냉동건조방법에 의한 Acetaldehyde 고정에 관한 연구 (Studies on the Fixation of Acetaldehyde by Freeze Drying)

  • 선택된 당류 및 전분 가수분해 물질을 기질로 사용하여 냉동건조에 의하며 acetaldehyde을 고정시키는 방법을 연구하였다. 단순기질 보다는 복합기질이 일반적으로 acetaldehyde를 고정시키는 능력이 좋았고. 특히 mannitol+lactose가 고정능력 면에서 가장 우수했다. 그리고 경계성 등을 고려할 때 mannitol+maltodextrin이 공업적으로 acetaldehyde를 고정하는데 적당할 것으로 평가됐다. 일반적으로, 기질 농도가 증가함에 따라 건조 중 acetaldehyde손실이 감소하였으며, 기질 농도 40%일 때 mannitol+maltodextrin 기질의 acetaldehyde 고정 능력이 가장 좋았다. 냉동건조 방법으로 acetaldehyde를 고정할 경우 건조실 압력이 낮을수록 건조 중 acetaldehyde 손실이 감소했다. 그러나 대량생산을 목적으로 할 때에는 0.5 Torr이하의 압력을 유지하는데 건조경비 부당이 과다하므로, 0.5 Torr정도의 건조실 압력을 유지하는 것이 적당할 것으로 평가됐다.

더덕 전처리 방법에 따른 조리 작업 효율 및 더덕구이의 품질 특성 (The Cooking Efficiency and Qualities of Deodeok-gui from Optimized Pre-processing of Codonpsis lanceolata)

  • Codonopsis lanceolata serves as, an appetizing health food for its, characteristic flavor, taste, and texture:however, it requires a long and complicated cooking process. Therefore, this study conducted pre-processing procedures to improve the cooking process and Codonopsis lanceolata more easily. For processing efficiency, freezing and blanching were efficient for peeling and the rate of peel disuse. In addition the freezing process, effectively reduced the time spent in beating raw material. In the salinity test, freezing and blanching quickly increased salinity over 28 days. As the result of SEM cross-section tests showed that frozen Codonopsis lanceolata become porous, it's assumed that seasoning permeates into this cross-section efficiently. As the appearance of Deodeok-gui as significant differences according to the pre-processing methods, this study examined pre-processing methods(time spent in peeling, rate of peel disuse, time spent in beating out material, salinity, moisture content, texture, and the color) of Codonopsis lanceolata. After testing Deodeok-gui, it was found that freezing is effective, not only for process efficiency and cooking time reduction, but also for improving its qualities.

  • 대두의 조성은 다른 두류나 곡류와는 달리 35~40%의 단백질, 15~20%의 유지 및 20~25%의 당을 함유하고 있다. 예로부터 대두는 두부, 간장, 된장과 같은 전통식품의 원료로써 넓게 쓰여져왔다. 초원심분리에 의한 대두 단백의 성분은 침강정수에 의해 2, 7, 11 및 15S의 4가지 주요한 성분으로 나타난다. 저당잔백질 중 중요한 2성분인 7S 및 11S globulin은 많은 연구자들에게 의해 분리되고, 특성이 알려졌다. 미생물 효소에 의해 제조된 응고물은 금속이온 및 산처리에 의해 만들어진 것보다 훨씬 조밀한 구조를 나타내었다. 효소작용으로 얻어진 curd는 식품재료로써 개발되어지고, 식품가공분야에서도 폭넓게 이용될 것으로 기대된다.

Identification of a Novel Function of Extract of Gingko biloba (EGb 761®) as a Regulator of PYY Secretion and FFA4 Activation

  • Although the functions of a standardized extract of Gingko biloba leaves (EGb $761^{(R)}$) has been reported with regard to neurobiological properties, no attention has been paid to the impact of EGb $761^{(R)}$ on the neuronal regulation of energy homeostasis. To evaluate the hypothesis that EGb $761^{(R)}$ affect the secretion of peptide tyrosine tyrosine (PYY) and the activation of free fatty acid receptor 4 (FFA4), which are involved in the neuronal circuitries that control energy homeostasis by inducing the transfer of information about the influx of energy to the brain, we examined whether EGb $761^{(R)}$ can stimulate PYY secretion in the enteroendocrine NCI-H716 cells and if EGb $761^{(R)}$ can activate FFA4 in FFA4-expressing cells. In NCI-H716 cells, EGb $761^{(R)}$ stimulated PYY secretion and the EGb $761^{(R)}$-induced PYY secretion was involved in the increase in intracellular $Ca^{2+}$ concentration and the activation of FFA4. Furthermore, in FFA4-expressing cells, EGb $761^{(R)}$ activated FFA4. These results suggest that EGb $761^{(R)}$ may affect the control of energy homeostasis via the regulation of PYY secretion and FFA4 activation.

Bowel Obstruction Due to Less-Digestible Pet Food with No Shadowing on Ultrasonography in a Small-Breed Puppy

  • A 6-month-old intact female Bichon Frise dog weighing 0.9 kg presented with vomiting, anorexia, and lethargy persisting for 3 days. No remarkable abnormalities were detected on the history or physical examination. Laboratory findings were mostly normal, except for elevated levels of alkaline phosphatase (ALP) and blood urea nitrogen (BUN). Abdominal radiography revealed a fluid-dilated stomach and gas-dilated intestinal loops in the regional areas. Abdominal ultrasonography was performed to investigate the cause of gastrointestinal dilation, which revealed a rectangular, homogeneous, echogenic foreign material with no shadowing in the small intestine, causing mechanical obstruction. Upon further inquiry involving detailed re-take of history with the owner, a history of ingesting dog gum 4 days prior was identified. On surgical enterotomy, the hard pet food was identified and removed from the distal duodenum. Postoperatively, the patient's clinical signs showed complete improvement, with a return to normal appetite. The present case demonstrates that less-digestible, hard pet food, despite showing no shadowing on ultrasonography, can act as a foreign material, causing mechanical intestinal obstruction in a small-breed puppy. Furthermore, surgical removal of these materials is necessary in cases of intestinal obstruction.

삼중염을 이용한 음식물 쓰레기 퇴비 중 염분제거 및 공정효율화 실험 (The experiment of process efficiency and salt elimination in food waste compost using triple salt)

  • 음식물 쓰레기로 만든 퇴비 중의 염분함량을 1% 이하로 조절하기 위해 지금까지 여러 가지 방법이 개발되었다. 그러나 이런 방법들은 침출수 과다로 인한 환경오염 또는 높은 설치비 등의 문제를 가지고 있어 실용화에 어려움이 있다. 염분이 충분히 제거되지 않은 음식물 쓰레기로 만든 퇴비를 농지에 사용할 경우 염해로 인한 식물의 성장 장애 및 염류축적이 일어날 수 있다. 본 연구는 음식물 쓰레기 퇴비에 함유된 염분을 $KHSO_5$, $KHSO_4$, $K_2SO_4$로 구성된 삼중염을 이용하여 분해하는 방법이며 기존 화학적 처리방법과 달리 염분을 분해하여 칼륨비료의 원료인 KCl로 전환시켰다. 또한 음식물 쓰레기 퇴비화 발효설비에서 음식물 쓰레기 600톤에 삼중염을 적용해본 결과 발효시의 온도가 평균 $5^{\circ}C$가 상승되었다. 온도상승과 함께 전처리 공정 및 발효공정에서 현저한 악취저감 효과가 나타났으며 이는 삼중염으로 인한 염분함량 감소로 호기성균의 활성화 및 악취원인물질을 효과적으로 제거하기 때문이다.

Effects of Chaff as Bulking Materials on Aerobic Composting of Food Wastes

  • This study was performed to examine the effects of chaff as bulking materials on temperature, pH, weight and volume reduction and salinity in aerobic composting of food wastes. Volume ratios of food wastes to chaff in reactor Control, Ch-1, Ch-2, Ch-3 and Ch-4 were 4:0, 4:1, 4:2, 4:3 and 4:4, respectively. Reactors were operated for 24 days with 1 hour stirring by 1 rpm and 2 hours aeration per day. The lowering of the volume ratio of food wastes to chaff resulted in the ascending of the highest reaction temperature and the elongation of the high temperature reaction period. The lowering of the volume ratio of food wastes to chaff resulted in the more fast time of pH ascending. The lowering of the volume ratio of food wastes to chaff resulted in the more fast consistency in the weight and volume reduction rates. Salinities were condensed by reaction days. The final salinity of Control was 2.79%, and the final range of salinities of chaff mixtures was 2.18 - 2.37%.

Effect of Garlic, Chili and Ginseng on the Thermal Gelation of Alaska Pollack Surimi

  • Additions of ground garlic, chili and ginseng powder did not affect the breaking force and strain of directly heated gel of Alaska pollack surimi. In comparison, these additives reduced the setting effect achieved by incubation of the salted surimi at $25^{\circ}C$, and resulted in a decreased breaking force and strain for the two step heated gel. Garlic almost completely inhibited the myosin cross-linking reaction, an important reaction for improving the gel properties occurring in the setting process. However, chili and ginseng powder minimally inhibited the cross-linking reaction. Thus, this study proposes that the mechanism for the suppression of the setting effect by chili and ginseng is different from that of garlic.

외식산업 음식물쓰레기의 효율적인 처리방안에 관한 연구 (A Study on the Effective Handling of Food Garbage in Foodservice Industry)

  • The handling of food garbage should be effectively accomplished to strengthen national competitive power, conserve the environment and improve the public health. But the study of this subject left much to be desired. So we studied about present situation, specific character and decreasing method of food garbage and practical application of Hazard Analysis Critical Control Point(HACCP) system to handling of food garbage. Actually eight trillion won per year which corresponds to the one fifth of the debt from international monetary found(IMF) as these day's exchange rate was wasted by the form of food garbage, so the government should have willing of support the revenue source of investment to develop and accomplish the effective handling of food garbage. National public relations(P.R.) into improvement of eating and drinking culture and enlightenment of environment movement will be needed. Under the organic cooperation of industrial, academic, government circles, active studies should be accomplished. we hope this study can be used as the basal material of filed of handling of food garbage.
