The aim of this study was to investigate the eating behavior and nutritional status of subjects according to their purpose of exercise. A total of 214 subjects, 20 to 30 years of age, who visited fitness centers in Seoul were enrolled. Anthropometrics, exercise habits, nutritional knowledge, and eating behaviors were analyzed using a questionnaire. Nutritional status was assessed by serial 24 h recalls. The subjects were divided into two groups based on their purpose of exercise: increasing muscle (Muscle growth, n=107) or losing body weight (Weight loss, n=107). The Muscle growth group contained a higher percentage of men, whereas the Weight loss group contained a higher percentage of women. The Muscle growth group showed significantly higher scores of nutritional knowledge and eating behaviors compared to the Weight loss group. The Muscle growth group also had a significantly higher intake of energy and protein compared to the Weight loss group. In fact, the intake of energy in the Weight loss group was lower than the estimated energy requirement (EER) for both men and women subjects. The intake of protein in the Muscle growth group was twice as much as the recommended nutrient intake (RNI). The intake of calcium in both groups was less than the RNI. In conclusion, those who exercised with the aim of increasing muscle took excess dietary protein and those who exercised with the aim of weight loss had a lower energy intake than the EER.
To evaluate growth habits, fresh pod yield potential, and possibility of early and late seeding, seeding dates were extended from March 21 to June 20 by PE mulching and non-mulching. Soil temperature, under 5cm from surface, above 15$^{\circ}C$ at 10 a.m. in early seeding reached about March 25 in mulching and April 5 to April 12 in non-mulching. Days to emergence and first flowering were accelerated owing to increasing temperature, as seeding was delayed. Days to emergence according to seeding dates reduced 21 to 8 day in mulching and 33 to 10 day in non-mulching. Days to flowering were ranged from 51 to 26 day in mulching and from 69 to 32 day in non-mulching and differences between mulching and non-mulching on each seeding date had 18 to 4 days. Early seedings till April 21 had 160-170 flowers per plant for 8 weeks, while late seedings from May 21 increased more speedily with 200 flower for 6 weeks. Harvesting of fresh peanut, at 80 days after first flowering, was possible from Aug. 1 to Oct. 7 (133-108 days to harvest) by mulching and from Aug. 19 to Oct. 12 (151 to 114 days) by non-mulching. Yields between mulching and non-mulching in early seeding until April 21 had more difference, but in late seeding after May 21 was higher and showed insignificance. Pod setting periods by early and late seeding were about 3 weeks equally. In late seeding pod setting were almost concentrated for front 15 days. In spite of difference of fresh pod weight between two seeding times, the distributions of average of seed weight showed nearly same tendency.
Especially, the teenage period, an important lifetime to develop both physically and mentally, needs to be helpful to promote the growth of the body and to keep a well-balanced mind through a balanced and nourishing diet. It is well known that the western style fast food is the most liked meal by teenagers. Wrong recognition about fast food and its frequent intake by adolescents can lead to unbalanced diet and food behaviors which may also connect with a poor impact on their personalities as well as their physical health. In this study, therefore, relationships between fast food intake frequency and food behavior, sociability, and personality, such as anger expression, were surveyed from 1,295 adolescents (666 in Seoul, 316 in Changwon, and 313 in rural communities), and then analyzed using SPSS program. The results are shown as follows. The fast food preference score and the fast food intake frequency score showed no differences between male students (22.9/30, 14.4/30 respectively) and female students (23.0/30, 14.0/30 respectively). But, the fast food preference score correlated positively with the intake frequency score (r=0.304) significantly (p<0.001). The more frequently eating of fast food group showed significantly lower scores (r=-0.233, p<0.001) in food behaviors. The frequency of fast food intake had no relationships with sociability, but it had a significantly effect on anger expression (r=0.213, p<0.001) and control (r=-0.l47, p<0.001). From these results, we could see the necessity of various nutrition education programs to build proper eating-out habits and also more studies are needed to find the relationships between fast food intake and growth and personality.
This study is an analysis on how current elementary teachers think about nutrition education, how they are teaching it, and problems that have occurred. The main purpose of this analysis was to deal with future problems in nutrition education by analyzing the present situation . The survey was done on 544 currently working elementary school teachers. from the 9 education departments within Seoul, 2 schools were chosen from each department by stratified random sampling. The survey used a questionnaire that was passed out personally to teachers from September 1, 1997 to the 19th. The 544 usable questionnaires were analyzed by using the teachers had nutrition education training and the average score of nutrition knowledge was 13.30 $\pm$2.73 out of 20. Nutrition education was being taught as apart of other subjects in 87.9% of the schools, and mainly by lecture. Audio visuals aids were used by 53.7% of the teachers and the most common was the VTR. Nutrition education was taught as a part of physical education and 41.5% were using teacher guides to help them. 91.9% of the teachers supported the idea of nutrition education in elementary schools. Nutrition education was supported by 80. 0% of teachers to begin when children are in kindergarten, proving that early nutrition education is supported. The analysis showed that nutrition education should be taught by parents(29.4%) , teachers(29.2%), and nutritionists(25.9%) relating that family , education, and school lunch programs should tie in with each other. 96.7% of the teachers responded that they would teach nutrition education. However, 41.0% disagreed with having a separate course for nutrition education . Proper eating habits, nutrition and its diseases, and growth with nutrition were the main categories within nutrition education and the most effect method was thought to have audio visuals, guides for teachers , and to link the subject matter with school lunch programs. The teachers main responses to problems with children were that they are too much instant food, did not eat in a variety , and had no manners in eating. Ironically, the believed that malnutrition, fainting and growth stunt were not important nutrition problems.
The purpose of this study was to make a comparative analysis of dietary habits, snacks, eating out and fast-food intake between students with a relatively early sexual maturity and others with a relatively late sexual maturity in a bid to grasp the impact of dietary behaviors on sexual maturity. The subjects in this study were 565 boys and girls who resided in Seoul and Gyeonggi province. They included fifth- and sixth-grade school children and seventh-grade middle school students. To classify the selected students according to the level of sexual maturity, the students of the same month age were divided into two groups in consideration of the stage of their sexual maturity and that of the other age groups. The early mature group was significantly taller and weighed more than the late mature group irrespective of gender. According to Tanner stages, the boys of the early mature group reached a 3.03 stage of sexual maturity when the sexual organs were taken into account, and those of the late mature group reached a 1.50 stage of sexual maturity. The girls of the early mature group reached a 3.43 stage of sexual maturity on the basis of breast, and those of the late mature group reached a 2.73 stage of sexual maturity. Concerning eating out, the early mature group ate out more frequently than the late mature group. In regard to snacks, the early mature group had a snack more often. The findings of the study indicated that there were differences in physical development and some dietary behaviors according to sexual maturity. The early mature group had a snack and ate out relatively more often than the late mature group, which showed that some dietary behaviors had an impact on the sexual maturity of the teens who arrived at the age of puberty.
Objectives: Purpose of this study is to analyze and to estimate which and how much genetic and environmental factors have affected on growth. Also, a method of final height prediction can be developed from this study results. Methods: Correlation analysis and categorical regression analysis were conducted between genetic and environmental factors correlated with the final adult height, through survey from 171 male. Results: Mid parental height, neonatal body weight, intake frequency of beef, chicken, milk, fruits and coffee, sleep quantity and quality during the elementary school and sleep quantity during the middle school have affected on the final adult height. And a regression equation with 0.494 for coefficient of determination was obtained. Conclusions: Mid-parental-height has the most affected on the final adult height. Among environmental factors, food and sleep have significantly affected, but exercise doesn't. Among foods, meal, beef, and milk intake have remarkably affected on the final height, and chicken and fruit also have affected in some degree, but coffee has affected badly. Among sleep habits, sleep quantity during the elementary school has the most affected, sleep quality during the elementary school and sleep quantity during the middle school also have affected in some degree on final height. The younger the age is, the more sleep have affected and sleep quantity have more affected than sleep quality. Neonatal weight also has remarkably affected on the final height. Through this analysis, the final adult height can be predicted using regression equation which covers 49.4% of genetic and environmental factors.
Objectives: The present study aimed to analyze the factors that could affect the health-promoting behaviors of North Korean adolescent refugees residing in South Korea. Methods: Questions about their sociodemographic variables, subjective health status, healthy living habits, and health-promoting behaviors were asked. Results: Statistically significant differences were found in religion (t=2.30, p<0.05), having family members in South Korea (t=2.02, p<0.05), and subjective health status (t=4.96, p<0.01). Scores on health-responsible behaviors were higher with higher age (t=2.90, p<0.01) and for subjects without family or friends (t=2.43, p<0.05). Higher physical-activity behaviors were observed in males (t=3.32, p<0.01), in those with better subjective health status (t=3.46, p<0.05) and lower body mas index (t=3.48, p<0.05), and in smokers (t=3.17, p<0.01). Nutritional behaviors were higher in those who followed a religion (t=2.17, p<0.05). Spiritual growth behaviors were higher in those who followed a religion (t=4.21, p<0.001), had no family in South Korea (t=2.04, p<0.05), and had higher subjective health status (t=5.74, p<0.01). Scores on interpersonal relationships and stress-management behaviors were higher for those with higher subjective health status. A multiple regression analysis showed greater effects on health-promoting behaviors when subjective health status was better. Older people and non-smokers exhibited more health-responsible behaviors, while more physical-activity behaviors and spiritual growth activities were observed when subjective health status was better. Interpersonal relationship behaviors had positive effects on those with good subjective heath status and on non-smokers. Conclusions: Based on the results of the current study, an alternative was suggested for promoting health in North Korean adolescent refugees.

The National Agrobiodiversity Center (NAS, RDA, Republic of Korea) has continually collected new valuable genetic resources. In this study, we regenerated conserved kidney bean (Phaseolus vulgaris L.) germplasm which couldn't be available because of seed quantity and quality, and we also surveyed their morphological characters for the sustainable utilization. A total of 431 kidney bean accessions were regenerated and 18 morphological traits were surveyed according to the characterization guideline of RDA Genebank. Among the surveyed traits, flowering time ranged from May 23 to September 4 and 73.8% of tested accessions were mainly flowering in June. The maturity time ranged from July 1 to October 15 and main flowering time was July (91.4%). For plant type, 270 accs (62.6%) were climbing type followed by medium type of 86 accs (20.0%) and dwarf type of 65 accs (15.1%). The seed coat colors were various; yellow (34.6%), white (22.3%), brown (17.9%), red (10.7%), black (5.8%), violet (11%), pink (1.4%), navy (0.9%). Principal component analysis indicated that five principal components (PCs) with Eigen values >1 accounted for more than 65.8% variability. The first PC was more related to growth habits such as growth type, flowering time, and plant type. The second and third PCs showed higher values of the pigment characters such as seed coat color, flower color, and pod color. In fourth and fifty PCs, there were the higher positive values of the pod shapes. Our results provided insight into the characteristics kidney beans, thus the utilization basis of kidney beans might be elevated for bio-industry.
Adequate vitamin $B_2$, vitamin $B_6$, folate and vitamin $B_{12}$ intakes are known to be important for the growth and development in infants. The purpose of this study was to evaluate concentrations of vitamin $B_2$, vitamin $B_6$, folate and vitamin $B_{12}$ in human milk and to investigate the relationship between vitamin B levels in human milk and dietary habits and other health-related behaviors. Milk samples were obtained from 38 healthy lactating women (aged 29.0 $\pm$ 3.2 years) who are participating in the cohort study on pregnant women. Vitamin $B_2$ concentrations in human milk were positively correlated with maternal vitamin $B_2$ intakes in lactating mothers. Vitamin $B_6$, folate and vitamin $B_{12}$ concentrations in human milk were not correlated with maternal B vitamin intakes. Vitamin $B_6$ concentrations in human milk were negatively correlated with the amount of postpartum weight loss. The vitamin B concentrations in human milk were not associated with maternal age, height, weight and parity. Mothers who were exposed to indirect smoking had lower vitamin $B_2$ concentrations, and those who reported to consume health foods had higher vitamin $B_2$ concentrations in their milk. In conclusion, lactating women need to consume more vitamin B intakes for the growth and development in infants. Further researches are needed to find other diet and health-related factors which influence on B vitamin concentrations in human milk.
This study was conducted for researching demand on dietary education of low-level elementary school students and to develop an activity based textbook and a teaching manual on the subject. For necessity of dietary education, 88.8% of subjects answered dietary education is needed. The desirable frequency of the education was once a week (65.7%). The most appropriate time for the education was "school lunch" (37.5%), "special activity" (29.9%), "regular class" (12.4%) and "after school activity" (12.1%). The most preferred educational method was "experiment and practice" (40.1%). The desirable educational materials were "computer materials" (20.7%), "actual objects" (20.1%), "videotapes" (16.5%), "photographs-pictures" (12.2%) and "fairy tales-cartoons" (12.2%). The students wanted dietary information as "cooking" (26.1%), "growth and nutrition" (23.7%) and "right food information" (20.1%). The textbook was composed of five major chapters, which were "Traditional Dietary Culture", "Food", "Dietary Habit", "Hygiene and Environment" and "Cooking". Each major chapter had five to six smaller chapters, adding up to total of 32 chapters. The textbook had fun characters, illustrations, photographs and cartoons to deliver the main theme of each chapter. The textbook was in activity format so that it coul be readily and directly used in actual classes. The teaching manual was composed of background, goals, teaching plans and teaching points. The smaller chapters had learning goals, teaching-learning resources, important points, teaching-learning processes and reference materials. Videos were produced to help cook five snacks in the cooking chapter. Also, "Healthy Song" was created to be used in classrooms. This textbook will be helpful in children's right dietary habits and growth.
