recognized as the most effective the next was Du-chung tea no sweetening, and the worst was Du-chung tea with sugar. Addition of 0.2% Stevia leaves without lessening sugar concentration of the above Du-chung tea showed the same result as Du-chung tea with sugar. 4) Du-chung tea with Stevia leaves and Du-chung tea without sweetening had the tendency of reducing the total cholesterol content in serum, while only Du-chung tea with Stevia leaves presented remarked difference after 4, 6 and 10 days, when they were compared with control group. 5) Degree of CPT, activity had in general the similar tendency- to that of total cholesterol content. 6) Taken Du-chung tea with Stevia leaves and Du-chung tea without sweetening, the BUN content showed reducing tendency in small quanity, but, having little defference from control group.

한국차도(韓國茶道)의 구조적(構造的) 특성(特性) (A Study on the Structural Characteristics of Teaism of Korea)

  • In order to Characterizing the tea-culture of Korea, historical records for tea-culture of Korea, Japan and China were reviewed. The results were summarized as follows. 1. As for the type of tea through the history of Korea, it could be characterized as Cake-tea(餠茶) in Sam Kook dynasty, Iump-tea(硏膏茶) in Koryo dynasty and leaf tea(葉茶) in Chosun dynasty. Those were affected by Chinese and Japanese tea-culture. 2. Fashiono of tea-culture in Korea were unigue, imitative and reconstitutive. 3. It was concluded that the tea-culture in Korea might be established by the 'cult of tree' (樹木崇拜信仰) of Hwa Rang in Shilla dynasty.

LABOUR REDUCTION OF TEA PLUCKING OPERATION WITH PORTABLE TYPE MACHINE

  • With the purpose of labour reduction in tea plucking operation with portable type machine, the influence of frame angles and tea leaves weight on the grasping forces of each finger were investigated. At the measurement of the grasping force of each finger except for thumb, grip strength dynamometers were attached at the grasping position of the frame instead of handle grips. A series of measurement was carried out changing frame angles of the tea plucking machine and the weight of tea leaves. With the obtained results of the experiments , the influences of the frame angles and the weight of the tea leaves on the grasping forces of each finger were analyzed. Some reasonable suggestions for the labour reduction in the tea plucking operation with portable type machine were obtained in the aspect of normalizing the balance of the grasping force on each finger and these suggestions are expected to contribute the labour reduction of the tea plucking operation.

『동의보감(東醫寶鑑)』 에 나타난 다(茶)의 의학적(醫學的) 운용(運用) (The medical use of tea shown in DongUiBoGam)

  • In this paper, the types of tea mentioned in DongUiBoGam and the usage of tea were studied under these four main themes: tea as a folk medicine, types of tea, various uses, contraindication of tea. Tea used in mid Chosun. medicine, including in DongUiBoGam, was folk medicine. DongUiBoGam specialized the use of tea according to type. Also, it viewed tea as a medicinal ingredient that could exhaust the patient's EumBlood.

  • 조선시대(朝鮮時代)에 육대(六大) 차류(茶類)의 전래여부(傳來與否)와 국내생산(國內生産) 여부(與否)를 고찰(考察)한 결과(結果) 다음과 같은 사실(史實)이 확인(確認)되었다. 1. 중국(中國)으로부터는 화차(花茶)인 향편차(香片茶), 청차(靑茶), 흑차(黑茶)가 전래(傳來)되었고, 일본(日本)으로부터는 홍차(紅茶)가 전래(傳來)되었다. 2. 이 중(中)에서 화차(花茶), 황차(黃茶), 흑차(黑茶)는 국내(國內)에서도 생산(生産)되었다.

  • 고려시대(高麗時代)에 육대(六大) 차류(茶類)의 전래(傳來) 여부(與否)와 국내(國內)에서의 제차(製茶) 여부(與否)를 고찰(考察)한 결과(結果) 다음과 같은 사실(史實)이 확인(確認)되었다. 1. 연고차(硏膏茶)가 전래(傳來)되어, 국내(國內)에서도 생산(生産)되었다. 2. 향차(香茶)는 백차(白茶)로 만들어졌을 것으로 추정(推定)된다. 3. 엄차와 대차(大茶)는 청차(靑茶)였던 것으로 추정(推定)된다. 4. 고려말기(高麗末期)에는 녹차(綠茶)인 엽차(葉茶)도 음용(飮用)되었다.

반응표면 분석법을 이용한 녹차가루 첨가 젤리 제조의 최적화 (Optimization of Jelly with Addition of Green tea Powder using a Response Surface Methodology)

  • The purpose of this study was to find the optimal mixing conditions of three different amounts of gelatin, green tea powder and sucrose for preparation green tea powder jelly. A central composite design involving gelatin(12 ∼ 16g), green tea powder(3∼5g) and sucrose(40∼60g) was used to investigate the sensory characteristics of green tea powder jelly. Sensory characteristics, such as hardness, elasticity, sweetness, transparency, color, flavor and overall quality of green tea powder jelly, were measured using a response surface methodology computer program. The overall optimal conditions that satisfied all the sensory properties of green tea powder jelly were 13.4g gelatin, 4.2g green tea powder and 50.8g sucrose.

Tea Fungus 발효홍차의 향기 (Flavor of Fermented Black Tea with Tea Fungus)

  • The fermented black tea with tea fungus (FBTF) was prepared by culturing tea fungus biomass in black tea with 10% sucrose (BT) at 30$\circ$ for 14 days. The flavor quality of FBTF was investigated by sensory and chemical analysis, and the results were compared with BT. The data of sensory analysis indicated that fruity, wine-like, sharp-pungent, and vinegar-like flavor notes were increase, while earthy note was reduced during fermentation. GC-MS analysis of volatile compounds collected from FBTF and BT by Tenax trap showed that linalool, liinalool oxide other flavor compounds known as black tea flavor compounds were disappeared. Some major flavor compounds produced during fermentation were acetic acid, ethanol, limonene, $\alpha$-terpineol, and these volatiles may be attributed to the flavor of characteristic FBTF. Biosynthetic pathway for the formation of limonene and $\alpha$-terpineol are proposed through mevalonic acid pathway using acetic acid as precusor and/or through transformation of linalool and linalool oxide.

노화억제 식물을 이용한 노인식 개발 - 녹차를 이용한 보리죽의 제조조건의 최적화 - (Development of Elderly Diet Using Inhibitory Plant Against Aging Process - Optimization for preparation conditions of Barley gruel with Green Tea -)

  • Green Tea consists of 15-30% catechins (a type of polyphenol), which act as super antioxidants, inhibitory action against aging process. Antioxidants fight radical-free oxygen, an agent which can begin the process of cancer by damaging essential body chemicals and harming DNA. This study was peformed to develop the elderly diet using Green Tea as an inhibitory action against aging process. Nokchaborijook (Baley gruel added rice powder and Green Tea) was manufactured by various levels of Green Tea(1, 4, 7%) and the grinding period(15, 30, 45 sec). The optimum levels of added Green Tea and grinding periods on Nokchaborijook were determined with the results of sensory evaluation by response surface methodology and analysis of composition. The Anti-oxidant Vitamin A, C, E and Flavonoid were increased with increased levels of Green Tea and grinding periods be decreased. As the levels of Green Tea and grinding periods were increased, the green color and penetrated force became stronger. Among the sensory attributes, Bitterness, Green Tea Flavor and Hashness were greater depending on increasing Green Tea. Jujube flavor was greater relying on decreasing Green Tea. Greenness and spreadability of particles were increased as both the amounts of Green Tea and the grinding period were increased. This result was used to determine the optimum conditions of adding levels of Green Tea and grinding periods. The optimum conditions of Nokchaborijook was established as adding of 5.8% Green Tea grinded for 15 seconds.

한방차 관련 특허 동향 분석 (Analysis on Patent Trends in Traditional Korean Tea)

  • Objectives : The aim of this study is to analyze the patent trend in Traditional Korean Tea. In this paper, we investigate the diversity of Korean Tea registered as patents focusing on the kinds of medicinal herbs used, processing methods, and types of tea. Methods : We collected patents data using KIPRIS, and WIPS database. We conducted Quantitative Analysis by year and main patentee, and Qualitative Analysis by patent's contents. Results : 313 patents are selected from 2001 to May 2017. The number of patents have been on the rise and reached 44 in 2014. Individuals have registered the most patents, followed by companies, Industry-University Cooperation Foundation, and local autonomous entities. Ginger, Omija and Cactus were used at high frequency among 109 tea containing one medicinal herb. Licorice and Jujube were frequently used among 204 tea containing more than two kinds of medicinal herbs. In classification of patent by efficacy, 'health promotion and function recovery' and 'treatment and prevention of diseases' are most frequently specified. 128 patents are presenting processing methods for medicinal herbs in the order of roasting, fermentation, and fumigation. Among 164 patents presenting tea types, liquid type accounts for more than half and there are 67 leached tea, and 32 powder tea. Conclusion : The analyses results showed that lots of new recipes, efficacy, processing methods and tea types are being studied and registered as patents. In order to help Traditional Korean Tea industry to develop, active patent registration and further study about up-to-date patent trend would be required.
