  • Prupose: The purpose of this study was to identify signs and symptoms of hospice patients during their dying processes. Method: The subjects of this study were 76 patients who received hospice care services in 2 different hospice care programs in Seoul area. Data was obtained from January, 1999 to June, 2001 by hospice nurse's observation, interviews with patient's primary caregiver and hospice volunteers, patient's self report, nursing records and questionnaires which had been developed by selecting from various references and refining them based on the result of preliminay studies. The collected data were analyzed with the SPSS PC+ program and content analysis. Results: Mean lengths of hospice patient's dying process were 3.6 days. Physical signs and symptoms of hospice patients during their dying processes were 'increased sleep'(89.5%), 'decreased oral intake of food'(88.2%) and 'liquids'(86.8%), 'change of respiration'(82.9%), 'decreased urine output'(80.3%), 'cold extremities'(69.7%), 'death rattle'(67.1%), 'cyanosis'(57.9%), 'restlessness'(55.3%), etc. And psychological, spiritual and social signs and symptoms were 'decreased interpersonal relationships'(61.8%), 'panorama of memories from childhood'(60.5%), 'experiences as like hallucination'(56.5%), 'saying bye with family'(69.7%), 'forgiveness', 'make a will', etc. Experiences as like hallucination were seemed not as dream but reality were shown by 43 dying patients. They had experienced to see and to talk with their deceased mother(18.6%) and/or relatives(30.2%), angels(20.9%), heaven(11.6%), old house in which they had lived, someone from the world beyond with black clothes, etc. Conclusion: The above results indicate that death of hospice patients is ongoing process with dying signs and symptoms during several days contains not only in physical aspects but also among psychological, spiritual and social aspects including family dynamics.

Effect of Breakfast Service on Nutritional Status, Hematological Status, and Attentiveness of Children in Low-Income Families (아침급식이 저소득층 결식아동의 영양상태, 혈액성상 및 주의집중력에 미치는 영향)

  • This study was carried out to investigate the effects of breakfast service on nutritional status, hematological status, and attentiveness of children in low-income families. The subjects were 19 boys and 13 girls between 7 and 11 years old. The subjects were divided into a control group and a breakfast service (BS) group, in which 12 boys and 5 girls received breakfast from February 1 to December 31, 2010. The results can be summarized as follows: intakes of energy, protein, carbohydrate, calcium, iron, zinc, vitamin A, vitamin $B_2$, niacin, and vitamin C in the BS group were significantly higher than those in the control group. In the BS group, the intakes of calcium, folic acid, and vitamin C were lower than 75% of recommended intake levels. There were no significant differences in the total blood protein level and total cholesterol level between the BS group and control group. A blood albumin level was significantly higher in the BS group than in the control group. Systolic blood pressure was higher in the BS group than in the control group, whereas the diastolic blood pressure showed no significant difference between the groups. A dietary attitude score increased according to breakfast service and nutritional education. No significant differences were found in the capacity value and continuity value between the two groups, but the control value was significantly higher in the BS group than in the control group. Therefore, to sustain the effect of breakfast service and improve nutritional status for children skipping breakfast in low-income families, nutrition intervention services, as well as legal and financial support by the government should be provided.

Consumption of Health Functional Foods according to Age Group in Some Regions of Korea (우리나라 일부지역 연령대별 건강기능식품 이용 실태)

  • The purpose of this study was to investigate the consumption of health functional foods according to age group. We surveyed 300 subjects with quota sampling aged 10 to 50 and over. The rate of consumption of health functional foods by users was substantial (52.7%). Consumers of health functional foods showed higher scores for interest in health (3.97 vs 3.49, P<0.001) and knowledge of health functional foods (3.79 vs 3.30, P<0.001) than non-consumers of health functional foods. Regarding consumers of health functional foods, the number (P<0.01) and types (P<0.05) of health functional foods, reasons for taking (P<0.05), motivations for buying (P<0.05), periods of taking (P<0.001), cost per month (P<0.01), observance of instruction (P<0.01), and effectiveness (P<0.01) were significantly different according to age group. For non-consumers of health functional foods, reasons for not-taking (P<0.01) and types of health functional foods to be planned (P<0.001) were different according to age group. For consumers and non-consumers, problems (P<0.01) andimprovements (P<0.001) for health functional foods showed significant differences according to age group. The majority of subjects (85.4%) answered that heath functional foods had no side-effects. Reported side effects were inappetence (6.6%), constipation (2.6%), and headache (2.0%). In conclusion, differentiated strategies and specialized education programs according to age group might be needed for promoting adequate consumption and preventing side-effects of health functional foods.

Rice pasta containing cultivar 'Saemimyeon' with high amylose contents and methods thereof

  • Recently, strong interest in the well-being and healthy food trends lead a spreading of rice processing products such as rice noodles, rice breads, and rice cakes. However, most of rice varieties developed in Korea showed very limited processing properties in processing of noodles compare to that of wheat flour. Moreover, low competitiveness as a raw processing materials due to high price give poor evaluations for rice noodles processing. To cope those barriers, 'Saemimyeon' a Tongil type high yielding variety with a high amylose contents was developed in RDA. 'Saemimyeon' showed about 10~32 % of increase in yield as 7.08MT/ha and 26.7% of high amylose contents together with easy grinding property of 65.7% of high chalkiness ratio. The both of milled as well as brown rice of 'Saemimyeon' were well fit for processing properties in rice pasta where the contents of rice flour for rice pasta was 99% (1% of Tapioka starch was intermixed in to the rice flour). A spaghetti type for wet noodles and macaroni type for dry noodles were developed, respectively. Each of pasta were showed relatively more or less an equal quality and panel test compare to that of durum wheat pasta products. Finally, rice pasta products could suggest an alternative idea for a new rice processing items where rice noodles market was stagnant.

Quality Assessment of Longissimus and Semitendinosus Muscles from Beef Cattle Subjected to Non-penetrative and Penetrative Percussive Stunning Methods

  • This study provides a comparative analysis of the effects of pre-slaughter penetrative and non-penetrative stunning and post-slaughter stunning on meat quality attributes in longissimus lumborum (LL) and semitendinosus (ST) muscles in heifers. Ten animals were assigned to each of four treatment groups: i) animals were subjected to conventional Halal slaughter (a clean incision through the structures at the front of the upper neck - the trachea, oesophagus, carotid arteries and jugular veins) and post-cut penetrating mechanical stun within 10 to 20 s of the neck cut (Unstunned; US); ii) high power non-penetrating mechanical stunning followed by the neck cut (HPNP); iii) low power non-penetrating mechanical stunning followed by the neck cut (LPNP); and iv) penetrative stunning using a captive bolt pistol followed by the neck cut (P). For each carcass, muscle samples were removed within 45 min of slaughter, portioned and analysed for pH, cooking loss, water holding capacity (WHC), tenderness (WBS), lipid oxidation (TBARS) and color, over a two week storage period. Stunning did not affect pH and cooking loss. Significant differences in water holding capacity, tenderness, lipid oxidation and color were present at different storage time points. HPNP stunning resulted in lower WHC and color values, particularly lightness ($L^*$), higher TBARS values and peak force values compared with those stunned using LPNP, P and US. These adverse effects on quality were mostly encountered in the ST muscle. In conclusion, the meat quality achieved using P, LPNP and US treatments was comparable, and no treatment stood out as considerably better than another.

A Review Study on Ozone Phytotoxicity Metrics for Setting Critical Levels in Asia

  • Ground-level ozone ($O_3$) can be a menace for vegetation, especially in Asia where $O_3$ levels have been dramatically increased over the past decades. To ensure food security and maintain forest ecosystem services, such as nutrient cycling, carbon sequestration and functional diversity of soil biota, in the over-populated Asia, environmental standards are needed. To set proper standards, dose-response relationships should be established from which critical levels are derived. The predictor of the response in the dose-response relationship is an $O_3$ metric that indicates the dose level to which the plant has been exposed. This study aimed to review the relevant scientific literature and summarize the $O_3$ metrics used worldwide to provide insights for Asia. A variety of $O_3$ metrics have been used, for which we discuss their strengths and weaknesses. The most widely used metrics are based only on $O_3$ levels. Such metrics have been adopted by several regulatory agencies in the global. However, they are biologically irrelevant because they ignore the plant physiological capacity. Adopting AOT40 ($O_3$ mixing ratios Accumulated Over the Threshold of $40nmol\;mol^{-1}$) as the default index for setting critical levels in Asia would be a poor policy with severe consequences at national and Pan-Asian level. Asian studies should focus on flux-based $O_3$ metrics to provide relevant bases for developing proper standards. However, given the technical requirements in calculating flux-based $O_3$ metrics, which can be an important limitation in developing countries, no-threshold cumulative exposure indices like AOT0 should always accompany flux-based indices.

Comparison of elementary school students in atopy-friendly and general schools for their knowledge about environmentally-friendly produces and practice levels for dietary guidelines (아토피친화학교와 일반학교에 재학 중인 초등학생들의 친환경농산물에 대한 지식도와 식생활 지침 실천도 비교)

  • Atopic dermatitis is a chronic relapsing inflammatory skin disease. In the past years, numbers of children with atopic dermatitis has increased all over the world. Objective of this study was to evaluate awareness of students in atopy-friendly elementary schools about environmentally-friendly grown agricultural products and their practice levels for dietary guidelines. This study was conducted by using a questionnaire on 116 students from three atopy-friendly schools in Jin-an, Jeong-eup, and Gwang-ju and 124 students from general elementary schools. According to the results, the numbers of children who suffer from atopic dermatitis between atopy-friendly schools and general schools were not significantly different. Among, students with atopic dermatitis, more students in atopy-friendly school, compared to general school, restricted foods. Since different school feeding services have been provided, students in atopy-friendly schools generally get more information about the environmentally-friendly agricultural products through nutrition education. However, most results did not show differences in knowledge levels and practice levels for dietary guidelines for children between students in atopy-friendly schools and general schools about environmentally-friendly produces. However, students in atopy-friendly schools less frequently eat cookies, soda drinks, or fast foods. In conclusion, appropriate program for nutrition education should be provided to elementary school students with atopic dermatitis.

Design of An Order Service System that Connects Online and Offline (온·오프라인 연계형 스마트 주문서비스 시스템 설계)

  • Purpose Consumption behaviors of consumers have changed with the widespread use of the Internet and smart phones, and accordingly online marketing activities are becoming ever more prevalent. Yet, the domestic food-service industry has yet to offer an Omni-Channel order system that encompasses a online, offline, and mobile interface. Also, a multilingual menu ordering service for foreign tourists is not yet available. Therefore, if an order service system accessible online and offline which could provide multi-language services were implemented, the satisfaction of the service provider and domestic and foreign customers would be maximized. Design/methodology/approach By designing an electronic menu based on open an OS and providing electronic menus in offline stores, we have completed the design of a linked order system which would be available everywhere (online, offline, and mobile). The CMS was developed to integrate these three mediums and the entire operator was designed to receive basic information and statistical information about the merchants, or store operators. Also, a multilingual term dictionary containing menu information for foreign tourists was made into a database so that foreign tourists who are having difficulty in communication can use it more easily. Findings We have made it possible for customers to use the order service without distinction between online, offline, and mobile platforms, and have proved that it is a more efficient and convenient service for customers as well as operators. Nevertheless, as an initial model, the implemented system has limitations on the execution of the payment support method in the electronic menu board and in the management division of the CMS. In case of commercialization, it is necessary to make an alliance of efforts to attract initial franchises. Through further supplementation, we expect the online and offline connection-types martservice system will maximize the satisfaction of both operators and customers alike.

Korean and Chinese University Students' Importance and Performance Analysis for Quality Attributes by Coffee Type in Daejeon (대전지역 한국대학생과 중국대학생의 커피 유형별 품질 속성에 대한 중요도 및 수행도 분석)

  • The purposes of this study was to investigate importance and performance for coffee quality attributes in Korean and Chinese university students by 3 types of coffee; coffee in coffee houses, coffee in vending machines and canned/bottled coffee. Survey was done for 360 students in Daejeon with developed questionnaires including general information, favorite type of coffee and 15 quality attributes of coffee. Finally, data from 168 Korean and 126 Chinese university students was used for statistical analysis by SPSS 18.0 package program. Results of this study were as follows: for favorite type of coffee, the rates of coffee in coffee houses, coffee in vending machines and canned/bottled coffee were 43.0% 34.8% and 22.2% in Korean students and 8.7%, 78.0%, and 12.2% in Chinese students, respectively. Comparing Chinese students and Korean students showed higher importance for several quality attributes of coffee in coffee house (p < 0.05), but lower importance for most quality-attributes of coffee in vending machine (p < 0.05) and canned/bottled coffee (p < 0.05). According to importance and performance analysis, strategies for increasing satisfaction were to improve 'price' of canned/bottled coffee in Korean students, and 'taste', 'volume', 'concentration' and 'variety' of canned/bottled coffee and 'freshness' of coffee in vending machine in Chinese students. These results suggested that differentiated marketing plans between Korean and Chinese university students should be needed in coffee industry.

Mating and Incidental Activities of Ram (Ovis aries) When Exposed to Ewe(s) and Competitor Ram in Pen Mating Condition

  • An attempt was made to analyze the factors affecting mating performance of rams in pen mating systems. Due to many types of social interactions, mating performance of rams may decrease or increase. Six intact Muzaffarnagari rams were used and divided into three dominant subordinate pairs by food and ewe competition test. For dominant rams subordinate ram became competitor and vice versa. In the first experiment, ram was exposed to ewe but the competitor ram was kept outside the pen with the facility of visibility only. In the second experiment each ram was exposed to ewe along with the competitor ram and in third experiment ram was exposed to ewes (two) along with competitor ram in observation pen. Recordings of different mating and agonistic behaviour were done in all the experiments. It was found that subordinate ram's mating behaviour was inhibited by mere presence of a dominant ram out side without physical contact. However, when ram exposed to oestrus ewe(s) along with competitor ram, both dominant and subordinate rams spent much of their time in guarding activities instead of mating. In addition dominant ram tried to curtail the subordinate ram mating by agonistic interaction like fight and butting. Different guarding activities were observed either as active or passive type depending on level of dominanace. It was concluded that in a limited space the interaction of two or more rams might affect the number of services adversely.
