Studies on the Processing of Rapid- and low Salt-Fermented Liquefaction of Anchovy(Engrulis japonica)(III) - Changes in ATP-related compounds, TMAO, TMA, Creatine, and Creatinine during Fermentation - (저식염 속성 멸치 발효액화물 가공에 관한 연구(III) - 숙성 중 ATP관련화합물, TMAO, TMA, creatine 및 creatinine 함량변화 -)

  • Changes in ATP and related compounds, TMAO, TMA, creatine and creatinine were analyzed to establish the processing conditions for rapid- and low salt-fermented liquefaction of anchovy(Engrulis japonica) extracts during fermentation. Experimental sample A: chopped whole anchovy, adding 20% water, heating at $50^{\circ}C$ for 9 hrs and then adding 10% NaCl. Sample B: chopped whole anchovy, adding 20% water, heating at $50^{\circ}C$ for 9 hrs and then adding 13% NaCl. Sample C: chopped whole anchovy adding 13% NaCl. Sample D: whole anchovy adding 17% NaCl. ATP, ADP, AMP and IMP were broken down during fermentation period, while inosine and hypoxanthine or hypoxanthine were detected in each fermented liquefaction of anchovy. However the amounts of them were varied from collection to collection according to the pretreatment methods. Possibly ATP and their related compounds will not make a great contribution to the umami taste in fermented liquefaction of anchovy. The contents of TMAO were decreased during fermentation period, ranging from 3 to 15 mg/100g in the fermented liquefaction of anchovy after 180 days. The TMA contents were increased slowly during fermentation period, ranging from 60 to 114 mg/100g in the 180 days specimens, however their contents were varied from sample to sample. The contents of creatine and creatinine were increased during early fermentation period, and then they were decreased in the last period. As for distribution of nitrogen in the anchovy extracts, the contribution of creatine and creatinine to the extractive nitrogen was occupying 6.8, 5.7, 4.6 and 5.7% in the experimental sample A, B, C and D, respectively. The contribution of ATP and related compounds to the extractive nitrogen was occupying 2.1, 2.4, 2.2 and 2.7% in the experimental sample A, B, C and D, respectively. The contribution of TMAO and TMA to the extractive nitrogen was very low as they are occupying $0.7{\sim}1.2%$ in the four experimental samples.

Comparison of glucose, lactate, and nucleotide degradation products content of cooked Hanwoo and Australian beef steaks by internal temperature (가열 한우육 및 호주산우육 스테이크에서 심부온도에 따른 glucose, lactate 및 핵산 분해 물질 함량 비교)

  • This study was conducted to compare the glucose, lactate, and nucleotide degradation products content of cooked beef steaks from Korean Hanwoo (quality grade: 1) and Australian cattle (Bos indicus, grain-fed for 100 d) by internal temperature. The loins (M. longissimus dorsi) and top rounds (M. semimembranosus) from two cattle breeds were cut into about 2 cm thickness and then cooked in a $180^{\circ}C$ electronic oven until internal temperature attained to 50, 70, or $90^{\circ}C$. Regardless of internal temperature, glucose content was higher (P<0.05) in cooked loin and top round steaks from Hanwoo compared to those from Australian cattle. Lactate content was shown to be lower (P<0.05) in cooked steaks from Hanwoo than in those from Australian cattle. Lower (P<0.05) hypoxanthine and higher (P<0.05) guanosine 5'-monophosphate, inosine 5'-monophosphate, inosine contents were observed in cooked steaks from Hanwoo. Furthermore, glucose content tended to be decreased by internal temperature but nucleotide degradation products content was not changed by internal temperature. Therefore, these findings suggest that cooked Hanwoo beef steaks had higher flavor precursors related to sweet and umami tastes than cooked Australian beef steaks

  • Level of nitrogenous compounds in dried shellfish related to the formation of flavors during processing and storage was investigated. Fresh samples of blue mussel, short-necked calm and pacific oyster showed relatively low levels of ATP, ADP and AMP, but high levels of iMP and inosine. Relatively high content of TMAO in fresh samples was markedly reduced in the samples broiled samples, but TMA content was rather elevated in the samples broiled, which was a lowered result of TMAO content. The degree of reduction of TMAO and enhancement of TMA contents was relatively small in the hot-air dried samples during storage periods. Glycinebetaine content in fresh samples was slightly decreased by boiling and broiling. Contrast to glycinebetaine content, hormaline and trigonelline contents were severely reduced by boiling and broiling. Twenty-nine kinds of amino acids and their derivatives were identified in the sample of blue mussel, short-necked calm. Among them, glycine, alanine, arginine, glutamic acid and lysine were major amino acids, but contents of these amino acids was greatly decreased in the samples after drying and boiling processes.

  • This study was designed to explore the effectiveness of education to improve self-care of stroke patients with three types of charactor health locus of control and constitution. A total of 56 patients were selected by convenience sampling at one oriental hospital. The teaching of self-care was conducted by the researcher. The self-care performance was measured for 10 days. The data were analyzed using t-test, ANOVA and Scheffe method as post hoc test. The results of this study are as follows : 1. The self-care performance by patients' characteristics : Age and education had impact on the self-care performance. The level of self-care performance of young and high educated patients was high, gender, religion, occupation, monthly income, and the paralyzed side, however, didn't have influence on the self-care performance. 2. The self-care performance of patients with three types of constitution : There was no statistical significance on the self-care performance of patients group by constitution. However, average score of self-care performance of patients with So-Um was high. 3. The self-care performance of patients with three types of health locus of control : There was no statistical significance on self-care performance of patient group by health locus of control. 4. The correlation between the constitution and the health locus of control : There was no statistical significance on the introverted and chance health locus of control of patients with three types of constitution. However, there was a statistically significant relationship between the powerful others health locus of control and So-Yang. Even though there was no statistically significant self-care performance of patients with So-Um, there was a clinical significance on the high score of self-care performance of patients with So-Um as compared with the self-care performance of the patients. The health locus of control didn't have influence on the self-care performance of patients. There was a statistically significant relationship between the powerful others health locus of control and So-Yang.   • The purpose of this study was to understand the labor division between men's housework and market work and to research the change of men's contribution to housework. And it was also examined what kinds of valuables work on a change in men's market work and housework. The information about men's change in the labor division was collected from the biggest 5 news papers in Korea for last five years for this study. And either men's new participation trend to household work did. Words searched for this study were men, labor, family, home, housewife, work, household work, father etc. Korean men have experienced a overloaded breadwinner role and have worked most in the world since 1960s. But Korean men's working time was continuously decreased a little every year. As Korean Companies had fired many worker during IMP economic crisis period, Korean men had to work more than before because of decreased fellows and they should have concentrated on their work at the sacrifice of private life and family-sharing time. On the other hand, some men were started to participate to do housework as a results of long-unemployment and early retirement after this periods. 5 day working system be in forced gradually since 2003 especially make men come back home and interest on housework. So Korean men's housework participation is gradually increasing by the practical application of sex-equitable politics such as 5 day working system and men's suspension regime for baby care. father's increased participation to children education and care, men's new family-oriented life style, dual-sexuality education system, and socially changed perception to husband housemaker. These interrelated trends demands us to shape a new labor division pattern in the family that make change the breadwinner/homemaker conception by the gender role. Now, all of family, men, women, and children have to join housework. It would help women, men, and all families make more human and equitable relationship.

  • 21세기의 벽두부터 국내외적으로 활발히 논의되고 있는 나노기술에 대한 정의를 생각해보는 것으로부터 우리가 나아갈 방향을 살펴보고자 한다. 나노기술이란, 원자 하나 하나 혹은 분자단위의 조작을 통해 1~100nm정도의 범위 안에서 근본적으로 새로운 물질이나 구조체를 만들어 내는 기술을 말한다. 즉 앞으로 우리는 경험해 보지 못한 새로운 현상에 대한 이해를 할 수 있어야 하고, 새로운 물질 자체를 다룰 수 있는 방법이 우리가 해야 할 구체적인 일이 될 것이란 말이 된다. 뿐만 아니라 나노기술은 종래의 정보.통신.전자 분야에서 주로 추구하던 마이크로화와 달리 재료, 기계, 전자, 의학, 약학, 에너지, 환경, 화학, 생물학, 농학, 정보, 보안기술 등 과학기술 분야 전반을 위시하여 사회분야가지 새로운 인식과 철학적인 이해가 필요하게 되었다. 21세기를 맞은 인류가 나아갈 방향을 나노세계에 대한 도전으로 보아야 하며, 과학기술의 새로운 틀을 제공할 것 임에 틀림 없다. 그러나, 이와 같은 나노기술의 출발점을 살펴보면 VLSI기술로 통칭할 수 있는 마이크로전자소자 기술이란 점이다. 국내의 VLSI기술은 메모리기술이라고 해도 과언이 아닐 것이다. 문제는 종래의 메모리기술은 대규모 투자와 집중적인 인력양성을 통해서 세계 최고 수준에 도달 할 수 있었다. 그러나 여기까지 오는 동안 사식 우리는 선진국의 뒷꽁무니를 혼신의 힘을 다해 뒤쫓아 온 결과라고 보아도 틀리지 않는다. 즉, 앞선자를 보고 뒤쫓는 사람은 갈방향과 목표가 분명하므로 최선을 다하면 따라 잡을 수 있다. 그런데 나노기술은 앞선 사람이 없다는 점이 큰 차이이다 따라서 뒷껑무니를 쫓아가는 습성을 가지고는 개척해 나갈 수 없다는 점을 깨닫지 않으면 안된다. 그런 점에서 이 시간 나노기술의 국내외 현황을 살펴보고 우리가 어떻게 할 것인가를 생각해 보는데 의미가 있을 것이다.하여 분석한 결과 기존의 제한된 RICH-DP는 실시간 서비스에 대한 처리율이 낮아지며 서비스 시간이 보장되지 못했다. 따라서 실시간 서비스에 대한 새로운 제안된 기법을 제안하고 성능 평가한 결과 기존의 RICH-DP보다 성능이 향상됨을 확인 할 수 있었다.(actual world)에서 가상 관성 세계(possible inertia would)로 변화시켜서, 완수동사의 종결점(ending point)을 현실세계에서 가상의 미래 세계로 움직이는 역할을 한다. 결과적으로, IMP는 완수동사의 닫힌 완료 관점을 현실세계에서는 열린 미완료 관점으로 변환시키되, 가상 관성 세계에서는 그대로 닫힌 관점으로 유지 시키는 효과를 가진다. 한국어와 영어의 관점 변환 구문의 차이는 각 언어의 지속부사구의 어휘 목록의 전제(presupposition)의 차이로 설명된다. 본 논문은 영어의 지속부사구는 논항의 하위간격This paper will describe the application based on this approach developed by the authors in the FLEX EXPRIT IV n$^{\circ}$EP29158 in the Work-package "Knowledge Extraction & Data mining"where the information captured from digital newspapers is extracted and reused in tourist information context.terpolation performance of CNN was relatively better than NN.콩과 자연 콩이 성분 분석에서 차이를 나타내지 않았다는 점, 네 번째. 쥐를 통한 다양섭취 실험에서 아무런 이상 반응이 없었다는 점등의 결과를 기준으로 알레르기에 대한 개별 검사 없이 안전한

Growth and Lodging of Rice as Affected by Growth Regulators under Different Midsummer Drainage Times in Puddled-soil Drill Seeding (벼 무논골뿌림 재배시 중간낙수 및 생장조절제 처리가 생육 및 도복에 미치는 영향)

  • This experiment was carried out to elucidate the effect of the midsummer drainage times and some growth regulators on lodging characters, lodging and yield in puddled-soil drill seeding in rice. Dongjinbyeo, the mid-late maturing rice variety was seeded at May 11 by seeding machine with 4cm of furrow depth. Experimental plots were divided two main treatment without midsummer drain and two time drains (30 and 50 days after seeding), Inabenfide(IBF) was applied 40days before heading(DBH) and IBP was applied at 30DBH, respectively. Culm length was shorten, the wall of N$_4$ was thicken, and the breaking weight was increased at two time drainage and growth regulators applied in order of Inabenfide, IBP, and Control. Lodging wasn't occurred at two time drainage but it was occurred at none drainage in the order of Control, IBP, and Inabenfide applied. Yield was higher at two time drainage compared with none drainage and higher in order of Inabenfide, IBP and Control in none drainage but wasn't significantly different among growth regulators applied in two time drainage. Therefore, two times midsummer soil drying is recommendable management method for puddled -soil drill seeding of rice. The Expression of Genes Related to Egg Production in the Liver of Taiwan Country Chickens

  • The purpose of this study was to detect expression of genes related to egg production in Taiwan Country chickens by suppression subtractive hybridization. Liver samples of mRNA extraction from two Taiwan Country chicken strains (L2 and B), originated from the same population but with very distinct egg production rates after long-term selection for egg and meat production respectively. Two-way subtraction was performed. The hepatic cDNA from the low egg production chickens (B) was subtracted from the hepatic cDNA from the high egg production strain (L2). The reversed subtraction (L2 from B) was also performed. The resulting differentially expressed gene fragments were cloned and sequenced. We sequenced 288 clones from the forward subtraction and 96 clones from the reverse subtraction. These genes were subjected to further screening to confirm the differential expression between the two genetic breeds of chickens. The apolipoprotein B (apoB) was expressed to a greater extent in the liver of the L2 than in the B line chickens. The 5-aminoimidazole- 4-carboxamide ribonucleotide formyltransferase/IMP cyclohydrolase (PURH) was expressed to a greater extent in the liver of the B than in the L2 strain chickens. We demonstrated that both apoB and PURH were more highly expressed in the liver than that in other tissues (muscle, ovary, and oviduct) in laying Taiwan Country chickens. Taken together, these data suggest that after the selection for egg production, expression of apoB and PURH genes were also changed. Whether the changed expression of these genes is directly related to egg production is not known, but these two genes may be useful markers for egg laying performance in Taiwan Country chickens.

Mapping, Tissue Distribution and Polymorphism of Porcine Retinol Binding Protein Genes (RBP5 and RBP7)

  • The retinoids (vitamin A and its derivatives) play a critical role in vision, growth, reproduction, cell differentiation and embryonic development. Using the IMpRH panel, porcine cellular retinol binding protein genes 5 and 7 (RBP5 and RBP7) were assigned to porcine chromosomes 5 and 6, respectively. The complete coding sequences (CDS) of the RBP5 and RBP7 genes were amplified using the reverse transcriptase polymerase chain reaction (RT-PCR) method, and the deduced amino acid sequences of both genes were compared to human corresponding proteins. The mRNA distributions of the two genes in adult Wuzhishan pig tissues (lung, skeletal muscle, spleen, heart, stomach, large intestine, lymph node, small intestine, liver, brain, kidney and fat) were examined. A total of nine single nucleotide polymorphisms (SNPs) were identified in two genes. Three of these SNPs were analyzed using the polymerase chain reaction-restriction-fragment length polymorphism (PCR-RFLP) method in Laiwu, Wuzhishan, Guizhou, Bama, Tongcheng, Yorkshire and Landrace pig breeds. Association analysis of genotypes of these SNP loci with economic traits was done in our experimental populations. Significant associations of different genotypes of $RBP5-A/G^{63}$, $RBP5-A/G^{517}$ and $RPB5-T/C^{intron1-90}$ loci with traits including maximum carcass length (LM), minimum carcass length (LN), marbling score (MS), back fat thickness at shoulder (SBF), meat color score (MCS) and hematocrit (HCT) were detected. These SNPs may be useful as genetic markers in genetic improvement for porcine production.

Quality Properties of Fermented Squid Seasoning Manufactured with Fermentation Accelerator (발효촉진제를 첨가하여 제조한 오징어 조미료의 품질특성)

  • Squid was fermented with fermentation accelerators to develop a natural complex seasoning. The quality properties of fermented squid were determined at different fermentation periods. Squid fermented with 10% Aspergillus oryzae koji for 10 days had the highest amino-N, acidity, and total viable cell content during fermentation periods, whereas volatile basic nitrogen content and pH were the lowest. Based on the amino-N content, squid with 10% koji fermented for 10 days was selected for further analyses. The inosine and glutamic acid contents of the fermented squid were highest innucleotide composition, their related compounds, and free amino acids, respectively. The $IC_{50}$ values of the fermented squid on DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging and ${\alpha}$-glucosidase inhibitory activities were 6.20 and 4.41 mg/mL, respectively. Based on the results of a sensory evaluation, the fermented squid seasoning was similar to other natural complex seasonings such as anchovy, cowmeat, and fisheries seasonings.
