충남 일부 어린이급식소에 제공되는 급식식단에 대한 시설장과 학부모의 인식조사 (Investigation of Facility Directors and Parents' Awareness of some Childcare Center Meal Service in Chungcheongnam-do)

  • This study surveyed the perceptions and satisfaction of parents and facility directors on children's menus at some child care facilities in Chungnam-do. Parents preferred the menus provided by the the Center for Children's Foodservice Management (CCFM) without modification, and they wanted more food items that children eat included in menu and lessen the numbers of one-dish meal. They also preferred food cooked and served directly for afternoon snacks. The performance factors to be considered in menu planning were evaluated to be slightly lower than the importance. CCFM can meet the needs of children's food facilities and parents, while increasing their satisfaction, and help with menu planning that is beneficial to children's health by understanding the perceptions of facilities and parents on children's menus.

장애인 복지시설의 급식 및 영양관리실태 (Foodservice Management in Institutions for the Disabled in Korea)

  • The residents of institutional settings for the disabled people are likely to be a potentially nutritional at-risk groups. The objective of the present study was to investigate the current nutrition and foodservice management in institutions for the disabled using a survey questionnaire. The majority (85%) of the institutions was using a simple pre-set menu that consists of rice, soup or stew, kimchi, and two other side dishes. Some twelve percent of the institutions served only one side dish. The residents were consuming a diet of a low diversity with insufficient amounts of micronutrient rich foods. As a protein source, legumes and soybean curds, and eggs were served 90% and 94% of the time, while beef, pork or poultry, a better iron source, was served less than 2-3 times per month. Fruits were most infrequently served food items in these facilities with 38% of the facilities serving fruits only 2-3 times per month. With regard to the nutrition and health care management, the physical examination on the residents was conducted annually in 88.8%, routine hemoglobin measurement peformed in 66%, and nutrition education was conducted in 10.9% of the surveyed facilities. The foodservice and nutrition management manual will help ensure a safe and better quality foodservice for the disabled people, which is necessary for the improvement of health and nutrition of these people.

How do the work environment and work safety differ between the dry and wet kitchen foodservice facilities?

  • In order to create a worker-friendly environment for institutional foodservice, facilities operating with a dry kitchen system have been recommended. This study was designed to compare the work safety and work environment of foodservice between wet and dry kitchen systems. Data were obtained using questionnaires with a target group of 303 staff at 57 foodservice operations. Dry kitchen facilities were constructed after 2006, which had a higher construction cost and more finishing floors with anti-slip tiles, and in which employees more wore non-slip footwear than wet kitchen (76.7%). The kitchen temperature and muscular pain were the most frequently reported employees' discomfort factors in the two systems, and, in the wet kitchen, "noise of kitchen" was also frequently reported as a discomfort. Dietitian and employees rated the less slippery and slip related incidents in dry kitchens than those of wet kitchen. Fryer area, ware-washing area, and plate waste table were the slippery areas and the causes were different between the functional areas. The risk for current leakage was rated significantly higher in wet kitchens by dietitians. In addition, the ware-washing area was found to be where employees felt the highest risk of electrical shock. Muscular pain (72.2%), arthritis (39.1%), hard-of-hearing (46.6%) and psychological stress (47.0%) were experienced by employees more than once a month, particularly in the wet kitchen. In conclusion, the dry kitchen system was found to be more efficient for food and work safety because of its superior design and well managed practices.

영유아 급식소 위생관리 수행도 현장평가 (Field Assessment of Food Safety Management at Preschool Foodservice Establishments)

  • This study examined food safety management at preschool establishments in Daegu and Gyeongbuk province, to provide data that can be used for food safety improvements. Field assessments of 60 foodservice establishments were executed from July to October, 2007. Statistical analyses of the data were conducted using the SPSS package program (version 14.0 for windows). The results are summarized as follows: 93.3% of the preschool foodservices were self-operated, and 24.1% of the child care centers and 96.7% of the kindergartens had employed dietitians. According to the averaged food safety evaluation scores the kindergartens (80.73) had a significantly higher score than the child care centers (50.37), and the public centers (85.00) had a significantly higher score than the private centers (54.29). While the average score of facilities that employed dietitian (73.58) was significantly higher than that of facilities that did not employ a dietitian (52.65). In addition, the average score of facilities that served meals in a dining room (80.83) was significantly higher than that of facilities that served meals in a classroom (59.33). The highest scoring food safety items included verifying employee health inspection reports (1.87), utilizing non-municipal water and routinely cleaning and well-maintaining the water storage tank (1.85), and disposing small amounts of leftovers in a vat after serving (1.83). In contrast, the lowest scores were for physical separation of clean areas and unclean areas to prevent cross-contamination (0.52), and physical separation between staff and food material entry areas (0.62). In conclusion, the preschool foodservice evaluated in this study required improvements in food safety management, and many of the child care centers were in need of immediate attention. To improve food safety at these establishments, administrators should implement prerequisite food safety programs.

안양지역 어린이급식소에서의 위생관리 모니터링을 위한 adenosine triphosphate(ATP) 분석법 적용 (Adenosine triphosphate (ATP) bioluminescence assay for hygiene control monitoring at children's foodservice facilities in Anyang area)

  • 이 연구에서는 어린이급식소에서의 ATP bioluminescence 분석법을 이용한 급식 위생관리 모니터링의 적합성을 확인하고자 하였다. 어린이집과 유치원 두 유형 간을 비교하였을 때, 측정구역별 ATP 측정값, 위생관리 적합률, 획득점수와 측정 횟수별 획득점수에서는 차이가 없었다. 어린이집과 유치원 각각을 비교했을 때는, 어린이집에서의 측정구역별 ATP 측정값은 대부분 1차시보다 2차시에 낮아졌으나, 유치원은 차시 간 차이가 없었으며, 측정구역별 위생관리 적합률은 어린이집과 유치원에서 대부분 1차시보다 2차시에 높아졌다. 또한, 어린이집의 경우 측정 횟수와 평균 획득점수와의 양의 상관관계를 보였다. 결론적으로, ATP bioluminescence 분석법은 어린이급식소에서의 급식 위생관리 모니터링 도구로써 활용 가능할 것으로 보이며, 특히, 어린이집이 유치원보다 더 효과적일 것으로 판단된다.

안양지역 어린이급식소의 급식 위생관리 항목 분석 (Analysis of meal hygiene management items in children's foodservice facilities in Anyang area)

  • 본 연구에서는 안양지역 관내 어린이급식소 중 2019년부터 3년간 낮은 급식 위생관리 등급으로 머물러 있는 어린이급식소에서 개선되어야 할 주요 항목이 무엇인지 밝혀내고자 하였다. 등급은 이전 급식 위생관리 수준이 미흡할 경우 새싹군으로, 우수할 경우 열매군으로 나누었으며, 위생관리 6영역, 45가지 세부 항목을 분석하였다. 분석 결과, 어린이급식소의 급식 위생관리 등급에 따라, 또 시기에 따라 점수가 낮은 항목들은 다양했다. 새싹군은 3년 내내 열매군에 비해 6영역 모두에서 점수가 낮았으며, 특히 보존식에 대한 세부 항목의 점수가 가장 낮았다. 결론적으로, 어린이급식소의 급식 위생관리 시, 등급별로 개선해야 할 위생관리 항목이 다르다는 것을 인지하여, 철저히 관리해야 할 항목을 사전에 파악하고 그에 적합한 지도를 시행해야 할 것이다.

패밀리 레스토랑 고객의 외식 행동과 서비스 품질 만족 요인에 관한 연구 (A Study of Dining Behavior and Customer Satisfaction in Service Quality in Family Restaurants)

  • The purpose of this study was to obtain strategies for more effective management of family restaurants. A quantitative methodology was used to obtain the results. A questionnaire was designed to elucidate consumer dining patterns, as well as the factors that are important for consumers satisfaction in terms of the foodservice quality. The questionnaires were used to gather information from consumers at family restaurants and were then analyzed and evaluated. The results of this study indicated that there were important factors related to consumer satisfaction and the service aspects of family restaurants. As the results of empirical analysis, service quality factors in family restaurants were categorized into four factors such as inner shape of food, outer shape of food, facilities and service factors respectively. The analysis showed statistically significant difference at the 5% significance level in outer shape of food, facilities and service factors. These results will be used to assist in menu planning and quality reforms in the foodservice industry.

영유아 보육시설의 급식운영 실태 조사 -영양사의 배치에 따른 영향- (Management of Food and Nutrition Service in Day-care Center)

  • Although it is increasing the number of day-care centers in Korea, but the quality of food and nutrition service are not increased sufficiently. The purpose of this study was to investigate the current practices of food and nutrition service in day-care centers. Questionnaire were sent to the directors of 750 day-care centers and 253 returned the complete answers. Staffing structure revealed that only 13% of the facilities had a dietitian. And compared with centers without a dietitian, there were more centers having nutritional standards, using facilities for service, and having long-term planning of meals in centers with a dietitian. In the using of foodservice budget, the centers having dietitian consumed more money for subsidiary dishes than for the staples. All centers needed increment of supplementation for the cost of foodservice and for hiring a dietitian. To improve the quality of food and nutrition services in day-care center, foodservice practices have to be conducted by professional personnel and to confirm the standard of service and to inspect the management of food and nutritional service.

서울 시내 탁아기관의 급식관리 실태평가 (Assessment of Food Service Management Practices in Day Care Centers)

  • The purpose of this study was to evaluate the foodservice management practices in day care centers in order to provide basic information and guideline for development of foodservice facilities standard model and sanitation manuals. Basic survey and evaluation were done for 24 day-care centers categorized in four groups. General foodservice management practies, status of equipment, and hygienic conditions were evaluated. The results of the survey showed the followings: the cost of lunch and the cost of interim snack varied very much among each group; development of standard recipe as well as purchase of foods were not done by an expert; the hygienic condition of kitchens and dining-room needed more attention for improvement; the sanitary practies of employees showed potential problems; kitchen facilites were not standardized, especially only 20.8% of the facilities were equipped with the three-compartment sink, which was regarded as essential.

급식규모에 따른 산업체 급식소의 운영실태 조사 (A Survey on Management of the Foodservice Industry in Seoul following the Size of Feeding Group)

  • This is a study on types of foodservice system, the menu, role of the Dietitian, management of the facilities and utensil through the survey conducted at 105 enterprises located in Seoul industrial foodservices which were evenly divided into three groups ; large size of feeding group, medium size of feeding group, small size of feeding group. The sresults are below, 1. Most institutional foodservice was enterprise under direct management. 2. Selective menu was set for the large size of feeding group than small size of feeding group. At budget making, personal management and purchansing management, the dietition role was not important in the large size of feeding group than in the small size of feeding group. 3. Equipped rate of facilities and utensil were greater volume for the large size of feeding group.
