  • 지황(地黃)의 주(主) 약효성분(藥效成分)으로 알려져 있는 catalpol의 iridoid골격(骨格)과 glycosidic bond를 형성(形成)하는 유리당류(遊離糖類)를 확인(確認)하기 위하여 생육시기(生有時期)에 따른 무기성분(無記性分), 유리당류(遊離糖類), 회분(灰分), 엑기스 및 catalpol의 함량(含量)을 조사(調査)하였다. 수확기(收穫期)가 가까워질수록 P, K, Ca, Mg, Cu 및 회분(灰分)의 함량(含量)은 감소(減少)하였으나, Fe 및 엑기스의 함량(含量)은 증가(增加)하였다. 수확기(收穫期)가 가까워질수록 전당(全糖), sucrose 및 galactose의 함량(含量)은 감소(減少)하였으나, fructose 및 catalpol의 함량(含量)은 증가(增加)하였다.

셀룰로오스코팅이 자두의 저장중 품질특성에 미치는 영향 (Effect of Cellulose Coatings on Postharvest Storage Qualities of Plums(Prunus salicina L.))

  • Immature and mature plums(Prunus salicina L.) were coated with calcium-added methylcellulose(CaMC) and hydroxypropylmethyl-cellulose-15(CaHPMC-15). Physicochemical, nutritional and sensory characteristics were compared during the 8-day storage period at $30^{\circ}C$. Irrespective of maturity, pH of plums increased and the titratable acidity decreased during storage. Free sugars such as glucose, fructose, sucrose and sorbitol were eventually decreased during storage, but Ca-added cellulose coatings influenced on the prevention of free sugars from decreasing especially in mature plums. Vitamin C contents in immature and mature plums became decreased during storage, but the coatings took effective on its retention. Changes of malic acid, the major organic acid in plums were appeared the same tendency as vitamin C during storage. Results of sensory evaluation showed the development of red color in peel and the softening of plum tissue, and also showed that the overall eating quality and appearance generally decreased during storage. However, the coated plums either CaMC or CaHPMC-15 exhibited the better sensory characteristics. As though the significant difference in postharvest storage quality were not found between the two coatings, CaMC and CaHPMC-15 coatings significantly contributed to the improvement of overall storage quality, especially the retention of vitamin C and organic acids only on the mature plums.

한국재래식(韓國在來式) 간장의 맛 성분(成分)에 관한 연구(硏究) (The Taste Components of Ordinary Korean Soy sauce)

  • Soysauce was made in the salt concentrations of 22.0% and 28.5%, and the changing aspects in nucleotides and their related compounds, free amino acids, free sugars and non-volatile amines which are related to the taste components during the fermentation process with a view to examining the taste components in the ordinary Korean soysauce were studied. And then artificial soysauce was prepared by applying the values derived from the analysis and measurement, and its sensory evaluation was performed. As the result of the sensory evaluation of artificial soysauce prepared according to the value of components analyzed from soysauce which had been fermented for fourty days in the salt concentration of 22.0%, it has been found that artificial soysauce was similar in taste to ordinary Korean soysauce. So, the following facts have been found: glutamic acid and aspartic acid have MSG-like taste, and IMP has a synergistic effect with these acids, which play great roles in ordinary Korean soysauce; both free sugars such as galactose and amino acids such as glycine, alanine and lysine have sweet taste; both amines such as tyramine and histamine, and amino acids such as valine, leucine, isoleucine, and phenylalanine have bitter taste; these components, combined with saline taste of salt and sour taste of organic acids, are assumed to form the unique taste in the ordinary Korean soysauce.

가열처리에 의한 록차의 화학성분 변화 (Changes in some Compounds by Heat Treatment of Green Tea)

  • 가열조작에 의한 녹차 화학성분의 변화를 알아보기 위하여 1차 가공이 끝난 녹차반제품(Crde green tea)을 10$0^{\circ}C$, 115$^{\circ}C$, 14$0^{\circ}C$, 16$0^{\circ}C$에서 각각 30분간 처리한 후당류, 향기성분, 비타민C, 질소화합물 탄닌, 카페인 및 가용성 물질을 분석하는 반면 향미에 대한 영향을 관능검사에 의하여 평가하였다. 고속액체 크로마토그라피(H.P.L.C)에 의해서 녹차의 유리당으로 surcrose, fructose, glucose 및 raffinose가 확인되었고 1개의 미확인 당류가 분리되었으며, 향기성분으로는Gas Liquid Gas Liquid Chromatography에 의해서 26~34개의 물질이 분리되었으나 그중 linalool, furfual benzyl alco-hol을 비롯한 16개 물질만이 동정되었다. 가열처리에 의하여 대부분의 물질이 감소되었으나 총질소, 수용성질소는 거의 감소하지 않았고 특히 유리아미노산, 유리당, 비타민C, 탄닌의 감소가 크게 나타났으며 관능검사에 의해서는 115$^{\circ}C$처리구에서 녹차 반제품에 대한 몇몇 성분의 감소률은 총당 17%, 환원당 15%, 비타민C 36%, 유리아미노산 12%, 탄닌 15%로 나타났고 수분함량도 저장이 적당한 3~4%이하가 되었다. 한편 16$0^{\circ}C$처리구에서의 감소률은 총당 38%, 환원당 53%, 비타민C 55%, 유리아미노산 74%, 탄닌 23%로 가열처리온도 상승에 따라서 각 성분의 감소률이 크게 증가하였고 특히 유리아미노산의 감소률이 현저하였다.

  • 제호탕의 화학성분을 분석한 결과는 다음과 같다. 제호탕의 일반성분으로는 수분 22.40%, 조단백질 1.31%, 조지방 1.24%, 회분 0.80%를 그리고 탄수화물은 74.25% 를 나타내었다. 한편 pH는 3.22로 나타났다. 총 유리당이 31.5%로 비교적 많은 당이 함유되어 있었고 유리당함량은 fructose 15.3%, glucose 13.6%, sucrose 0.42%, maltose 1.18%였으며 isomaltose가 미량 함유되는 것으로 추정 되었고 그밖에 raffinose, maltotriose, molezitose는 검출되지 않았다. 제호탕의 아미노산 조성은 leucine이 9.6mg으로 가장 높은 수치를 나타냈으며 arginine, valine, phenylalanine 등의 순이었다. 총 아미노산에 대한 필수아미노산의 비율은 40%이었다. 지방함량 1.24% 중 이를 구성하는 지방산은 palmitic acid 14.6%, stearic acid 4.2%, oleic acid 52.7%, linoleic acid 28.5%를 차지하고 있었다. 금속의 함량은 칼슘(Ca) 582.7ppm, 마그네슘(Mg) 174.4ppm, 아연(Zn) 5.2ppm, 인(P) 252.2ppm, 망간(Mn) 7.9ppm, 나트륨(Na) 404.0ppm, 철(Fe) 56.4ppm, 칼륨(K) 2430.5ppm, 구리 (Cu) 2.6ppm이었다.

라면스프류의 감미성분(感味成分) 분석연구 (Studies on the Principal Taste Components in Soup Base of Commercial Ramyons)

  • 시판 라면제품(봉지면 25시료, 용기면 11시료)을 대상으로 하여 짠맛, 단맛, 감칠맛과 관련한 성분들을 과학적인 방법으로 객관화하고 수치화하였다. 짠맛성분인 $Na^+$ 함량(봉지면 $18.73{\pm}3.18%$, 용기면 $17.62{\pm}1.92%$)을 분석하여 NaCl 함량을 구한 결과, 봉지면 20.90%, 용기면 18.16%이었으며, 감칠맛 성분인 glutamic acid 함량(봉지면 $10.50{\pm}3.78%$, 용기면 $10.47{\pm}1.68%$)를 분석하여 MSG 함량을 구한 결과는 봉지면 12.08%, 용기면 12.04%로 비슷하였다. 또한 GMP, IMP 함량은 봉지면 $0.15{\pm}0.06%$, $0.20{\pm}0.11%$, 용기면 $0.14{\pm}0.03%$, $0.18{\pm}0.05%$이었다. 단맛성분인 유리당(sucrose, glucose, fructose) 함량을 분석하고 이를 당의 종류별 감미도 계수(sucrose 1.0, glucose 0.7, fructose 1.1)에 따라 sucrose기준으로 환산하여 감미도를 비교한 결과는 봉지면 $19.85{\pm}5.68%$, 용기면 $18.02{\pm}7.82%$이었다. 따라서, $Na^+$, glutamic acid 및 유리당 분석법이 라면 중의 NaCl, MSG, 감미도를 알아내는 간단하고 정확한 기술로서 유용함을 확인하였다.

숙성지황의 당류와 미생물에 에탄올 첨가가 미치는 영향 (Influence of Ethanol Addition on Sugars and Microbial Growth of Rehmannia glutinosa Rhizome with Aging Treatment)

  • The aging treatment was applied to Rehmannia glutinosa rhizome (RGR) to improve the digestibility by the enzymatic hydrolysis of undigestible sugars. However, RGR spoils easily during the aging treatment. Thus, the purpose of this study was to investigate the influence of ethanol addition as preservatives on sugars and microbial growth of aged RGR. The RGR was treated with the addition of ethanol (0~10%) at 55℃ for eight days. Reducing, free sugars, and total bacterial counts of RGR with ethanol concentrations were analyzed during the aging periods. The aged RGR with 0-2% ethanol appeared spoiled in appearance, and total bacterial counts of these samples increased from 1.1×105 to 2.2×107 CFU and then decreased again. When treated with 4~10% ethanol, the total bacterial counts of aged RGR decreased by more than 99.9% at eight days. In all samples, reducing and digestible sugars increased, and stachyose decreased by the aging treatment. Sucrose content was highest in the 6% ethanol sample (18.2% at six days). These results indicate that the ethanol addition can be applied to the aging treatment of the RGR for improving qualities (sweetness, digestibility, and microbial growth), and can be considered for the stable production of high quality aged RGR.

열처리에 따른 씀바귀 침출차의 품질특성 (Quality Characteristics of Tea Thermally Processed from Dried Ixeris dentata Root)

  • 씀바귀뿌리를 이용하여 침출차를 제조하고자 건조온도 및 처리조건을 달리하여 유리당, 유기산, cynaroside 및 총폴리페놀성물질 함량, 유리아미노산, 색도 및 관능적 특성을 검토하였다. 총유리당, 유기산, 유리아미노산 및 cynaroside 의 함량은 천일건조한 것이 가장 높았으며 총폴리페놀성 함량은 열풍건조 후 볶음 처리한 것이 가장 높았다. 건조한 씀바귀뿌리의 유리당 중 sucrose, glucose, fructose 및 galactose는 열풍건조에 의하여 감소하였고 천일건조 시 검출되지 않았던 maltose가 열풍건조에 정량되었으며 증숙 후 열풍건조 시 1.67%의 높은 함량을 보여주었다. 씀바귀뿌리 내에 함유되어있는 유리아미노산함량 중 arginine이 669.2 mg%으로 가장 높았고 뒤이어 serine이 379.9 mg%으로 높은 함량을 보여주었다. 씀바귀뿌리 건조분말의 색도는 열풍건조 후 볶음처리를 한 것이 밝기, 적색도 및 황색도 모두 가장 높았으나 열수침출 후의 색도는 적색도와 황색도는 타처리구에 비하여 가장 높았지만 밝기는 가장 낮게 나타났다. 씀바귀뿌리를 이용한 침출차의 관능검사결과 열풍건조 후 볶음처리한 처리구가 가장 높은 점수를 보였다.

  • The application of Consomm prepared with different ingredients of ground beef and ground chicken ingredients to improve the taste preferences and reduce saving the food cost of Consomm was attempted by reviewing fundamental data and its examining the effect on the physicochemical characteristics of treatment. These treatments were prepared with the following different ratios (9:1, 7:3, 5:5, 3:7, 1:9 ; w/w) of ground beef to and ground chicken: 9:1, 7:3, 5:5, 3:7, and 1:9, w/w, respectively. Gelatin contents were increased significantly with by increasing the mixed ratio of ground chicken. The free sugars identified from Consomm were, glucose, fructose, and sucrose. Free sugar contents, increased significantly by with increasing the mixed ratio of ground beef. (Ed- what are the highlighted treatments? As many as 20 different kinds of free amino acids were detected infrom the Consomm and the amount of total amino acids waswere increased with by increasing the mixed ratio of ground chicken. The contents of arginine, glutamic acid and alanine contents were high in the free amino acids of Cconsomm prepared with different ingredients. The In the changes of mineral contents in the Consomm prepared with different ingredients, the mineral showed high contents increased according to in the following order of: K, Na, P, Mg, Ca, Fe, and Zn. From the The results of analysis results, in the Relatin contents, free sugars, free amino acids and mineral contents were all increased with by increasing the mixed ratio of ground chicken. The 7:3 treatment showed From above results, it was showed that B treatment prepared with a ratio of 1 ground beef to 3 ground chicken was the bestmost preferred in physicochemical qualities.

고수의 향미성분에 관한 연구 (A Study on the flavor constituents of the Coriander(Coriandrum sativum L))

  • This study was carried out to investigate to proximate compositions, free sugars, organic acids, amino acids, and volatiles from the fresh leaf, root and seed of coriander. The research results are as follows: Moisture was 79.93% in the leaf, 81.89% in the root. Crude protein, crude lipid and crude ash were the highest in the seed. Ascorbic acid was 65.4mg% in the leaf and 37.83mg% in the root. Glucose, fructose and sucrose were the major free sugars. Glucose was 7.92mg% and fructose 7.51mg% in the leaf. Sucrose was 17.34mg% in the root, highest level. Among organic acids, malic acid was 354.55mg% in the leaf, the highest level. The content rate of organic acids was high in the order of leaf, seed and root. The content rate of total amino acid was high in the order of seed, root and leaf. Glutamic acid and aspartic acid were high in the leaf and root. Glutamic acid and proline were high in the seed. The content rate of free amino acid is the same as that of total amino acid. Glutamic acid and serine were high in the leaf and seed. Glutamic acid and treonine were high in the root. The contents of total amino acid in each parts of the coriander was higher than that of free amino acid, The composition of amino acid in the total amino acid and free amino acid was different. The volatile constituents were extracted by steam distillation method and analyzed by GC-Mass. The content of the volatile constituents was 45.31mg% in the leaf, (E)-2-decenal was the highest, followed by decanal, 2-dodecenal, (E)-2-decen-1-ol in order, aldehyde and alcohol was major constituents. The content of the volatile constituents was 36.01mg% in the root and 54.37mg% in the seed. linalool was the highest in the root and seed. it was 22.27 %, 53.67% in root and seed.
