고지방 물속 콩기름 에멀션의 지방질 자동 산화에서의 바질 추출물과 철 첨가 효과 (Effects of Basil Extract and Iron Addition on the Lipid Autoxidation of Soybean Oil-in-Water Emulsion with High Oil Content)

  • Purpose: Lipid autoxidation of a soybean oil-in-water emulsion with high oil content was studied under after basil extract and/or iron addition. Methods: The emulsion consisted of tocopherol-stripped soybean oil (40 g), citrate buffer (60 g, pH 4.0), and/or $FeSO_4$ (0.5 mg) with 75% ethanol extract (200 mg/kg) of basil (Ocimum basilicum). Lipid oxidation was evaluated using headspace oxygen content, hydroperoxide contents, and p-anisidne values of the emulsion. Polyphenol compound retention in the emulsion during oxidation was determined spectrophotometrically. Results: Addition of basil extract significantly (p<0.05) decreased reduced hydroperoxide contents of the emulsion, and iron significantly (p<0.05) increased anisidine values and decreased oxygen contents. Co-addition of basil extract and iron showed significantly (p<0.05) lower reduced hydroperoxide contents in the emulsion than compared to those of the emulsion with added iron and the control emulsion without basil extract nor or iron. During the emulsion oxidation, polyphenol compounds in the emulsion with added basil extract were degraded, but more slowlywhich was slowed degraded in the presence of iron. Conclusion: The iIron increased the lipid oxidation through hydroperoxide decomposition, and basil extract showed antioxidant activity through radical-scavenging and iron-chelation. Polyphenol degradation was decelerated by iron addition, which suggested suggests iron chelation may be more preferred topreferentially activated over radical scavenging in the antioxidant action by of basil extract in the oil-in-water emulsion with high oil content.

식이 Cholesterol의 수준에 따라 우유가 흰쥐의 Cholesterol 대사에 미치는 영향 (Effect of Milk on Cholesterol Metabolism of Rats with Different Levels of Dietary Cholesterol)

  • The effect of milk in low and high cholesterol diet was invesigated on serum cholesterol metabolism and lipid contents of serum, aorta, liver of rats. Weanling male Sprague-Dawley rats were divided into low(0.01% w/w) and high(1.01% w/w) cholesterol-diets groups. Low cholesterol groups subdivided into four groups ; control group was given water and three milk groups were given low heat milk(LM), ultra-high heat milk(HM), and powder milk(PM), respectivily, instead of water. High cholesterol groups were consisted of three groups ; control, LM, and HM groups. After feeding these experimental diets for six weeks, lipid levels were measured in serum and tissure and dried feces were analyzed for neutral and acidic sterols. Results obtained from this study are as follows : 1) Nutrient intakes, body weight gains and aorta weights did not differ among groups, but liver weights were higher in high cholesterol fed rats than low cholesterol fed rats. 2) Serum protein contents were increased independently by intakes of high cholesterol and milk. 3) Serum total cholesterol and triglyceride levels were increased but phospholipid levels and HDL-cholesterol/total-cholesterol ratios were decreased by high cholesterol in diet. And milk supplementation decreased serum total cholesterol and triglyceride levels but increased phospholipid levels and HDL-cholesterol/total-cholesterol ratios. 4) Contents of cholesterol and triglyceride in aorta and liver were elevated by dietary high cholesterol and lowered by consumption of all three types of milk. 5) Levels of cholesterol and triglyceride among serum, aorta and liver were highly correlated (r=0.7-0.9, p<0.001). 6) Fecal excretion of total sterols was three times high in high cholesterol group, compared with low cholesterol groups and were increased about 20% by milk consumption. 7) The effects of milk were more pronouncely shown in low cholesterol groups and mostly confined to LM and HM groups, rarely shown in PM group. It is concluded from the present study that milk had the hypolipidemic as well as hypocholes terolemic effect, which appears to be mediated through increased fecal bile acid excretion. But the effect is likely to be shaded by excess consumption of dietary cholesterol and was almost absent in powder milk.

낙동강 수계 주요 농업지대 소유역의 수질 오염 (Water Pollution in Some Agricultural Areas along Nakdong River)

  • 낙동강 수계의 주요 농업지대 소유역에 대한 수질조사 결과를 보면, 용존산소량, 전기전도도, 화학적산소요구량, pH, 중금속함량 등은 대부분 농업용수 기준에 비추어 볼 때 문제되지 않으나, 질소 함량은 전체적으로 농업용수 기준치를 상회하며 이온형태의 인은 특히 여름철에 대부분 지역에서 조류생장 최저 농도인 0.05mg/L 이상으로 측정되었다. 지하수의 경우 전기전도도는 하천수보다 높은 경향이고 질소 함량도 농업용수 기준을 훨씬 상회하였으며 지하수 중의 질산태 질소 함량은 음용수 수질 기준인 10mg/L를 초과하는 곳도 있었다. 지하수 중의 인 함량은 하천수와 비슷한 수준이었다. 중금속은 하천수에서와 마찬가지로 아연을 제외하고 납, 구리, 카드뮴 등은 거의 검출되지 않았다. 이상의 결과를 보면 조사 지역이 농업지대이므로 중금속 등의 요염은 문제되지 않지만 질소와 인에 의한 오염은 하천수와 지하수에서 상당한 수준에 달해 있으며 이러한 질소와 인의 오염은 결국 농경지에서의 화학비료와 퇴비의 시용, 축산폐수나 생활하수의 유입에 의한 것으로 보인다.

농축물의 Benzo($a$)pyrene 함량 측정을 위한 전처리 방법의 개선 (Improving Method of Pre-treatment for Detection Benzo($a$)pyrene Contents in Concentrates)

  • I assessed the B($a$)P content from the Ginseng extract, Red ginseng extract, and Ssangwha extract which have high viscosities. It wasn't easy to extract oil from these samples, consequently measuring of B($a$)P was difficult. In order to know the exact detecting contents, I injected standard material of B($a$)P to the above extractions and pre-treated for measurement but it was also difficult to measure of contents exactly. To improve of detecting method, I removed mucinous materials using a 85% phosphoric acid solution or 10% citric acid solution and then processed continuously with $60^{\circ}C$ hot water. The analysis revealed that extracting the samples contained B($a$)P determined the rate of each 70%, 55%, 67% could increase. As a result the detecting method of B($a$)P contents could be improved.

증발량 추정을 위한 지표면 가용 수분 계수 (On the Surface Moisture Availability Parameters to Estimate the Surface Evaporation)

  • In order to discuss the differences among the SMP(Surface Moisture Availability Parameter), by previous researchers on the basis of their own theoretical and empirical background, we assessed the SMP according to the soil types and volumetric soil water contents. The results are as follows. There are differences among all the five SMAPs. There's a tendency that the larger grain size, the higher value of parameters. And they divided into two groups for their value: one group has parameters with exponential function and the other with cosine and linear function. The maximum difference between the two groups appears when the volumetric soil water contents are 0.07m3m-3 for sand, 0.l1m3m-3 for loam, 0.12 for clay, and 0.13m3m-3 for silt loam. So, these differences must be considered when we estimate the surface evaporation rate. From field data, the paddy field soil around Junam reservoir is classified as a silt has high wetness, 0.56. So, the parameter obtained from the field measurement is much higher than that of Clapp and Hornberger(1978)'s Table. This study treated the SMP for a certain point of time in winter season. But if we measured the soil water contents continuously, we could obtain better time-dependent parameter. 청송약수를 이용한 면 제조 및 조리에 관한 기초연구 (A Basic Study on Noodle Making and Cooking with Cheong-song Mineral Water)

  • 청송약수가 가진 Ca, Mg 등의 풍부한 미네랄 성분을 면 제조에 이용하기 위한 기초연구를 하였다. 실험결과를 증류수와 수돗물을 이용한 면과 비교하였다. 약수로 제조한 면을 증류수로 조리한 실험 결과, 중량, 부피, 수분흡수율, 탁도, 명도(L)에서 가장 큰 값을 보였으며, 적색도(a)는 가장 큰 음의 값을 나타내었다. 이는 약수를 이용할 때에 증류수나 수돗물보다 더 큰 중량, 부피, 수분흡수율, 탁도, 명도를 가진 초록색을 띤 조리된 면을 만들 수 있었다. 분산분석 결과, 중량과 부피에서 증류수로 제조된 면과 유의한 차이를 보였으며, 수분흡수율, 탁도, 명도(L), 적색도(a), 황색도(b)에서 증류수, 수돗물로 제조된 면과 유의한 차이를 보였다. 또한 시판 칼국수의 조리에 약수를 이용한 결과, 중량과 적색도(a)에서 증류수, 수돗물로 조리된 면과 유의한 차이를 보였으며, 무게, 부피, 명도(L)에서 증류수로 조리된 면과 유의한 차이를 보였다.

당근 첨가가 채소즙(녹즙)에서 비타민 C의 안정성에 미치는 영향 (Effects of Carrot on the Stability of Vitamin C in (Green-Yellow) Vegetable Juices)

  • AsA 수용액 또는 당근즙액 또는 당근을 첨가한 채소즙들에서 반응시간과 온도에 따른 ascorbic acid(AsA) 와 dehydroascorbic acid(DHAA)의 함량 변화를 HPLC를 이용하여 정 량분석 하였다. 당근즙액에 있는 AsA가 물에 있는 AsA보다 더 안정한 것으로 나타났고, AsA 수용액과 AsA+당근즙액에 있는 AsA의 함량은 반응 시간과 저장온도의 증가에 의해 점차로 감소되는 것으로 나타났다 또한 냉장온도(4$^{\circ}C$)에서 2시간,24시간 보관된 당근즙액과 당근+채소즙액의 AsA 함량도 시간 경과에 따라 점차로 감소함을 알 수 있었다. 당근즙액 또는 당근을 첨가한 채소즙의 AsA, DHAA, 총 비타민 C 함량은 냉장온도에서 2,24시간 보관함에 따라, 모든 시료의 AsA 함량은 시간경과에 따라 점차적으로 파괴되었지만, DHAA 함량은 서서히 증가하는 것으로 나타나 총 비타민 C(AsA+DHAA)의 값은 2시간 저온에서 방치시 90~97%의 높은 비타민 C의 잔존율을 가졌으며, 24시간 방치 시에도 총 비타민 C 함량에 대한 큰 변화는 없었다. 결국 저온 보관시 당근 첨가에 의한 채소즙액의 총 비타민 C의 손실은 거의 없는 것으로 확인 되었다.

Growth and solute pattern of Suaeda maritima and Suaeda asparagoides in an abandoned salt field

  • To investigate the environmental adaptation and ecophysiological characteristics of Suaeda maritima and S. asparagoides under saline conditions, plant growth and density were analyzed according to environmental changes of habitats. The total ion content of soil decreased with time, which was caused by the predominance of exchangeable $Na^+$ and $Cl^-$ in the upper layers. The population of S. maritima was more densely distributed in the region with higher ion contents of $Cl^-$, $Mg^{2+}$, $K^+$ and $Na^+$ than the population of S. asparagoides. Both species were showed a decreased population density according to increases in plant growth. Under the conditions of a salt field, S. maritima and S. asparagoides contained high inorganic ions to maintain low water potential, but low water soluble carbohydrate contents. In the case of free amino acid, S. maritima showed an especially high proline content, and contained rather large amounts of free amino acids, whereas S. asparagoides did not. Both species showed high inorganic ion contents in the leaves, which might be a mechanism of avoiding the ionic toxicity by diluting the accumulated ionic concentration with a high ratio of water content to dry weight. This result suggests that S. maritima seems to adapt to saline conditions by accumulating proline in addition to inorganic ions. S. asparagoides seems to adapt by osmoregulation processes, using inorganic ions rather than free amino acids.

완도읍 및 평일만 김밭에 있어서의 동계 오개월간 수질의 조수에 따른 변동 (Tidal Variations of the Chemical Constituent Contents in the Laver Bed Sea Waters in Wan Do Gun From October 1968 to February 1969)

  • 김의 성장과 품질에 대한 환경수질의 중요성은 다시 말할 필요가 없다 김 양식기에 있어서의 환경수질의 변동을 보기 위해 저자의 한 사람은 섬진강 및 낙동강 하구 김밭에 대해 이미 조사한 바 있거니와 이번에는 우리나라 유수의 김 생산지인 완도군하 김밭의 수질을 전보와 같은 방법으로 조사하였다. 조사지점으로서는 완도군 에서대체로 대표적 김밭이라 볼 수 있는 두 지점을 선정하여 1968년 10월부터 1969년 2월까지 매월 대조일에서의 수질변동을 조수의 일조기에 걸쳐 1시간마다 각 성분량을 측정하므로써 조사하였다.

추출방법에 따른 미숙사과 추출물의 유용성분 함량 및 항산화 활성 (Effective Component Contents and Antioxidative Activities of Unripe Apple by Extraction Methods)

  • The purpose of this study was to determine the optimum extraction method suitable for the availability of biological activities in unripe apples known to be rich in functional components. Unripe apples 'Hongro' picked on May 28th, 2019 were extracted by various extraction methods (hot water, ethanol, enzymatic pre-treatment, ultrasonic wave, and subcritical water) and their extracts were investigated yield, effective component contents, and antioxidant activities. Overall, the yields by the extraction solvent were higher in water than in organic solvent(ethanol) because water-soluble compounds were eluted from a polar solvent. Total phenol contents of the ultrasonic wave (ethanol) extracts were significantly higher in 6 times than hot water extract. Contents of flavonoid were highest in the ethanol extract at 29.14 mg QE/g. Contents of tannin and ursolic acid were also significantly higher in the ultrasonic wave (ethanol) extract. The DPPH radical and ABTS radical scavenging activities were the strongest in the ultrasonic wave (ethanol) extract. Correlation between effective components and antioxidant activities was high in the total phenol content with ABTS and the ursolic acid content with DPPH (p<0.01). The above results suggested that ultrasonic wave (ethanol) extract of unripe apples has the potential to act as a functional material.
