노인의 외식실태 및 외식태도에 관한 연구 (A Study on the Survey of the Dining out Behavior of Korean Older Person)

  • The purpose of this study was to investigate several aspects of eating out behaviors among older persons. In aging society, need of seniors are getting higher than before, they want to have a good quality of life. Specially it is changed in family structure and life style. The food habits of older person will be getting change. Hence this study tried to show the various thought of eating out behaviors, interested factors to select restaurants and menus, tendency to do eating out, inconveniences to use of eating out so on. The questionnaires were completed by 150 older persons living over 60 years old in Busan. They were mostly health and active. The most study were focused young generation however the old generation was not interest in eating out behaviors. Therefor this study gave a lot of approach to develop food habits for old person. The result were as followed: The attitude of eating out were positive, once or two times in a week was highest response 138(92%). As frequently selected food were vegetable and Korean food restaurants. Moreover older person expect a meaningful food culture among older person. As a bad grade of eating out were not to be kind to seniors, never concern to characteristic older. They wanted to have a food for their health and to share with their spare time. The study of eating out style will be very important issue of silver industry. To develop menus and to make older person culture is very needed in aging society.

요리 활동 교육이 아동의 편식행동에 미치는 영향 (The Effect of Cooking Activities on the Unbalanced Dietary Food Habits of Elementary School Children)

  • The purpose of this study was to investigate the effect of cooking activities on the unbalanced dietary food habits of elementary school students and develop the effective cooking activity program for the improvement of unbalanced dietary behaviors as well as the food intake and menu acceptance. The subjects of this study were 256 elementary school students. The cooking activity group and control group were consisted of 128 students of $3^{rd}$ & $5^{th}$ grader each. Both cooking activity and the control group took the same 1-hour nutritional theory based class for 10 sessions. Only Cooking activity (CA) group took additional 10 sessions of 1-hour cooking class. Programs for cooking activity were developed and 10 cooking activity sessions were taken place for 4 months. The questionnairs were used to evaluate the effect of the cooking activities over the intake of food group, unbalanced dietary behavior, eating attitudes, menu acceptance before and after the completion of all the cooking activities. Cooking activities affect the unbalanced dietary behaviors and the intake of food groups. Fish, cereals, milk products, fruits, potatoes, vegetables were more eaten by CA group than control group. Eating attitudes and unbalanced dietary behaviors of CA group are also improved significantly than control group. From these results, it was concluded that cooking activities had the positive effect on the improvement of unbalanced dietary food habits over vegetables, cereals, fish, milk product and fruits as well as the unbalanced dietary behaviors of the elementary school children.

  • This study was conducted to evaluate the effects of a set of 16 nutrition education lessons on the eating behaviors and nutrition knowledge of middle school students. The target was a group of 128 boys in the first year of middle school in Changwon, who took the classes from the 29th of August, 2011, to the 17th of February, 2012. The education was performed for 16 weeks using the e-learning textbook, 'Health and nutrition of youth', and a teacher's guidebook developed by the Ministry of Health and Welfare. The results were summarized as follows. Students demonstrated significant changes in their knowledge about nutrition and in their dietary behavior due to the nutrition education, and the effects were observed to be maintained for one year after education. The average nutrition knowledge score before, immediately after, and 1 year after the education was significantly increased from 13.0 before the education to 18.8 after education (p<0.001), maintaining the score of 18.5 1 year later. The eating-related questions of 'I will practice healthy eating habits in life' and 'Nutrition education is necessary to build healthy eating habits', were given a high score by the students at the last survey conducted one year later. Of course, it is not easy to change the dietary behavior of students through dietary education in schools. Nevertheless, the results of this study demonstrated that such educatcan is necessary since the habits can indeed be changed, as observed in the present study.

서울지역 성인여성의 채식주의 실태 및 관련 식행동 (Characteristics of Vegetarianism and Its Association with Eating Behavior in Women Living in Seoul)

  • Increasing numbers of Korean adults, especially women, are adopting vegetarian diets for various reasons. In this study, the characteristics of vegetarianism among females residing in Seoul were examined. In addition, the dietary habits and eating behaviors between vegetarians and non-vegetarians were investigated. A total of 148 females (73 vegetarians, 75 non-vegetarians) were recruited and questionnaires regarding their demographic characteristics and eating habits were completed. The eating behavior and daily intake of food groups was assessed using the three factor eating questionnaire-R18 (TFEQ-R18) and food frequency questionnaire, respectively. The ages, BMI, education, and religious affiliation were not significantly different between the two groups. More than 30% of vegetarians had followed a vegetarian diet for longer than 24 months. The most common motivations for vegetarianism in study participants were 'health or weight control' (46.6%) followed by 'environmental concerns or animal welfare' (24.7%). Vegetarians had a lower intake of cereals, Kimchi, and soda, but a higher intake of potatoes and sweet potatoes, vegetables, mushrooms, seaweed, and fruits compared to non-vegetarians. Significant differences in eating behavior scores were also found between the two groups; in particular, vegetarians reported higher levels of restrained eating and emotional eating than non-vegetarians. Scores of uncontrolled eating, however, were not significantly different between the two groups. In conclusion, these results suggest that while vegetarianism is associated with healthy dietary habits, it is associated with restrained eating behaviors which may increase the risk of eating disorders in women.

전주지역 초등학교 고학년 남.여 학생의 식습관 및 식행동, 영양지식에 관한 연구 (Eating Habits, Eating Behaviors and Nutrition Knowledge of Higher Grade Elementary School Students in Jeonju Area)

  • The purpose of this study was to investigate the eating habits and eating behaviors, nutrition knowledge of students in 4, 5 and 6th graders of elementary school in Jeonju Area. The subjects for questionnaire were 2,568 elementary school students (boys 1,364, girls 1,204). The results were analyzed by SPSS program, and were as follows. In anthropometric data, there were significant differences between boys and girls. In eating habits and eating behaviors, there were significant differences in the rate of 'Hasty eating habit(p<0.01)', 'Most heavy meal(p<0.01)', 'Eating when receive stress(p<0.05)', and 'Frequency of snack eating per day(p<0.01)' between boys and girls. In total scores of nutrition knowledge, there were significant differences between boys and girls. In nutrition knowledge, there were significant differences in the rate of 'Carbohydrate and fat give heat and force.(p<0.001)', 'Carbohydrate is nutrient that make muscle and blood of our body.(p<0.01)', 'Overeating of carbohydrate does not contribute gain of weight. (p<0.05)', To intake vitamin, it is good to eat fresh fruit and vegetable.(p<0.01)', 'Calcium deficiency is leading to anemia.(p<0.001)' between boys and girls. In conclusion, systematical educational programs need to be developed at elementary school. These should include information about achieving a balanced diet, good eating habit and behavior, meal management and Korean dietary culture. Also, nutritional education at home must be emphasized.

Dietary Problems among Middle-Aged Japanese Men

  • Balanced intake of appropriate nutrients is the key to sustaining and promoting health as well as preventing and treating diseases. It is not always easy, however, to take balanced nutrition and various related factors must be taken into consideration. This report provides a summary of studies that have examined the nutrient intakes of Japanese middle-aged men and the relationship of this intake to drinking, job-related separation from families, and health practices. The alcohol consumption of Japanese middle-aged men has more than tripled in the last forty years. When nutrient intake was examined in relation to alcohol consumption, it was discovered that the maximum acceptable alcohol consumption was approximately 23 grams (about two drinks) of pure alcohol, provided the level of nutrient intake for drinkers was equal to that of non-drinkers. The alcohol energy ratio was approximately 5%. It was also discovered that middle-aged men's eating habits deteriorate when they relocate to new posts without their families and live by themselves. Compared to those living with their families, a higher proportion of those living alone have unfavorable eating habits including skipping breakfast or lunch, having a late lunch, and eating and drinking after dinner until bedtime. When Breslow's seven health practices, nutrient intake, and consumption weight by food group were examined, it was discovered that the group that had many beneficial eating and living habits consumed plenty of legume, pulses, fruit, green yellow vegetables and milk products. Their intake of vitamins and minerals was high and the results of a physical examination proved to be excellent. According to nutrition surveys conducted in Japan, China, the United Kingdom and the United States using a 24-hour recall method with common protocols and strict controls to ensure high levels of accuracy and cross-study validity, the Japanese had the highest cholesterol intake and the lowest dietary fiber intake among the four countries. Also, the alcohol energy ratio of the Japanese exceeded 8%, the highest among the four countries, while their intake of magnesium and iron was the lowest These results indicate that it is necessary to enhance nutritional education for middle-aged men and to reinforce the social environments in which they live and work in order to promote proper diet and nutrition in Japan. 중학교 재량활동 중 실시한 영양교육의 효과 평가 (Effects of Nutritional Education Program through Discretional Activities in Middle School Students)

  • The effects of a nutritional education program for first grade middle school students were evaluated from August to December, 2006. The study subjects were 82 boys and 90 girls, residing in Gwangju, Korea. To assess the effects of the nutritional education program, pre- and post-questionnaires examining nutritional knowledge, dietary attitudes, and dietary habits were developed. Paired t-test and repeated measures ANOVA were used to evaluate the effects of the nutritional education program. In the general subject, the main after-school activities were studying, watching TV, and using computer (85.5%), and sports (9.3%), suggesting their low physical activity. Parents (46.5%) were indicated as the source of nutritional education rather than teachers (13.4%). Twenty-five percent of girl students had diet experience of skipping meals (54.6%), suggesting the need of proper nutritional education for adolescents' health care. In dietary attitudes, both genders showed some improvement of recognition after education. In the changes in dietary habits, both genders had a significant effect on 'three meals a day, eating breakfast, and regular meal' after education. After education, the rate of having breakfast everyday increased from 52.4% to 65.9% for boys and from 33.3%to 57.8% for girls. In the changes in nutritional knowledge, the appreciation of the importance of school meals increased in both genders from 50.6% to 80.8% after education. The nutritional knowledge, scores of regular eating and well-mannered eating increased in both genders regardless of the students' characteristics. The study results revealed that this education provided an important motivation to improve basic nutritional knowledge and dietary habit. It is recommended to develop systematic and various educational programs and learning materials tailored to subjects before nutritional education.

The comparison in daily intake of nutrients, dietary habits and body composition of female college students by body mass index

  • The purpose of this study was to investigate differences in the body composition, dietary habits, daily intake of nutrients and clinical blood indices in female college students by body mass index of normal weight, overweight and obese. The subjects of this research were 141 respondents of a survey carried out on students, and subjects were given 60 minutes to answer questionnaires, by recording their own answers. The average heights and weights of subjects by BMI were 162.17 cm, 52.73 kg in normal weight group, 162.35 cm, 62.22 kg in overweight group and 161.72 cm, 69.82 kg in obesity group, respectively. As for the survey daily of meals, starving breakfast and kind of snacks of subjects were significantly different among the groups by BMI. In animal protein food intakes, meat intake was the highest 'every day' food consumed by subjects, and there was a significant difference in distribution of BMI among subjects. Fruits, and greenish and yellow vegetables intakes were the highest 'every day' foods indicated by the normal weight group. Consumption of carbonated beverages and juices showed a significant difference among groups by BMI. The average of total-cholesterol was the overweight group was the higher value. There was a significant difference in diastolic blood pressure and systolic blood pressure among the groups by BMI. Average daily calories intake levels were insufficient and the intake ratio of carbohydrates, protein, and fat was the normal weight group 68 : 17 : 15, the overweight group 64 : 18 : 18 and the obese group 73 : 14 : 13. Results of the daily vitamin intake analyses displayed riboflavin, niacin, vitamin C, and folic acid levels lower than the RI levels. Fe intake was the normal weight group 81%, overweight group 76%, obese group 59% of the RI level. Therefore, it is necessary for college students to establish regular meals, good quality snacks and consuming more vitamin and mineral nutritions for optimal health conditions.

세종특별자치시 중학생의 학교급식 만족도와 식습관 조사 (Study on the Satisfaction for School Food Service and Dietary Habits of Middle School Students in Sejong Special Self-Governing City)

  • The aim of this study is to provide the fundamental information on satisfaction for school food service and dietary habits of middle school students in Sejong Special Self-Governing City. Generally, the subjects had a high satisfaction level for school food service. The boys had comparatively more satisfactory days for school food service than the girls. The most dissatisfactory factors of school food service were the taste and variety of menu for the girls, and the time and place for lunch and the service of employee for the boys. The intersexual differences existed with a significant difference in the irregular intake of meals, the reasons to skip meals, and the eating speed. For the boys, the main reason to skip meals was due to lack of appetite, and for the girls, it was the weight-control. The boys finished each meal within 5~10 min and ate more than the amount the girls eat in general. The main components of breakfast for the subjects were a cooked rice, soup, and side dish in 65.9%, and the frequency of skipping breakfast was high with 32.8%, which was once per week. The favorite snacks for the middle school students were cookies and beverages in 29.4%, instant foods in 24.3%, and hamburger and pizza in 21.4%. The intake frequency of snacks was once or twice per week in 46.5% of the subjects. In addition, the subjects had a very high intake frequency of fastfoods with once or twice per week in 72.7%, and the most favorite fastfood was ramen in 57.7%. The subjects in 45.3% took dairy food every day. In conclusion, the middle school students need nutrition education to improve their eating habit and to increase the frequency of breakfast.

한국 정유공장 남성 근로자의 만성질환 관련 지표를 이용한 유소견자 실태 확인 및 관리방안 (Studies on the Health Status and Health Management Plan Using Health Check-up Index of Male Petroleum Refinery Workers in South Korea)

  • The petroleum refinery industry handles a variety of complex chemical substances and employs a large number of people around the world. According to previous research, diseases caused by exposure to chemicals were quite common among workers in refineries until the 1980s. More recently, it is unusual for oil refinery workers to suffer from these serious diseases. The objective of this study was to identify the occurrence level of general diseases and any differences in lifestyle habits of workers in refineries in Korea compared with the general population. In this study, we used the results of health examinations from 2014 for workers at a large oil refinery in South Korea. In addition, based on the results of KNHANES from 2014 as representative of the population, hypertension, diabetes, anemia, hyperlipidemia, liver function abnormality, and kidney function abnormality were calculated using the standardized incidence rate. Hypertension showed a low result with an SIR of less than 1, but a high result in the case of abnormal liver function. The workers' occurrence rates of hypertension, hyperlipidemia, kidney dysfunction, and anemia were lower than those of ordinary salaried employees. however, their occurrence rate for abnormal liver function was markedly higher. In lifestyle habits, the smoking rate of workers was low while the alcohol consumption rate was quite high. This study has improved the understanding of the health status of workers in a large oil refinery in Korea, and has shown the impact of lifestyle habits related to the work environment on chronic diseases.
