  • Volatile flavour components rates from aromatic rices were analyzed by Electronic nose systems. In functional group, polar compounds and aldehyde compounds showed much of volatile flavour components than apolar compounds, sulphur compounds and aminated compounds. The profiles of volatile flavour components rates were markedly differents of sen-sing times, amylose content.

  • Indonesian varieties were compared with Korean varieties on three different sowing times, each of which had three different nursery periods, at Suwon, Korea (126$^{\circ}$ 19'E and 37$^{\circ}$ 16'S). Indica-type varieties with exception of late-maturing ones had heading regardless of sowing time and nursery period. As the Korean varieties com-pared with those, the earlier sowing plots with shorter period of nursery gave better result in yields and yield components.

  • Gelatinization properties of heat-moisture treated Olchal(japonica) and Hankangchalbyeo(j x indica) waxy rice starches were compared. The blue value, light transmittance of starch suspension and viscosity in sodium hydroxide solution were similar between two starches. Olchal starch showed lower water binding capacity, swelling power md peak viscosity by amylograph than Hankangchalbyeo starch. Upon heat-moisture treatments all above parameters were decreased. The critical sodium hydroxide concentration for gelatinization was increased by treatments. The initial pasting temperature of Olchal starch was higher than that of Hankarlgchalbyeo. All amylograph reference points increased by the treatments, except the maximum viscosity or 2l% moisture-treated Olchal starch. Starches treated at 18% moisture level showd the highest value of consistency index. The activation energy of consistency index for gelatinized Olchal starch was lower than that for Hankangchalbyeo starch. The heat-moisture treatments had no effect on activation energy.

Variability of Quality Related Characters in the Recombinant Inbred Lines from Milyang 23 and Gihobyeo (밀양23호와 기호벼 교잡 재조합자식계통(RILs)의 품질관련 특성 변이)

  • The rice quality related traits including physico-chemical traits were evaluated with one hundred sixty-four MG RILs derived from the cross between Milyang 23, Indica/Japonica hybrid type, and Gihobyeo, Japonica type. The variation distribution of all traits examined approximately fit normal distribution and transgressive segregants over parents were observed for all traits. The occurrence of such transgression could be associated with the interactions of complementary QTL alleles from two parents. However in this study, it could not be concluded that our results of segregation were due to either complementary gene effects or overdominance of a major gene. These factors should be verified by further studies. Correlations between traits were evaluated by regressing phenotypic values of one trait on those of another traits. There are highly significant correlation between grain thickness with grain width, white core and white belly. But between white belly and alkali digestion value showed highly negative significant correlation. Contents of protein showed highly negative correlation with amylose and Mg/K ratio but showed highly correlation with K and Fat contents. Hardness of cooked rice showed highly correlation with adhesiveness, elasticity, gumminess, chewiness.

Determination of Optimum Timing of Paddy Harvesting Based on Grain Loss and Milling Quality (수호손실과 도정수율을 기초로 한 벼의 수호적기결정에 관한 연구)

  • This experimental work was conducted in order to find out the optimum time of harvest of Japonica-type (Akibare) and Indica-type(Tong-il) rice variety for three harvesting systems by investigating the harvesting losses and milling quality. The study was also concerned about the nature and amount of grain losses incurred during the each sequence of post-harvest technologies, and based on these result, a modification of existing systems giving a minimum grain loss was attempted. Binder, combine, and traditional systems were tested in this study and five grain moisture levels were disposed according to the decrease of grain moisture . The results are summarized as follows ; 1. The total losses of Akibare variety were ranged from 1.1 to 1.5 per cent for the traditional harvesting system , 2.1 to 4.8 per cent for the harvesting system by use of binder, and 2.8 to 4.3 per cent for the harvesting system by use of combine as the grain moisture content was reduced from 24 to 15 percent. Milling recovery of the harvesting system by use of binder, 74.8 ∼75.7 percent, was a little higher as it was compared to that of traditional harvesting system, 74.3 ∼75.0per cent, and that of the harvesting system by use of combine, 73.8 ∼75.0 per cent. Head rice recovery of mechanically dried paddy samples was higher than that of sun-dried paddy samples. 2. The total losses of Tong-il variety were ranged from 3.8 to 5.0 per cent for the traditional harvesting system, 5.2 to 10.0 percent for the system by use of binder, and 3.0 to 5.0 per cent for the system by use of combine as the grain moisture was reduced from 28 to 16 per cent. 3. Milling recovery of Tong-il variety harvested by the traditional harvesting system was 72.3 ∼73.6 percent and it was lower when compared to that of 72.3∼75.0 per cent harvested by binder, and 73.0∼74.6 percent harvested by combine. 4.   • Rheological properties of Shinsunchalbyeo(Japonica) and $Hangangchalbyeo(J{\times}Indica)$ waxy-rice starches gelatinized with thermal or alkali solutions were investigated with rotational viscometer(Brabender Viscotron). The two starches showed Bingham pseudoplastics behavior in $4{\sim}8%$ thermal or alkali gelatinized starch solutions. The shear stress of Hangangchalbyeo starch solution gelatinized with thermal or alkali showed higher values than that of Shinsunchalbyeo starch and the difference of the two varieties gelatinized with alkali showed higher values than that gelatinized with thermal. Consistency index and yield stress values of Hangangchalbyeo starch showed higher than that of Shinsunchalbyeo starch in the two gelatinized methods and the difference of the two varieties gelatinized with alkali showed higher values. And it was higher that the deffendence of consistency index on starch concentration and initial starch concentration of yield stress in the alkali gelatinized samples than those of in the thermal gelatinized ones.

  • This experiment was conducted to study on some morphological characteristics of rice grain and chaff with specific gravity. The size of grain was greater in grains with heavier specific gravity. Indica varieties were large in length, but short in width and thickness of grain, and was thin in grain form and small in volume of grain compared with Japonica variety. The coefficient of variability was high in grains with lower specific gravity. The accumulation of assimilation product was more influenced with width and thickness rather than length of grain. The percentage of fully ripened grain was high in small size variety. The green rice and imperfect grain showed higher distribution ratio in the lower specific gravity. The chaff of less filled grain had higher content of nitrogen and lower content of potassium and sillicate than the filled.

  • The hydration and cooking rate of two rice varieties, Akibare (Japonica) and Milyang 23 (Indica), were investigated in terms of mathematical rate equations. The hydration rate at temperatures of $10{\sim}40^{\circ}C$ was examined by weighing method. The absorption of liquid water by rice grain was directly proportional to the square root of the hydration time. The diffusion coefficient was given by the Arrhenius relation : $D=3.151{\times}10^{-3}\exp\;(-4000/RT)$ for Akibare and $D=5.853{\times}10^{-3}\exp\;(-5700/RT)$ for Milyang 23. Milyang 23 was cooked at a faster rate than Akibare. The activation energies for cooking were in the range of 18 000 cal/mole at $90{\sim}100^{\circ}C$ and 9,000cal/mole at $100{\sim}120^{\circ}C$. However, Milyang 23 showed slightly higher activation energy of cooking at $90{\sim}100^{\circ}C$. Adhesiveness and amylograph viscosities at all reference points for Milyang 23 were higher than those for Akibare.

  • This study was done to find out the effect of seeding seasons of rice varieties on the occurence of sheath blight caused by Corticium sasakii. The results obtained are summarized as follows; 1. The percentage of infected stems and susceptibilities to sheath blight wered ecreased as the transplanting dates were delayed. 2. The susceptibilities to sheath blight of early maturing varieties were high, medium maturing varieties were intermediate and late maturing varieties were least. 3. The percentages of infected stems of Indica X Japonica varieties checked on 28th July were lower than those of Japonica varieties, but the susceptibilities were not significant between them. 4. At all varieties, highly significant correlation was recognized between the susceptibilities and the heading dates. Also relatively high correlation was appeared between the susceptibilities and the accumulated temperatures from 10 days before heading date to 30 days after it. This indicates that the susceptibility was much influenced by high temperature of the latter part of the rice plants growth.
