식이조성(食餌組成)에 따른 식염섭취량(食鹽攝取量)에 관(關)한 연구(硏究) (Effect of Sodium Chloride Intake Related to the Composition of the Diet)

  • Sodium chloride plays an important role as the main condiment at daily meal. It is well known that humans require sodium chloride as an essential nutrient to keep the homeostasis of electrolytes. The amounts of salt intake may be a reflection of geography, culture and food habit rather than necessity. Lee has reported (1962) that Koreans ingest high amounts of sodium chloride in their meals, with an intake of excess carbohydrate (80-90% of total Calories) and low protein in their diet. This includes large amounts of rice, Kimchi and other fermented soybean products common in the Korean diet. This investigation was designed to study the dietary relations of sodium chloride to other nutrients in the Korean diet. Twenty four albino male rats, weighing from 290-300g, were divided into four dietary groups according to the amounts of carbohydrate, protein and fat in the basal diet. Each diet contained a rice powder as a carbohydrate source. Diet I was a control diet, Diet II, low protein, Diet III, low protein and low fat diet and Diet IV, low fat diet. All rats were provided with 3% sodium chloride solution. Diet and salt solution were given ad libitum. The experiment was carried out for 9 weeks during which time the body weight, the food intake, and 3% sodium chloride solution consumption were determined. At the 9th week, the urine was collected the blood sample from the artery of each rat for the analysis of sodium and potassium and other chemical studies. The rats were sacrificed and the kidney, adrenal, liver and spleen were measured, and observed changes of the pathological tissue in the kidney and adrenal. The results were summarized as follows: 1) The growth rate was higher in Diet I than in the other experimental diets (II, III and IV) after 4 weeks. There was no significant difference found between the experimental Diets II, III and IV. 2) The daily food intake was greater in the experimental diets II, III and IV than in the control diet. However, there was no difference among the high carbohydrate diets Diet II, III and IV. 3) The daily water (3% sodium chloride solution) intake was also greater in the Diets II, III and IV, than in the control diet. However, there was no difference between Diets II, III and IV. 4) The concentration of sodium and potassium in the blood were within the normal range in all diets. 5) The amount of sodium chloride in the urine was significantly greater in Diets II, III and IV than in the control diet. Diets II, III, IV had a larger amount of sodium solution consumption. 6) Observation of pathological tissue in the experimental diets found a cell proliferation in the glomerlulus of the kidney, while such change was not found in the control diet.

Influence of Rapeseed Meal on Growth Performance, Blood Profiles, Nutrient Digestibility and Economic Benefit of Growing-finishing Pigs

  • This study was conducted to investigate the influence of dietary rapeseed meal (RSM) on growth performance, blood profiles, nutrient digestibility and economic benefit of growing-finishing pigs. A total of 120 growing pigs ($[Yorkshire{\times}Landrace]{\times}Duroc$) with an initial body weight (BW) $29.94{\pm}0.06kg$ were used in this experiment. Pigs were randomly allotted into 1 of 5 treatments in a randomized complete block design and 6 replicates with 4 pigs per pen. Treatments were divided by dietary RSM supplementation levels (0%, 3%, 6%, 9%, or 12%) in growing-finishing diets. A linear decrease (p<0.05) of BW and average daily gain (ADG) were observed at 13th wk of finishing and overall periods of pigs. Additionally, gain-to-feed ratio (G/F) tended to decrease by dietary RSM supplementation in growing-finishing diets (linear, p = 0.07 and quadratic, p = 0.08). Concentrations of serum triiodothyronine and thyroxine were not influenced by dietary RSM treatments whereas thyroid gland and liver weight were increased at 13th wk of finishing period (linear, p<0.05; p<0.01) by increasing dietary RSM supplementation level. In blood profiles, serum total cholesterol and low density lipoprotein cholesterol concentrations were not differed by dietary treatments at 13th wk of finishing period whereas concentration of serum high density lipoprotein cholesterol was affected by the supplementation level of RSM, resulting in a linear RSM level responses (p<0.05). Serum blood urea nitrogen concentration tended to decrease (linear, p = 0.07; p = 0.08) at 6th wk of growing and 13th wk of finishing periods and digestibility of dry matter tended to decrease by dietary RSM (linear, p = 0.09). Crude protein, crude fat and nitrogen retention, whereas, were not affected by dietary RSM supplementation level. In the economic analysis, feed cost per weight gain was numerically decreased when RSM was provided up to 9%. Consequently, RSM could be supplemented to growing-finishing diets up to 9% ($3.07{\mu}mol/g\;Gls$) without detrimental effects on growth performance of growing-finishing pigs.

전주지역 중, 노년층의 생활습관과 건강상태 조사(II) (A Study of Health-related Habits, Dietary Behaviors and the Health Status of the Middle-aged and the Elderly Living in the Chonju Area (II))

  • This study investigated the anthropometric and biochemical indices, and the health and nutritional factors influencing the two indices among 194 middle-aged and elderly subjects (108 middle-aged and 86 elderly) residing in a medium sized city for more than 10 years. In the examination of their dietary habits, 8.3% of the middle-aged subjects and 14.0% of the elderly subjects had two meals a day, and more female subjects had two meals per day. Of the subjects who ate meals at regular times, 75.0% were middle-aged and 79.1% were elderly, and the degree of irregularity of meals was greater for female subjects. The study of the dietary behavior of the subjects indicated that 71.3% and 66.3% of the middle-aged and elderly, respectively responded that the amount of food in each meal was sufficient. The subjects ate alone comprised 19.7% of the middle-aged females and 31.5% of the elderly females. The prevalence of smoking among the subjects was 28.1% for the middle-aged, 18.8% for the elderly male and 7.4% for the elderly females. The percentage of the subjects who drank alcohol was 34.4% of the middle-aged males and 13.2% of the middle-aged females. Slightly less than half of the subjects exercised more than once a week, with the male subjects showing a higher rate than the female subjects. The average body mass indices (BMI) were 24.5 and 24.6 for the middle-aged male and female, respectively, and 22.6 and 24.0 for the elderly male and female, respectively. BMI assessment showed that underweight subjects (BMI < 20) comprised 3.7% of the middle-aged, 14.0% of the elderly, and that 40.7% of the middle-aged and 24.4% of the elderly were overweight (25 < BMI < 30) , and 0.9% of the middle-aged and 1.2% of the elderly were classified as obese (BMI $\geq$ 30) . A waist/hip ratio (WHR) greater than 0.8 was found in 89.5% of the middle-aged females and 90.7% of the elderly females, showing high abdominal fat deposition in the majority of females. The average systolic blood pressure of females was 121.1 $\pm$ 17.1 mmHg for the middle-aged and 129.6 $\pm$ 21.3 mmHg for the elderly subjects. The systolic blood pressures showed a significantly difference between the two age groups. Those defined as anemic subjects based on hemoglobin values comprised 13.0% of the middled-aged group and 16.3% of the elderly group. There was a tendency for higher fasting glucose levels among the elderly subjects. An increase in total plasma cholesterol levels with age was shown. The female subjects had higher cholesterol levels than the males'The study of the correlation between the daily habits and health status showed that the amount of food eaten at each meal, the frequency of eating out, and the use of dietary supplements appeared to influence BMI, WHR, the plasma triglyceride and plasma cholesterol levels; omitting one meal had a positive correlation with the systolic blood pressure and plasma cholesterol. These results suggest that desirable dietary habits and concerns for health are contributing factors for maintaining good health, as indicated by normal blood lipid levels.

원주지역 초등학교 학생의 학교급식유형에 따른 영양섭취실태 조사 (A Study on Dietary Intakes of Elementary School Children According to School Foodservice Type in Won-Ju)

  • This study was carried out to survey dietary intakes of 739 elementary students, 4-6grades, in Won-Ju area, in 1998, to enhance the effect of school foodservice. The results were as follows : 1. Most investigated students had nuclear family with one brother or one sister. 2. The average height of boys and girls was $141.0{\pm}7.7cm\;and\;141.4{\pm}8.0cm$, and the average weight of them was $35.7{\pm}8.5kg\;and\;36.1{\pm}8.5kg$, respectively. There was no significant difference between boys and girls. 3. The rates of obesity were 12.2% in urban, 7.4% in rural and 0% in remote rural area by Rohrer index and 22.9% in urban 13.9% in rural and 0% in remote rural area by the rate based on standard weight. 4. All nutrients intake of investigated students were sufficient according to recommended dietary allowances. All nutrients intake of boys were higher than those of girls. Calcium intake of children with well educated mother was higher than that of children with poorly educated mother. Children in remote rural area had lower carbohydrate, calory and calcium intake than those in other areas. 5. Students without breakfast had lower protein and iron intake and higher calory from snack than those with breakfast. 6. Students who thought themselves to be obesity had low intake of carbohydrate, total calory and calory from snack and students with regular exercise had high intake of protein, iron, calcium and calory from snack. 7. Students with unbalanced diet, snack intake in large quantities and irregular meal had lower protein, fat, iron and calcium intake and higher calory from snack than other students. As a result, Students without breakfast often had lower all nutrients except calory from snack than other students, significantly. Problems of nutrients intake of elementary students in Won-Ju area were high rate of obesity, high intake of protein, unbalanced nutrients intake of students without meal or students with excessive eating and limited calcium intake of students with poorly educated mother. It is important to confirm desirable food habits for balanced nutrients intake in all areas and to increase calcium intake of students in remote rural area.

Ileal Digestibility of Amino Acids in Conventional and Low-Kunitz Soybean Products Fed to Weanling Pigs

  • An experiment was conducted to determine the standardized ileal digestibility (SID) of amino acids (AA) in four sources of full-fat soybeans (FFSB) and in one source of soybean meal (SBM). The FFSB had different concentrations of trypsin inhibitor units (TIU) and included two sources of conventional FFSB, and two sources of a soybean variety that was selected for a reduced concentration of the Kunitz trypsin inhibitor. The conventional FFSB was either low temperature-processed (LT-FFSB-CV; 37.7% CP, 35.4 TIU/mg) or high temperature-processed (HT-FFSB-CV; 40.5% CP, 4.4 TIU/mg). The low-Kunitz FFSB was also either low temperature-processed (LT-FFSB-LK; 36.2% CP, 23.5 TIU/mg) or high temperature-processed HT-FFSB-LK; (38.2% CP, 4.0 TIU/mg). The SBM contained 47.5% CP and 3.20 TIU/mg. Twelve weanling barrows (initial BW: $11.1{\pm}1.3\;kg$) were fitted with a T-cannula in the distal ileum. Pigs were allotted to a replicated $6{\times}6$ Latin square design with six diets and six periods per square. Five diets were prepared using each of the soybean sources as the only source of AA in the diet. An N-free diet was also included in the experiment to measure basal endogenous losses of AA. The two low temperature-processed FFSB had lower (p<0.05) AID and SID values for all indispensable AA than the two high temperature-processed FFSB and SBM. The SID values for all indispensible AA except Trp were greater (p<0.05) in LT-FFSB-LK than in LT-FFSB-CV, but the SID of AA in HT-FFSB-CV and HT-FFSB-LK were not different. The SID of AA in SBM were not different from the SID in HT-FFSB-CV and in HT-FFSB-LK. Results of this experiment show that a reduction of the TIU from 35.4 to 23.5 TIU/mg will improve the SID of AA, but this reduction is not sufficient to completely ameliorate the negative impact of trypsin inhibitors. Results also show that the SID of AA in high temperature-processed FFSB is similar to that in de-hulled SBM.

엿밥의 조성 및 산유량과 유성분 조성에 미치는 영향 (Composition of Corn Taffy Residue and Its Dietary Effects on Milk Production and Composition of Holstein Cows)

  • 본 연구는 전통당류식품인 엿 제조시 발생하는 엿밥에 대한 영양가치 평가와 착유우에서의 유량 및 유조성분에 미치는 영향을 규명하고자 실시하였다. 엿밥은 잔류하는 효소 및 당도 함량이 높고, 단백질과 지방 함량이 옥수수 글루텐에 필적 할 만큼 영양적 가치가 우수한 것으로 나타났다. 착유우에게 완전배합사료 형태로 엿밥을 1, 3 및 6% 급여하였을 때 고능력우군(평균유량 31.3 kg)에서는 대조구에 비해 유량 증진 효과가 인정되었으며, 엿밥 3% 군에서는 유지율도 증가하였다(p<0.05). 저능력우군(평균 유량 18.9 kg)에서도 엿밥 1 및 6% 첨가군에서 유량이 증가하였으며(p<0.05) 엿밥 3%군에서는 유단백질 함량도 증가하였다(p<0.05). 그러므로 우유 생산 시 엿밥의 적극적인 활용은 축산식품을 보다 저렴하게 공급하는데 도움이 될 수 있을 것으로 판단된다.

연령에 따른 경기 지역 종합검진 영양 상담자의 식습관과 식이 섭취 패턴 - 2007 건강증진센터 자료 분석 - (Patterns of Food Habits and Food Intake by Age - Base on the Nutrition Counseling Data of Medical Health Examination -)

  • The purpose of this study was to analyze the dietary habits and food intake by age, based on the nutrition counseling data of medical health examination. The subjects were 5,511 adults(3,139 males and 2,372 females) who took comprehensive medical test in Gyeonggi area, and they were evaluated from January 1, 2007 to December 31, 2007. Survey samples were divided by age groups : 30>, 30~39, 40~49, 50~59, 60~69, 70{$\leq}$ years. The subjects were composed of 57% male and 43% female. The results showed that the dietary habits of ${\geq}$50 group were relatively good. On the other hand, in 30> yrs group had more dietary habit problems, they had irregular meals and the ratio of skipping breakfast was high. And they frequently had meals out. regularity of meals, eating breakfast was higher in ${\geq}$70 yrs groups than in other groups(p<0.001). frequency of overeating was higher in 30>, 30~39${\geq}$yrs groups than in other groups(p<0.001) and speed of eating meal were fast in 50~59 yrs groups than in other groups(p<0.01). For foods with high cholesterol and fat, it was shown that the older the subject, the fewer the frequency of consumption(p<0.001). For kimchi and salty foods, food intake showed a negative relationship with age(p<0.001), whereas for fresh vegetables and high-calcium fish, it showed a positive relationship(p<0.001). All in all, it was shown that as the people get older, their dietary habits tend to get more appropriate. In conclusion nutrition education based on their dietary habit by age should be taught, so that people have a healthy dietary habit and food intake for the rest of their life.

Dimethylhydrazine으로 처리한 쥐에서 식이의 Calcium 함량과 지방종류에 따라 혈장 Cholesterol 수준과 Cholesterol 대사에 미치는 영향 (Effect of Dietary Calcium and Fat on Plasma Cholesterol Level and Cholesterol Metabolism in 1, 2-dimethylhydrazine-treated Rats)

  • The study was designed to observe the effect of dietary calcium and fats on plasma cholesterol level, hepatic microsomal fluidity and HMG-CoA reductase activity as well as the excretion of fecal bile acids and neutral sterols in 1, 2-dimethylhydrazine(DMH)-treated rats. Male Sprague Dawley rats, at 7 weeks of age, were divided into 2 groups, 0.3% and 1.0% Ca levels and each group again subdivided into 2 groups of corn oil and perilla oil. Each rat was intramuscularly infused with DMH for 6 weeks to give total dose of 180mg/kg body weight and also fed experimental diet containing 15%(w/w) different fit and Ca(0.3% or 1.0%) for 20 weeks. High dietary calcium(1.0%) did not significantly influence on plasma cholesterol as well as hepatic microsomal fluidity and HMG CoA reductase activity, but significantly reduced the excretion of total bile acid per gram of faces and increased the excretion of total neutral sterol. However, high dietary Ca reduced the excretion of secondary bile acid(deoxycholic and lithocholic acids) which was known as promoter for colon cancer. Perilla oil rich in n-3 ${\alpha}$-linolenic acid significantly decreased plasma cholesterol by increasing hepatic microsomal fluidity compared with corn oil, but did not influence on HMG CoA reductase activity. Perilla oil did not influence on fecal excretion of total and primary bile acids, but reduced the excretion of secondary bile acids. Therefore, it could be recommended to consume more fish product and food rich in calcium and use more perilla oil in meal preparation to prevent from coronary hear disease and colon cancer especially when high fit diet has been practiced. 비만어린이와 정상체중 어린이의 행동 특성에 관한 문헌적 고찰 (Do Obese Children Exhibit Distinguishable Behaviours from Normal Weight Children?-Based on Literature Review)

  • Since obesity has been a crucial issue regarding children's health in Korea, numerous studies have been conducted. However, it is difficult to locate studies that can help researchers and/or medical professionals who want to study behavioral differences between obese and normal weight (non-obese) children. The collected literature about obese childrens behaviors were accumulated by performing 'key word' searches from several web engines: 'obesity' 'children obesity' 'behavior' 'habit' 'eating behavior or habit' 'exercise' 'physical activity' and 'daily behavior'. The information was extracted and the behaviors were reviewed utilizing 30 papers that revealed any differences from normal weight children with at least p .05 level of significance. According to those studies, the obese children tended to skip meals more often as a method of losing weight. They also have an increased appetite, eat larger portions and rarely leave food on their plates. The obese children prefer to eat high fat, high calorie foods and eat faster than their normal weight counterparts. Also, the children usually eat alone and eat at irregular meal times. Beside the behaviors related to the standard three meals a day, obese children have high preferences for snacking. The children reported that with pocket money they usually eat certain types of snacks without parent approval. The children stated that they exercise more on a regular basis. However, when asked about their participation they were not likely to engage actively. Meanwhile, they tend to spend free time doing sedentary activities such as watching TV or playing on the computer. Since these studies used self -reported questionnaires with a small sample, size there may be difficulty in forming a basis about obese children's behaviors. Nevertheless, these findings are in accordance with other studies conducted in local as well as western countries. In conclusion, obese children have different daily behaviors or routines from normal weight children. It is recommended that altering these behavioral patterns to match those of normal weight children should be encouraged.

청보리 종실의 품종별(우호, 영양, 유연) 사료가치 평가 (The Nutritive Value of Grains from Barley Cultivars (Wooho, Youngyang, Yuyeon))

  • 본 연구는 농촌진흥청에서 개발한 가축용 동계 사료작물인 청보리 품종별 종실 3종(우호, 영양 및 유연)을 이용하여, 일반성분 및 각종 영양학적 가치분석을 통해 사료가치를 평가하여, 국내 농후사료의 대부분을 차지하고 있는 에너지 사료인 수입옥수수의 대체 가능성을 조사하고자 실시하였고, 이와 함께 비교 할 수 있는 수입대두박(인도산)과 수입옥수수(미국산)를 동일한 조건으로 분석하였다. 일반성분 조사에서 청보리 품종별 종실의 조단백질 함량은 옥수수에 비해 높았고, 조지방 함량은 대두박에 비해 높았다. 대사에너지에서 청보리 품종별 종실이 옥수수 보다는 낮았지만 대두박 보다 높았다. 펩신 소화율(in-vitro)은 대두박이 가장 높았고, 옥수수와 청보리 품종별 종실은 유사하였다. 지방산 조성에서 청보리 종실이 대두박와 옥수수에 비해 포화지방산의 비율은 높고 불포화지방산과 필수지방산은 낮았다. 하지만, 오메가 3 지방산인 리놀렌산(18:3)은 옥수수에 비해 청보리 품종별 종실이 높았다. 구성아미노산에서 청보리 품종별 종실의 Lycine 함량이 대두박에 비해 낮지만, 옥수수에 비해 높았으며, 무기질 함량에서는 청보리 품종별 종실이 대두박에 비해 낮았지만, 옥수수에 비해서는 높았다. 이상의 결과에서 청보리 종실은 수입옥수수를 대체할 가능성이 충분한 것으로 예상되며, 청보리 품종간에서는 큰 차이를 보이지 않았으나, 조단백질 함량과 Lysin 함량이 높고, 대사에너지 함량과 무기질 성분이 풍부한 삼차망(hood spike type)의 유연보리가 가장 좋은 것으로 예상된다.
