This paper was investigated to elucidate the nitrite-scavenging action as one of biological actions of green tea extracts. Green tea extracts exhibited remarkable nitrite-scavenging action. Among the green tea extracts, steamed green tea showed higher nitrite-scavenging action than roasted green tea. Nitrite-savenging actions of gren tea extracts were hardly influenced until three times extraction with hot water. Furthermore , the nitirte-scavenging action of green tea extracts showed ph dependent , highest at pH 1.2 and lowest at pH 6.0. The nitrite -scavenging rate in sample extracts /amine /nitrite systems exhibited faster than that in amine/nitrite systems. In order to screen the nitirte-scavenging factors, samples extracts were fractionated with methanol. in both samples, methanol-soluble fractions possessed greater nitrite-scavenging action than methanol-insoluble fractions .The nitrite-scavenging action of methanol-soluble fractions increased with proportion to absorbance at 420nm and at 280nm, while that of green tea extracts increased with the contents of total phenols and absorbance at 280nm.

Plant biomass is a huge carbon-complex that has potential as a nutrient. Therefore we extracted and separated useful materials for plant growth from tea leaf and stem. The pre-treatment process including high temperature ($200^{\circ}C$) and pressure (20-40 kgf/$cm^2$) was treated for several minutes and extracted at $120^{\circ}C$ for 30-60 minutes. After that the chemical compositions and ingredients were analyzed from that plant-nutrient. As a result of mineral contents, calcium and magnesium concentrations are higher than other minerals. Also the result of carbohydrates analyses has shown that the sugar oligomer consists of xylose(95.3%) and glucose(4.7%), and the sugar monomer consists in the order of xylose (52.7%) > manose (22.8%) > arabinose (10.8%) > galactose (10.2%) > glucose (3.5%). Before applied to field, in vitro plant growth system and formulation were examined. To evaluate the effect of the nutrients, both strawberry green-house and persimmon fields were used in this test. The treated persimmons were heavier than controls scored at 13-22%. In addition, the storage-period was extended in the treated strawberries. Interestingly in the treated strawberry, the contents of polyphenols were increased (38-57%). These results suggest that the plant-nutrient can afford to help for plant growth and storage, and it can be substituted for other commercial nutrients. In conclusion, this plant-nutrient may help to extend eco-friendly or organic farming in Hadong-gun area.
This study was to investigate the effects of green tea powder addition on the quality of white bread. Initial pasting temperature on amylograph increased and peak and final viscosity decreased with the addition of green tea powder. The lightness values of bread crust decreased and lightness and redness value of bread crumb was not affected, but b values decreased with the increase of green tea powder contents. The volume was significantly reduced with addition of green tea powder up to 5.0% level, compared to that of control. The addition of green tea powder at 2.5% was not affected in most of texture parameters(hardness, springiness, cohesiveness, gumminess and chewiness). But, 10% green tea powder addition to the bread increased significantly hardness, gumminess and chewiness. As results of sensory evaluation, the bread containing 2.5% green tea powder had the highest score in appearance, color, flavor, taste, texture, and overall acceptance. Concludingly, in terms of overall properties, the addition of 2.5% green tea powder to white bread showed the best result.
Background: Green tea extracts are approved as nonprescription drug and available as health functional foods, health foods, and beverages. Clinical information on the products is lacking. Methods: Information about the products on green tea nonprescription drugs was obtained from the website of the Korea Pharmaceutical Information Center. The Naver, i.e., a top ranking online search portal, was used for compiling the list of the health functional food products using key words of 'green tea catechin' on August 23, 2018. The recommended daily dosages of catechins were calculated as 30% of the total dried mass of green tea and about 50% of the catechins were considered as epigallocatechin gallate (EGCG). Results: A total of two types of nonprescription drugs containing green tea powder or extracts, nine health functional food products, and three types of health foods were found. The regulatory requirements of the EGCG exceeding 800 mg were reported to be associated with adverse effects of elevated liver enzyme. If consumers take several green tea products concurrently, such as nonprescription drugs with health functional foods or health foods, it could exceed the recommended amount of EGCG. Conclusion: The concurrent use of green tea products as nonprescription drugs, health functional foods, and healthy foods may lead to an increased exposure to EGCG. Pharmacists should be aware the availability of various types of green tea products and the potential risk of liver toxicity due to excessive consumption of EGCG.
Objective: This study aimed to investigate the effects of fluoride-containing acidic tea beverages on bovine teeth surfaces. Methods: The pH values and fluoride concentrations of 11 kinds of mineral water and 23 kinds of tea were measured. The fluoride-containing Seopyenje black tea beverages with pH 3.48 were chosen for the experimental group. Distilled water that did not contain fluoride and had the same pH value as that of the Seopyenje black teas served as the positive control. The Jeju Samdasoo mineral waters with neural pH (pH 7.52) and no fluoride were chosen as the negative control. Bovine teeth in each group were submerged for 10 minutes. Thereafter, surface microhardness of each bovine teeth was measured and the results were analyzed. Results: The pH value range was 6.94-8.09 ($mean=7.37{\pm}0.08$) for the 11 kinds of mineral water and 3.48-6.74 ($5.62{\pm}0.05$) for the 23 tea beverages. Titratable acidity of the Seopyenje black tea beverages was higher than that of the distilled water mixed with citric acid, and the pH was 5.5 and 7.0, respectively. The fluoride content of the 11 kinds of mineral water was 0-1.09 ppm ($mean=0.44{\pm}0.02ppm$) that of the 23 tea beverages was and 0-0.74 ppm ($0.64{\pm}0.06ppm$). In terms of enamel microhardness reduction of the bovine teeth, the tea beverages had the largest effects. There was no significant difference in microhardness reduction between the tea beverages and distilled water mixed with citric acid (P>0.05). Conversely, a significant difference was found between the kinds of mineral water and tea beverages, and also between mineral water and distilled water mixed with citric acid (P<0.05). Conclusions: Acidic tea beverages appeared to erode the surfaces of bovine teeth. The amount of fluoride in the tea beverages was not enough to inhibit erosion. Therefore, frequent intakes of acidic tea beverage are likely to increase erosion on the surfaces of bovine teeth, by affecting the enamel microhardness of teeth.
Of all the various types of tea that are available, Pu-erh tea has attracted much attention because of its healthpromoting effects. The objective of this study was to investigate the physicochemical and antioxidant properties of two types of Pu-erh tea, Gushu Pu-erh and typical Pu-erh, extracted at 80 and 100℃, respectively. The Gushu Pu-erh extracts showed lower pH but higher antioxidant potential at both the temperatures, as compared to the typical Pu-erh. The mineral content of the tea extracts was greater at 100℃ than at 80℃. Among the seven categories of the flavor compounds that were detected, the peak area of esters was the highest in the Gushu Pu-erh extracts. The type of tea and the extraction temperature significantly affected the physicochemical and functional properties of these tea extracts. This study revealed that Gushu Pu-erh extracted at 100℃ for 3 min with 30 s of shaking provides better results in terms of the antioxidant potential and mineral content.
Songjeol-tea is a prescription that mixes alcohol with some ingredients and Songjeol[松節], and appears only in the King-Yeongjo era throughout 『Seungjeongwon Ilgi』. King Yeongjo recognized that the Songjeol-tea was an excellent prescription for the treatment of leg diseases, and took it in various ways thanks to the title of "tea" by his officials and doctors. There were many internal conflicts as King Yeongjo taking a prescription in the form of alcohol in a situation where an official who violated it was punished after issuing prohibition of drinking alcohol, and recognized the Songjeol-tea as alcohol. The officials and doctors of King Yeongjo's reign rationalized the King's actions by creating a justification for taking the Songjeol-tea to treat the disease because the king's body was related to the safety of the state.
Drink and tea-bag were processed with safflower seed powder. Drinks were processed with 90$^{\circ}$C hot water extraction. Yield, soluble solid, pH and centrifugation residue of drinks were ranged in 79.2~89.3%, 0.6~0.99%, 5.98~6.40 and 1.00~1.18, respectively. Sensory score of overall acceptance in drinks were highest at that of enzyme treated drink. Tea-bag was processed with roasted safflower seed powder, alone(1.2g) and the mixtured tea-bags were consisted of persimmon leaves, pine needle and angelica gigas powder in same amount, respectively. Teas were prepared with extraction at 80$^{\circ}$C water for 2 min. Soluble solid and sensory evaluation score of teas were the highest when the tea was processed with safflower seed alone.
Screening of effective fungicides, determination of effective fungicide application time and investigation of the emergence of resistant isolates to fungicides were conducted to establish effective chemical control strategy of gray blight of tea (Camellia sinensis) in Korea. Systemic fungicides, such as bitertanol, were effective for controlling gray blight when the fungicides were sprayed within 3 days after cutting tea leaves for harvest. Sprayed immediately after cutting, contact fungicides such as chlorothalonil were also effective, but control efficacy rapidly decreased with lengthening of the intervals between cutting and spraying. Korean isolates of P. longiseta and P. theae were still sensitive to bitertanol or fluazinam. However, the isolates highly insensitive to copper hydroxide or thiophanate-methyl have already emerged in Korea. Therefore, careful attention should be paid to use of fungicides and spraying programs for the effective control of gray blight of tea in Korea.

Dyeing properties of silk fabric with black tea colorants were investigated in terms of dye uptakes at various dyeing conditions and the effect of mordants on color change and colorfastness. Black tea colorants showed high affinity to silk and produced brown color. Two types of adsorption isotherm were obtained; Langmuir and Freundlich equilibrium at 360 nm and 460 nm, respectively. Thus, it is considered that both of ionic and hydrogen bondings are involved in silk dyeing with black tea colorants. Dye uptake increased continuously as concentration of colorants increased. Brown color was not changed with mordant type except that Fe mordant produced dark brown color. Mordanting did not influence colorfastness of dyed silk significantly. Therefore, mordanting was not necessary in dyeing silk with black tea colorants.
