  • We have developed a probe for measuring the light levels inside illuminated fruit. The probe has minimal effect on the light levels being measured and enables the sampling of the light flux at any point within the fruit. We present experimental light extinction rates within apple, nashi, kiwifruit, and mandarin fruit. Moving from the illuminated side to the far side of the fruit, the extinction level follows an initial power law decay as the light diffuses into the fruit then reduces to an exponential decay through the rest of the fruit. Significant variations in the rates of light extinction are found in the core, skin and differing flesh regions. Monte Carlo simulations of the light distribution in fruit, which use scattering and absorption coefficients for the diffusely scattering tissue, and boundary conditions for the skin effects, produce results that follow the experimental results closely.

  • This research was conducted to investigate the effects of calcium solution spray on the accumulation of calcium into apple fruit. $^{45}_{CaCl_2}$ applied to fruit with different growth stages showed that more $^{45}Ca$ was penetrated into fruits when applied in the late stage than early stage. Slight radioactivity was detected only in pedicel except leaf when $^{45}Ca$ was treated on the leaves proximate to the fruit. When the Ca was treated on fruit surface only, calcium contents of fruit was increased.

  • Sencory characteristics of mulberry fruit jam and wine were investigated by according to mulberry fruit varieties, including Daeryukppong, Kuksang 20, Chongilppong and a wild mulberry variety. Palatability ranks of mulberry fruit jam by according to mulberry fruit varieties were Kuksang 20(34.5%), Chongilppong(32.8%), Daeryukppong(17.2%) and Wild variety(15.5%). In the sensory characteristics, we obtained 6.32 points as total mean point. In case of mulberry fruit wine, panels were favorits the Chongilppong best. But, in the sensory characteristics, we obtained low points(=5.47) as total mean point. From these results, it seems that alcohol content was very important factor. We selectd two desirable mulberry fruit varieties(=Chongilppong and Kuksang 20) for manufacturing materials.

  • Mulberry fruit powder was substituted for wheat flour in pound cake recipes in amounts of 0%(control), 5%, 10%, 15%, and 20%. We measured the specific gravity of the dough, specific loaf volume, dough yield, baking loss, moisture content, pH, color, identified the texture, and conducted a sensory evaluation for each pound cake. Moisture content increased according to the amount of mulberry fruit powder, but specific gravity, dough yield, and pH decreased. Specific loaf volume and baking loss increased as the amount of mulberry fruit powder increased, but not considerably. The chromatic 'L' and 'b' values were reduced as more mulberry fruit powder was added to more pound cake, While the chromatic 'a' value increased. Texture hardness, springiness, gumminess and chewiness decreased as the pound cake contained more mulberry fruit powder. Cohesiveness did not show any considerable differences beteeen the cakes. A sensory evaluation showed a high preference for the pound cake made with 10% mulberry fruit powder.

  • Gibberellin (GA) treatment on fruit stalk was effective in fruit growth but reduced the shelf life of fruit. This study was carried out to improve the shelf life of GA treated fruit. Fruit characteristics were surveyed according to the treatment part and concentration of polyamine in 'Whangkeumbae', 'Yeongsanbae', and 'Chuwhangbae'. GA was treated on fruit stalk at 30 days after flowering and 100, 200, and 300 ppm of polyamine were sprayed on leaves of fruit cluster and canopy at 7 day before harvest. In GA treated fruit, fruit weight was heavier as $10\%$ and fruit hardness was lower as $0.3\~0.5\;kg$ than control in all cultivar, but sugar content and palatability were no difference in each treatment. In morphological characteristics, the distance from pith to epidermis of GA treated fruit was faraway as $42.0\%$. Fruit hardness and palatability of 'Whangkeumbae' was good in the leaves spray on the fruit stalk with 200 ppm and the leaves spray on the canopy with 500 ppm at 30 day after harvest. 'Yeongsanbae' and 'Chuwhangbae' showed the same to the result. So we knew that the effective treatment to improve the storagibility after GA treatment on fruit stalk was the fruit stalk leaves spray with 200 ppm because it needed small amount of polyamine.

  • This experiment was conducted to make eatable fruit of oriental melon with peel, we covered oriental melon fruit with pear, apple and grape paper bag. Temperature inside paper bags was lower than air temperature in daytime but reversed in night. Relative humidity inside paper bags was higher than outside humidity in daytime but reversed in night. Covering with paper bags seemed to make fruit length shorter, fruit width narrower, flesh thickness thinner and fruit weight heavier but no difference was found among treatments. Soluble solid contents of flesh and placenta seemed lower with covering with paper bags but also difference did not find among treatments. Increasing of soluble solid contents of fruits was observed at 5 days after removing paper bags but not immediately at removing paper bags. Fruit hardness and chromaticity were dropped by covering paper bags. Decrease of fruit hardness by covering paper bags made more eatable with peel but more study have to be taken to improve chromaticity and soluble solid of fruits.

  • Peach (Prunus persica L.) is a model species for stone fruit studies within the Rosaceae family. Auxin plays an important role in the development of peach fruit. To reveal the distribution of auxin in the tissues of peach fruit, immunohistochemical localization of IAA was carried out in the seed, mesocarp, and endocarp in developing peach fruit using an anti-indole-3-acetic acid (anti-IAA) monoclonal antibody. A strong IAA signal was observed throughout the outer and inner integument during peach fruit development, and the distribution was zonal. The IAA signal was mainly focused in mucilage layers in the outer integument. The outer integument may function to produce or store IAA in the seed; a strong IAA signal was detected in the cells around the vascular tissue, whereas a weak IAA signal was located in the vascular tissues. In the mesocarp, the cells around the vascular bundle tissue gave rise to an IAA signal that increased in the late phase of fruit growth, which coincided with a significant increase in fruit growth. The distribution of IAA, however, was changed when fruit was treated with auxin transport inhibitors NPA (1-N-naphthylphthalamic acid) or TIBA (2, 3, 5-triiodobenzoic acid); in mesocarp tissues, an IAA signal was detected mainly in vessels of the treated fruit. During the critical period of endocarp lignification, the vessel lignification process was negatively correlated with IAA signal. The present results confirmed that the distribution of IAA was different in various tissues of peach fruit according to the developmental stage. This research provides cytological data for further study of the regulatory mechanism of auxin in peach fruit.

  • This study was conducted to examine the feeding effect of Halyomorpha halys ($St{\aa}l$) (Hemiptera: Pentatomidae) on the fruit drop and decay rate of Mandarin citrus fruits (Citrus unshiu). The feeding of H. halys before fruit coloring caused a severe fruit drop, while the feeding after fruit coloring induced a low level of fruit drop. However, the feeding of H. halys before or after fruit coloring did not induce significant fruit decay during cold storage. The results are expected to be useful in managing H. hlays of late season mandarine, because citrus farmers follow calendar spray to prevent fruit drop and fruit decay.

  • The results of influence on the saccharification and $Sikhea$ by adding mulberry fruit in this study are as follows. pH was decreased with the amount of mulberry fruit increased during the saccharification period. A significant change was not found after 4 hours of saccharification. It is considered that 4-5 hours was proper for saccharification because brix increased by more than 1 brix per hour up to 4 hours while there were little change after 5 hours. L was decreased while a and b values were increased in the Hunter' value of mulberry fruit $Sikhea$. The DPPH free radical scavenging activities and SOD-like activity of mulberry fruit $Sikhea$ were increased as the addition quantity of mulberry fruit increased. Anthocynin color pigment in mulberry fruit has the inhibiting effect on microbes. The preferences of mulberry fruit $Sikhea$ were 10% < 30% < 15% < 20% < 0% < 25%, and less than 25% of mulberry fruit addition seems to be desirable. The addition of mulberry fruit will help decrease the amount of sugar to use in $Sikhea$ because the sugar level of $Sikhea$ increases with the addition of mulberry fruit. It will also improve the preference for Sihkea by giving it better color and sourness.
