PHYSICAL PROPERTIES OF FRESH RED PEPPER

  • Geometrical characteristics of fresh red pepper(Capsicum annuum L.) were measured and indexed to define some important geometrical characteristics, and malformation of body and fruit stalk which are necessary for the design of the equipments for cutting, spreading and alignment of red pepper in developing a fruit stalk remover of fresh red pepper. The effects of bending of body and fruit stalk on the equipments of cutting, spreading and alignment were studied. The maximum lengths of some parts of fresh red pepper were found to be 180 mm, 125 mm, 144 mm, 67 mm and 76 mm for the body, the bent part of body, the fruit stalk, the bent part and the straight part of fruit stalk, respectively. The fresh red pepper with bending indices more than 0.4 and 0.3 for the body and the fruit stalk, respectively, was defined to be malformed based on the result of cutting rate using cutting unit; while the other ones to be normal in shape. Based on this, among the total fresh red peppers tested, 47%, 40% and 20% were found malformed for the body, the fruit stalk, and for both of the body and the fruit stalk. Malformed red peppers were poorer in spreading and alignment than normal ones, and the processed quantity was decreased with increased feed rate. The required time for the malformed peppers to pass on the alignment plate inclined at 30 increased rapidly at 8.3 Hz with increased feed rate. For the fresh red peppers with average moisture content of 85%,w.b., the maximum tensile strength between fruit stalk and body was 88.1 N; the maximum cutting resistances were 92.1 N and 94.9 N for the fruit stalk-calyx joint and body, respectively. Average coefficients of static friction were 0.99, 0.62, 0.59 and OJ, respectively, for the surfaces of rubber, galvanized iron, acryl and plywood.

  • Nutritional characteristics of mycelial growth and fruit-body formation of Flammulina velutipes in synthetic media were investigated. The results are summarized as follows: 1. Among sugar substances, mannitol gave rapid mycelial growth and formation of fruit-body with higher yield, and among organic acids only succinic acid showed the fruit-body but poorly. Ethyl alcohol and glycerol comparatively promoted the formation of the fruit-body with higher yield. 2. Among nitrogen sources, peptone resulted in rapid mycelial growth and fruit-body formation with higher yield. and among amino acids glycine gave fast fruit-body formation with higher yield. However. nitrite nitrogen, lysine and methionine showed no mycelial growth at all. 3. The concentration of substances tended to affect the fruit-body formation and yield. Lower concentration of mannitol and peptone prompted fruit-body formation but with low yields, and higher concentration delayed the fruit-body formation with increased yields.

  • The fruit body of Ramaria botrytis DGUM 29001 was used to determine enzyme activities of fruit body. The specific activity of laccase was the highest(6.5 unit/mg$\cdot$protein) and that of $\alpha$-amylase and xylanase was relatively high. However, little or no enzyme activity of $\beta$-glucosidase, CMCase, exo-$\beta$-1,4-glucanase, chitinase, lipase and protease was found.

Effect electric pulse application on the fruit body production of Tricholoma matsutake-In situ condition

  • Effect of electric pulse stimulation was tested on the fruit body formation of valuable mushroom Tricholoma matsutake in the field of natural habitat of this mushroom. After applying the electric stimulator to the specific area of pine forest we found that the treatment especially stimulated the fructification of T. matsutake. And the most valuable findings of our study was that only our treatment plots showed fruit body formation whereas the control plots and the whole natural habitats of our study area showed zero production of this mushroom during the same time. From the point of view of mushroom production, our experiment shows that fruit body production can be upgraded by using pulsed power as an electrical stimulation in the field of the natural habitat of this mushroom. These findings from our experiment confirm the effectiveness of the significance of pulsed power technology for the improvement of T. matsutake fruit body production in the natural habit of this mushroom.

  • We have researched on methods which can reduce fruit-body malformations of king oyster mushroom(Pleurotus eryngii). We collected many pathogens from diseased fruit-body or malformated fruit-body and identified with chemicobiological test and microscope. The factors of fruit-body malformations and increment of contamination during the pin-heading induction time were researched with ventilation amounts in growing room. When the pathogens having high pathogenicity were inoculated in spawn running bottle and at pin-heading induction time, symptom appeared or not appeared in according to air ventilation amounts in growing room. During the pin-heading induction time, humidity degree in growing room have kept of high level and air ventilation amounts were so little that fruit-body malformations ratio was high. But, even though pathogens were inoculated at the surface of bottle factitiously, if air ventilation amounts were enough, fruit-body malformation ratio was low.

  • Nutritional and physio-chemical conditions for mycelial growth and fruit-body formation of Pleurotus florida were determined in synthetic media. Mannitol and sucrose were good sugar substances for the mycelial growth and fruit-body formation whereas less mycelial growth and no fruit-body formation was obtained with arabinose, lactose and inulin. The optimum concentration of mannitol was about 2%. Peptone as a nitrogen sources resulted in a rapid mycelial growth and fruit-body formation with higher yield, but nitrite-nitrogens inhibited the mycelial growth. The higher yield was obtained with 0.2% peptone. Among the vitamins used, the greatest mycelial growth and fruit-body formation brought about by thiamine and folic acid. $KH_2PO_4$ and $MgSO_4$ at 0.2% and 0.02%, respectively, were effective for the mycelial growth and fruit-body formation, but other inorganic salts used were ineffective. The optimum temperature for mycelial growth and fruit-body formation were $25^{\circ}C$ and $20^{\circ}C$, respectively, and light intensity of $100{\sim}500\;lux$ and pH 6.0 appeared to be effective.

Effect of Temperature on the Growth and Microstructure of Fruit Body in the Basidiomycetes, Pleurotus ostreatus (느타리버섯 자실체의 생육 및 미세구조에 미치는 온도의 영향)

  • To elucidate the effect of temperature on the fruit body growth and structure of pleurotus ostreatus cultivar Chunchu No.2, microstructures were observed with scanning- and transmission electron microscope. Pileocystidia were well developed on the surface of pileus in the fruit body cultivated at $7^{\circ}C$. As the increasing temperature for fruit body development, thickness of pileus, thickness of stipes and length of stipes shown thin, thick and long, respectively. Color of pileus was also changes to whitish grown under high temperature. Physical structure shown as hardness and gumminess of stipes grown at high temperature, fruit body were soften than that of low temperature. Microstructures of fruit body grown at high temperature shown fast-discharge of basidiospore and sytoms aging. vacuolation in the cell observed at mycelium grown under high temperature. Optimum temperature for vegetative growth of fruit bodies were $15^{\circ}C$, and shown regular arrangement of mycelium on the surface of stipes.

  • Effects of vitamins and inorganic salts on the mycelial growth and fruit-body formation of Flammulina velutipes were investigated. Thiamine was most effective on the mycelial growth and fruit-body formation, and its optimum concentration was$50{\mu}g%$. The mycelial growth and fruit-body formation were enhanced by the addition of $KH_{2}PO_{4}\:and\:MgSO_{4}$ at the concentration of 0.2 and 0.02% respectively, but other inorganic salts were ineffective for mycelial growth and fruit-body formation.

Application of electric pulsed power on fruit body production of edible and medicinal mushrooms

  • Effect of pulsed power was investigated on fruit body formation of 10 edible mushrooms, Lentinula edodes, Glifola frondosa, Pholiota nameko, Flammulina velutipes, Hypsizygus marmoreus, Pleurotus ostreatus, Pleurotus eryngii, Pleurotus abalonus, Agrocybe cylindracea and Sparassis crispa. Pulsed power of 100-170 kV was directly charged to the substrate just before fructification. The effect of the pulsed power resulted to promote for 10 edible mushrooms fructification. The treatment especially stimulated the fructification on Pleurotus species.

  • This study was focused on finding a relationship between fruit-body growth and relative humidity in Neolentinus lepideus cultivation. The higher the relative humidity, the moisture content of pileus and stipe were also tends to be increased. The day of formation of primordia and development of fruit body was shortest at the relative humidity 95%. The yield and commercial yield were higher in the relative humidity 95% than in the other treatment. Individual weight of fruit body was the highest at the relative humidity 75% and 85%. Crack indices of pileus was the strongest at the relative humidity 65%.
