두유의 마이크로파 고온단시간 살균시 살균효과 및 이화학적 성분 변화 (Pasteurization Efficiency and Physico-chemical Changes of Soymilk HTST Pasteurized Using Microwaves)

  • 마이크로파를 이용한 두유의 HTST저온살균시 미생물의 사멸효과와 이화학적 성분 변화를 상법과 비교하고자 하였다. 이때 HTST($90^{\circ}C$, 21초)법으로 살균하되 열수만을 이용한 경우(MP0)와 마이크로파로 온도를 올린 후 열수에서 holding한 경우(MP1)와 마이크로파만을 활용한 경우(MP2)의 세가지 경우로 구분하여 살균전후 변화를 비교해 보았다. 총균수의 경우 세가지 HTST살균법 모두 살균후 초기수의 4 log정도 감소하는 살균효과를 보여주었고 살균효과는 MP0>MP1>MP2의 순서를 보였다. 대장균과 저온성세균 및 phosphatase activity의 경우 세가지 HTST살균법 모두 살균후 우유의 배양실험에서 집락이 확인되지 않거나 살균후 음성(negative)인 것으로 나타났다. 세가지 살균방법 모두 80%이상의 trypsin 잔존율을 보여 trypsin inhibitor가 효과적으로 불활성화되었음을 알 수 있었으며 불활성화 효과는 MP0>MP1>MP2의 순서를 보였다. 두유의 pH와 적정산도, 점도 및 비타민 $B_2$의 경우 살균전후 큰 차이가 관찰되지 않았으며 살균방법별로도 차이가 없었다. 이로부터 마이크로파로 승온시킨 후 holding하는 병용법(MP1)이나 마이크로파 단독처리(MP2)를 활용할 경우 통상적 HTST방법(MP0)보다 우수하거나 대등한 살균효과 및 이화학적 품질보존효과가 있을 것으로 생각되었다. 이러한 연구결과는 다른 액상식품의 살균연구에도 확대 적용할 수 있으리라 기대된다.

온도 측정을 통한 상용 쑥뜸의 자극효과에 대한 실험적 연구 -연소시간 및 연소온도를 중심으로- (Experimental Study on the Stimulating Effect of Commercial Moxa Combustion through the Measurement of Temperature -Focused on Combustion time and temperature-)

  • Objective : The purpose of this study is to investigate the mechanism and effect of moxibustion objectively and to be used as the quantitative data for developing the new thermal stimulating treatment by observing the combustion time and temperature of commercial moxaes. Methods : We have selected two types(large-size moxa A(LMA), large-size moxa B (LMB)) among large moxaes used widely in the clinic. We examined combustion times, temperatures in each period during a combustion of moxa. Results : 1. The combustion time in the preheating period was about 30sec in both moxaes on the non-contact heated surface. 2. The combustion time in the heating period was about 345sec in LMA and about 1391 sec in LMB, about 4 times longer in LMB on the non-contact surface. 3. The maximum temperature in the heating period was $44.5^{\circ}C$ in LMA and $45.4^{\circ}C$ in LMB respectively, higher by $0.9^{\circ}C$ in LMB. The average temperature in the heating period was $35.5{\sim}37.6^{\circ}C$ in LMA and $36.0{\sim}39.8^{\circ}C$ in LMB, a little higher in LMB. 4. The combustion time in the retaining period in LMA was 45.4sec and 13% of that in the heating period, and in LMB 594.7sec and 43% of that in the heating period on the non-contact surface. 5. On the point(PH) measured maximum temperature, the average temperature during the retaining period was $44.0^{\circ}C$, $42.9^{\circ}C$ respectively and the temperature at an end of the retaining period was $43.0^{\circ}C$, $40.2^{\circ}C$ respectively. 6. The time at a beginning of the cooling period was about 418 sec from ignition in LMA and 2021sec in LMB, and the temperature at that time was $36.9{\sim}39.1^{\circ}C$ on the non-contact surface. Conclusion : It was thought that not only the figure of moxicombustion device, but also the form and size of moxa had influence on the combustion characteristics deciding the performance of stimulus seriously.

스팀 가열 및 자외선, 감마선 조사 처리에 따른 고춧가루의 미생물 저감화 효과 (Microbial reduction effect of steam heating, UV irradiation, and gamma irradiation on red pepper powder)

  • 본 연구에서는 위생적인 고춧가루 및 고추장 소스의 효과적인 살균방법을 확립하기 위한 기반 연구로서 감마선, 자외선 조사를 이용한 비가열 살균 및 스팀을 이용한 직,간접 가열살균에 의한 미생물 저감화 효과에 대한 세부 고찰을 실시하였다. 실험 결과 호기성 총균 및 내열성균이 10 kGy 선량 감마선 조사에서는 각각 5-6 log CFU/g, 방사조도 12 mW/㎠ 자외선 조사는 1 log CFU/g 내외, 그리고 120℃, 40 s 스팀가열 살균시는 2 log CFU/g 내외의 감균 효과를 나타내었다. 스팀 가열살균 방법은 감마선 조사 대비 사멸효과는 떨어지지만 2 log CFU/g의 유효적인(p<0.05) 미생물 저감화 효과를 나타내므로 가열온도 및 처리시간 등의 살균공정 조건을 최적화하면 살균효과, 상업적 설비, 처리비용 및 소비자 선호도 등을 종합 검토시 색상 품질 손상 없이 효과적으로 고춧가루내 바실루스 계통의 내열성균을 제어할 수 있는 방법으로 사료된다. 또한 120℃ 스팀 순간 가열살균시 흑후추 분말은 4 log CFU/g, 양파 분말은 2 log CFU/g, 그리고 마늘 분말은 1 log CFU/g 내외의 호기성 총균이 감소하여 다양한 향신야채 건조분말의 미생물 제어에도 유효한 방법으로 판명되었다. 그리고 고추장 용액 경우도 고온 순간 가열방식인 HTST 적용시 110℃에서 부터 호기성 총균수가 무처리 5 log CFU/g에서 2.26 CFU/g로 효과적으로 감소하기 시작하여, 121℃ 처리에서는 상업적 멸균상태로 나타나 고춧가루 및 고추장을 함유한 매운맛 소스의 효과적인 살균방법으로 판명되었다.

국내 인·허가 온열의료기기 기술 현황 조사 및 분석 (The Current State of Intended Equipment for Heating in Medical Use Based on Domestic Licensed Medical Devices)

  • Objectives : This study aimed to determine the status of thermal stimulation devices approved in Korea for medical applications over the past 10 years, and based on this, to obtain insight for future thermal treatment in Korean medical institutions. Methods : We searched the item classification list entitled "Regulations on Medical Device Items and Rating by Item" from the Ministry of Food and Drug Safety Notice No. 2021-24, 2021 (Enforced March 19, 2021; www.mfds.go.kr) for individually licensed heaters using the terms "heat" and "heating". Results : We identified 17 items of thermal stimulation product group, of which 1,308 devices were licensed by February 4, 2022, and 53.2% of them (n=696) were devices with valid permits for distribution in Korea. Among the licensed devices, heating pad systems under/overlay (electric, home use) were approved the most, but combinational stimulator (for medical use, home use; Grade 2) accounted for the highest percentage among the current valid permission. Moxibustion apparatuses were licensed separately for electrical use and non-electrical use, and occupied a low percentage of the total devices. We analyzed 307 devices that were accompanied by technical documents and found that the heat sources were wires in 145 (47.2%), infrared rays in 44 (14.3%) and ultrasonic waves in 42 (13.7%) devices. Most (83.1%) devices were used for pain relief, while other applications included beauty, cancer treatment, maintenance of infant body temperature, and healing fractures. Conclusions : Thermal stimulation devices accounted for about 0.9% of all medical devices, and among them, combinational stimulators and heating pad systems under/overlay had the most valid permits. Thermal stimulation devices using heating wires and infrared rays were the most prevalent, and most were used to relieve pain. In order to develop a range of thermal stimulation devices that can be utilized in Korean medical institutions, it is imperative that they have potential applications beyond pain management, addressing various medical purposes. To achieve this, foundational research is necessary to effectively apply diverse heat sources based on medical objectives.

Drying methods for municipal solid waste quality improvement in the developed and developing countries: A review

  • Nowadays, drying methods for municipal solid waste quality improvement have been adopted in the developed and developing countries to valorize wastes for a renewable energy source, reduce dependency on fossil fuel and keep safer disposal at landfills. Among them, biodrying, biostabilization, thermal drying and solar drying are the most common. Drying of municipal solid waste could offer several environmental and economic benefits. Therefore, this review highlighted the drying methods for municipal solid waste quality improvement around the world and compared them based on the reduction of moisture, weight and volume of municipal solid wastes against drying temperature and time by using statistical analysis. It was observed that the drying temperature of different drying methods accounted for 115 ± 40℃ for thermal drying, 59 ± 37℃ for solar drying, 55 ± 15℃ for biodrying and 58 ± 11℃ for biostabilization. Among the drying methods, thermal drying provided the shortest drying time. The moisture reduction, weight reduction, volume reduction and heating value increase of municipal solid waste could vary with drying temperature and time. Finally, the benefits and drawbacks of different drying methods were specified, and recommendations were made for the future efficient drying.

셀룰로오스의 열분해 반응속도론 (Kinetics on the Thermal Decomposition of Cellulose)

  • Cellulose의 열분해 반응에 대한 Kinetic Parameter를 구하기 위하여 Thermogravimetry(TG)와 Differential Scanning Calorimetry(DSC)를 이용하는 네가지 비등온법을 고찰하였다. 그 결과 DSC에 의한 가열속도법과 TG에 의한 근사법이 가장 간편하였고Kinetic Parameters의 신뢰도도 매우 높았다. Cellulose 열분해 반응에서 반응차수는 1/2차였고 활성화에너지는 42kca1/mo1로 나타났다.

  • This study was performed to predict the multiplication growth patterns of Salmonella typhimurium according to the holding methods and times in cooked foods served at foodservice institutions. When simmered pork in soy sauce and ham and cucumber salad were inoculated with S. typhimurium (7.00 logCFU/g) and tested according to holding methods and times, room temperature holding showed a continuous increase in S. typhimurium count as time passed, whereas 80$^{\circ}C$ heating table sharply reduced the count to 4.00 (logCFU/g) after 2hrs of holding and to zero after 6hrs, which suggested that all S. typhimurium were destroyed. However, 5$^{\circ}C$ refrigerator holding showed a count increase, although it wasis still lower than that at room temperature and at 10$^{\circ}C$ cold table holding, which suggested that S. typhimurium is comparatively resistive to low temperature.

  • The combustion reaction of polypropylene was investigated using a thermogravimetric technique under an air atmosphere condition at several heating rates from 10 to $50^{\circ}C/min$. To obtain information on the kinetic parameters, the dynamic thermogravimetric analysis curve and its derivative were analyzed by a variety of analytical methods such as Kissinger, Friedman, Freeman-Carroll, Chatterjee-Conrad, Ozawa and Coats-Redfern methods. The comparative works for the kinetic results obtained from various methods should be performed to determine the kinetic parameters, because there are tremendous differences in the calculated kinetic parameters depending upon the mathematical method taken in the analysis.

온돌을 이용한 바닥복사냉방의 제어성능에 관한 실험적 연구 (An Experimental Study on Control Performance of Radiant Floor Cooling Using Ondol)

  • The objectives of this study are to analyze the application of radiant floor cooling and to evaluate the control methods through experiments when the radiant heating system is used for cooling. Through the experiment analysis the control methods such as on/off control, variable flow control and outdoor reset with indoor temperature feedback control are evaluated and compared. The cooling curve (reset ratio) is found for radiant cooling, which shows tole relation between outside air temperature and supply water temperature. Comparison of cooling methods shows that outdoor reset with indoor temperature feedback control is more appropriate than on/off control and variable flow control with regard to prevention of the condensation and thermal comfort.

This paper describes the solution method of view factor by the area weighted average and graphical method to calculate the radiant heat exchange or daylighting level in any form of room or building. This study shows that the area weighted average and graphical methods have many points of merits(calculation speed, correctness and calculation capability in an arbitrary form of room shapes etc.) compared with existing methods
