The storage time of citrus fruit at two different storage temperatures was predicted by quality changes such as weight loss, %Brix and skin thickness. The less weight loss of citrus fruits during storage at $3^{\circ}C$ was observed, compared to those stored at $25^{\circ}C$, whereas %Brix of citrus fruits increased slightly without any difference between storage temperatures. Skin thickness of fruit, represented by pixel, also changed more rapidly at the higher storage temperature. Above parameters with a storage time followed the 0 order reaction pattern. The relationship of skin thickness and storage time of the citrus fruit were resolved to a simple linear equation, and storage time could be predicted using this equation.
This study was carried out to investigate the quality characteristics and storage of wet noodle with added Cheonnyuncho powder. Wet noodles were prepared at concentration of 1, 3, and 5%(w/w) of the fruit based on flour weight. Moisture content of the noodles with or without Cheonnyuncho powder was 34~36%. Ca, K, Mg, Fe, Mn and Zn contents of Cheonnyuncho noodle were increased at increasing concentrations of Cheonnyuncho powder. Cooked weight, volume, and water absorption decreased with increased fruit powder, whereas turbidity increased. For hunter's color values of noodles, L(lightness) and b(yellowness) values decreased with increasing concentration of Cheonnyuncho powder, whereas a(redness) value increased. For mechanical characteristics of the noodles, adhesiveness, cohesiveness, chewiness, elasticity, and brittleness of cooked noodle with Cheonnyuncho powder were lower than those of control. The pH of Cheonnyuncho noodle was lower than that of control during storage. Bacterial counts of wet noodle with 1% and 3% fruit powders were lower than those of the control and 5% fruit powder on the 8th day of storage at $5^{\circ}C$. From the sensory evaluation, texture, taste, and overall preference were not significantly different between the control and fruit group, but the color of 5% Cheonnyuncho noodle was significantly higher than that of control (p<0.05). In conclusion, the results of this study suggest that the addition of 1% and 3% Cheonnyuncho powder in combination with flour tended to improve antimicrobial effects during storage when compared to control.
The internal breakdown of Fuji apple during CA storage classified as watercore breakdown, low temperature breakdown and CO2 injury. This study was undertaken to investigate the watercore breakdown injury factors of Korean Fuji apple during CA storage. The development of internal breakdown was more increased with the larger size, the later harvest time and the hither CO2 gas level. But in internal breakdown fruit of the titratable acidity and soluble solid decreased significantly, the pH of fruit juice and the production of carbon dioxide was greatly increased. The best gas levels of CA storage was 2% oxygen and 3% carbon dioxide. Thus, the predictable parameters of internal breakdown of fruit were increase in pH on decrease titratable acidity within 2 months of CA storage, increase carbon dioxide. So, it was found that the best CA sotrage for internal breakdown control of fruit during CA storage was delayed CA storage methods after low temperature storage immediate harvest of apple and than took a step. The delayed CA storage after low temperature storage for 2 months was more effective in the prevention of development of internal breakdown than immediate CA storage after harvest.
Postharvest treatments such as polyethylene film wrapping, ethylene scrubber, and fruit coatings were compared to find a potential effect on the fruit quality in 'Fuji' apples during storage and simulated marketing. Polyethylene film wrapping appeared to be excellent in preventing weight loss during storage but fruits lost weight at a high rate when exposed to ambient temperature during simulated marketing. Also, surface cracking disorder was observed in parts of film-wrapped fruit under marketing condition after storage of 21 weeks. Ethylene scrubber effectively removed ethylene in polyetheylene bags but this effect reduced along with the increase of storage time. Although Prolong-treated fruits were good in appearance at 12-week storage, no beneficial effect was found on the inhibition of weight loss during storage as well as marketing. In addition, wax-like substances were accumulated on the surface after storage of 21 weeks, resulting in the reduction of marketability. Water soluble wax seemed highly effective on the inhibition of weight loss during storage and marketing. However, parts of fruit were severely injured probably due to the high concentration of wax. Undamaged fruit showed excellent appearance in shape and flesh quality even after 21 weeks of storage. Further study is required to find the proper concentration of wax.
The objective of this study was to evaluate the effect of storage temperature on fruit quality attributes and physiological disorders including peel blackening in 'Sangjudungsi' persimmon (Diospyros kaki Thunb.) fruit stored in air at -1, 0.5 or $3^{\circ}C$ for up to 3 months. Higher storage temperature reduced ethylene production but not respiration rate, compared with lower storage temperature. Flesh firmness decreased continuously as storage time passed but firmness was reduced rapidly in the fruits stored at higher storage temperature. Fresh weight loss increased at higher storage temperatures. Soluble solids content was higher at lower storage temperature than at higher storage temperature. All color variables ($L^*$, $a^*$, $b^*$) were reduced by lower storage temperature, compared with higher storage temperature, regardless of tissue regions. Fruit softening increased as storage duration advanced and with the increase in storage temperature. Results indicated that the 'Sangjudungsi' persimmon fruits stored at higher storage temperature ($3^{\circ}C$) could not retain fruit quality properly on account of lower flesh firmness and higher incidence of peel blackening and fruit decay, compared with lower storage temperature.
Ripe rot, Botrytis storage rot and Sclerotinia rot are major fungal diseases that lead to deterioration of fruit quality in Korea. Ripe rot, which is caused by Botryosphaeria dothidea, affects harvested fruits during post-storage ripening, while Botrytis storage rot, caused by Botrytis cinerea, affects harvested fruits during cold storage, and Sclerotinia rot, caused by Sclerotinia sclerotiorum, mainly affects immature fruits on the trees. Major fungal fruit rots tend to affect yellow- and red-fleshed cultivars of kiwifruit more severely because of the sharp increase in their cultivation acreage in recent years in Korea. In this review, we summarize symptoms and epidemiological characteristics of the major fungal fruit rots and propose integrated management methods of the diseases that can be practically utilized at the farmers' orchards in order to prevent the diseases based on our research works and field experiences and the research works of others conducted during the last three decades worldwide.
Physiological characteristics of two Korean golden kiwifruit cultivars, 'Halla Gold' and 'Haehyang', were compared to determine the storage potential of fruit. The soluble solid levels of the fruit were 8.9 and 6.9 oBrix in 'Halla Gold' and 'Haehyang' at harvest, respectively but increased up to 15.4 in 'Halla Gold' and 17.5 oBrix in 'Haehyang' after 2 months of storage. Major sugars were fructose and glucose, and sucrose content was relatively low regardless of cultivar. The edible quality of 'Haehyang' was better than 'Halla Gold' because of higher amount of sugars. Firmness of the fruits gradually decreased as the increase of storage period in 'Halla Gold' in both flesh and core tissue. Th firmness loss of 'Haehyang' fruit was faster in the first 2 months and then became slow. After 75 days of storage, the firmness of 'Haehyang' fruit was only 5.2% at harvest. Core tissue was soften enough to eat at ripe stage. Wall modifying enzyme activities including xylanase, ${\alpha}$-L-arabinofuranosi-dase and ${\beta}$-galactosidase were consistently higher in 'Haehyang' and the activity of pectate lyase was more increased than 'Halla Gold' after 2 months of storage. Respiration rate of 'Haehyang' was higher than 'Halla Gold' and further increased after 2 months of storage. Weight loss was much higher in 'Haehyang' which showed higher rate of the firmness loss. The storage potential of golden kiwifruit was estimated to be about 2 months for 'Haehyang' and 3 months for 'Halla Gold' when determined on the basis of the fruit firmness.
The purpore of this study was to elucidate the nutritional significance of the fruit-vegetable mixed juice during storage and distribution by examining the chemical composition of the mixed Juice for storage. The fruit-vegetable mixed Juices were sueriliged at 95$^{\circ}C$ for 30, 70, 100 seconds and the results of the changes in vitamin C contents, colors, total carotenoid contents, total aerobic counts and sensory evaluation of the mixed Juice were as follows: Vitamin C contents were drastically decreased at 7 day's storage and were not significantly different between the mixed Juices at p< 0.05 level after 7 day's storage. The longer the sterilization time and storage period of the mixed Juice was the higher changes in color was. The color changes in the sterilized samples were higher in order of 100, 70 and 30 seconds. Total carotenoid contents were slightly decreased according to storage period but were not affected by sterilization time. Total aerobic counts were 1.1 $\times$ 101 cfu/ml before sterilization, but it was negative after sterilization at 95t regardless of sterilization time. Sensory qualities such as color, flavor, taste and total acceptability of the mixed juice tended to be decreased by the Increased storage period and sterilization time. Especially, the sterilized sample for 100 seconds showed lots of changes In color.
The effect of pre-storage treatments was investigated to control the occurrence of fruit skin stain in 'Niitaka' pears. The incidence of fruit skin stains was significantly reduced when the fruits were stored in paper bags with a yellow inner color, compared to when they were stored in paper bags with blue and red inner colors. Additionally, the pear fruits that were harvested seven days earlier than their optimum maturity date developed less fruit skin stains in cold storage and retained their quality. Storage in polyethylene (PE) bags did not control the occurrence of fruit skin stains as effectively as did bag-free storage or storage in calcium-coated bags. The dipping of the pear fruits in a chlorine dioxide and calcium solution was highly effective in reducing the fruit skin stains compared to when they were not dipped or when they were dipped only in distilled water. In particular, a 1,500 times diluted solution of sodium dichloroisocyannurate (NaDCC) reduced the incidence of fruit skin stains and the size of the lesions. No stain was observed on the skin of the fruit with a water content lower than 67.7% (w/v) during its storage. In conclusion, packaging pear fruits in bags with an inner calcium coat and dipping them in a chlorine dioxide, calcium, or NaDCC solution can effectively reduce their skin stains during their storage.

This study was designed to examine whether 'Hongro' apples packaged with natural calcium-coated package papers was fresher maintained than fruit held in not-packaged tray, and whether postharvest physiology of the fruits was affected by calcium-coated papers, or not. The summarized results were as follows; Soluble solids contents and firmness of fruit were higher room temperature(20~25℃) after 4 week and 14 week in cold storage(0~1℃) by calcium-coated package papers. but total acid contents in juice and Hunter a value of peel were trended to decrease in room temperature and cold storage. Weight loss of fruit, decay fruit and CO2 evolution were decreased by calcium and wax-coated package papers in room temperature storage condition. Also, excellent fruits increased. Ethylene evolution in fruit were not different by package paper and storage condition.
