Contents of Di-(2-ethylhexyl) Phthalate in PVC Food Packaging (In 2000-2002 and 2004) (유통 PVC 식품포장재 중의 DEHP 함량(2000-2002년, 2004년))

  • Three hundred sixty-eight samples of domestic PVC food packaging were analyzed fir DEHP(di-(2-ethyhexyl) phthalate) used in plasticizer by GC/FID and GC/MSD. The number of samples collected were 47(2000), 143(2001), 88(2002) and 89(2004) from local markets in Gyeonggi-Do. In $2000\∼2001$, DEHP was highly detected in 86 out of 190 samples and the level of DEHP were ranged from 1.3 g/kg to 82.8 g/kg. In 2002, meanwhile, DEHP was detected in 8 out ot 88 samples and the level of DEHP were shown to from 1.3 g/kg to 51.5 g/kg. In 2004, DEHP was detected in only one out of 89 samples and the amount was 30.5 g/kg. As a result of this study, it was made clear that the detection rates of DEHP in PVC food packaging were rapidly decrease every year.

The effect of continuous application of the food waste composts on the paddy field environment (음식물류폐기물 활용 퇴비의 장기시용이 논 농업환경에 미치는 영향)

  • The long-term effects and the soil environmental changes were examined to ensure the safety of food waste compost in agricultural use. Based on conventional nitrogen application rate of chemical fertilizer, Pig manure compost with $24g\;N\;kg^{-1}$, $8g\;P_2O_5\;kg^{-1}$, and $10.4g\;K_2O\;kg^{-1}$ and food waste compost with $20g\;N\;kg^{-1}$, $20.1g\;P_2O_5\;kg^{-1}$, and $6.5g\;K_2O\;kg^{-1}$ were applied to the paddy soil in $2{\times}2{\times}2m$ lysimeter in which paddy rice (Oryza sativa L. var Chucheong) were grown. The rice grown where food waste compost applied showed better growth responses than control, whereas less yield rate than chemical fertilizer applied. The contents of organic matter, nitrogen, and phosphorus after experiment were increased with compost applied. In addition, it improved soil aeration by the application of food waste compost, while little difference was observed in the quality of surface, infiltrated, and ground water compared to chemical fertilizer applied or control.

A Study on the Preference Determinants of Buddhist Temple Food (사찰 음식 선호도 결정 요인)

  • The purpose of this study was to investigate the preference determinants of buddhist temple food(BTF) and leaded to its activation based on these results. 354 subjects were participated in the survey using questionnaires. 66.9% of subjects had over the normal interest. The taste of BTF was light(34.7%) and it would be helpful in their health(72.9%), subjects answered. Lightness and not strong taste was the main reason of preferring BTF(50.8%), but lack of nutrients was dislike reason of BTF generally. According to factor analysis, the factors of preference determinants deduced as the external form, social environment, health, essential quality and information of food. There were not significantly different between factors by sex and family form. External form, health and essential quality of food had the significant difference by generation and education level. The factors of external form and the essential quality of food showed the significant difference by job. According to the monthly income, the factor of social environment, health and information of food had the significant difference.

The Influence of Quality of Physical Environment, Food and Service on Customer Trust, Customer Satisfaction, and Loyalty and Moderating Effect of Gender: an Empirical Study on Foreigners in South Korean Restaurant

  • To explore the impact of restaurant service quality for foreigners in South Korea on customer satisfaction, customer trust, and loyalty from three dimensions: quality of physical environment, food quality, and service quality and the influence of perceived price on satisfaction and loyalty, a survey was conducted by collecting 202 valid questionnaires and Amos 23 was used to examine the relationships between variables. The results show that the quality of physical environment, food quality, and service quality have significant positive effects on customer trust, but only food quality has a significant effect on customer loyalty and all three have no significant effects on customer satisfaction. In addition, customer trust has a significant positive effect on customer satisfaction and customer loyalty, but the effect of customer satisfaction on loyalty has not been verified in this study. At the same time, perceived price has a significant positive effect on customer satisfaction, but no significant effect on customer loyalty. Then the study examined the moderating effect of gender by using the SEM multi-group analysis method, founding that there are no significant differences between male and female on the impact of the three dimensions of restaurant service quality on customer satisfaction, and no significant differences between male and female on the impact of perceived price on customer satisfaction and customer satisfaction on loyalty, meaning that gender's moderating effects are not valid. These conclusions of this study are useful for restaurant operators to improve the quality of the physical environment, food quality and service quality, effectively improve customer trust, and thus customer satisfaction and loyalty.

  • This study was conducted to investigate the effects of environment-friendly materials on garlic cultivation, and the methods for processing garlic at proper ripening stage to increase its antioxidant properties and market value. The functional properties of garlic and processed black garlic were analyzed in vitro and ex vivo. The ethanol extracts of garlic and black garlic were used in the antioxidant, linoleic acid autooxidation, lipid oxidation and RAW264.7 indicator cell using NO induced activity analyses. Also, toxicity tests by RBL-2H3 and RAW264.7 indicator cell using MTT assay were compared. Obesity inhibition test of garlic and black garlic were also studied.

  • The handling of food garbage should be effectively accomplished to strengthen national competitive power, conserve the environment and improve the public health. But the study of this subject left much to be desired. So we studied about present situation, specific character and decreasing method of food garbage and practical application of Hazard Analysis Critical Control Point(HACCP) system to handling of food garbage. Actually eight trillion won per year which corresponds to the one fifth of the debt from international monetary found(IMF) as these day's exchange rate was wasted by the form of food garbage, so the government should have willing of support the revenue source of investment to develop and accomplish the effective handling of food garbage. National public relations(P.R.) into improvement of eating and drinking culture and enlightenment of environment movement will be needed. Under the organic cooperation of industrial, academic, government circles, active studies should be accomplished. we hope this study can be used as the basal material of filed of handling of food garbage.

  • One of the way of the preserving environment is the circulation of materials. Japan's cereal food self-sufficiency rate is less than 30%. Japan imports more than 30 million tons of food every year. Japanese are afraid of international food trade giving damages to environment. Advanced farm mechanization integrated with precision farming is an answer to solve these problems. Crop scientists, soil scientists and agricultural engineers at Kyoto University cooperate together in studying precision agriculture for paddy rice since 1996. Automatic follow-up combine and autonomous vehicle have been developed. Remotely sensing by using machine vision has been studied to measure nitrogen contents. Field map i.e. soil, growth and yield, in paddy field of 0.5 ha has been made. In this report the concept and objectives of advanced farm mechanization and precision agriculture research at Kyoto University are introduced.

Job Satisfaction of Dietitians between Elementary School and High School (강원지역 초등학교와 고등학교 영양사의 직무만족도에 관한 연구)

  • Dietitians' satisfaction between elementary school and high school in KangWon Do region were surveys with questionnaires. 61 elementary school dietitians and 30 high school dietitians participated. The dietitians in elementary schools had higher scores in age, marital status, years at work, types of employment, average annual income and had lesser hours of work. In overall, elementary schools had higher percentage on self operation and on the period of their food distribution to students. High schools had higher percentage on conventional systems, freedom in the amount of food distribution, number of meals per day and the meal charge. It was clear that dietitians in high schools showed more interests in changing their careers due to the poor working environment and salary. The highest score was on the relationship with other coworkers and the lowest score was on the poor working environment and salary. In general, dietitians in both types of schools are not satisfied with their career, especially with the working environment and salary.

Probiotic Property and Anti-Obesity Effect of Lactiplantibacillus plantarum KC3

  • Lactic acid bacteria are representative probiotics that have beneficial effects on humans. Nineteen strains among the 167 single strains from kimchi was selected and their physiological features were investigated. The selection of a strain was based on strong enzyme (lipase, α-amylase, and α-glucosidase) inhibitory activities and anti-obesity effects in the adipocytes. For the final selection, the strain Lactiplantibacillus plantarum KC3 was tested for its potential as a starter. To assess its functionality, a freeze-dried culture of L. plantarum KC3 was administered to a diet-induced obese mouse model receiving a high-fat diet. The animal group administered with L. plantarum KC3 showed significant body weight loss during the 12-week feeding period compared to the high-fat control group. This study investigated the physiological characteristics of selected strain and evaluated its potential as an anti-obesity probiotic in mice.

Nitrongen and Phosphorus Removal using Elutriated Acids of Food Waste as an External Carbon Source in SBR (음식물쓰레기 세정산발효액을 외부탄소원으로 주입한 SBR 공정에서 질소 및 인 제거)

  • An improvement of nitrogen and phosphorus removal in SBR using the elutriated acids from the food waste as an external carbon source was investigated in this study. The food waste was elutriated at $35^{\circ}C$ and pH 9 to produce the external carbon source. The elutriate of food waste were continuously collected. The elutriated liquid contained VFAs of 39,180 mg/L representing soluble COD of 44,700 mg/L. The SBR showed poor denitrification and EBPR (enhanced biological phosphorus removal) without elutriated VFAs addition. An average denitrification rate was 0.4 mg NOx-N/g MLVSS/day. In turn, EBPR was also inhibited by this poor denitrification because the remaining nitrate in anaerobic phase resulting a poor denitrification. On the other hand, the denitrification in anoxic phase significantly improved with an elutriated VFAs addition. Nitrate removal was 82% while the denitrification rate was 2.9 mg NOx-N/g MLVSS/day with 18.4 mL/cycle of elutriated VFAs. With the enhanced denitrification, nitrate concentration in anaerobic phase could effectively be controlled to a very low level. The elimination of nitrate inhibition in anaerobic phase resulted enhancement of EBPR. The specific phosphate release rate was $1.9mg\;PO_4^{3-}-P/g\; MLVSS/day$ with less than 0.5 mg/L of $PO_4^{3-}-P$ concentration.
