한국인 식생활지침에 기반한 노인의 식행동 평가항목 개발 (Development of Food Behavior Evaluation Items for the Elderly Based on Korean Dietary Guidelines)

  • A checklist of dietary behavior items for the elderly was developed based on Korean dietary guidelines. First, a literature review was conducted, and 63 preliminary items, including 30 items on food intake, 12 on eating habits, and 21 on dietary culture, were obtained to evaluate the dietary guidelines. The preliminary items were evaluated by experts using Lawshe's method to verify the content validity. They were then revised, resulting in 52 items: 25, 11, and 16 in the food intake, eating habits, and dietary culture domains, respectively. A face-to-face survey was conducted on 331 people over 65 years of age in the metropolitan area, and their one-day food intake was surveyed using a 24-hour recall method in August 2022. The 48 items, including 24, 11, and 13 items on food intake, eating habits, and dietary culture, respectively, correlated significantly with the evaluation indicators of nutrient intake, such as mean adequacy ratio, dietary diversity score, and nutrient intake density. These items were considered suitable for evaluating the elderly's compliance with dietary guidelines.

광주지역 일부 저소득층 여자노인에서 지역사회 영양중재 프로그램 적용에 따른 식행동 변화 및 영양상태 개선 효과 (The Effect of a Community-Based Nutrition Intervention Program on Dietary Behavior and Nutritional Status of Low-Income Elderly Women in Gwangju City)

  • This study was conducted to measure the effect of a community-based nutritional intervention program on dietary behaviors and nutrient intakes of low-income elderly women in Korea. The subject of the study was a group of 88 elderly women using the free meal service in Dong-gu, Gwangju city in Korea. The study was carried out from April to July 2009, and the pretest, application of nutrition education, and post-test were applied in each stage. This community-based nutrition intervention program consisted of snack supplement and nutrition education provided three times a week and 36 times in total. The nutrition education was led by the nutritionists and professionals using various educational media. Snack supplement included were milk, soymilk, carrot juice, bread, yogurt, and bananas. The result of pretest showed that the nutrient intakes of the subjects were much below the Recommended Nutrient Intake (RNI) level of Dietary Reference Intake for Koreans. Comparison of the dietary behavior score and nutrient intakes before and after the nutritional intervention program indicated that the food behavior score increased from 3.1 to 5.6 (P<0.001) and intake of energy, protein, carbohydrate, thiamin, niacin, vitamin C, iron, and potassium of the subjects all increased significantly (P<0.05). Mean Adequacy Ratio (MAR) of their nutrient intakes was also improved from 0.53 to 0.64 (P<0.01). These results indicated that the nutrition intervention program conducted in this study was effective in improving dietary behavior and nutrient intakes of elderly women in local community.

Effects of Lifestyle and Dietary Behavior on Cardiovascular Risks in Middle-aged Korean Men

  • Lifestyle and dietary behavior intervention as the primary prevention of lipid disorder seems safe and compatible with other treatments of cardiovascular diseases. Cross-sectional associations between lifestyle factors and dietary behavioral factors with plasma lipid and lipoprotein levels were analyzed in 189 middle-aged men in Suwon, Korea. Overnight fasting plasma levels of total cholesterol, high-density lipoprotein(HDL)-cholesterol, triacylglycerol and glucose were analyzed. Blood pressure and anthropometric data were also measured. Lifestyle factors such as smoking status, alcohol consumption and frequency of physical exercise were evaluated by a self-administered questionnaire. Questions regarding dietary behavior were also asked. The subjects were 43.8%${\pm}$7.9 years old, and 23.8%${\pm}$2.6kg/m$^2$. From stepwise regression analyses, significant correlates with total cholesterol level were body mass index(BMI), alcohol intake(negative), age and coffee drinking(model R$^2$=14.3%). BMI, breakfast-skipping, age, and sleeping hours were significant for triacylglycerol level(model R$^2$=15.8%). BMI, alcohol drinking(negative), age, and coffee drinking were significant for low-density lipoprotein(LDL)(model R$^2$=11.7%). Age(negative), BMI(negative), alcohol drinking, stress level(negative), physical exercise, and cigarette smoking(negative) were significant for high-density lipoprotein(HDL)(model R$^2$=12.1%). From stepwise regression analyses, excluding BMI and age as factors in the model, alcohol intake(negative) and coffee drinking were significantly correlated with total cholesterol level(model R$^2$=4.4%) : breakfast-skipping with triacylglycerol(model R$^2$=3.2%) : alcohol intake (negative) with LDL level(model R$^2$=3.4%) : alcohol intake, physical exercise and stress level(negative) with HDL level(model R$^2$=6.3%). The findings suggest that a healthy daily lifestyle and dietary behavior may have an anti-atherogenic effect by altering plasma lipid and lipoprotein levels in middle-aged Korean men.   • Purpose: In this study, we comparatively investigated the nutrition knowledge, dietary attitude, and dietary behavior related to salt according to the types of dietary life style for differences between the groups. Methods: The survey was conducted between May 1 to July 31, 2014 among 500 adults aged >19 years in Seoul, Gyeonggi-do and Chungcheong-do areas. Results: Factor analysis of the dietary life style, indicated 4 factors including food convenience factor, food information emphasis factor, behavior factor of pursing food taste, and food purchase standard factor, which were classified into 3 groups according to differentiated dietary life style types; group 1 emphasized convenience and diversity of food, and price sensitiveness. and included subjects who had low interest in health and nutrition and were less likely to take care of their health through regular exercise,; group 2 emphasized food ingredients, food additives, usage and food purchase standards. and included subjects who were more likely to take care of their health through exercise and showed lower intake of fast food and less cases of eating out.; and group 3 showed relatively higher tendency toward dietary life style factors than the other two groups. The level of nutrition knowledge in sodium intake differed according to dietary life styles, and showed a significant difference in the dietary practice of sodium intake. Conclusion: Nutrition education on the healthy dietary habit of reducing sodium intake be based on ge and gender. In addition, an effort is required to improve behavior, interest, and attitude according to the important tendencies of the dietary life style.

지역별 청소년 건강위험행위 비교 - 대도시, 중소도시, 군 지역을 중심으로 - (Comparative Study of Youth Health Risk Behaviors by Region: Focused on Metropolitan Areas, Medium Sized and Small City Areas, and Rural Areas)

  • Purpose: This study was done to compare health risk behavior prevalence for youth living in metropolitan, medium sized and small cities or rural area, in order to enhance understanding regional differences. Methods: For this study, data from the 2006 Youth Health Risk Behavior Online Survey collected by the Korean Center for Disease Control were analyzed using SPSS. Results: In the metropolitan areas, prevalence for disease and perceived obesity were higher than in other areas. Lack of intense or moderate physical activity, obesity, fast food intake, and insufficient sleep showed higher prevalence than in rural areas. Prevalence of lifetime smoking, lifetime alcohol consumption, present alcohol use, fruit intake less than once a day, and not wearing a seat belt were higher in rural areas than in urban areas. Gender, smoking, and alcohol use were correlated. Spearman correlation between living with parent and skipping breakfast were significant. Smoking, alcohol use, and sexual behavior were correlated. Conclusion: As significant differences in prevalence of youth health risk behaviors exist between regional areas, health education and health promotion programs considering these differences have to be developed and implemented for adolescents. Programs for prevention of smoking and alcohol use, programs for improvement of fruit intake and safety are suggested for adolescents in rural areas, whereas programs to enhance physical activity and obesity management are suggested for adolescents in metropolitan areas.

어머니의 취업여부에 따른 중ㆍ고등학생의 식행동 비교 (The Effect of Working Mothers′on the Dietary Behavior of Middle and High School Students)

  • The purpose of this study was to compare the dietary behavior of middle school and high school students who had working mothers with students whose mothers were not employed. Self-reports on their dietary behavior and one-day dietary records were obtained from 396 middle school students and 364 high school students using anonymous questionnaires. The results were summarized as follows; the students with working mothers were more likely to not to eat properly and their dietary behavior was generally inadequate, showing a greater irregularity for meals, more of a tendency to skip breakfast, less diversity of food intake, and a higher incidence of drinking and smoking. One-day dietary records obtained by 24k recall methods showed less diverse food intake and a higher rate of skipped meals in students with working mothers. Drinking and smoking were more prevalent among middle school students whose mothers were working than among those students with unemployed mothers, but in the case of high school student the difference was not significant. With more and more housewives seeking jobs, more attention needs to be given to the dietary and nutritional intake of their children, especially among middle school students. High school students seem to be less affected than middle school students by their mother's employment.

장기 요양 시설 거주 치매노인의 식사행동 특성 (Characteristics of Eating Behavior in Elders with Dementia residing in Long-Term Care Facilities)

  • Purpose: The purpose of this study was to explore characteristics of eating behavior according to level of functional status of elders with dementia (EWD), and to examine feeding time, change in food intake and body mass index (BMI) according to eating behavior. Methods: Participants were 149 EWD residing in long-term care facilities located in Seoul or Gyeonggi province and evaluated using the Mini-Mental State Exam-Korean version, Korean version-Activities of Daily Living, and Eating Behavior Scale (EBS). Feeding time, change in food intake, and BMI were also measured. Data were analyzed using SPSS 17.0, specifically descriptive statistics, ANOVA, and Chi-square test. Results: Participants' mean EBS score was $10.43{\pm}6.01$ and half of them (54.4%) needed moderate or total assistance while eating. The EBS score was significantly lower for elders with severe dementia compared to those with mild or moderate dementia; and elders with severe ADL dependence compared to those with mild or moderate ADL dependence. Lower EBS scores were related to longer feeding time, a greater the rate of participants with decreased food intake and 'underweight' BMI. Conclusion: Nursing intervention programs which are designed for EWD are needed to maintain functional eating skills and prevent negative consequences in this population.

거주형태에 따른 충북지역 여대생의 식행동 비교 (Dietary Behavior by Residence Types of Female College Students in Chungbuk Area)

  • This study was performed to compare dietary behaviors based on residence types of female college students. Self reports on dietary behavior and one-day dietary records were obtained from 227 female college students using anonymous questionnaires. The mean age of the subjects was $20.4{\pm}1.43$, and the height and weight were $162.5{\pm}4.8cm$ and $52.3{\pm}7.9kg$, respectively, The dietary behavior of female college students was inadequate, showing indifference to dietary balance, irregularity of meals, skipping breakfast, and high experience of drinking. One-day dietary records were obtained from 24k recall methods also showed a high number registering skipped meal status ($55.3\%$) and less diverse food intake (DVS, 12.5; DDS, 3.93). The students in self boarding residence were especially more likely not to eat properly and their dietary behaviors were found to be significantly poor. In the case of home residence, food intake frequency scores for milk and dairy products, fruits, and fishes were significantly higher, however the students in self boarding residences showed high food intake frequency scores in salted food, retort food, canned food, and especially instant ramyun. Therefore, more attention needs to be given to them to recognize the problems in their own dietary behaviors and more practical nutritional supports, like developing a menu for breakfast in college cafeterias, would be helpful to improve their dietary choices.

청소년들의 식생활습관 및 구강보건행동과 치아우식증의 관련성 (Correlations among eating habits, behaviors for dental health and dental caries of juveniles)

  • Objectives : This study aimed to explore the influence of food intake and oral health behaviors on dental caries in juveniles. Methods : A total of 2,129 juveniles completed a questionnaire survey to identify the presence of permanent teeth caries, behaviors relevant to oral health and food intake based on the fourth National Health and Nutrition Survey. Results : Multiple logistic regression analysis showed that higher occasions of intake of carbonated drinks significantly cased dental caries in the meanwhile oral health behavior and the number of toothbrushing was in reverse proportion to dntal caries. The risk of dental caries was higher in the group of lower frequency of toothbrushing and intake of carbonated drink. Conclusions : Carbonated drinks intake and the number of toothbrushing is closely related to dental caries. So it is very important to develop oral health education program in order to improve eating habits and toothbrushing habits in juveniles.

충남 일부 지역 대학생의 식사의 질, 식행동 및 에너지 평형상태 조사 연구 (A Study on Diet Quality, Food Behavior and Energy Balance of College Student in Chungnam Area)

  • The purpose of this study was to investigate the effect of food behavior on dietary food intake status and health condition based on research of food behavior and nutritional intake status of university students in the Chungnam area. The average age, height, and weight of the subject group were 22.1 years old, 174.2 cm, and 67.0 kg for the male students and 20.9 years old, 161.8 cm, and 53.4 kg for the female students, respectively. From the nutritional intake status data, the averaged daily energy intake of both groups, male and female, are lower than the dietary reference intake(KDRI), as 2,169.2 kcal and 1,846.2 kcal, males and females, respectively. The lipid intake ratio was higher than the dietary reference figure, and the carbohydrate intake ratio was determined to be in the proper range. Male students(54.6%) and female students(52.0%) of the entire subject group skipped a breakfast mainly due to insufficient time, and the time at which meals were consumed, was determined to be irregular generally. In a day, male and female students have a heavier dinner than lunch(p<0.05), respectively. Meat and fishes are preferred by the entire subject group, and the number of students, who do not eat carrot and mayonnaise(p<0.05), was determined to be the highest, of all foods surveyed. The averaged daily activity coefficient and the resting energy expenditure shows significant difference(p<0.001) between two groups; was 1.7 and 1.6 and the second was 1,404.3 kcal/day and 1,292.5 kcal/day for the male and female groups, respectively. As the number of attempting to reduce body weight(p<0.001), the amount smoking(p<0.001), or the frequency of drinking alcohol increases, BMI decreases. On the other hand, as body shape satisfaction increases, BMI increases also.
