Quality Characteristics of Jook Prepared with Green Laver Powder (파래 분말을 첨가한 죽에 관한 품질 특성)

  • This study was performed to provide basic data on the use of green laver for jook. To accomplish this, we tested water content, color, brightness, mechanical qualities and sensory qualities in comparison to a control group. Higher concentration of green laver powder decreased water content, lightness, redness, viscosity and pH. Further, higher concentration of green laver resulted in lowered preference regarding appearance. However, better flavor was with the result of a higher amount of green laver. Therefore, green laver seems to have benefits for use in oriental soup. Accordingly, we expect there is potential for use of green laver for jook.

The Evaluation on the exiting greens of Hwasan Country Club by undisturbed Soil Core Analysis (토양 코아 분석을 통한 화산 골프장의 조성된 그린에 대한 평가)

  • The subsurface environment of the root zone area can set the stae for "do or die" of the turfgrass plant. The good condition of the greens is verified by their physical properties. Therefore, this study was carried to evaluate on the existing green of Hwasan C.C. by undisturbed soil Core Anaysis. We completed the ISTRC SYSTEM BenchMarking of the undisturbed core samples taken from Green #1, Green #5, Green #9-"Best" area, and Green #9-"Stressed" area for the Hwasan C.C.. It was also our understanding that the greens were in "good" to "very good" conditioni. THe exception might be Green #9-"Stress" area, which was the stressed area. The stressed area was confined to a ridge across Green #9. The organic content test results comfirmed the development of organic layering in depth 0-2.5cm. For the amount of compaction in the upper root zones and te development of the green's respective organic layers, the infiltration rates were high in Green #1, Green #5, and Green #9 "Stressed" area. The depicted aerificaton hole might be the probable cause of the relatively high infiltraton rate. Green #9-"Best" area had a tested infiltration rate of 18.75cm/hr. Either this area had not been aerified, or the undisturbed sample did not contain a aerification cavity. The water retention capacity of the undisturbed samples was good. When the greens were first constructed, the original root zone mix had been relatively low water retention properties. And the bulk density and the porosity of the undisturbed samples were good. In the result, all the greens were similar except for the infiltration. Thus, we supposed that Green #9-"Stressed" area might be ainly influenced by the amount of irrigation water and the configuration of the green's surface. There had been a reduction in the amount of irrigation water as the water retention capacity in the greens was promoted. Especially, it had gradually become more of a problem as the green had matured in Green #9-"Stressed" area. Because Green #9-"Stressed" area was a ridge area. The reduction in the amount of irrigation water might be the probable cause of the stress in Green #9-"Stressed" area. Our final observation related to the soil texture and the particle size distribution of the sand. Though and sand contant of all the tested greens were good, the gravel content of them exceeded ISTRC Guidelines. In particle size distribution of the sand, the very coarse and the coarse content of all the tested greens exceeded, but the rest was insufficient. The stability is a function of the material retained on the 0.25mm mesh screen. But, the content of all the tested greens was very insufficient. Though all the greens was serviceable, the coarse root zone sands, such as the sand in the tested greens, tended to be "unstable". Thus, we recommend using a topdressing/aerification sand which should be more in line with ISTRC/USGA Guidelines.;unstable". Changes of Pepper Yield and Chemical Properties of Soil in the Application of Different Green Manure Crops and No-Tillage Organic Cultivation (무경운 유기재배에서 녹비작물별 고추의 수량과 토양 화학성 변화)

  • This work studied the growth and yield of green crops, changes of mineral composition in greenhouse soil and green crops, and infection with wintering green crops cultivation in greenhouse field. At 74 days after seeding of wintering green crops, dry matter was 710kg/10a in rye, 530kg/10a in barley, 230kg/10a in hairy vetch, and 240kg/10a in bean or weeds. Total nitrogen content in green crops was 4.5% in pea and hairy vetch, and 3~4% in barley and rye. $P_2O_5$, CaO, and MgO contents in all green crops were about 1.0%, and $K_2O$ content was the highest level by 4~5% among macro elements. Total nitrogen fixing content in shoot green crops uptaken from soil was 22.1kg/10a in rye, 20.6kg/10a in barley, 10.6kg/10a in hairy vetch, and 9.6kg/10a in pea and giant chickweed. $P_2O_5$ fixing content in shoot green crops uptaken from soil was 8.4kg/10a in rye, 6.3kg/10a in barley, and 2.3 kg/10a in hairy vetch and pea. $K_2O$ fixing content in shoot green crops uptaken from soil was 28kg/10a in rye, 24.7kg/10a in barley, and 11kg/10a in hairy vetch and pea. CaO fixing content in shoot green crops uptaken from soil was 2~3kg/ 10a in all green crops, and MgO fixing content was 1.7~2.6kg/10a in all green crops. Pepper growth in no-tillage was not a significant difference at all green manure crops. The number of fruit and fruit weight were higher in control, pea, hairy vetch and harvest barley than rye and barley. Soil mineral compositions in wintering green crops increased at pH, organic matter, CEC compared with control. Soil chemical compositions were stable level at green crops cultivation according as decreases of EC, available phosphoric acid, Ca, and Mg contents. After no-tillage by green manure crops, pH in soils was higher in green manure crops than control. EC content in soils was lower in green manure crops than control, and was remarkably low level in barley harvest. Organic matter content in soils increased in hairy vetch and barley green manure but decreased by 35% in barley harvest. Total nitrogen and avaliable $P_2O_4$ content in soils remarkably increased but was not a significant difference at all green manure crops. Cation (K, Ca, and Mg) content in soils decreased by 15~20% in K, 2~11% in Ca, and 3~6% in Mg at rye, barley and pea compared with control.

Antioxidant Compounds and Activities of Short-term Green Gochujang (단기속성 청고추장의 항산화 성분 및 항산화 활성)

  • The purpose of this study was to improve the quality of Korean traditional sauce products by producing short-term green gochujang with cheongyang pepper powder. To determine its antioxidant compounds and activities, we examined vitamin C, capsaicinoid, total phenolic, and total flavonoid contents, as well as electron-donating, SOD-like, ferrous ion-chelating, and nitrite-scavenging activities. Vitamin C content of short-term green gochujang was higher in CON-M than in the sample, whereas capsaicinoid content increased as the amount of cheongyang pepper powder increased. Total phenolic content, total flavonoid content, electron-donating activity, and nitrite-scavenging activity were higher in the sample than in CON-M, and the contents increased as the amount of meju powder increased. Green gochujang containing the highest amount of cheongyang pepper powder showed the highest SOD-like, and ferrous-ion chelating activities as well as superior nutrient contents, compared to red gochujang.

Variation of Pectin, Catechins and Caffein Contents in Korean Green Tea (Camellia sinensis L.) by Harvesting Time and Processing Recipe (채엽시기 및 제조법에 따른 한국산 녹차의 펙틴, 카테친, 카페인 함량 변이)

  • This study was conducted to find out the variation in some medicinal components of Korean green tea by processing recipe and harvesting time in Bongsan-ri(steamroasted green tea) and Buchun-ri(roasted green tea) area. Total chlorophyll content of green tea grown at Bongsan-ri and Buchun-ri was 293mg% and 275mg% and ratio of chlorophyll a to chlorophyll b was 70:30 and 67:33 respectively. The later harvested one had the higher chlorophyll content but the chlorophyll content of the last harvested green tea at Buchun-ri decreased more sharply. Water-soluble pectin of green tea produced at Bongsan-ri and Buchun-ri was 2.05% and 1.84%, respectively. It also increased at the later harvested ones. Total amino acids content of Bongsan-ri and Buchun-ri tea was 2,156mg% and 1,723mg%, respectively. The later harvested tea showed the remarkably decreased. Caffein and catechins of Bongsan-ri and Buchun-ri tea were 2.03%, 11.52% and 2.62%, 14.05%, respectively, Total free catechins content of Bongsan-ri and Buchun-ri tea was 35.59% and 42.73%, and ester type was 58.09% and 44.47%, respectively. Extracted catechins and caffeins of green tea were increased when extracting water temperature was raised from $65^{\circ}C$ to 85$^{\circ}C$ and leaching time was lengthened from 3min. to 9min. About 89% catechins and 97% caffeins of green tea was extracted by nine minutes soaking in 85$^{\circ}C$ water.

The Variation of the Contents of Free Amino Acids and the Carbohydrates in the Whole Plant of Fagopyrum escullentum Moench during the Stages of Growing (모밀(Fagopyrum esculentum Moench)생장과정중의 유리 Amino 산과 당질의 성장에 관하여)

  • At the different growing stages of Fagopyrum esculentum Moench planted at the green house and out doors, the contents of free amino acids in the whole plants,were determined quantitatively by spot-extract colorimetric method (J. Awapara method) using the chromatograms obtained by the ion-exchange resin and paper chromatographic method. And the contents of carbohydrate in the whole plant were determined by Bertrand method. The results were summarized as follows. 1. Almost same kinds of free amino acids were detected in the both plants. 2. Concentrations of most amino acids was increased progressively during growth; further growth was accompanied by decreased concentrations. 3. Rate of growth and increasing of total amino acid content of green house plant is greater than that of out dorrs plant. 4. At the same stages of gwoth, total free amino acid content of green house plant is higher than that of out doors plant but sugar content is lower. 5. There was rapidly increasing of sugar content and decreasing of total free amino acid content except asparagine during mature of seeds.

Enhancement of Bromophenol Content in Cultivated Green Grouper (Epinephelus coioides)

  • Bromophenols are a group of compounds found only in marine organisms. They accumulate and give a sea-like aroma to marine animals. Cultivated fishes generally contain low concentrations of bromophenols compared to wild fishes. Feeding cultivated fishes with bromophenol-containing seaweed could increase their bromophenol content and thus improve their flavor quality. We evaluated the effect of an experimental feed on the bromophenol content of green grouper, Epinephelus coioides, during an 8-week feeding period. Green grouper individuals were divided into two groups and fed with conventional feed or experimental feed containing dried seaweed. Fish were collected biweekly for 8 weeks for proximate analyses and bromophenol content evaluations. Bromophenols were extracted, identified, and quantified by gas chromatography-mass spectrometry. Both moisture and lipid contents were generally higher in the controls; however, total weight and protein content were higher in the experimental group. Only 2,4-dibromophenol and 2,4,6-tribromophenol were detected in the samples. Throughout the 8 weeks, 2,4,6-tribromophenol concentrations were higher in the experimental group (9.20-32.3 ng/g dry wt) than in the control group (7.33-18.79 ng/g dry wt), but no significant difference in 2,4-dibromophenol concentration was detected between the two groups. The total bromophenol content reached a maximum at week 4 for the experimental feed and week 6 for the control. In short, experimental feed that incorporated bromophenol-containing seaweed increased the total bromophenol content in the green grouper.

Variation in Chemical Components of Korean Green Tea (Camellia sinensis L.) Resulted from Developing Stages and Processing Recipe (한국산 녹차의 채엽시기 및 제조법에 따른 화학성분 변이)

  • In this study physicochemical characteristics such as crude lipid, crude protein and total sugar contents have been analyzed with samples taken at different developing stages and growing sites, Bongsan-ri(steam-roasted green tea) and Buchun-ri(roasted green tea) area. Leaf area of new leaf was larger in Buchun-ri(7.23cm$^2$) than in Bongsan-ri(6.93cm$^2$). Variation of leaf area by the developing stages was the largest at between stage II (May 5) and stage III(May 18). Dry matters ratio of tea leaf were 26.3% in Bongsan-ri and 26.6% in Buchun-ri. Water content, ash, water-soluble matters, total sugar content of green tea sampled in Bongsan-ri and Buchun-ri were 5.6, 6.1, 33.1, 4.6 and 6.2, 5.8, 35.2, 2.8%, respectivley. Crude lipid, total nitrogen and water-soluble protein, inorganic matters content of green tea sampled in Bongsan-ri and Buchun-ri were 2.8, 5.1, 1.1, 2.56 and 2.2, 5.7, 1.0, 2.34%, respectively. At the later developing stages crude lipid, total sugar contents were increased, whereas total nitrogen had low content. Vitamin C, Vitamin E and Vitamin A content of green tea produced in Bongsan-ri and Buchun-ri area were 413mg%, 71.8mg%, 32.15IU and 311mg%, 52.3mg%, 25.68IU, respectively. Vitamin C and Vitamin E content were increased toward the later sampling stages. Water-soluble matters and water-soluble protein content of green tea prepared by the steam-roasted method and the roasted method were increased by 0.11, 0.13 and 0.09, 0.08%, respectively, compared to unroasted check. Crude lipid content of green tea prepared by the steam-roasted method and the roasted method were decreased by 0.13 and 0.24%, respectively. Total nitrogen content of green tea prepared by the steam-roasted method and the roasted method was changed 0.019 and 0.036%, respectively and total nitrogen content showed minute different between two methods.

Content Analysis of Chungtaejeon Tea and Green Tea Produced in Jangheung District (장흥지역 청태전과 녹차의 성분분석)

  • This study was conducted to compare the nutrient and chemical contents of traditional Chungtaejeon tea with that of green tea which was harvested in Jangheung, Jeonnam district. Vitamin C, amino acids and total nitrogen contents of Chungtaejeon tea were lower than that of green tea by 0.30, 2.30 and 4.20g/100g, respectively. The tannin, caffeine, reducing sugar and chlorophyll contents in Chungtaejeon tea were the same as those in green tea. Comparing catechin contents, catechin (C), epicatechin (EC), and epigallocatechin (EGC) in Chungtaejeon tea were lower than those of green tea. However, gallocatechin (GC), epicatechin gallate (ECG), epigallocatechin gallate (EGCG) and catechin gallate (CG) showed no significant difference between Chungtaejeon tea and green tea. The flavonoid contents of Chungtaejeon tea and green tea showed higher quercetin and kaempferol contents in green tea, and higher myricetin content in Chungtaejeon tea. The measured amino acid contents for threonine and aspartic acid were lower, and for glutamic acid were higher in Chungtaejeon tea compared with those in green tea. However, free amino acid content in Chungtaejeon tea and green tea showed no significant difference. Potassium and magnesium contents in Chungtaejeon tea were lower compared to green tea but no significant difference was found for iron, manganese or calcium contents when comparing the two teas.

The Effects of Green Tea Supplementation on Behavioral Changes, Striatal Dopamine Level, and Hepatic Antioxidant Parameters of Parkinson's Disease Model Rats

  • Green tea has attracted attention with respect to its potential for preventing and treating neurodegenerative disease. The neurotoxin, 6-hydroxydopamine (6-OHDA), was used to produce experimental Parkinson's disease (PD) model. The purpose of this study was to investigate the effects of green tea diet on behavioral changes, striatal dopamine content, and hepatic antioxidant parameters of PD model rats. In this study, we used male Sprague-Dawley rats weighing $200\sim220g$ and injected 6-OHDA into the right substantia nigra and medial forebrain bundle of the brain. The supply of green tea diet was started at 2 weeks before 6-OHDA lesion and continually supplied during 0, 2, and 4 weeks after 6-OHDA lesion (GT-0, GT-2, GT-4). Behavioral disturbance was measured by the stepping and d-amphetamine drug-induced rotation tests. Then, we assayed the striatal dopamine content and the hepatic malondialdehyde (MDA), hydrogen peroxide $(H_2O_2)$, and superoxide dismutase (SOD) activity. The percentage of lesioned forepaw to non-lesioned forepaw step scores was the highest in GT-4 group among all groups at both 3 and 4 weeks after 6-OHDA lesion. At 4 weeks after 6-OHDA lesion, the rotation score was the lowest in GT-2 group (p<0.05). However, increasing rate of the rotation score from 2 to 4 weeks after 6-OHDA lesion was the lowest in GT-4 group. The striatal dopamine content was not significantly different among four groups by green tea diet. The hepatic MDA level was the lowest in GT-4 group among four groups. The hepatic SOD activity was increased with the prolongation of green tea diet period These results suggest that green tea diet affects behavioral changes in rats of PD model. It seems that continuous green tea supplementation has an influence on the reduction of behavioral disturbance and the hepatic MDA level. Accordingly, continuous green tea supplementation was recommended for the prevention and treatment of PD. However, further studies are needed to investigate the mechanisms and efficacy of green tea in PD.
