남자 대학생 체급경기선수의 체중조절 군별 영양소 섭취 실태 (Nutrient Intakes of Male College Combat Sport Athletes by Weight Control Status)

  • Objectives: Weight control practices are common in combat sport athletes. This study was performed to examine nutrient intakes of male college combat sport athletes (taekwondo, boxing, judo) by weight control (WC) status. Methods: Subjects were male combat sport athletes (n=90) from colleges in Gyeonggi Province. Survey was conducted during 2016. Questionnaire included general characteristics, weight control, and dietary intakes during the period of training, weight control, weigh-in ~ before competition and between competitions. Subjects were grouped into high- and normal WC groups. T-test, ${\chi}^2-test$, Fisher's exact test and ANCOVA were used to analyze the data. Results: During training, energy intake was 75.4% of EER and C:P:F ratio was 57.5:13.9:28.7. Iron and zinc intakes were different by WC groups (p<0.05). During weight control, energy intake was 44.7% of EER in normal WC and 30.5% in high WC group (p<0.05). C:P:F ratio was 69:11.1:19.5, and ratio from protein and fat was lower in the high WC group (p<0.05). Most nutrient intakes during weight control were less than 50% of 2015 KDRIs (RNI or AI), and intakes including thiamin (p<0.01), vitamin A, riboflavin, niacin, folate, calcium, potassium and zinc (p<0.05) were significantly lower in the high WC. Energy intake after weighing before the competition was 1,315 kcal, and energy (kcal/kg BW, p<0.05) and carbohydrate intakes (g/kg BW, p<0.01) were significantly higher in the high WC group. Energy intake between competitions was 691.1 kcal, with no difference by the WC group. Conclusions: Nutrients intakes of combat sport athletes were inadequate. Dietary intakes during weight control were much below than the KDRIs, especially in the high WC group. It is needed to develop nutrition education programs for combat sport athletes to avoid severe energy restrictions and to apply specific dietary guides to each period of training and weight control.

Difference in food and nutrient intakes in Korean elderly people according to chewing difficulty: using data from the Korea National Health and Nutrition Examination Survey 2013 (6th)

  • BACKGROUND/OBJECTIVES: Chewing difficulty is a factor contributing to a poor nutritional status in the elderly. The aim of this study was to examine disparities in food and nutrition intakes among Korean elderly people with and without chewing difficulty. SUBJECTS/METHODS: This study utilized data from the sixth Korea National Health and Nutrition Examination Survey conducted in 2013. The study subjects included males and females over 65 years of age who were not required to adhere to a special diet due to disease or sickness. They were divided into groups according to their chewing ability. Those who found chewing "very difficult" or "difficult", were combined to form the chewing difficulty group. Similarly, those who found chewing "moderately difficult", "easy", and "very easy" were combined to form the normal chewing group. RESULTS: Of the 999 subjects, 47.7% had chewing difficulties and the prevalence of chewing difficulty was higher in females than in males (P = 0.03) and higher in those 75 years of age and over than in younger individuals (P < 0.001). The chewing difficulty group had a significantly lower intake of fruits and vegetables (P < 0.05) and lower vitamin C and potassium intake than those in the normal group. Comparison of the percentages of Dietary Reference Intakes for Koreans (KDRIs) in the two groups indicated that the intake of most nutrients (energy, vitamin C, thiamin, riboflavin, niacin, calcium, phosphorus, sodium, potassium, and iron) were significantly lower in the chewing difficulty group than in the normal group. In particular, calcium intake was inadequate (51% of KDRIs) in the chewing difficulty group. CONCLUSIONS: The results indicate that chewing difficulty is closely related to food and nutrient intake in the elderly and can result in vitamin and mineral intake deficiencies. It is evident that the care of elderly subjects with chewing difficulty is essential for maintaining a healthy lifestyle.

식품교환법을 활용한 영양교육의 효과: 초등학생의 영양지식, 식생활 태도, 식이섭취 변화 (Effects of Nutrition Education Using Food Exchange System: Changes in Elementary Students' Nutrition Knowledge, Dietary Attitude and Nutrients Intake)

  • The purpose of this study was to investigate the effects of nutrition education using Food Exchange System on elementary students' nutrition knowledge, dietary attitude and nutrients intake. Nutrition education lessons (40 min /lesson, 4 times), '5 major nutrients and functions', '6 food groups and sources of 6 food groups', 'good choice of snacks and eating out' as class lesson, 'daily needed energy and food exchange units' as individual lesson, were provided to 70 elementary students (4th grade 33 students, 5th grade 37 students) in Jeonbuk Province. We assessed the changes in nutrition knowledge, dietary attitude, food habit using a questionnaire and nutrient intake using 24 hr recall method by nutrition education. In nutrition knowledge, there were significant increases in scores of 'functions of carbohydrate', 'functions of protein', 'functions of lipid', 'foods of carbohydrate', and 'foods of lipid'. In dietary attitude, there were significant increases in scores of 'taking a meal with joy', 'taking a meal at ease', 'taking a meal with sufficient protein intake' and 'taking a meal without spicy foods' by nutrition education. There were significant changes in the type of breakfast and in the frequency of snacks. After education, in type of breakfast, it showed higher number of students ate rice oriented meal than they did before education. and in frequency of snacks, it showed lower number of students ate snacks 'over 3 times' than they did before education. In Carbohydrate : Protein : Fat (CPF) ratio (%), it was significantly changed from 55.8 : 17.7 : 26.6 to 63.6 : 15.3 : 21.1. In evaluation of nutrient intake by Dietary Reference Intakes for Koreans (KDRIs), vitamin A, thiamin, niacin, vitamin $B_6$, calcium, phosphate, iron and zinc showed positive changes in distribution of number of children by intake level. That is, there were significant improvements in intakes of vitamin A, thiamin, niacin, vitamin $B_6$, calcium, phosphate, iron and zinc. These results showed that nutrition education using Food Exchange System for elementary students improved nutrition knowledge, dietary attitude and nutrients intake. It suggest that nutrition education using Food Exchange System may improve dietary behaviors and reduce an incidence of obesity in elementary students.

소아청소년 체중상태에 따른 식사의 질 평가 및 비만과의 연관성 분석 (Assessment of Diet Quality by Weight Status and Its Association with Obesity in Children and Adolescents)

  • Numerous studies have investigated quantifying dietary intake according to the weight status of children and adolescents. However, studies on differences in quality among diets remain scarce. This study compared diet quality by weight status and examined correlations between quality of diet and obesity in children and adolescents. Two hundred fourteen children and adolescents aged between 9 and 18 years participated in this study (Normal weight n=104, Obesity n=110). The data related to food intake were investigated by dietary records, Diet Quality Index-International (DQI-I), and Nutrition Quotient (NQ) and then compared with Dietary Reference Intakes for Korean (KDRIs). In DQI-I, moderation factor (control of unhealthy foods) score was 21.7 in the normal weight group and 19.5 in the obesity group. The normal weight group showed a higher score for moderation factor than the obesity group (P<0.001). Compared with KDRIs, vitamin $B_6$, folate, vitamin C, vitamin E, calcium, potassium, and zinc intakes were insufficient in both groups. Multiple logistic regression analysis revealed that DQI-I moderation was negatively associated with obesity (OR=0.77, 95% CI 0.69-0.87) after adjustment for age, gender, income, and total energy intake. Our results suggest that children and adolescents require nutritional education to understand the importance of vitamin and mineral consumption. Especially, education for children and adolescents with obesity needs to emphasize moderation of nutrient intake that can cause diseases with hyper-ingestion such as sodium and high calorie-low nutrition foods.

한국인의 단백질 섭취권장량 산출방법과 단백질 섭취권장량 변화 - 한국인 영양권장량과 한국인 영양섭취기준을 중심으로 - (A Study on Calculation Methods and Amounts Changes of Recommended Protein Intake in the Recommended Dietary Allowances for Koreans and Dietary Reference Intakes for Koreans)

  • 본 연구는 1962년 한국인 영양권장량의 제정부터 2010년 한국인 영양섭취기준 개정에 이르기까지 성인과 임신 수유부의 단백질의 섭취권장량 산출방법과 섭취권장량의 변화 추이를 살펴보았다. 1. 성인의 단백질 섭취권장량은 1989년까지 요인가산법을, 그 이후에는 질소균형연구를 활용하여 설정되었다. 요인가산법을 적용하였던 시기는 표준단백질 최소 필요량 또는 불가피 질소손실량을 기본 요인으로 하고 식이단백질의 이용율을 적용하였으며, 질소균형연구를 적용하였던 시기는 질소평형 유지에 필요한 식이단백질의 최소 필요량을 기본 요인으로 하였다. 그리고 개인 차, 스트레스 등의 조정 요인을 반영하여 단백질 섭취권장량을 계산하였다. 단백질 섭취권장량은 남성 50~80g/일, 여성 45~70g/일이었으며, 남성의 섭취권장량이 여성보다 크고, 연령대가 높을수록 섭취권장량은 감소하였다. 2. 임신부의 단백질 부가섭취권장량은 태아의 발육에 기인하는 단백질 축적량을 기본 요인으로 하고 식이단백질 이용율 등의 조정요인을 적용하여 산출하였고, 10~30g/일이었으며, 2010년에는 임신 기간을 3분하여 각각 0, 15, 30g/일을 제시하였다. 3. 수유부의 단백질 부가섭취권장량은 모유로 분비되는 단백질의 양을 기본 요인으로 하고 식이단백질 이용율 등의 조정요인을 적용하여 산출하였고, 20~30g/일이었으며, 시기별 증감 경향은 나타나지 않았다. 앞으로 체중 대신 제지방체중을 적용하는 단백질 섭취권장량의 산출 공식이 마련될 필요성이 있으며, 에너지와 마찬가지로 섭취하는 식이단백질의 조성에 근거한 개인별 섭취권장량의 계산방법 고안을 제언한다. 그리고 수유부의 경우 수유 기간을 구분하여 기간별 단백질 부가섭취권장량의 제정을 제언한다.

여대생의 체지방률에 따른 식이섭취와 혈중지질농도, 철분지표 및 항산화능 (Dietary Intake, Serum Lipids, Iron Index and Antioxidant Status by Percent Body Fat of Young Females)

  • The aim of this study was to measure and compare nutrient intake, anthropometric measurements and serum indices by percent body fat as one of the index of obesity degree in female college students. Additionally we attempted to investigate percentile distribution of fat free mass index (FFMI) and fat mass index (FMI) for developing reference values for these two parameters. The subjects were 91 female college students who were classified to 4 groups according to the percentile of percent body fat (Group1: 25 th < percentile of percent body fat, Group 2 : 25 th ${\le}$ percentile of percent body fat < 50 th, Group 3 : 50 th ${\le}$ percentile of percent body fat < 75 th, Group 4 : percentile of percent body fat ${\ge}$ 75 th). The mean percent body fat and body mass index were 28.2%, $20.5 kg/m^2$ respectively. The mean energy intake was 1707 kcal(81% of KDRIs) and vitamin C, folate, Ca and Zn intake were 73.9%, 54.7%, 79.6%, 97.5% of KDRIs respectively. Most nutrient intake (energy, carbohydrate, cholesterol, fatty acid, Ca, Fe) of G4 was lower than that of G1, G2 and G3. Serum HDL-cholesterol concentration was significantly lower in G4 than G1, G2, G3 and it tended to increase as percent body fat decreased. LDL/HDL, A1 of G4 were significantly the highest among the 4 groups and increased as percent body fat increased. The mean fat free mass index and fat mass index were $14.5 kg/m^2$, $6.0 kg/m^2$ respectively. The criteria of sarcopenic obesity which has been defined as under 25 th percentile of FFMI and below 75 th percentile of FMI were shown $12.8 kg/m^2$, $8.2 kg/m^2$ respectively in this study. In conclusion, we should continue to more systematically research on the studies of new obesity measurement which includes FFMI and FMI as one of the variables. And the public education for weight control that emphasizes both the understanding of body composition and the importance of nutrition balance is also required.

여대생의 골밀도와 식이 및 비식이 요인들 간의 상관성 (Dietary and Non-dietary Factors Related to Bone Mineral Density in Female College Students)

  • The purpose of this study was to investigate correlations between bone mineral density (BMD) and dietary and non-dietary factors in female college students. The BMD of the subjects (n = 38) was measured using DEXA (Dual Energy X-ray Absorptiometry) at lumbar spine and three femoral sites including femoral neck, ward's triangle, and femoral trochanter. Three-day 24-hour dietary recall data were collected from each subject to assess consumption levels of nutrients and food groups. The mean (${\pm}SD$) values of age, age of menarche, height, weight, body mass index (BMI), waist-to-hip ratio (WHR), fat mass, and % body fat of the subjects were 21.34 (${\pm}1.73$) years, 13.1 (${\pm}1.2$) years, 161.3 (${\pm}5.0$) cm, 53.7 (${\pm}7.2$) kg, 20.6 (${\pm}2.6$) $kg/m^2$, 0.80 (${\pm}0.04$), 15.4 (${\pm}4.4$) kg, and 28.2 (${\pm}4.7$), respectively. The BMD values of lumbar spine, femoral neck, ward's triangle, and femoral trochanter as T-value were $1.150{\pm}0.13\;g/cm^2$, $0.932{\pm}0.11\;g/cm^2$, $0.850{\pm}0.13\;g/cm^2$, and $0.721{\pm}0.10\;g/cm^2$, respectively. The daily mean energy intake of the subjects was 1660.6 kcal. The intake levels of carbohydrate, calcium, iron, vitamin C, and folic acid were lower than the KDRIs, while those of fat, phosphorus, sodium, vitamin A, and vitamin $B_6$ were higher than the KDRIs. Significantly negative correlation were detected between consumption of fat and oils and the BMD of all sites measured (p < 0.05). Potato and starch intake was negatively correlated to the BMD of femoral neck and word's triangle (p < 0.05). The intake of cereals was found to be negatively correlated to the BMD of ward's triangle (p v 0.05). There was also negative correlation of intake of soybeans and products with the BMD of lumbar spine (p < 0.05). Weight and muscle mass were positively correlated to the BMD of both lumbar spine and femurs (p < 0.01). Significantly positive correlations between BMI, and fat mass and the BMD of lumbar spine were observed (p < 0.001). Additionally fat mass was positively correlated to the BMD of femoral neck. WHR and % body fat were positively correlated to the BMD of lumbar spine (p < 0.05). Negative correlation was found between a serum calcium level and the BMD of femoral neck (p < 0.05). In summary non-dietary factors generally showed significant correlations with the BMD of lumbar spine, while several dietary factors showed significant correlations with the BMD of femurs.

Nutritional Assessment of the Oldest-Old Population Aged 85 Over: Based on 2009 Korea National Health and Nutrition Examination Survey

  • As Korea is expected to become super high aged society in 2026, nutrition is important elements of health in the elderly and affects their life. In epidemiological surveys, anthropometric and biochemical measurements represent important components of nutritional assessment in elderly. In the present study, we investigated anthropometric index, biochemical markers, and nutrient intake for elderly aged over 85 by using data on 71 elderly (24 men, 47 women) over 85 years which was obtained from Korea National Health and Nutrition Examination Survey in 2009. According to BMI values, the prevalence of underweight and obesity was 9.7% and 34.5% in men, and 7.9% and 26.4% in women. The prevalence of sarcopenia was 70.7% in men and 25.0% in women. However, plasma biochemical data are normal range in the older population. In nutrients intake, daily Intake of energy, protein, dietary fiber, water, thiamin, riboflavin, niacin, calcium, and potassium was inadequate considering the Dietary Reference Intakes for Koreans(KDRIs). In conclusion, elderly need to be educated nutrition and their health dietary life to prevent malnutrition, and standard of nutrition intake should be rearranged in elderly aged 85 over considering their antrhopometric index.

서울지역 아동의 철분강화 시리얼 보충과 영양교육이 영양상태 및 생활습관에 미치는 영향 (The Effect of Iron-enriched Cereal Breakfast and Nutrition Education on the Nutritional Status and Life Style of Elementary School Students)

  • The present study was conducted to investigate the effect of iron-enriched cereal supplement and nutrition education program on nutritional status and life style of children. Elementary school students(n=170) aged of 11 years old at Seoul were participated. Subjects were supplemented with iron-enriched cereal for breakfast and provided with 2 sessions of nutrition education during 3 months. Intake of carbohydrate, iron, sodium, zinc, vitamin A, vitamin $B_1$, vitamin $B_2$, vitamin C, niacin, and folic acid was significantly increased after cereal supplement. Caloric intake was similar to KDRIs during both before and after cereal supplement. There was no improvement on exercise and dietary habits after nutrition education. Male students tended to sleep later, wake up early, and ate snack less than female. Cereal supplement was effective on improving nutritional status, but short-term nutrition education had no effect on modification of life style. Thus, further studies are required to develop long-term education program effective on improving lift style and eating habits in children.

재가 노인들을 위한 노인복지관의 급식 식단 평가 (Evaluation of the Menus of Senior Welfare Centers for Home-bound Elderly)

  • This study examined the characteristics of the foodservice menu items offered at senior welfare centers to provide information on Korean senior menu development. A total of 514 lunch menu items were collected from 27 senior welfare centers in April, July, October and January. The most frequently served staple foods, soups, and side dishes were multi-grain rice, seaweed soup, Bulgogi, Kimchi, and liquid yogurt. The proportions of carbohydrate, protein, and lipids of total energy serving of senior welfare centers were 59.8%: 16.7%: and 22.8%, respectively. The nutrients served at less than 40% of the Recommended Nutrient Intake (RNI) and Adequate Intake (AI) of Dietary Reference Intakes for Koreans (KDRIs) were chloride (1.0%), vitamin D (1.3%), biotin (1.7%), magnessium (4.5%), Iodine (7.5%), pantothenic acid (8.0%), vitamin E (12.5%), vitamin $B_6$ (20.0~21.4%), vitamin K (21.1~24.3%), and water (35.7~39.7%). The nutrients served in excess of the daily intake goal and RNI were iron (98.9~127.1%), sodium (104.9%), and copper (1,100.0%).
