Studies on the Contamination of Kimchi Material - Pesticide Residues in Vegitables - (김치의 오염(汚染)에 관(關)한 연구(硏究) - 김치 재료(材料)의 농약오염(農藥汚染) -)

  • In order to investigate the level of pesticide residues in the vegetables for Kimchi materials (Chinese cabbage, radish, red pepper, garlic and cucumber), which were produced in Andong district, organochlorine and organophosphur pesticide residues were analyzed using gas chromatography. The results were as follows; 1) In chinese cabbage, radish and some other vegetables harvested in early summer (June), organochlorine and organophosphur pesticide residues were detected in almost all of the samples tested, and a few of them showed a level higher than the organochlor APR(allowable pesticide residues). 2) Heptachlor, the soil insecticide was the most abundantly detected pesticide among the four organochlorine pesticides tested (Dieldrin, Endrin, BHC, Heptachlor) in this study. 3) Somewhat higher concentrations of organochlorine pesticides were detected in all kinds of sample vegetables harvested in late summer than in those harvested in early summer. And the frequency of organochlorine pesticide contamination was also increased, but the frequency of organophosphur pesticide contamination was decreased. 4) In the vegetable harvested in late autumn, level of organochlorine pesticide residues and frequency of contamination were markedly decreased and organophosphur pesticide residues (Diaginon, Malathion, Thiometon, EPN) were rarely detected. 5) The results of this study indicates that to take a lot of vegitables grown in summer was somewhat uncomfortable than those grown in autumn.

Food Scientific Study on the Difference between Traditional Korean and Japanese Foods -Difference of inorganic cation contents between Kimchi, Japanese pickles and Salted and fermented fish intestines- (한일양국(韓日兩國)의 전통식품에 관한 식품학적(食品學的) 비교연구(比較硏究) -한국김치, 일본지물(漬物)과 젓갈류(類) 중(中)의 무기질 함량의 차이(差異)-)

  • The difference between Kimchi, Japanese pickles, Korean Salted and fermented fish intestines and Japanese Salted and fermented fish intestines was investigated by comparising composition of inorganic cation in them. A high-performance liqid chromatography was used for the determination of Na, K, Ca and Mg in Kimchi, Japanese pickles and Salted and fermented fish intestines. The Kimchi samples analyzed were produced in the home, in the restaurant, in the nunnery and by food manufactures in Korea, and the pickles used were produced by food manufactures in Japan, and Salted and fermented fish intestines used were produced by food manufactures in Korea or Japan. The results obtained were summarized as following: (1) Sodium chloride in Kimchi was $1.8{\pm}0.37%$, $2.8{\pm}0.60%$ in Asazuke, Japanese picles which the fresh vegitables was seasoned with sodium chloride and seasoning, $1.8{\pm}0.32%$ in Japanese Kimchi, Japanese pickles which the fresh vegitables was seasoned with the mixture of sodium chloride, garlic powder, red peper's powder and seasoning, $5.3{\pm}0.66%$ in Shoyu Zuke, Japanese pickles which the salted vegetables was seasoned with sodium chloride and seasoning after desalting. (2) Na/K value in Kimchi was $1.7{\pm}0.17$ and $4.6{\pm}1.44$ in Asazuke, $2.6{\pm}0.85$ in Japanese Kimchi and $27.3{\pm}6.79$ in Shoyu zuke respectively. (3) Kimchi contained more K and Ca than Japanese pickles. (4) Kimchi remarkably contained the Ca originating to salted and fermented fish intestines. As the results of this study, it was presumed that while Kimchi and Japanese pickles is well known as a food that contributed to high blood pressure, Kimchi and Japanese Kimchi might not cause the high blood pressure because they have an excellent balance of Na/K value and low Na content. And also it was considered that these differences might be caused by the difference of th food taste between and Korean and Japanese people.

Effects of Ethanol Extracts from Commonly Consumed Vegetables by Koreans on NO, TNF-${\alpha}$ and MCP-1 Production in LPS-stimulated RAW 264.7 Macrophages (한국인 다소비 채소의 에탄올 추출물이 LPS 처리된 대식세포에서 NO, TNF-${\alpha}$와 MCP-1 분비에 미치는 영향)

  • Korean dishes, Hansik are characterized by healthful vegetable intake. The purpose of this study was to evaluate the inhibitory effect of commonly consumed vegetables by Koreans on obesity/metabolic disease-related inflammation. Through statistical analysis of the KNHANES database ($1^{st}$ 1998, $5^{th}$ 2010, 2011) and a literature review, we selected vegetables for study. Among the vegetables, main or sub ingredients of Kimchi were excluded. Samples were prepared using only edible portions and freeze-dried. After grinding, samples were extracted with ethanol, evaporated and finally lyophilized. The cytotoxicity of samples was determined by 3-(4,5-dimethylthiazol-2-yl)-2,5-diphenyltetrazolium bromide (MTT) assay, at various concentrations that do not affect cell viability. Raw 264.7 macrophages were treated with lipopolysaccharide (LPS) and 11 kinds of samples or positive control (troglitazone) dissolved in dimethyl sulfoxide (DMSO). After 24 hours, nitric oxide (NO), tumor necrosis factor ${\alpha}$ (TNF-${\alpha}$) and monocyte chemoattractant protein-1 (MCP-1) production were determined. Excepts for young pumpkin and bracken, nine samples effectively reduced NO production compared with control treated with LPS and DMSO. NO levels of five samples (bean sprouts, leeks, eggplant, mugwort, and pumpkin) were similar to that of the positive control. These five samples showed significantly decreased TNF-${\alpha}$ or MCP-1 compared to the control group. Our results suggest that consumption of commonly consumed vegetables contributes to partial prevention of obesity and related metabolic syndrome through reduction of NO, TNF-${\alpha}$, and MCP-1 production.

Determination of Dietary Fiber Content in Some Fruits and Vegetables (과일.채소중 식이섬유의 분석법 검토 및 함량 분석)

  • This study was undertaken to examine the applicability of domestic enzymes in the quantitative determination of dietary fibers according to the official enzymatic-gravimetric method of AOAC and to apply it to 4 kinds of fruits (apple, pear, peach and persimmon) and 4 kinds of vegetables (Korean radish, lettuce, Korean cabbage and cabbage Kimchi). With domestic enzymes, an optimum condition was selected to use 1/10 units of enzyme activity and to extent the reaction time two-fold as compared with the recommended method, in the case of fruits and vegetables. On a dry matter basis, fiber contents of fruits were in the range of 9.4-28.8% total dietary fiber, 1.8-7.8% non-cellulosic polysaccharides, 3.7-5.8% cellulose and 1.3-21.3% lignin. Fiber contents of vegetables were 26.0-35.7% total dietary fiber, 11.3-14.4% non-cellulosic polysac-charides, 12.3-19.7% cellulose and 1.4-7.4% lignin. On a dry matter basis, crude fiber contents were 3.5-6.7%in fruits and 9.1-13.8% in vegetables. Therefore, crude fiber contents of fruits and vegetables accounted for only 12-50% of total dietary fibers.

Study on Sodium Contents of Kindergarten Lunch Meals in Gyeoungsangbuk-do Area (경북 일부지역 영유아보육시설 급식의 나트륨 함량 실태조사)

  • Purpose: This study investigated the salt and sodium content of lunch meals served at foodservice center for children in Gyeongsan-si, Gyeongsangbuk-do. Methods: Five foodservice centers for children registered at Center for Children's Foodservice Management were investigated for salt and sodium content and salt content contributing rate per meal. Results: Average salt content of every meal was $1.78{\pm}0.54g$, and average sodium content was $680.99{\pm}175.97mg$. The 98 of 100 meals served in 5 foodservice centers for children exceeded the dietary reference intakes for Koreans' recommendation for adequate intake of sodium per meal of 333 mg. The highest sodium content was 1,369.85 mg. Samples from lunch meals were classified into 14 food items and investigated for one serving size, salinity, salt and sodium content. Total average salinity was 0.31%, kimchi (0.49%), followed by soup (0.45%), hard-boiled foods (0.39%), stir-fried foods (0.39%), and fresh-vegetables (0.32%). Total average salt content was 0.39 g, the most salty dishes were one-dish rice noodles, followed by soup (0.65 g), hard-boiled foods (0.49 g), stir-fried foods (0.48 g), and broth stew (0.43 g). Samples from lunch meals were classified into 6 menu groups, including cooked rice, one-dish rice noodles, soup stew, main dish, side dish, and kimchi. Contributing rate for total average salt content was high in one-dish rice noodles (48.97%), soup stew (38.47%), main dish (27.28%), side dish (21.02%), kimchi (18.56%), and cooked rice (3.95%). Conclusion: These results can be useful for reducing total dietary sodium content to less than 333 mg in children who are provided lunch meals at foodservice centers. To achieve this goal, development of low-sodium recipes, and nutrition education for foodservice employees is required.

Isolation and Characteristics of Lactic Acid Bacteria Producing Casein Phosphopeptides from Kimchi (Casein phosphopeptide를 생산하는 김치 유래 유산균의 분리 및 특성 연구)

  • Lactic acid bacteria showing both protease activity and the capacity to produce casein phosphopeptide (CPP) were isolated from Korean kimchi, a traditional food made from fermented vegetables. Among the 450 strains of isolated lactic acid bacteria, the strain MG-379 showed high protease activity and the highest ability to produce CPP. Characterization results showed that MG-379 was gram-positive and measured $0.6-0.8{\mu}m$ in diameter. DNA sequencing of MG-379 and comparison with other sequences using BLAST revealed a 100% identity with the sequence of Enterococcus faecalis. However, MG-379 showed a higher CPP-producing ability than E. faecalis KCCM 40450. Accordingly, MG-379 was newly named as E. faecalis MG-379. Amount of free calcium liberated by CPPs was 2227.5 and 1151.6 mg/kg for E. faecalis MG-379 and E. faecalis KCCM (control), respectively.

Selected Dietary Intake among Californians of Korean Descent : Preliminary Findings

  • Research on diet, acculturation, and ethnicity has suggested that immigrants dietary patterns differ from people who do not have immigration experience. The purpose of this paper is to present preliminary descriptive findings concerning consumption of foods that are common in Korean and American diets, by people of Korean descent residing in California. Adults (18 years of age or older, N=1334) of Korean descent who could be reached by listed residential telephone number in California were randomly selected and telephone-interviewed by closely supervised bilingual (Korean-English) interviewers who were specially trained for this task. This study found that dietary patterns of Koreans living in California differed according to age and gender; also, the frequency of consumption of foods differed according to number of years of residence and acculturation. Koreans who reported higher levels of acculturation to American society ate less of traditional Korean foods such as Kimchi and ate significantly more higher-fat foods common in the American diet. Increased acculturation was also related to an increased frequency of alcohol drinking. Older Koreans tended to eat slightly more of traditional foods such as rice, Kimchi, fruits, and fish, compared to younger Koreans. Women tended to eat healthier foods than men, consuming green vegetables, Kimchi, milk, cheese/yogurt, fruits, and bread more frequently. Koreans reporting longer residences in the United States reported a greater consumption of pork, bread, and soda.

A Comparison of Sources of Sodium and Potassium Intake by Gender, Age and Regions in Koreans: Korea National Health and Nutrition Examination Survey (KNHANES) 2010-2012 (한국인의 성별, 연령별, 지역별 나트륨과 칼륨 섭취 현황 및 기여음식 : 2010-2012년 국민건강영양조사 분석)

  • Objectives: The purpose of this study was to evaluate the main sources of dietary sodium and potassium intake in Koreans by gender, age and regions. Methods: We used the data from 2010-2012 KNHANES. A total of 20,387 subjects aged 8 years and older were included. Intakes were compared by gender, age (8-18, 19-49 and >50 years) and geographical regions in Korea. Dishes were classified into 28 dish groups based on cooking methods. Statistical analysis was performed by using the SAS 9.3 and SUDAAN 11.0.1 software. Results: The mean sodium intake of Koreans was $4866.5{\pm}35.9mg/day$, which was 2.4 times higher than the adequate intake (AI) of sodium for Koreans. We found that daily sodium intakes were significantly different by age, gender and regions. Men and aged over 50 years had significantly higher sodium intake than women and other age groups. The mean potassium intake in Koreans was $3002.2{\pm}19.4mg/day$ and daily potassium intakes were significantly different by age, gender and regions. Women and age 50 years and over had significantly higher potassium intakes than men and other age groups. The average Na/K ratio was $2.89{\pm}0.01$ and was highest in men and in the age group of 19-49 years. The major sources of dietary sodium were soup and stew, followed by Kimchi, noodles and dumpling, pickled vegetables and seasonings, which represented 63.1 % of total sodium intakes. Soup and stew or Kimchi were the primary sources of dietary sodium intake. The major sources of dietary potassium were cooked rice, followed by soup and stew, Kimchi, fruits and beverages. Conclusions: Sodium and potassium intakes and the major sources of those were significantly different by gender, age groups and regions. Therefore, different approaches based on gender, age and regions are needed to decrease sodium intake and increase potassium intake.

Food Styling and Table Designs Applying on Various Tofu Menu (다양한 두부 메뉴의 푸드 스타일링과 테이블 디자인 연구)

  • Purpose: This study aims to develop menu for tofu, which will satisfy a variety of needs of people by harmonizing tofu and other ingredients. Methods: In the present study, the standard recipes were made for tofu menu development by improving the existing recipes like Dubu-seon, Dubu-kimchi, Dubu-jeongol, and Sundubu-jjigae (soft tofu stew). Based on newly developed recipes, the nutritional analysis was conducted using the analyzing program of the Korean Nutrition Society (CAN-Pro 4.0). Food styling was devised considering the shape and color of plates, layout, and color harmony. Table design was devised empirically employing tablecloth, napkin, dinnerware, glasses, cutlery, centerpiece, and figures. Results: Food styling of Dubu-seon was devised by improving the visual aspect, using Korean traditional five cardinal colors. It turns out that the improvised version of Dubu-seon (prepared following the new recipe) can satisfy 15.1% of amount of recommended dietary fiber intake per day for both male and female adults. In case of Dubu-kimchi, the dish was developed as a one-dish meal by supplementing protein and improving food styling. Beef was added in a form of a meatballs which is especially preferred by children. However, the amount of salt was reduced due to the strong and spicy taste of kimchi itself, resulting in 32% of daily intake of sodium. Dubu-jeongol was also improvised by reducing protein content, and more vegetables were added. Food styling was also improved. Concerning Sundubu-jjigae, protein was supplemented by addition of mushrooms rather than the existing way of adding shellfish. The sodium content was 133.88 mg, which is merely 10% of daily intake. Conclusion: With the new developments in tofu menus, new food styling, and table design, this study aims to contribute towards the rise in sales in the food service industry in terms of being used as basic and critical data.

Biochemical Studies on Korean Fermented Foods. VIII Studies on Vitamin $B_{12}$ Contents of the Fermented Foods in Korea (한국 발효식품에 대한 생물화학적 연구 ( 제 8 보) 발효식품중의 Vitamin $B_{12}$의 함량 조사보고)

  • In order to know contents of vitamin B$_{12}$ in the fermented foods in Korea, the contents of this vitamin are studied on the following foods; kimchies (pickled vegetables) .................. 39 chukkals (fermented and salted sea foods) ...... 8 fermented soy-bean products .................... 5 the kimchies and fermented soybean products studied in this paper, are from individual homes and chukkals are from markets. The content of vitamin B$_{12}$ is estimated by the microbiological assay method using lactobacillus leichmannii ATCC 7830. Details for assay are indicated in the original part of this paper. The pseudo-vitamin B$_{12}$ substances as thymidine which is active to the growth of lactobacillus leichmannii, are eliminated by the alkali treatment method of sample solution. According to the results as indicated in the table, the following conclusions are summerized; 1. Vitamin B$_{12}$ contents of kimchies for winter season are 1.03 to 1.52 mcg% in average. The hobakk-kimchi which contain the highest content of vitamin B$_{12}$ is not popular one among Korean. 2. Chukkals contain much higher content of vitamin B$_{12}$ varying from 0.91 to 11.10mcg%. 3. The soybean fermented foods, as kanjang, denjang, kochojang, contain lower content of vitamine B$_{12}$ varying from 0.08 to 0.52 mcg% containing higher content of pseudo-vitamin. 4. Based on daily consumption of kimchi in winter season by Chai, the consumption of this vitamin through kimchi is about 3 mcgs daily per capita. This will be a quite source of this vitamin for Korean as vitamin C. as vitamin C.
