담금 방법을 달리한 전통 삼해주의 발효 중 이화학적 특성 변화 (Changes in Physicochemical Characteristics during Fermentation of Traditional Noble Wine, Samhaeju, by Different Brewing Methods)

  • 민속주의 우수성을 과학적으로 입증함과 함께 전통 반가주의 복원 및 공장 생산의 가능성을 열기 위하여 발효 온도를 상승시킴으로써 전통적인 발효 방법을 변형해 발효 시간을 단축하여 2가지 방법으로 삼해주를 제조하였다. 3번의 담금을 기준으로 삼해주의 발효 기간에 따라 이화학적 성질을 분석하였는데, 2단과 3단 담금 직후 pH 값은 상승 하였으며, 총산 함량은 감소하였다. 아미노태 질소 함량은 발효 초 1.31 mg%로 낮았으나 발효가 진행됨에 따라 증가함을 보였고, 덧술이 첨가된 직후에는 낮은 함량을 나타내었다. 이는 덧술 첨가에 의한 시료의 희석 효과로 여겨진다. 삼해주의 대표적인 유기산으로는 lactic acid, succinic acid로 나타났고, citric acid, acetic acid, propionic acid도 일부 검출되었다. 삼해주의 대표적인 유리당으로는 glucose, maltose, lactose로 확인되었고, fructose, sucrose도 소량 검출 되었다. 색도의 경우 덧술 첨가 직후 명도를 나타내는 L 값이 감소하였으며, 발효가 완료되었을 때 a값이 가장 낮고, b 값은 가장 높았다. 전자코로 휘발성분을 분석한 결과 삼해주의 향에 가장 큰 영향을 주는 것은 알코올로 나타났으며, 발효가 진행됨에 따라 제 1주성분 값이 음(-)에서 양(+)의 값으로 이동을 하였고, 제 1주성분이 9.00의 값을 나타내었을 경우 삼해주의 품질을 유지하는 것으로 나타났다.

  • This experiment was conducted to obtain basic information on the natural spice of Elsholtzia splendens, which is one of the native Korean aromatic plants for aromatic, medicinal and ornamental uses. The overall acceptability and the masking effects on the fetid smell of beef were investigated with Elsholtzia splendens-flavored oils by sensory evaluation. The ability of an electronic nose with six metal oxide sensors to classify Elsholtzia splendens flavored oils based on their odors was studied. The response by electronic nose was analyzed by principal component analysis (PCA). In EOI, EOII, and ESI, (이것들이 무엇을 의미하는지 기술할 필요가 있음). overall acceptability of French dressing showed a same level of preference during storage. Fetid smell of beef was not changed by the addition of 4 types of Elsholtzia splendens-flavored oil during storage. In EO I -flavored oil, the proportion of 1st principal component was 0.829, and the proportion of 1st principal component was 0.818 in ESI-flavored oil. 냉장 또는 동결우유의 저장기간과 재냉장이 근원섬유단백질의 연도에 미치는 영향 (Effect of Storage Period and Rechilling Process on Tenderness of Myofibrillar Protein of Chilled or Frozen Beef)

  • This study was carried out to investigate the changes of characteristics of myofibrillar protein for the vacuum chilled, the air frozen or the rechilled Holstein beef loin. The vacuum chilled beef was stored at 1$^{\circ}C$ and the air frozen beef was stored at -20$^{\circ}C$ for 60 days. The rechilled beef was restored for 3 days at 1$^{\circ}C$ by using the vacuum chilled or the air frozen beef. Myofibrillar protein extractability, 30,000 dalton component content and Mg-ATP ase activity for the vacuum chilled beef were higher than those of the air frozen beef. Each parameters increased significantly for the vacuum chilled beef after the 20 days storage, but there was no significant difference for the vacuum chilled beef after the 20 days storage, but there was no significant difference for the air frozen beef during the 60 days storage. By the rechilling process, myofibrillar protein extractability of the vacuum chilled and the frozen beef were not significant difference. The 30,000 dalton component of the vacuum chilled beef was showed not significant increment by rechilling, but the frozen beef was showed significant increment by rechilling. The Mg-ATPase activity of myofibrillar protein of the vacuum chilled beef was not changes by rechilling, but the frozen beef after the 20 days storage was significant increment by rechilling.

Determination of Differences in the Nonvolatile Metabolites of Pine-Mushrooms (Tricholoma matsutake Sing.) According to Different Parts and Heating Times Using $^1H$ NMR and Principal Component Analysis

  • The differences in the nonvolatile metabolites of pine-mushrooms (Tricholoma matsutake Sing.) according to different parts and heating times were analyzed by applying principal component analysis (PCA) to $^1H$ nuclear magnetic resonance (NMR) spectroscopy data. The $^1H$ NMR spectra and PCA enabled the differences of nonvolatile metabolites among mushroom samples to be clearly observed. The two parts of mushrooms could be easily discriminated based on PC 1, and could be separated according to different heattreated times based on PC 3. The major peaks in the $^1H$ NMR spectra that contributed to differences among mushroom samples were assigned to trehalose, succinic acid, choline, leucine/isoleucine, and alanine. The content of trehalose was higher in the pileus than in the stipe of all mushroom samples, whereas succinic acid, choline, and leucine/isoleucine were the main components in the stipe. Heating resulted in significant losses of alanine and leucine/isoleucine, whereas succinic acid, choline, and trehalose were the most abundant components in mushrooms heat-treated for 3 min and 5 min, respectively.

  • Diethylnitrosamine (DEN) is known as a potential hepatic carcinogen by single administration. This study was designed to measure the effects of DEN-induced cell damage on the triglyceride and cholesterol concentration in the liver, excluding dietary effects. Fertilized chicken eggs, 10 days before hatching, were randomly divided into three groups (n=20) and each egg was injected 10 ${mu}ell$ of corn oil (vehicle control), 5 $\mu\textrm{g}$ of DEN/10 ${mu}ell$ of DEN/10 ${mu}ell$ into yolk via air sac. After 48 hr and 96 hr incubation, the damage of the chick-embryo liver cell was investigated by electron microscopy and by measuring the concentration of lipid components (total cholesterol, free cholesterol, phospholipid and triglyceride). For eggs administered 10 $\mu\textrm{g}$ of DEN and incuvated 96 hr, in hepatocyte, the nucleus membrane was roughed, the size of nucleolus was apparently increased and euchromatin was accumulated. Mitochondria were condensed and cristae, located mitochondiral inner membrane, were obscured. Additionally, the leaves of triglyceride and cholesterol classes were significantly increased depend on the amount treated with 10 $\mu\textrm{g}$ DEN at 96 hr, but phospholipids component of cell membrane, were decreased with significance. As a conclusion, carcinogen induced hepatic lesion was correlated with the changes in lipid component of liver.

  • Active and therapeutic sport recovery is becoming a popular and important component in approving performance for pro and recreational athletes alike. It is also helping in the realm of injury prevention. In the search of finding modalities that are widely effective, natural, and safe, acupuncture is a viable and cost-effective treatment for helping athletes achieve this goal. More direct related research is needed, but testimonials from pro athletes and the body of research that currently exists provides powerful evidence on acupunctures ability to help with enhancing recovery. Specializing in acupuncture and exercise science, Chris integrates acupuncture into musculoskeletal rehabilitation therapy or fitness training for pain modulation, speedy recovery, and enhanced performance. Clients can choose to focus on one-on-one corrective exercise therapy, manual and massage therapy, or acupuncture. However, for best results, Chris recommends all three. Other modalities that he uses in therapy are acu-taping, herbal therapy, nutrition supplementation, cupping, guasha, and stretching techniques.   • This study is analyzed comparison about the component ratio of dwelling space in the existing plan and residents dwelling needs. Also, it is analyzed the residence factors of area component change that residence satisfaction and importance according to the behavioral patterns of residents. The results are as follows. 1) Total area component ratio of the existing plan was 39.5:40.8:19.7% and dwelling consciousness one was 36.4:44.0:19.6%. Compared private space with public space, public area requested increase rather than private area. 2) In the 17, 19pyung-types dwellers are not happy about dining kitchen and utility room and types of 21, 23pyung-types are dissatisfied in room-2 and room-3, living room and dining kitchen are dissatisfied, too. In case of areas over 25pyung-types are dissatisfied in room-3 and room-4. 3) The behavioral patterns of apartment residents were classified six acts, and the most significant factors are appeared associated the acts of ceremony, relation of neighborship, and reception. The next significant factors are appeared associated the acts of family relation, about food life. So, it is concerned with the scale of public room.

해파리의 식품성분 특성과 이의 유효 이용 (Food Component Characterization and Efficient Use of Jellyfish)

  • The recent mass appearances of jellyfish in Korea have caused economic and social damage, as they plague swimmers and fishermen. However, jellyfish have high economic and nutritional value, and contain low levels of calories and hydrolysates. Thus, jellyfish are a natural, healthy food that can improve high blood pressure, bronchitis, and a multitude of other diseases. Here, we present research on the ecology, classification, bloom, damage caused, food component characterization, and tissues of jellyfish, with the aim of facilitating further study. Research on use of jellyfish as salted products, and for collagen and qniumucin would also be valuable. A jellyfish body is classified into three parts: the body, termed the umbrella; the oral arm; and the tentacle. Jellyfish are planktonic marine members of a group of invertebrate animals comprising the classes Schypozoa (phylum Cnidaria) and Cuboza. In Korea in 2012, jellyfish damage resulted in decreases of annual catch and commercial value estimated at 177 and 141 billion won, respectively. Because concentrations of heavy metals are below the safety limits for seafood, dried jellyfish appear to be safe raw materials for food. The proximate compositions of Nemopilema nomurai and Aurelia aurita were 97.1% and 96.5% moisture, 0.9% and 1.2% crude proteins, undetected and 0.1% crude lipids, and 1.7% and 1.8% ash, respectively. According to their total contents of essential, total, and non-essential amino acids, jellyfish gonads were deemed good-quality protein. Because the major functional components of jellyfish are collagen and qniumucin, jellyfish can be used salted, or these components of healthy diets can be extracted from them. For more effective use of jellyfish, unit costs should be decreased and safety guaranteed. Additionally, dehydrators attached to conveyor belts should be developed. Since jellyfish can be used throughout the year, they should be listed in the Korean Food Standards Codex as a food source.

신규 기능성당 L-아라비노스: 생리활성, 이용, 생산방법 (Novel Functional Sugar L-Arabinose: Its Functionality, Uses and Production Methods)

  • L-Arabinose inhibits intestinal sucrase in an uncompetitive manner and, consequently, inhibits the absorption of sucrose from the small intestine. The addition of $3{\sim}5%$ L-arabinose to sucrose causes about a 60% reduction in the digestion of sucrose in the small intestine. In addition, it reduces the increase of the levels of blood sugar, insulin, triglycerides, and cholesterol caused by the ingestion of sucrose. The taste of L-arabinose is quite similar to that of sucrose, with approximately 50% the sweetness of sucrose. Naturally occurring arabinose is an L-form and a noncaloric sugar that is not metabolized in animals. L-Arabinose is a common component of plant cell walls and is widely distributed in the plant kingdom. It is the main component of cereal hemicellulose, such as corn, wheat, and rice, pectic substances of beet, apple pulps, and some plant gums. L-Arabinose can be produced by either the acid hydrolysis or the enzymatic hydrolysis of some plant gums, corn fiber, and beet pulps. This novel sugar has a potential to be used as a food additive for improving obesity and maintaining good health.

Analysis of non-point and point source pollution load in DongPieHong Ditch

  • In this study, the DongPieHong Ditch were taken as the research object, five sampling points were set to measure the COD, NH3-N,TNandTPindexes. The correlation and principal component analysis were used to judge the main pollution sources and calculate pollution contribution rate. According to the population in the basin, the load of point source pollution into the river was estimated. As a result, the load of COD, NH3-N and TP into the river was 323.04t/a, 43.8t/a and 3.9t/a, respectively. According to the statistics of the rainfall in the basin, the concentrations of COD, TP and NH3-N in the initial rainwater were measured and calculated for non-point source pollution, and the results shown that the inflow loads of COD, NH3-N and TP into the river were 34.59t/a, 0.12t/a and 0.71t/a, respectively. It was found that the main cause of the pollution in the east flash flood gully was point source pollution, and the proportions of COD, NH3-N and TP into the river were 90.33%, 99.72% and 84.61%, respectively.
