젖소 사육환경과 영양조성에 대한 마케팅 정보가 치즈 선호도에 미치는 영향 (Effect of Providing Marketing Information about the Nutritional Composition of Milk and Rearing System of Cows on the Overall Liking of Cheese)

  • The taste preference for cheese is primarily dependent on an individual's habitual experience, such as personal memories since childhood. Cheese is not a traditional food in Korea, and therefore, the liking of cheese is acquired mainly through the exposure to European natural cheese by frequent travels rather than habitual experience. Although Korean dairy farms started the production of European style natural cheese because of surplus milk undulation, yet its demand has been consistently increasing in the last decade. Most of the mountain cheese variety in Europe are produced during the summer season on mountain pastures, especially in countries surrounded by the Alps. Nevertheless, not only consumers but also mountain cheese producers cannot comprehensively explain the differences in the nutritional properties of the milk from cows that grazed on mountain pasture and cows that were raised indoors. As the demand for cheese consumption is steadily increasing in Korea, it is necessary to study the effects of providing marketing information regarding the health conditions and rearing system of dairy cows in relation to the nutritional composition of cheese. In addition to the marketing focus on health-promoting unsaturated fatty acid composition of milk and cheese, the relationship between providing the marketing information on the raising environments of cows and the overall liking of mountain cheese were also investigated.

비살균 원유로 제조된 다양한 Gouda 치즈의 미생물 안전성 (Microbiological Safety of Various Gouda Cheeses Produced from Raw Milk)

  • 본 연구에서는 비살균 원유로 제조되고 숙성실에서 60일 이상 숙성된 7가지의 다양한 Gouda 치즈의 미생물학적 안전성을 실험적으로 검증하기 위해서 저장기간 동안에 다양한 미생물학적 변화를 조사하였다. Cheese 1과 2는 전통적인 비살균 Godua 치즈에 있어서는 60일 저장기간 동안 Salmonella spp.는 전혀 검출되지 않았으며, E. coli는 20 day부터는 검출되지 않았다. 대장균군은 Cheese 1에서 40 day부터 검출되지 않았지만, Cheese 2에서는 60 day까지 검출되었다. Cheese 1과 Cheese 2는 비살균 Gouda 치즈이기에 약간의 차이는 있었지만 전반적으로 비슷한 경향을 보였다. Cheese 3(원유에 인위적으로 Salmonella spp.를 오염시킨 후 제조된 비살균 Gouda 치즈), Cheese 4(Cheese 3에서 kefir에서 분리한 DH5 유산균 첨가)와 Cheese 5(Cheese 3에서 kefir에서 분리한 DN1 유산균 첨가)에 있어서는 60일 저장기간 동안 Salmonella spp.의 저해가 관찰되었다. 특히 Cheese 4와 Cheese 5에 추가적으로 첨가된 Kefir에서 분리한 유산균 DH5와 DN1은 Cheese 3보다 유의적으로 Salmonella spp.의 저해를 보였다. Cheese 6(유산균첨가 없이 제조된 비살균 Gouda 치즈)에서는 저장기간이 길어질수록 유산균수가 다른 Cheese들에 비해서 유의적으로 낮게 나타났다. 그리고 Cheese 7(살균한 원유로 제조한 전통적인 Gouda 치즈)에 있어서는 대장균 및 대장균군, Salmonella ssp.는 거의 검출되지 않았고, 유산균은 다른 Cheese들보다 약간 높게 나타났다. 60일 숙성된 Cheese 1부터 Cheese 7까지의 모든 샘플에 대한 Listeria monocytogenes, Staphylococcus aureus, Clostridium perfringens, E. coli O157:H7 검사에서 모두 음성을 보였다. 향후 kefir에서 분리한 유산균 DH5와 DN1의 비살균 원유를 이용한 숙성치즈의 제조에 관한 연구가 필요하겠다. 본 연구에서 Salmonella spp.를 인위적으로 접종한 Cheese 4와 5에서 보여준 Salmonella spp.의 저해 효과는 비살균 원유를 이용한 숙성치즈의 제조에 보다 큰 안전성을 부여할 것이라 사료된다.

우유의 진가와 한국인의 식생활 (The Value of Milk and Korean Dietary Life)

  • Milk and milk products, especially the cow's milk and cheese, have been used since the ancient time. Because they contains almost all kinds of nutrients that are necessary for human beings except for iron, n-3 fatty acid, and vitamin C. Milk is an excellent dietary source of protein, calcium and phosphorus. The biological value of milk protein is as high as those of red meat and eggs. So cheese, a food processed from concentrated milk protein, is highly recommended food for the patient of diabetes mellitus. Because the major form of milk lipids is n-6 fatty acid, milk and milk products may not be a good food for the patients of cardiovascular disease. But the nutritional quality of milk lipids cannot be inferior to those of margarine, fish oil, and vegetable oil. Milk has been produced commercially since 1936 in Korea. The most popular milk product is a drink milk now in Korea. But according to the change of dietary pattern the consumption of yoghurt and cheese has been enormously increased during the last 20 years. As the soy sauce, tofu, and soy been paste have been the fundamental seasoning and source of protein in Korea, milk and cheese have consisted the essential flavor of western cuisine. But the basic idea for the usage of protein, peptides, and amino acids are the same. We found that milk and milk products can be nicely added in many Korean dishes such as Juk, Mandoo, Jeon, and Bindeatuk for the diversity of traditional flavor.

화성시 농촌전통테마마을 운영성과와 발전 방안 (Effect and Development Strategies of a Village Development Project Using It's Traditional Specific Items in Hwaseong City)

  • The purpose of this study was to suggest development strategies of a village of Hwaseong-si where several programs using it's traditional items have been operated since 2003 according to the policy of Rural Traditional Thema Village Development implemented by Rural Development Administration(RDA). The village is located in Yodang-ri, Yanggam-myun, hwaseong-si in Gyounggi province. The village is called as 'Eunheng Namu Maeul' which means 'ginkgo tree village' since the tree is almost 350 years old and beautifully huge. Including this big tree there are much more traditional items such as organic dairy farming, hand-made cheese, legends and traditional plays. Using this items and government subsidies, the village has managed various tour programs and other income increasing projects. This study analyzed the strengths, weaknesses, opportunities and threats of the current situation of the village with the related materials and data to find out development strategies for the village-based programs and projects. This study recommended the followings as a major result of this study. The huge ginkgo tree at the village could be a better traditional attractive item when paths and wood of ginkgo trees will be built up especially utilizing the original huge one around the village. Like this, the item of hand made cheese could be a much more valuable traditional item when there will be an advanced facility for the people's working together. The social actives of the village have been weakened because of few young dwellers living there, therefore there needs a special subsidizing project for the village to hire a young manager having some social skills and knowledges. The situation being urbanized in front of the village needs precisely checking and implementing the Hwaseong-si's urbanization policy so that the urbanization could be harmonized with the maintenance and development of the traditional items of the village.

「임원십육지」의 조리법에 기초하여 재현한 건락의 대사체 분석과 관능평가 (Analysis of Metabolite and Sensory Evaluation on Kunrak, for Reproduced Manufacturing from Old Literature of 「Imwonsibyukji」)

  • Kunrak, a type of Korea traditional cheese, is made using Tarak, a yogurt produced with makgeolli as the fermentation source. Kunrak is produced by removing whey from Tarak, followed by drying process for safe storage and consumption over a longer period. In this study, we produced kunrak based on the method described in "Imwonsibyukji". Prepared Kunrak was ripening for 96 hours at 20, 30, and $40^{\circ}C$. In order to study characteristics of Kunrak, physiochemical properties (pH, acidity, water contents) and contents of metabolites (organic acids, sugars, amino acids, and fatty acids) were analyzed. During ripening, water contents decreased. The main organic acids in Kunrak were citric acid and lactic acid, and the main free sugar was lactose. Main amino acids were glutamate and phenylalanine, and main fatty acid was saturated capric acid. At later ripening, all metabolites increased immediately after preparation. The sensory evaluation score of overall preference was highest for Kunrak, which was ripening at $40^{\circ}C$ for 96 hours. This study was aimed to assay metabolites of Kunrak under various ripening conditions. The results provide basic data to produce conditions for standardized manufacturing of Kunrak.

Western dietary pattern is associated with higher risk of lower lean muscle mass in Korean postmenopausal women: data from the Korea National Health and Nutrition Examination Survey 2008-2011

  • BACKGROUND/OBJECTIVES: In a healthy person, from 35 years of age, there is an annual loss of muscle mass at the rate of 1-2% and is associated with a decline in the quality of life. This study aimed to identify the particular dietary patterns associated with the risk of lower lean muscle mass in Korean postmenopausal women. SUBJECTS/METHODS: The Korea National Health and Nutrition Examination Survey (KNHANES) is a population-based, continuous cross-sectional annual survey. The participants of the KNHANES IV (2008-2009) and V (2010-2011) were considered for this study. The study sample consisted of 1548 postmenopausal women, aged 45-86 years. Lower lean muscle mass was defined as having appendicular skeletal muscle mass corrected for body weight less than 1 standard deviation of the young reference group aged 20 to 39 years in KNHANES IV and V. To identify the dietary pattern using factor analysis, 24-h recall data was used. RESULTS: The prevalence of lower lean muscle mass was 31.3% in this study population. Four dietary patterns were identified by factor analysis; 'Diverse', 'Western', 'Traditional', and 'Snacks and beverages'. The 'Western' pattern, highest factor loadings for flour and bread, potatoes, red meat, processed meat, eggs, and cheese, was significantly associated with a high (60%) risk of lower lean muscle mass (odds ratio [95% confidence interval] = 1.60 [1.07-2.39], P for trend = 0.01) after adjustments for potential covariates. The other 3 dietary patterns were not associated with lower lean muscle mass. CONCLUSIONS: The study findings suggest that the 'Western' dietary pattern that includes flour and bread, potatoes, red meat, processed meat, eggs, and cheese, may be associated with a higher risk of lower lean muscle mass in Korean postmenopausal women.

한국전통 김치의 다양화 및 세계화를 위한 스페인인의 기호도 조사연구 (A Survey of the Preference for Korean Kimchi by Spanish Natives)

  • This study was conducted to develop methods of promoting traditional Korean Kimchi globally. To accomplish this, 99 Spanish natives were surveyed for their sensory evaluation and awareness of Kimchi. The results revealed that a relatively high number (46.9%) of the respondents had eaten Korean Kimchi. After eating the Kimchi, women tended to provide a slightly higher overall acceptability than men. Furthermore, when the overall sensory evaluation was conducted, the characteristics of Kimchi that were most recognized were its red color, spicy smell and hot taste. In addition, 93.9% of the respondents said that Korean Kimchi was a suitable food based on its spicy flavor>chewing force>appearance>red color>fermented smell. However, 6.1 percent of the subjects responded that they did not find Kimchi appetizing due to its hot taste>fermented smell>chewing force. Interestingly, the hot taste was a common selection for the reason that individuals liked or disliked Kimchi. When ranked among traditional Spanish foods, Kimchi was reportedly similar to cooked cabbage, cooked bell peppers, cooked red peppers and Moheu ppikan, pickles, Spanish lettuce, chiseutora and oil pickled cheese, or to various vegetables pickled in vinegar. Taken together, the results of this study should facilitate the globalization of Kimchi. In addition, the findings of this study provide fundamental data that should assist in the development of a local style of Kimchi for Spain.
