Characteristics and Nutritional Status of Elders Who Under-report Intake on 24 Hour Recalls in USA

  • The objectives of this study were to determine whether older Americans would provide valid energy intake information using a 24-hr recall method and to determine which characteristics were predictive of under-report of energy intake. We conducted 24-hour recalls on 83 male and 105 female community-dwelling older adults(66-87y) in the USA to assess energy(EI) and nutrient intakes. Basal metabolic rate(BMR) was calculated from age-and gender-specific equations of Schofield. Under-reporting was defined a priori as EI : BMR<0.9. Subjects volunteered demographic information, underwent depression and cognition exams, and completed a Level II Nutrition Risk Screen. Differences between under- and adequate-reporters were assessed using t-tests for characteristics and macro-nutrient profile. Stepwise regression analyses were used to predict under-reporting status. Under-reporting of EI occurred in 34% of the sample. Neither geriatric depression scale(GDS) score, nor self-reported weight loss were related to under-reporting. On average, under-reporters had higher body mass indices. The most significant variables for the main effect to predict the ratio of energy intake to estimated basal metabolic rate(EI : BMRest) were BMI and age. Using a standard cut-off of 76% of the recommended dietary allowances for Americans, under-reporters were consistently more likely to be classified as having inadequate nutrient, as well as energy, intakes.   • 본 연구는 특정 집단의 기억이 공간적 스케일을 넘어 확산되는 과정에 주목하며 이의 원인과 지리적 함의를 찾고자 한다. 위안부의 역사는 한반도를 넘어 미국의 한인사회를 중심으로 회자되기 시작하여 2010년 뉴저지 주 팰리세이즈파크 공립 도서관 마당에 미국 최초의 위안부 기림비가 건립되는 결실로 이어졌다. 위안부 할머니들이 겪었던 전쟁 범죄의 피해 경험이 제한된 스케일을 넘어 미국으로 확산되는 과정은 다양한 주체들에 의한 다층적 과정 및 정치적 목적이 내포되었음을 이해해야 한다. 본 연구는 위안부 기억의 초국적 확산 과정에 있어 미국 내 한인 이민자 집단의 역할에 대해 조명하며 그들의 미국 내 정치적 입지 확대 및 타 민족과의 정서적 연대에 있어 기억의 이식이 어떻게 개입되었는지를 분석하였다.

재미 한인 기혼자의 내현적 자기애와 결혼만족도의 관계: 용서와 공감의 매개효과 (The Relationship between the Covert Narcissism and Marital Satisfaction of Korean-Americans: The Mediating Effects of Forgiveness and Empathy)

  • 본 연구는 재미 한인 기혼자를 대상으로 내현적 자기애, 용서, 공감, 결혼만족도 간의 구조적 관계, 성별과 결혼년수에 따른 내현적 자기애, 용서, 공감, 결혼만족도의 차이, 용서와 공감의 매개효과 검증, 성별에 따른 구조적 관계의 차이를 확인하고자 하였다. 이를 위해 미국 사우스 캐롤라이나, 아리조나, 텍사스 지역에 거주하는 기혼남녀 248명을 연구대상으로 하였다. 연구결과, 첫째, 내현적 자기애는 용서, 공감, 결혼만족도와 부적 상관이 나타났으며, 용서, 공감, 결혼만족도 간에는 정적 상관이 나타났다. 둘째, 성별과 결혼년수에 따라 용서, 결혼만족도에 차이가 있는 것으로 나타났다. 셋째, 공감과 용서는 내현적 자기애와 결혼만족도 간의 관계에서 간접적인 영향을 미치는 것으로 나타났다. 넷째, 기혼남성의 경우 내현적 자기애가 공감에 미치는 영향력, 공감이 용서에 미치는 영향력 그리고 공감이 결혼만족도에 미치는 영향력이 크게 나타났다. 한편, 기혼여성의 경우에는 내현적 자기애가 용서에 미치는 영향력, 용서가 결혼만족도에 미치는 영향력이 큰 것으로 나타났다. 이러한 연구결과를 바탕으로 본 연구의 의의와 제한점 및 후속연구를 위한 제언을 논의하였다.

전통 고추장을 이용한 소스의 제조 및 특성 (Preparation of Gochujang Sauce and its Characteristics)

  • To develope a sauce using Gochujang which can give foreigners good overall acceptance such as good flavor, taste, color, viscosity and versatility to many foods, we studied on the rheological properties and color control, recipes with spices, herbs, syrup, salt and flavor ingredients and sensory evaluation by Chinese, American and Japanese including Korean. From the survey, the Americans suggested that the proper fellow food of Gochujang sauce be fried chicken, barbecue, hamburger and pina, and hoped to reflect red color, low viscosity, hot taste, low sweetness, salty and sourness and diet effect. The Chinese suggest pork and fried food as a fellow with Gochujang sauce and showed similar opinion in the sensory attributes like the Americans except sweetness. When 5% of starch and xanthan gum was added to sauce, respectively, the yield stress of Gochujang sauce showed 33.21 Pa similar to tomato ketchup. In fluidity measured by voistic flow meter, Gochujang sauce showed 6.2 cm/30sec more or less faster than tomato ketchup which showed 4.7 cm/30sec. Gochujang sauce tended to show strong red color and lightness as pH decreased. The pH adjustant and Paprica oleoresin(2%) improved a value to 12.11 and L value to 24.24 similar to tomato kechup(a:12.42, L:25.48). The 1st gochujang sauce product show 4.50 to 5.75 pots in the overall acceptance in the consumer test including foreigners and koreans. However, the 2nd Gochujang sauce product showed 5.90 points and 6.30 points in the pina and fried chicken, respectively, in the same consumer test. Therefore, we propose that Gochujang can be used for developing sauce products which is most acceptable for various foreigners.

미국인의 김치에 대한 지역별 인식 조사 (A Survey on Americans' Area Perceptions for Korean Commercial Kimchi)

  • The purpose of this study was conducted to investigate the perception of Korean kimchi among Americans' living in different areas in the United States. A questionnaire was given to males 126 (40.4%) and females 186 (59.6%) residing in Illinois and California. The results were as follows: 86.0% of the participants answered that kimchi was Korean in origin, and 84.1% reported that they had eaten kimchi. Additionally, 56.8% and 52.3% of the respondents in Illinois and California had purchased commercial kimchi at home-made. Among the kimchi they had experienced, out of the total respondents, 92.4% had eaten baechu kimchi, 45.5% had eaten mu kimchi and 42.4% had eaten oi kimchi (When the responses from the residents of Illinois were evaluated: 100.0% of the respondents had eaten baechu kimchi, while 47.7% had eaten mu kimchi, and 40.9% had eaten bak kimchi. Evaluation of the responses of residents from California revealed that: 88.6% had eaten baechu kimchi, 45.5% had eaten oi kimchi, and 44.3% had eaten mu kimchi respectively). For evaluation of the their kimchi preference of the overall population revealed that, 71.0% preferred baechu kimchi, 9.2% oi kimchi, and 8.4% mu kimchi (Of the respondents in Illinois: 69.8% preferred baechu kimchi, 14.0% mu kimchi and 7.0% bak kimchi, while for Californians: 71.6% preferred baechu kimchi, 11.4% oi kimchi and 8.0% bak kimchi, respectively). Regarding the primary reason they purchased commercial kimchi, 64.9% responded 'its taste' (67.4% in Illinois and 63.6% in California), additionally, 40.0% stated of the package they purchased was 200g (51.2% in Illinois and 34.5% in California). After having eaten kimchi, 45.5% answer reported that it tasted good, and the their primary reason for liking kimchi was its, 'spicy and hot taste' (51.3%), The main reasons for not liking kimchi were the odor (garlic, ginger, anchovy juice, etc) and it being too spicy, respectively. Regarding improvements for its expanded consumption, 25.0% answered 'not to improve', 22.7% answered 'reduce the strength of the strong seasoning', and 20.5% answered 'to allow over-ripening'.

Smoking Trajectories among Koreans in Seoul and California: Exemplifying a Common Error in Age Parameterization

  • Immigration to a nation with a stronger anti-smoking environment has been hypothesized to make smoking less common. However, little is known about how environments influence risk of smoking across the lifecourse. Research suggested a linear decline in smoking over the lifecourse but these associations, in fact, might not be linear. This study assessed the possible nonlinear associations between age and smoking and examined how these associations differed by environment through comparing Koreans in Seoul, South Korea and Korean Americans in California, United States. Data were drawn from population based telephone surveys of Korean adults in Seoul (N=500) and California (N=2,830) from 2001-2002. Locally weighted scatterplot smoothing (lowess) was used to approximate the association between age and smoking with multivariable spline logistic regressions, including adjustment for confounds used to draw population inferences. Smoking differed across the lifecourse between Korean and Korean American men. The association between age and smoking peaked around 35 years among Korean and Korean American men. From 18 to 35 the probability of smoking was 57% higher (95%CI, 40 to 71) among Korean men versus 8% (95%CI, 3 to 19) higher among Korean American men. A similar difference in age after 35, from 40 to 57 years of age, was associated with a 2% (95%CI, 0 to 10) and 20% (95%CI, 16 to 25) lower probability of smoking among Korean and Korean American men. A nonlinear pattern was also observed among Korean American women. Social role transitions provide plausible explanations for the decline in smoking after 35. Investigators should be mindful of nonlinearities in age when attempting to understand tobacco use.

Acculturation and Dietary Intake of Korean American Women Living in California

  • The objective of this study was to examine the effect of acculturation stage on dietary intake of Korean American women (0=124) living in California and to compare the dietary intake with that of Korean women (0=191) in Seoul, Korea. The dietary intake of the subjects was collected by 24-hour recall method at cross-sectional surveys. Ouster analysis performed on immigration variables (e.g., length of residency, age at immigration, etc.) classified Korean American women into less (0=73) or more (n=51) acculturated group. Acculturation stage did not have a significant effect on macro nutrient intake. However, vitamin C intake was higher in the more acculturated group, while intakes of folate, calcium, iron, and zinc were higher in the less acculturated group. In comparison of three groups (the more and the less acculturated Korean American, and the Korean group), the more acculturated the women were, the less frequently they consumed rice and kimchi (p<0.05). Korean American women ate bread/noodle, meat/meat products, fruit juice, and soda more often and consumed vegetables less frequently, compared with Korean women (p<0.05). For breakfast, Western dishes were preferred in both more and less acculturated groups. Korean dishes were favored for dinner by both groups, even though the less acculturated group ate more Korean dishes than did the more acculturated group. The acculturation measured by immigration variables influenced nutrient intakes, food consumptions, and types of dishes eaten in Korean Americans. Cultural and health implications of dietary acculturation need to be studied in the future.

패션문화상품에 대한 태도와 구매의도 -방한 미국인, 일본인, 중국인의 비교 연구- (Attitude toward Fashion Cultural Products and Purchase Intention - A Comparison of American, Japanese, and Chinese Who Visited Korea -)

  • An empirical study was conducted on fashion cultural products, targeting foreigners from diverse cultures. Its purpose was to identify foreigners' attitudes toward fashion cultural products of which design sources were derived from the Korean culture. The quantitative research using questionnaires was targeted at Americans, Chinese and Japanese who visited Korea. The questionnaires were back-translated into different languages for completion by the test subjects. Out of a total of 424 surveys returned, 393 were deemed usable. As a result of data analyses using SPSS 12.0 and AMOS 5.0, we found that: First, two attitude factors, the authenticity and aesthetic elements, exerted a significant effect on the intent to purchase. However, the last attitude factor, care and carriage convenience, did not significantly influence the purchase intention. Second, there was no significant difference in the attributes regarded as important when purchasing fashion cultural product between people from the U.S. and Japan. However, people from China showed differences in the attributes compared to the U.S. and Japan. Third, we found that attitudes toward fashion cultural products were different among respondents of three countries. It was revealed that the Chinese liked Korea's fashion cultural products the most, followed by Americans and Japanese. This research is significant because investigating foreigners' attitudes toward fashion cultural products for reaching out to a broader market abroad would contribute to help building an market entry planning.

이차원적 문화적응이론을 토대로 한 한국계 미국인 소비자들의 패션 및 쇼핑 행동에 관한 연구 (A Study of Korean-American Consumers' Fashion and Shopping Behavior Based on a Bidimensional Model of Acculturation)

  • 이차원적 문화적응이론은 개인이 새로운 문화를 접했을 때 그 문화를 받아들이기 위해서 모문화를 포기하는 것을 가정하는 기존의 일차원적 문화적응이론에 비하여 개인이 모문화와 새로운 문화를 함께 유지할 수 있음을 인정한다. 본 연구는 (1)이러한 이차원적 관점의 문화적응이론을 바탕으로 한국계 미국인들을 분류하고, (2) 각 하위 집단의 패션 및 관련 쇼핑행동을 살펴보는 것을 목적으로 하였다. 미국 워싱턴주에 거주하는 18-39세의 미국 영주권 또는 시민권을 소지한 미국계 한국인 소비자들을 대상으로 인터넷, 우편, 또는 한인회 행사 등을 통하여 설문조사를 실시하여(n=108). 민족정체감, 미국 체류기간, 한국문화에의 참여도, 한인 또는 타민족과의 접촉도 등과 함께 의복에 대한 관여도, 쇼핑동기, 그리고 패션준거집단의 영향 등을 측정하였다. 한국인으로서의 정체감과 미국인으로서의 정체감에 대한 점수의 중간값을 이용하여 표본집단을 이차원적 문화적응이론에서 정의하는 격리(Segregation) 집단, 동화(Assimilation) 집단, 화합(Integration) 집단으로 구분하였고, 세 집단의 패션 관련 쇼핑 행동을 다중분산분석과 Duncan 다중비교를 통해 살펴보았다. 두 문화적 특성을 함께 지닌 화합집단은 인구통계적인 면이나 민족관련 행동에 있어서는 한국적인 특성을 유지하고 있었으나 패션 및 쇼핑행동면에서는 미국인에 가까운 특성을 보여 동화집단이나 격리집단과는 구별되었다. 이 결과는 이차원적 문화적응이론을 이용하여 패션 소비자들을 이해하는 것이 유용함을 보여준다고 할 수 있다.

한국과 미국 초산모의 신생아에 대한 지각 비교 (Perceptions of primiparas of their Newborns : A Comparision of Koreans and Americans)

  • The purpose of this study was to compare Korean and American women as to the perception of their newborns, and to assess factors contributing to a positive mother-infant relationships. American mothers were with their own newborns in the same rooms and could feed and take care of them if they wanted, but Korean mothers were separated from their babies. The subjects of this study were 86 Korean and 86 American primiparas within two-three days after delivery. Data were collected from May to August 1993, using the Neonatal Perception Inventory (NPI) devised by Broussard(1963) with additions by Lee, Ja Hyung(1986). The results of this study are as follows : 1. There was a significant difference in the mothers' perceptions of their babies according to mothers' age(P<0.05, P0.01). Mothers of 20 years and downward had negative perceptions of their babies. 2. There was no difference in the methers' perceptions of their babies according to whether they had a job or not. 3. There was a significant difference in the mothers' perceptions of their newborns according to mothers' education level(P<0.01). Mothers graduated from a junior high school had negative perceptions of their babies. 4. There was no difference in the mothers' perceptions according to their feeding pattern. 5. There was a significant difference between Korean mothers' perceptions and American mothers' perceptions of their babies(P<0.01). 69.7% of Korean mothers and 44. l% of American mothers had positive perceptions. But Korean mothers perceived that it would be more difficult for them to take care of their babies. As seen above, Korean primiparas evaluated their babies higher than Americans. But they perceived that it would be more difficult for them to take care of their babies. The results suggest that there needs a rooming-in system and systematic prenatal educations for the primiparas in Korea.
