  • Objective: This experiment was to investigate the effect of increasing levels of apparent metabolizable energy ($AME_n$) on the laying performance, egg quality, blood parameters, blood biochemistry, intestinal morphology, and apparent total tract digestibility (ATTD) of energy and nutrients in diets fed to laying hens. Methods: A total of three-hundred twenty 33-week-old Hy-Line Brown laying hens (Gallus domesticus) were evenly assigned to four experimental diets of 2,750, 2,850, 2,950, and 3,050 kcal $AME_n/kg$ in pens with floors covered with deep litter of rice hulls. There were four replicates of each treatment, each consisting of 20 birds in a pen. Results: $AME_n$ intake was increased (linear, p<0.05) with inclusion level of $AME_n$ in diets increased. Feed intake and feed conversion ratio were improved (linear, p<0.01), but hen-day egg production tended to be increased with an increasing level of $AME_n$ in diets. During the experiment, leukocyte concentration and blood biochemistry (total cholesterol, triglyceride, glucose, total protein, calcium, asparate aminotransferase, and alanine transferase were not influenced by increasing level of $AME_n$ in diets. Gross energy and ether extract were increased (linear, p<0.01) as the inclusion level of $AME_n$ in diets increased. Conclusion: Laying hens fed high $AME_n$ diet (i.e., 3,050 kcal/kg in the current experiment) tended to overconsume energy with a positive effect on feed intake, feed conversion ratio, nutrient digestibility, and intestinal morphology but not on egg production and egg mass.

  • Objectives: Excess sodium intake has been linked to obesity and obesity-related indices. However, the scientific evidence for this association is inadequate. The purpose of this study was to investigate the association between urinary sodium excretion and obesity-related indices among Korean adults. Methods: A convenience sample of 120 subjects (60 obese and 60 non-obese subjects) were recruited applying frequency matching for sex and age between two groups. Sodium intake level was assessed through 24-hour urine collection. Obesity-related metabolic risk factors, including fasting blood lipid indices, subcutaneous and visceral fat through computed tomography (CT), insulin resistance indices, blood pressure and liver enzymes were measured in all subjects. These obesity-related metabolic risk factors were compared between obese and non-obese group according to sodium excretion levels (<110 mEq/day, 110~180 mEq/day, >180 mEq/day). Results: After adjusting for age, gender, health behaviors (smoking, exercise, drinking), and energy intake, several obesity-related metabolic risk factors, including abdominal circumference, body fat percentage, subcutaneous and visceral fat, triglyceride, and systolic blood pressure were found to be significantly deteriorated as the sodium excretion level increases. In addition, multivariate adjusted-odds ratios of abdominal obesity, high blood triglyceride, and high blood pressure were found significantly higher in the highest sodium excretion group compared to the lowest group. The mean number of metabolic syndrome risk factors was also significantly greater in the highest sodium excretion group than in the lowest group. Conclusions: The current study findings suggested that high sodium intake can affect obesity and metabolic syndrome risk negatively, implying the necessity of future research on low-sodium diet intervention in relation to obesity and related health problems.

  • This study was conducted to evaluate the rate of obesity of 212 women (age 45-60 years) in Seoul and the Kyunggi area through analysis of BMI and the dietary life factors related to obesity using a survey on dietary habits, dietary assessment, and nutrient intake. The height of the underweight group was taller than normal. The height of the obese group was equal to that of the normal group, but the weight was 8.5 kg greater than the normal group. Women in the underweight group consumed meals irregularly, and only 33.4% ate breakfast. Additionally, the rate of overeating was low in the underweight group, and milk, dairy products (yogurt, etc.), fruit, and fruit juice were consumed more than once a day. It was found that 62.1% of the women in the obese group never ate out, and the rate of eating one serving of fruit, drinking one cup of fruit juice, and eating various kinds of foods was high. The average point of women's dietary life was $21.9{\pm}2.9$, and 12.7% of all women responded that their dietary life was good. However, in the obese group, only 6.9% of the women reported that their dietary life was good. Evaluation of snacking habits revealed that the underweight group consumed a high level of carbonated drinks and ice cream, whereas for in the obese group, 24.1% of the women consumed milk and its products and 5.6% regularly consumed fast and fried foods. Evaluation of nutrient intake revealed that the consumption of energy, protein, vitamin A, vitamin $B_1$, $B_2$, $B_6$, niacin, vitamin C, and vitamin E was high in all of the groups, but the intake of folic acid in the underweight group was lower than the required level. Overall, 24.1% of the women in the obese group were found to have metabolic diseases, mostly hypertension (43%). In conclusion, a balanced diet to avoid excessive nutrient intake is needed to prevent obesity.

  • An experiment with completely randomized design was performed to investigate the effects of lysine and supplemented sodium on growth performance, nutrients utilization, acid-base balance and lysine arginine antagonism in broiler chicks. The experiment was carried out with 3 levels of dietary lysine (0.6, 1.2 and 1.8%) and 3 levels of sodium(0.4, 0.8 and 1.2%) for an experimental period of 7 weeks. Body weight gain of 1.2% lysine group was significantly (p<0.01) higher than that of low or high lysine group. The highest feed consumption was obtained at 1.2% lysine and 0.4% sodium supplemented level (ML-1.2) and the lowest at LL-1.2. The best feed efficiency was obtained at ML-0.8 level and the worst at LL-1.2 level. Mortalities of high (1.8%) and low (0.6%) lysine groups were significantly (p<0.05) higher than medium lysine (1.2%) group. Among the sodium levels, the mortality at 1.2% sodium supplemented level was significantly (p<0.01) different by the levels of dietary lysine. Lysine-arginine antagonism was observed in high lysine diet. Among the lysine levels, the lowest none weight and length were shown in low lysine group. Interactions between lysine and sodium were significantly (p<0.05) shown in femur weight. The levels of sodium and lysine affected significantly (p<0.01) the utilization of nitrogen, ether extract, total carbohydrate and energy.

  • The purpose of this study was to identify the differences in dietary consumption patterns according to the exercise level of Korean adults. The study subjects were the 7,370 Koreans aged 20 years and older of the 1998 Korean Health and Nutrition Survey. The dietary assessment was conducted by means of the 24 hour recall method. Data for individual exercise behavior were collected by interviews as part of the National Health Behavior Survey. Following the analysis of variances the Duncan's Multiple Range Test was used to test the differences in food and nutrient intakes among groups with different levels of exercise. Current exercise practices were reported by 22% of the male subjects and 15% of the female subjects. Unlike observations from the American and European studies, a greater amount of meat intake was observed more frequently among high exercises group than among middle and low exercisers in the case of the male subjects. This was reflected in the increasing levels of protein and fat intake in proportion to the exercise levels. However, the food and nutrient intake patterns of female exercisers were quite different from those of the males. The least intake of fatty foods was observed among the high exercisers. Energy intake from fat was the lowest among the high exercisers. These results may imply that the motivation to exercise was quite different between male and female Koreans. This dietary pattern may have a risk of undernution. Summerizing the results, whatever the motivation of the exercise, the Korean exercisers of both sexes had unhealthy dietary pattern. Therefore, nutritional education should be conducted to encourage the eating of a balanced diet along with exercise, among Koreans of both sexes, in order to promote a healthy lifestyle.

  • In the previous study of the release, excretion, and plasma concentration of aldosterone in normal Koreans, the author found that urinary aldosterone excretion and aldosterone secretion rate of the Korean who usually take high amount of salt are significantly lower, in compared to Americans, although the plasma concentration is only tended to be low. The control of plasma aldosterone level depends on the secretion rate and the metabolic clearance of the hormone. In this experiments, the metabolic clearance rate of aldosterone was determined in normotensive korean and the effects of adrenal stimulations on the rates were also studied in the same subjects. The metabolic clearance rate of the normal Korean was not significantly different from those of the American, and shown a little increase in response to sodium restriction. These results indicate that the decrease in secretion rate rather than the increase in metabolic clearance Tate is the major factor maintaining lower plasma aldosterone level. After furosemide diuresis, on the contrary, the removal of aldosterone showed significant the decrease despite slight increase of secretion rate. This suggest that the reduction in metabolic clearance rate of the hormone during volume depletion found to be major cause of high plasma concentration. Additional potassium supply produced detectable decrease of metabolic clearance rate, but the changes were smaller than that of secretion rate, which suggested that the higher secretion rate could account for elevated plasma concentration of aldosterone rather than metabolic clearance. Above results also support author's previous evidences that the normal Korean who already adapted to a high sodium diet have ability to produce adequate aldosterone activity without producing detectable changes on the metabolic clearance rate under the condition of sodium restriction with approp riate potassium intake.

  • This study was carried out to investigate the dietary behaviors and nutrient intake of high school girls in Iksan and Seoul cities. The subjects consisted of 122 students in Iksan city, and 136 students in Seoul city. The proportion of subjects who eat meals irregularly was higher in Iksan ($94.8\%$) than in Seoul ($80.9\%$). The proportion of subjects who skip meals was also higher in Iksan ($61.5\%$) than in Seoul ($56.6\%$), and most of them ($69.7\%$) skipped breakfast, even thought they thought that it was the most important meal ($86.4\%$). The subjects tended to overeat at lunch ($41.9\%$) and dinner ($55.4\%$). The main reasons that the subjects skipped a meal were a lack of time (50.7%) and poor appetites ($23.7\%$). Most of the subjects ($57.4\%$) had tried to control their body weight by taking drugs ($40.5\%$), doing exercise ($34.5\%$), and controlling their diet ($25\%$). The average intake of nutrients and energy was significantly higher (P<0.05, p<0.01) in Iksan than in Seoul. The intake was below the RDA recommendations except for phosphorus in I ksan, but was above it except for calcium, iron, and vitamin B2, in Seoul. The indexes of nutritional quality (INQ) of calcium (0.5), iron (0.6), vitamin A (0.8), vitamin B2 (0.7), niacin (0.9), and vitamin C (0.9) were under 1.0 but those of protein (1.0), phosphorus (1.2) and thiamin (1.0) were over 1.0. The INQ of the other nutrients, except protein and vitamin C, was significantly higher in Seoul than in Iksan.

  • The effect studied was that of the feeding of shrimp by-product meal, as a source of eicosapentaenoic and docosahexaenoic acid, on growth performance and fatty acid composition of adipose tissue in growing pigs kept on small holdings in Central Vietnam. Shrimp by-product meal was exchanged with ruminant meal so that the diets contained either 0, 10 or 20% shrimp byproduct meal in the dry matter. The diets were fed on 6 different small-holder farms. The farmers fed a base diet according to their personal choice, but were instructed as to the use of shrimp by-product and ruminant meal. The diets were fed to the pigs from 70 to 126 days of age. There were three animals per treatment group per farm. The diets without and with 20% shrimp by-product meal on average contained 0.01 and 0.14 g docosahexaenoic acid/MJ of metabolisable energy (ME). Due to the higher contents of ash and crude fiber, the shrimp by-product meal containing diets had lower energy densities than the control diets. Eicosapentaenoic acid was not detectable in adipose tissue; the content of docosahexaenoic acid was generally increased after consumption of shrimp by-product meal. In spite of the concurrent high intakes of ash and crude fiber, the feeding of shrimp by-product meal had a general stimulatory effect on growth performance of the growing pigs. The intake of docosahexaenoic acid or its content in adipose tissue was not related with average daily gain. It is suggested that shrimp by-product meal may contain an unknown growth enhancing factor.

  • The use of antibiotics in Korean swine production has been changing to a restricted use of in-feed antibiotics. These antibiotics, which are also growth promoters, are powerful for disease control. Due to this issue, the swine industry is consistently looking for any kind of alternatives to antibiotics such as new feed ingredients, feed additives, feed formulation practices, or feeding methods to improve pig health and performance. In general, dietary factors provide bioavailable nutrients and/or affect physiological activity to modify the physiological condition, immune system, or microbial population of pigs to improve their performance and health. Thus, it is suggested that dietary factors may be important components in the growth and health management of pigs. Using an alternative grain feed such as rice, barley, and oats, low protein diets or low-high energy diets can be used as solutions to manage the effect of stress factors that cause growth and health problems at specific time points during the stages of pig production. Several studies support that these alternative feeds and dietary factors may improve pig growth and health by changes in intestinal conditions, immunity, or other physiological conditions compared with typical feed ingredients and diet management in pig production. Therefore, feed ingredients, low protein levels, and different energy contents in swine diets were reviewed to better understand how these dietary factors can contribute to improved pig performance and health under different physiological conditions.
