This study was conducted to determine the effects of amino acid-enriched ruminally protected fatty acid (AARPFA) on plasma fatty acids and amino acids, growth performance and carcass characteristics of Korean native steers (Hanwoo) by simultaneous supply of fatty acids and limiting amino acids (methionine and lysine). Eighteen finishing Hanwoo steers, 18 months of age and weighing an average of $459.0{\pm}38.9\;kg$, were used for studies of the metabolism of plasma fatty acids and amino acids during supplementation of AARPFA. Also, 45 finishing Hanwoo steers, 16 months of age and weighing an average of $408.6{\pm}26.5\;kg$, were used for growth performance and carcass characteristics during supplemention of AARPFA. There were three treatments which comprised a basal diet supplemented with AARPFA at 0 g (T1), 50 g (T2) or 100 g (T3), respectively. Concentrations of saturated, unsaturated and total fatty acids in plasma were increased in T3 compared with other treatments (p<0.05). Concentrations of methionine and lysine in plasma were linearly increased with increasing levels of AARPFA (p<0.01). Average daily gain, dry matter intake and feed conversion ratio were not different among the treatments. Marbling score measured by ultra-sound scanning was higher in T3 than in T1 at 24 months of age (p<0.05). Rib eye area, back fat thickness, yield index and yield grade score were similar across the treatments. Marbling score and quality grade score were higher in T3 compared with other treatments (p<0.01). Thus, plasma fatty acids, methionine and lysine metabolism were affected by supplementing with 100 g of AARPFA which also had positive effects on marbling score and meat quality grade of finishing Hanwoo steers.
Thirty six Hanwoo steers (average BW, $564.5\;{\pm}\;25.7\;kg$; average age, approximately 23 months) were used to evaluate the effects of a mixture of eugenol (14%), thymol (1%) and malate (85%) on growth performance, beef quality and liver function in Hanwoo finishing steers fed a high-concentrate diet. A feeding trial was conducted for 7 months in National Agricultural Cooperative Federation farm located in Anseong, Korea. Steers were assigned randomly to one of three treatments: control (without additive supplementation), treatment 1 (0.05% additive of concentrate), treatment 2 (0.1% additive of concentrate). The results of this study showed that initial and final BW averaged 564 and 755 kg, respectively, and BW gain was significantly higher (P<0.05) for steers fed the additive mixture than for those fed no mixture (0.78 and 0.79 vs. 0.69 kg/d, respectively). Serum aspartate aminotransferase in the T2 treatment was decreased during the 24 to 31 months of age. Although supplementation of additives resulted in no substantial effect on carcass characteristics, it had a potential effect to improve feed efficiency and AST concentration in Hanwoo finishing steers fed a high-concentrate diet. In conclusion, a mixture of eugenol, thymol and malate has shown promise in improving feed efficiency and liver function in the finishing phase of Hanwoo steers.

The current study was conducted to compare the growth performance and physico-chemical characteristics of Hanwoo bulls and steers of different slaughtering ages. Thirty-six Hanwoo (average age, 13-mon) were allocated into either a bull or steer group (18 animals/group). Each group was sub-divided into 26-, 28-, and 30-mon-old age groups (six animals/group). Surgical castration was performed in the steer group immediately after the experimental groups were assigned. Growth performance of the animals, as well as carcass characteristics and fatty acid composition of M. longissimus dorsi were determined. Cold carcass weights increased as carcass slaughtering age increased in both Hanwoo bulls and steers (p<0.05). Backfat thickness was thickest (p<0.05) in 28-mon-old Hanwoo bulls and 30-mon-old steer, and the M. longissimus dorsi area was widest (p< 0.05) in 28-mon-old Hanwoo bulls and steers. Marbling score, cooking loss, and water holding capacity (WHC) were higher (p<0.05) in 30-mon-old Hanwoo bulls and steers as slaughtering age increased. The shear force value was highest in 30-mon-old Hanwoo bulls and 26-mon-old Hanwoo steers compared to that in other groups. The unsaturated fatty acid composition in M. longissimus dorsi was significantly (p<0.05) higher in 28- and 30-mon-old Hanwoo bulls and steers than that in other groups. The results suggest that castration, even at late stages of Hanwoo development, improved beef carcass quality grade, and that no difference in beef quality grade had occurred (marbling score and WHC) in 28- and 30-mon-old slaughtering age Hanwoo steers.

The objective of this study was to compare the effects of the levels of inbreeding on body weight traits between two breed populations, Hanwoo and Korea Brindle cattle. Birth weight (BW), weaning weight (WW), body weight at 6 months of age (W6) and yearling weight (YW). Records of 1,745 calves (1,513 from Hanwoo, and 232 from Korea Brindle calves) were collected from Livestock Research Institutes in Kangwon, Gyeongbuk and Chungbuk provinces. The least squares means (LSM) and their standard errors for BW, WW, W6 and YW were $25.4{\pm}0.1$ kg, $81.0{\pm}1.8$ kg, $146.1{\pm}3.7$ kg and $291.5{\pm}2.4$ kg, respectively in Hanwoo calves and $22.6{\pm}0.3$ kg, $79.9{\pm}2.3$ kg, $137.6{\pm}4.6$ kg and $249.3{\pm}6.6$ kg, respectively in Korea Brindle calves. Pedigree data showed that 14.8% (316 out of 2131) of Hanwoo was inbred and the average inbreeding coefficient was 0.0209 (2.09%). Inbreeding coefficients of ten calves out of 316 total inbred Hanwoo calves were 12.5% or higher, whereas those of the other 306 calves were less than 12.5%. This study was to investigate the effect of high energy diet on characteristics of Hanwoo steers distributed by estimated breeding value (EBV). The aim of this experiment was to determine the effect of high energy diet on the high and low beef group distributed by EBV for quality grades. We hypothesized that high energy diet is able to increase quality traits in high EBV groups when fed a high energy diet. A $2{\times}2$ factorial arrangement (High energy, control vs high EBV, low EBV) in a completely random design was used to feed 26 Hanwoo steers. Blood was drawn from each steers from 11 to 28 months. ADG and feed efficiency were not different between high energy and control diet (P>0.05). The level of DMI was greater at calf and early fattening diet in low EBV groups (P<0.05). Serum glucose and tryglyceride conecntrations were increased (P<0.05) by high EBV group from 22 to 28 month old. Serum NEFA concentration were plateau at 24 months at high EBV group and steady reduced by high energy diet (P<0.05). This data indicated that high energy diets increased serum glucose and triglyceride concentrations of high EBV steers at final fattening period.

This study was carried out to investigate the effect of the feeding method of total mixed fermentation (TMF) and concentrate feed on the growth performance, carcass and meat characteristics of late fattening Hanwoo steers. Twenty-four Hanwoo steers were used in this study. The control group was fed with concentrate feed + rice straw from the growing to the late fattening period, while the T1 group was fed with TMF from the growing to the early fattening period and concentrate feed + rice straw for the late fattening period. The T2 group was fed with TMF from the growing to the late fattening period. The average daily gain (ADG) and feed conversion ratio (FCR) were not different between the treatment and control group. Serum cholesterol and high density lipoprotein (HDL) cholesterol concentrations were higher in the T2 groups than in the control group (p<0.05). The yield grade and quality grade were not different between the treatment and control group. The lightness of longissimus muscle was higher in the T1 group than in the control and T2 groups (p<0.05). Poly-unsaturated fatty acid (PUFA) of longissimus muscle was increased in the T2 groups than in the control group. Therefore, the method of feeding TMF and concentrate feed could have a positive effect on the lightness and fatty acid composition of longissimus muscle without affecting the growth and carcass grades of Hanwoo steers.

The present study investigated the effect of average daily gain (ADG) on carcass traits of Hanwoo steers. A total of 233 heads of Hanwoo steer slaughtered from 2017 to 2020 were employed in the analysis. Their body weight profiles during feedlot and carcass traits were used. The entire feedlot period is split into two periods. ADG during the first period (ADG1) was then defined as an independent variable in statistical analysis. In the meantime, it was examined that how the cutoff month for the period split altered the significance of the effect of ADG1 on carcass traits. Subsequently, steers were assigned to two groups (High vs. Low) based on the median of total ADG1, and we compared the carcass traits of each group using a linear mixed model. ADG1 during 10 to 23 months showed a significant effect on all carcass traits except the marbling score. ADG1 significantly influenced carcass weight and eye muscle area of Hanwoo steers. And it was found that greater ADG1 could get greater carcass weight and eye muscle area (p<0.001). The result of this study provides preliminary information for the target month in the calculation of ADG1 mostly influencing carcass performance, and feeding strategy of Hanwoo steer in terms of sustainability.

Background: Recently, the single-step genomic best linear unbiased prediction (ssGBLUP) method, which incorporates not only genomic information but also phenotypic information of pedigree, is under study. In this study, we performed a ssGBLUP analysis on a commercial Hanwoo population using phenotypic, genotypic, and pedigree data. Methods: The test population comprised Hanwoo 1,740 heads raised in four regions of Korea, while the reference population used Hanwoo 18,499 heads raised across the country and two-generation pedigree data. Analysis was performed using genotype data generated by the Hanwoo 50 K SNP beadchip. Results: The mean Genome estimated breeding values (GEBVs) estimated using the ssGBLUP methods for carcass weight (CWT), eye muscle area (EMA), back fat thickness (BFT), and marbling score (MS) were 7.348, 1.515, -0.355, and 0.040, respectively, while the accuracy of each trait was 0.749, 0.733, 0.769, and 0.768, respectively. When the correlation analysis between the GEBVs as a result of this study and the actual slaughter performance was confirmed, CWT, EMA, BFT, and MS were reported to be 0.519, 0.435, 0.444, and 0.543, respectively. Conclusions: Our results suggest that the ssGBLUP method enables a more accurate evaluation because it conducts a genetic evaluation of an individual using not only genotype information but also phenotypic information of the pedigree. Individual evaluation using the ssGBLUP method is considered effective for enhancing the genetic ability of farms and enabling accurate and rapid improvements. It is considered that if more pedigree information of reference population is collected for analysis, genetic ability can be evaluated more accurately.

This study was conducted for SNPs in the 5'-regions of estrogen receptor-${\alpha}$ (ESR-${\alpha}$), and association with calving interval (CI), service per conception (SPC) and 305 days milk yield in Hanwoo and Holstein dairy cattle. The genetic improvement was incurred low reproduction performance. The objective of this study was to investigate connections between single nucleotide polymorphisms (SNP) of Estrogen receptor-${\alpha}$ (ESR-${\alpha}$) with reproduction performance (calving interval, service per conception, and 305 d milk yield) in Hanwoo and Holstein dairy cattle. Hanwoo and Holstein blood samples were collected from 183 and 124 dam of breeding farms and DNA was extracted. Primer design was based on NCBI GenBank (Accession No. AY340579). The PCR-RFLP method with Bgl I was used to genotype the cattle. The result showed two variants of the ESR-${\alpha}$ gene. The Bgl I cut the 492 bp amplification product into 322 bp and 170 bp fragments for allele G, while allele A remained uncut, resulting in two restriction fragments for homozygote G/G and three fragments for heterozygote A/G. We found two of different genotypes in these breeds, A/G and G/G. In Hanwoo, the A/G genotype frequency was 0.13, and G/G was 0.87. The CI of A/G was $382.18{\pm}10.03$ days, and G/G was $381.69{\pm}5.22$ days. The SPC of A/G was $1.62{\pm}0.16$, and G/G was $1.32{\pm}0.04$. While CI showed no significance difference, SPC exhibited significant difference (p<0.05). In Holstein cattle, the frequency of genotype A/G was 0.02 and G/G was 0.98. The 305 days milk yield of A/G was $7,253.00{\pm}936.00kg$ and of G/G was $8,747.51{\pm}204.88kg$, showing no significant difference.
This study was conducted to evaluate the effect of feeding squid by-products on the growth performance and carcass characteristics of Hanwoo cows. Sixteen Hanwoo cows, aged 7 years and weighing $484.1{\pm}63.6$ kg, were randomly allocated to 2 feeding groups (8 animals per group): control and treatment (fed squid by-products). Both groups were fed ad libitum for 150d. Average daily gain was significantly higher in the treatment group than in the control group (p<0.05). During the experimental period, DMI and feed conversion ratios were significantly lower in the treatment group than in the control group (p<0.05). The results of yield traits, back fat thickness, rib eye area, and yield index were similar between the two groups. Carcass weights were 363.4 kg and 353.1 kg for treatment and control, respectively, but these differences were not statistically significant. Quality traits such as meat color, fat color, texture, and maturity were also not significantly different between the two groups. However, marbling score and rate of appearance of high quality grade ($1^{++}$, $1^+$, and 1) were higher in the treatment group than in the control group. These results suggest that feeding squid by-products may improve the growth performance and carcass characteristics of Hanwoo cows.
