개인소비가치가 글루텐 프리 가공식품에 대한 태도와 구매의도에 미치는 영향 (The Influence of Consumption Values on Attitudes and Purchase Intentions of Consumers towards Gluten-free Products)

  • Purpose: This study examined the influence of the consumption values on the attitudes and purchase intentions of consumers towards gluten-free products and compared consumption values, attitudes and purchase intentions according to the degree of health consciousness of the consumer. Methods: The data was collected from July 20, 2016 to August 2, 2016 through a questionnaire survey from three hundred and six consumers who had knowledge of gluten-free products. The data was analyzed by factor analysis, reliability analysis, multiple regression analysis, and an independent sample t-test using the SPSS program. Results: The regression results showed that the exploratory value (p<0.01) had a negative influence on the attitudes, and the functional value (p<0.001) and emotional value (p<0.001) had a positive influence on the consumers' attitudes. In addition, the attitudes (p<0.001) toward gluten-free products had a positive influence on the purchase intentions. Finally, the high health consciousness group answered with a significantly higher score on the consumption values, attitudes and purchase intentions than the lower group. Conclusion: These results highlight the causal relationship among consumption values, attitudes, and purchase intentions of consumers towards gluten-free products, and can provide a basic understanding of gluten free products regarding both marketing strategy and consumers' needs. The potential implications for gluten-free products manufacturers, limitations and future research directions are also discussed.

Recent advances in dairy goat products

  • Goat population world-wide is increasing, and the dairy goat sector is developing accordingly. Although the new technology applied to the goat industry is being introduced slowly because the weight of traditional subsector in the dairy sector, considerable advances have been made in the last decade. Present review focuses on the emerging topics in the dairy goat sector. Research and development of traditional and new dairy goat products are reviewed, including the new research in the use of goat milk in infant formula. The research in alternatives to brine, production of skimmed goat cheeses and the use of different modified atmosphere packaging are also addressed. Special attention is given to antibiotic residues and their determination in goat milk. Functional foods for human benefits are a trending topic. Health properties recently discovered in dairy goat products are included in the paper, with special attention to the antioxidant activity. The dual-purpose use of goats by humankind is affecting the way of how new technology is being incorporated in the dairy goat sector and will certainly affect the future development of dairy goat products.

  • Camel milk has a significant and pivotal role in the diet of people residing in semi-arid and arid regions. Ever since ancient times, marketing of camel milk has remained insignificant due to nonexistence of processing amenities in the camel nurturing areas, hence the utilization of unprocessed camel milk has continuously remained limited at family level by the nomads. Due to the superior medicinal values and health promoting effects, incredible growth in the demand of camel milk and dairy products have been noticed all over the world during last two decades. Such emergence has led dairy industry to provide diversified camel dairy products to the consumers with superior nutritional and functional qualities. In contrast to bovine, very few food products derived from camel milk are available in the present market. With the advancements in food processing interventions, a wide range of dairy and non-dairy products could be obtained from camel milk, including milk powder, cheese, yogurt, ice cream, and even chocolate. In some regions, camel milk is used for traditional dishes such as fermented milk, camel milk tea, or as a base for soups and stews. Current review highlights the processing opportunities regarding the transformation of camel milk into various dairy products via decreasing the inherent functionality that could be achieved by optimization of processing conditions and alteration of chemical composition by using fortification method. Additionally, future research directions could be devised to improve the product quality.

체중조절용 조제식품과 다이어트 건강기능식품 섭취자의 체형 및 체중조절 인식에 관한 연구 (Perceptions of Body Shape and Weight Control in Individuals Consuming Weight-Control or Functional Health Foods)

  • 본 연구는 다이어트 건강기능식품 또는 체중조절용 조제식품을 섭취하는 성인의 체형 및 체중조절에 대한 인식을 조사함으로써, 소비자 특성을 파악하고자 시행되었다. 1) 조사 대상자는 남자 28.6%, 여자 71.4%, 평균 연령 $34.2{\pm}5.9$세, 대졸 71.9%, 기혼 65.8%로 나타났고, 월평균소득은 300만원 이상인 가정이 총 88.1%로 높게 나타났다. 또한 과체중 및 비만 (BMI ${\geq}$ 23)이 64.6%, 정상범주 (BMI < 23.0)인 사람들이 35.4%를 차지하여, 비만하지 않은 사람들도 상업용 제품을 비교적 많이 섭취하고 있었다. 2) 체형인식은 73.4%가 '살찐 편'으로, 체형만족도는 여자가 남자보다 유의적으로 낮았다. BMI ${\geq}$ 23인 사람들은 '남자'또는 '만 35~44세' 또는 '기혼' 또는 '사무직 등' 또는 '주부'라는 특성을 갖으며, BMI < 23인 사람들은 '여자', 또는 '만 25~34세' 또는 '미혼'또는 직업은 '서비스직 등'와 '대학생 등'라는 특성을 나타냈다. 3) 체중조절인식 조사결과, 다이어트시 중점 사항은 '체중감량'이 가장 우선이며, 이를 일반특성에 따라 분석해 보면, 남자는 '체지방 감소'에, 여자는 '체중감량'에, 미혼은 '체지방 감소', '건강회복', '몸매개선'에, 기혼은 '체중감량', '체중증가 억제'에, 또한 BMI ${\geq}$ 23인 사람들은 '체중감량'과 '체지방 감소'에, BMI < 23인 사람들은 '건강회복'과 '몸매개선'에 더 중점을 두는 것으로 나타났다. 또한 다이어트 동기로는 '정상체중 유지' (25.6%), '산후 체중조절' (7%), '건강관리'(9%) 등의 객관적인 동기는 42.1%, 보다 주관적인 동기인 '남의 시선 의식', '원하는 디자인의 옷을 입기위해'등은 57.9%로 나타났다. 4) 두 제품유형을 섭취하는 사람들 간의 체형인식의 유의적 차이는 없었으나, 다이어트 건강기능식품 섭취군에서는 '정상체중 유지' (29.3%)와 '건강관리를 위해' (12.7%) 라는 동기가 우선이었고, '체지방감소', '체중증가 억제'에 중점을 두어 다이어트를 하는 경향을 보였다. 반면 체중조절용 조제식품 섭취군에서는 '원하는 디자인의 옷을 입기 위해' (35.8%)라는 동기가 가장 높았고, '체중 감량'에 중점을 두어 다이어트를 하는 경향을 보였다.

Quantitative analysis of hyperoside and isoquercitrin in methanolic extract of Stewartia koreana leaves using HPLC-DAD

  • Since Stewartia koreana leaves are registered with the Food and Drug Administration as edible herbal materials, they are used in the development of functional foods, cosmetics, and medicines. In this study, we established an analysis method that can simultaneously analyze two indicators, hyperoside (quercetin 3-O-galactoside) and isoquercitrin (quercetin 3-O-glucoside) contained in the leaves of S. koreana using HPLC-DAD. In accordance with the Ministry of Food and Drug Safety's health functional food guidelines, the analysis method was verified for specificity, accuracy, precision, limit of quantification, and linearity. The analysis method established in this study showed more than 0.9989 of the correlation coefficient values (r2) for the calibration. The total recovery rates of isoquercitrin and hyperoside were 100.55 and 98.87% with 0.14-0.78 and 0.47-0.67% of the relative standard deviation, respectively. Therefore, it was suggested that the new analytical method would be applied to standardize raw materials and high value-added products originated from the leaves of the S. koreana in the future.

Evaluation of Different Methods of Antioxidant Measurement

  • The beneficial effects of fruits, vegetables, and beverages on human health have been attributed to their antioxidant activities. Therefore, antioxidant activity of food products is recognized as one of the important parameters in determining their functional values. Until now, antioxidant activity has been measured by various chemical and biological methods; however, many factors confound the reliability and reproducibility of measurements of antioxidant activity of food. In vitro methods may provide a useful indication of antioxidant activity but their results may not translate to the human biological system, while in vivo tests are difficult to carry out due to the intricate processes of uptake, cellular transportation, and metabolism of individual antioxidant components. Therefore, as long as these limitations exist, our best option is to measure the antioxidant activity in food directly. This review briefly summarizes currently available methods for the measurement of antioxidant activity in food and examines their respective validity.

A Study on Spirunia as a Protein Alternative for Aging Society

  • Spirulina is known to be more useful abroad than in Korea because it contains more protein than Chlorella, the same microalgae. In the past, sources of animal protein were diverse, but since it takes a long time to receive protein along with environmental pollution, we thought that spirulina could attract attention as a new protein source. In this study, application cases were analyzed in foods in the fields of acorn cake, tofu, dumpling skin, fish cake, white bread, pound cake, salad dressing, and yogurt and so on. As a result of centrally analyzing antioxidant and sensory evaluation, it was confirmed that the results were effective enough to develop products in tofu, dumpling skin, fish cake, and pound cake. It is thought that development of food in other fields will be possible if an additive amount that can match the consumer's preference is found by supplementing the mixing ratio. If it is used as a main raw material for existing food rather than as a raw material for health functional food, consumer preference can increase and quality can be further improved, and it can be suggested as a good alternative for an aging society.

재구성 지질의 효소적 생산과 산업적 이용 (Enzymatic production and industrial application of structured lipids)

  • Structured lipids are lipids in which the composition and/or positional distribution of fatty acids have been chemically or enzymatically modified from their natural biosynthetic form. Because structured lipids have desired nutritional, physicochemical, textural or physiological properties for applications in processed foods, functional foods, or nutraceuticals, many research activities have been aimed at their commercialization. The enzymatic production of structured lipids using lipases as the biocatalysts has a big potential in the future market due to the specificity or selectivity of the lipases. This article introduced some examples of specialty structured lipids that have been enzymatically produced and have been utilized as commercialized products. The commercialized products include medium- and long-chain triacylglycerols, human milk fat substitutes, cocoa butter equivalents, trans-free plastic fats, low-calorie fats/oils, and health-beneficial fatty acid-rich oils.

훈제식육식품 중 벤조피렌 함량 분석 및 안전성 평가 (Analysis of Benzo[a]pyrene Content and Risk Assessment)

  • 훈제식육식품을 통한 polycyclic aromatic hydrocarbons(PAHs)의 대표독성물질인 benzo[a]pyrene의 위해도를 판단하기위해 시중에 유통되는 69개의 훈제식육식품을 통한 위해성을 평가하였다. 사용된 훈제식육식품은 훈제 치킨, 오리, 칠면조, 돼지 등이며 benzo[a]pyrene의 검출범위는 불검출-2.87 ${\mu}g$/kg이었고 평균 농도는 0.42 ${\mu}g$/kg로 나타났다. 2005 국민건강영양조사를 참고하여 만성1일인체노출량을 평가한 결과 훈제식육식품을 통한 노출량은 총 0.187 ng/kg B.W./d로 나타났다. 위해도 산출을 위하여 benzo[a]pyrene의 위상부암에 대한 BMDL값인 0.31-0.74 mg/kg B.W./d와 만성1일인체노출량을 이용하여 MOE를 구한결과 MOE는 1,657,754-3,957,219 수준으로 나타났다. Benzo[a]pyrene의 오염도는 식품의약품안전청에서 제시하는 기준규격인 5 ${\mu}g$/kg 이하로 나타나 훈제식육식품을 통한 benzo[a]pyrene의 노출정도는 안전한것으로 판단된다.

해조류 가공식품 및 부산물을 이용한 제품 개발 (Development of Value-Added Products Using Seaweeds)

  • 국내 해조류 자원의 이용성 증대를 위해서 해조류의 기능성, 유산균 생육 특성, 가공식품에의 이용, 생분해성 포장재의 소재, 그리고 부산물을 이용한 동물사료화 및 퇴비화 가능성의 연구 보문을 조사하였다. 기능성물질 연구에서는 유용색소 (Fucoxanthin)의 추출과 부위별 함량 및 분광학적인 특성이 있으며, 해조류로부터 alginate의 함량 조사와 최적추출조건 확립에 대한 연구를 수행하여 AASA (Acid alkali soluble alginate) 추출방법에서 3% $Na_2CO_3$ 농도와, $H_2SO_4$의 농도 0.4 N에서 가장 높은 수율을 얻었다. 톳으로부터 산알칼리 (AASA) 방법으로 추출한 알긴산에 인위적으로 sulfate를 흡착 Lactobacillus acidophilus를 접종한 후 배양하면서 유산균의 성장에 대한 영향을 살펴 본 결과 모든 농도에서 이들 배지에 S-alginate를 첨가한 것이 유산균의 성장을 증가시켰다. 미역귀 추출물로 잼을 제조하였고, 김, 미역, 다시마의 물 추출물로 물성이 우수하고 관능성적도 양호한 젤리를 제조하였다. 해조류 젤리를 상품화하는데 있어서 해조류가 갖는 해조취와 젤리색소의 안정화가 상품화의 요소로 대두되어 이를 개선할 방법도 제시되었다. 해조 간장과 된장 및 두부에서는 다당류나 무기질 등 영양적인 기능성과 관능적 기호성을 향상시킬 수 있었다. 알긴산 필름의 물성 증진을 위하여 $CaCl_2$를 필름용액에 직접 첨가 또는 필름을 $CaCl_2$용액에 침지하는 두 가지 방법에서 수분 저항성이 강한 필름을 제조할 수 있었다. 미이용 해조분말이나 해조가공 부산물로 얻어지는 해조분말을 이용하여 새로운 생분해성 포장소재로 사용할 수 있는 가능성이 있다. 해조류의 영양성분 및 아미노산 함량을 분석한 결과 사료첨가제로서 충분한 가치가 있었으나 다량의 염분 함량으로 인하여 그 가치가 평가 절하되었다. 따라서 해조류의 사료적 가치를 증진시키기 위하여 발효처리를 하였으며, 그 결과 기능성 영양소 (불포화 지방산)가 증가되는 효과가 있었다.
