  • This paper is written to analyze systematically the varieties of informations about cooking stream procedure on the basis of the basic theory of installation and arrangement such as SLP(Systemic Layout Planning) and to deduce the plan for the device, installation and arrangement suitable to cooking stream procedure. Through the substantial improvement in the modeling of hotel L, the optimization of the capacity of installation and arrangement, and the reduction of food resource stream and its movement and through the analysis of cooking stream procedure by disposing and dividing the main kitchen into three individual ones, the improvement of productivity in comprehensive cookery such as the specialization and equalization of cooking procedure and improvement effect of the price-reduction. Moreover, as for the problem of arrangement of installation, it was displayed that the effect went up to twice through the flexible production-related systems such as the improvement of arrangement, reduction of cooking preparation time, the standardization of cookery.

Actual Conditions of Lighting Environment of Kitchen and Washroom Spaces in Houses between China and Korea

  • To compare the lighting environment of kitchen and bathrooms in the apartments in China and Korea, this research conducted a study of the current status, targeting 68 households in China and 79 households in Korea. The results are as follows. First, the Korean kitchen space is a little bigger than China's, but the height of the sink and table show no difference. China does not use local lighting in the kitchen. And Korea 40.2[%], China 65.6[%] is sink's KS based was below. In the case of the dining table, KS criteria satisfy both Korean and Chinese standards. 20[%] appear to be very feeble; urgent improvements are required. Secondly, regarding the size of the bathroom, Korea and China show similar sizes; the average height of the vanities and toilet is higher in Korea than in China by 2[cm]. China does not use local lighting in the bathroom. The levels of illumination were measured; lighting is higher in China's bathrooms compared to Korea's.

  • Along with the development of the modern industrial society, quality of food and beverage space has become advanced, individualized, diverse. Especially the sense of diversity has been expressed in many ways to meet the consumer's needs. What the consumers wants from the food and beverage space is to experience gourmet food with the convenience desired. Consumers today are choosy with the practical use of the space with the reasonable price as well as the taste and quality of the food. They also expect light atmosphere at the same time, something extraordinary as well. Therefore, to provide the space for the consumers needs, open-kitchen style has came into the highlights. Open-kitchen is the basic form of serving meals and has become the important aspect of providing the current needs of the consumers. This study will analyze the open-kitchen style of the food and beverage space of the domestic and foreign based on this phenomenon to study their characteristics.

  • The purpose of this study is to analyze the varying characteristic factors for residential kitchen remodeling according to contemporary life style. The subjects of this investigation are collected through questionnaire from adult residents who live in Seoul, Korea. The collected cases are analyzed by using Spss-win. By using the vaimax method on the basis of factor analysis, the satisfaction of the actual conditions is under the influence of finished materials & function, sanitary installation, layout, cooling & heating apparatus, day lighting, air conditioning, and safety. The preference of kitchen remodeling Is affected by finished materials, function, environmental equipment, and air conditioning. The Need of kitchen facility is caused by working table, refrigerator, gas range, dish apparatus, and addition function.

제어가능한 부엌공간 LED조명에서의 색온도, 조도, 제어속도 추출에 관한 연구 (A Study on the Extraction of Correlated Color Temperature, Illuminance, Control Speed under Controllable LED Lighting in the Kitchen Space)

  • This study has found out appropriate scopes of correlated color temperature and illuminance value with regard to general diffused lighting and work in the kitchen. It also has presented appropriate photometric quantity control speed for behavioral change with the following results. 1)For general diffused lighting, the appropriate photometric quantity has turned out to be 4,000 to 4,500K in color temperature and illuminance value of 300 to 400lx. And 300lx at 4,500K has proven to be the most comfortable, behavior-appropriate, and preferred pair. 2)As far as appropriate photometric quantity for work is concerned, color temperature of 4,000 to 5,000K and illuminance value of 600 to 800lx are appropriate, while 700lx at 4,500 to 5,000K are the most comfortable, behavior-appropriate, and preferred set. 3)As for appropriate photometric quantity control speed in behavioral change, 3 to 5 seconds has proven the most comfortable, appropriate, and preferred for behavioral change from entry to general areas and 1 to 3 seconds for change from general to work.

농촌 단독주택 부출입문의 기능 및 이용변화에 대한 사례조사 (Changes in Use and Functions of Second Doors in Detached Houses of Rural Area)

  • In contrast to apartments, detached houses offer the possibility of more than one entrance connecting interior and exterior spaces. This study examines the location, function, and use of second doors in detached houses in rural areas. The study employs survey and interviews conducted in 2015, focusing on 18 detached houses among 40 houses previously surveyed in 1995. In 1995, 21 second doors were found, while in 2015, 19 were found. The study led to the following conclusions. First, most houses did have second doors installed by 1995 or 2015. Second doors tended to be installed in kitchen and utility rooms. The function of second doors was most closely connected to the kitchen because utility rooms were placed adjacent to kitchens. Secondly, changes in the use and number of second doors were changes in family life cycle and composition, the need for new equipment facilities, the use of new architectural materials, and the installation of new second doors for extension of space. Finally, exterior spaces accessed by second doors tend to be a meeting of semi-interior or semi-exterior space and exterior space only. Those spaces tended to be designed for kitchen fixtures or to support kitchen activities.

초고층 공동주택의 주방.욕실 배기 풍속을 풍력발전에 활용하는 방안 (A Study on the Wind Power Generation Using Vertical Exhaust Air Duct of the High-Rise Apartments)

  • The purpose of this study was to promote the utilization of wind velocity of kitchen and bathroom exhaust ducts for wind power generation in high-rise apartments. The research content can be summarized as follows: 1) Nine high-rise apartments were examined for the installation of kitchen and bathroom exhaust ducts located in the pipe shaft (PS) section. After selecting simulation candidates, a simulation was performed with the STAR-CCM+ Ver 5.06 program. 2) Of nine high-rise apartments, seven had kitchen and bathroom exhaust ducts, whose cross section was in the range of $0.16m^2{\sim}0.4m^2$. The area ratio between the exhaust ducts and PS section (cross section of exhaust duct/area of PS section ${\times}$ 100) was on average 3.2%. 3) The simulation results were analyzed. As a result, the smaller cross section kitchen and bathroom exhaust ducts had, the more advantages there were for increasing exhaust wind velocity. If an out air inlet duct is installed to the old kitchen and bathroom exhaust ducts, it will increase exhaust wind velocity by 3.01~3.98m/s and contribute to the proper wind velocity level (3.0m/s). 4) When the simultaneous usage rate between the kitchen and bathroom exhaust fan increased from 20% to 60%, exhaust wind velocity increased. The "entire house holds" condition for exhaust fan operation provided more even exhaust wind velocity than the "some house holds" condition. 5) Exhaust wind velocity increased in the order of amplified (T-3), induced (T-2) and vertical (T-1) top of kitchen and bathroom exhaust ducts. Of them, the amplified type (T-3) was under the least influence of external wind velocity and thus the most proper for kitchen and bathroom exhaust duct tops.

고령자 및 장애인을 위한 승강형 주방 상부장 설계 (Design of lift-down kitchen cabinet for elderly and disabled)

  • 주방 상부장은 수납공간이 넓고 작업 공간 활용도가 높다는 장점으로 인해 널리 사용되고 있지만 높은 곳에 설치되어 있어 고령자나 장애인이 접근하기 어려운 단점이 있다. 따라서 본 논문에서는 기존 상부장의 기능을 유지하면서 더욱 쉽고 안전하게 사용할 수 있도록 개별 층의 높이가 조절되는 새로운 방식의 상부장 구조를 제안한다. 효율적인 주방 공간 활용을 위한 상부장 설치 범위와 신체적 약자들이 접근할 수 있는 최대 높이를 고려하여 상부장 필요 하강 범위를 설정하였으며 선택한 개별 층이 최적의 경로를 따라 안전하게 하강할 수 있도록 기구설계 과정을 통해 적절한 복합 링크기구 형상과 치수 및 링크 구동 방법을 선정하였다. 또한, 모터 및 소프트웨어를 추가하여 간단한 버튼 조작으로 사용자가 원하는 높이로 내려올 수 있게 하였으며 실제 제작을 통해 제시된 승강형 링크기구의 안정성 및 높이 조절 성능을 검증하였다.

주방에서 건식 식기 세척기 설치 및 운전 사례연구 (A Case Study for Installation of Dry Washing Process in Kitchen)

  • 공기와 모래를 이용한 건식 식기세척기를 주방에 설치하여 운전하였다. 실험을 위하여 30여종의 양념(Dirt 마커) 과 14종의 접시를 사용하였으며 세척효율은 COD-MN에 의해 평가하였다. 건식 공기세척은 일부 양념에는 효과적이었으나 일부 양념에는 전혀 효과가 없는 것으로 분석되었다. 또한 건식공기세척을 통해서 양념의 완벽한 제거는 불가능하였다. 접시의 형태에 따라 세척효율에 큰 차이를 보였다. 모래와 공기에 의한 세척은 COD-MN 제거에 탁월한 성능을 보였다. 본 연구를 통하여 물을 사용하지 않고 모래와 공기에 의한 건식세척 방법이 가능함이 입증되었다.

브랜드 아파트의 단위평면 각 실의 경향분석 (Tendency of Each Space of Unit Plans for Brand Apartments)

  • This study aims to examine each space characteristics of unit plans for brand apartments. Through construction companies' web-sites and real estate web-sites, all the apartment unit plans with $66m^2{\sim}164m^2$ unit among the brand apartments were analyzed. On the analysis of the apartment unit plans($66m^2{\sim}164m^2$) provided by top 8 construction companies from March 2004 to December 2008. The remarkable changes compared to existing apartments include an increase in the number of bays; front side allocation of bedrooms beside the main bedroom; installation of a vestibule, a dressing room, and a powder room; installation of built-in closets in bedrooms beside the main bedroom; and installation of a receipt spot on the sidewall in the balcony. Besides, as for minor opinions there were opinions of front side allocation of kitchen/dining room, back side allocation of the main bedroom, and installation of dressing room in bedrooms beside the main bedroom. Therefore, construction companies should pay attention to research result about the unit area ranges of apartment unit plans, and reflect it positively to develop apartment unit plans to satisfy consumers.
