Historical background and development of applied nutrition and community nutrition in Korea

  • This paper overviews the historical background and development of applied nutrition and community nutrition in Korea. The nutrition studies in the early years focused on animal experiments, human metabolism, and food analysis and therefore were limited to classrooms and research laboratories in universities without spreading into the lives of people. Korean specialists trained through the UN International Course of Applied Nutrition initiated the Applied Nutrition Program (ANP) in Korea in the 1960s. The ANP in Korea was effectively implemented until 1986 with support from UNICEF, FAO, and WHO as a national project to improve the nutrition and health of rural residents. With economic development and urbanization in Korea, the rural-focusing ANP was re-born to a more extended version with the name of "Community Nutrition", targeting the nutrition and health of the entire Korean population. Scholarly associations including the Korean Society of Community Nutrition established in 1995 have significantly contributed to the development of Community Nutrition in Korea and are expected to continue to work for a better connection between nutrition and health promotion.

Characterization of Interphase Microbial Community in Luzhou-Flavored Liquor Manufacturing Pits of Various Ages by Polyphasic Detection Methods

  • It is vital to understand the changing characteristics of interphase microbial communities and interspecies synergism during the fermentation of Chinese liquors. In this study, microbial communities in the three indispensable phases (pit mud, zaopei, and huangshui) of Luzhou-flavored liquor manufacturing pits and their shifts during cellars use were first investigated by polyphasic culture-independent approaches. The archaeal and eubacterial communities in the three phases were quantitatively assessed by combined phospholipid ether lipids/phospholipid fatty acid analysis and fluorescence in situ hybridization. In addition, qualitative information regarding the microbial community was analyzed by PCR-denaturing gradient gel electrophoresis. Results suggested that the interphase microbial community profiles were quite different, and the proportions of specific microbial groups evolved gradually. Anaerobic bacteria and gram-positive bacteria were dominant and their numbers were higher in pit mud ($10^9$ cells/g) than in huangshui ($10^7$ cells/ml) and zaopei ($10^7$ cells/g). Hydrogenotrophic methanogenic archaea were the dominant archaea, and their proportions were virtually unchanged in pit mud (around 65%), whereas they first increased and then decreased in zaopei (59%-82%-47%) and increased with pit age in huangshui (82%-92%). Interactions between microbial communities, especially between eubacteria and methanogens, played a key role in the formation of favorable niches for liquor fermentation. Furthermore, daqu (an essential saccharifying and fermentative agent) and metabolic regulation parameters greatly affected the microbial community.

The Effects of the Improvement of the Food Service Environment on Patients′ Satisfaction with the Hospital Food Service - Focused on Case Studies - (급식환경 개선이 환자식 만족도에 미치는 영향 -사례 연구 중심으로 -)

  • The purpose of this study was to assess how the changes in the food services environment on patients satisfaction with the hospital food service. Statistical data analyses were completed using the SPSS 11.0 program. The results can be summarized as follows: The flow line and environment of the food services in the hospital were improved through remodeling, which included the replacement of all cooking utensils, ventilation facilities and material storages, the purchase of a combi steamer, and the change of meal carts and trays. After the remodeling, the hospital food service was improved so that it provided spoons at each meal, diversified the menu utilizing the combi steamer, served event meals three times a week as well as water boiled with burned rice in the morning twice a week. In addition, various types of tableware were used in the table settings to produce attractive visual effects. Among the 10 items included on the patient satisfaction questionnaire, ″satisfaction with offered menus″ (p < 0.01) showed significantly higher scores before the remodeling. ″cooking/seasoning of food″, ″amount of meals″ and ″taste of meals″ were not statistically significant, but showed increased satisfaction after the remodeling. However ″temperature of food″, ″cleanliness of clothes and features″ and ″satisfaction with meal times″ were not statistically significant, but showed decreased satisfaction after the remodeling. An Exploratory Study on Local Community Food Issues in the Context of COVID-19: Focusing on Social Big Data through Regional Issues (코로나19 상황에서 지역사회 먹을거리 이슈에 관한 탐색적 연구: 지역별 이슈를 통한 소셜 빅데이터를 중심으로)

  • This study focused on analyzing the contents of social big data produced in the online space, dealing with issues related to food in the community in the context of COVID-19. First, this study analyzed food-related issues that spread through regional websites and online community(cafes) after social distancing was implemented due to COVID-19. Next, this study analyzed the contents of food-related issues that spread through media news, SNS, and portals. As a result, there were more food-related posts on the homepages of other regions compared to the metropolitan areas such as Seoul and Gyeonggi, but in the case of online communities, there were more food-related issues in online communities registered in Seoul and Gyeonggi regions. Food-related keywords in regional online communities mainly contained content related to the local economy. In the media articles, SNS, and search portal issues, content that can be discussed in the consumption process of local community food-related policies, information, and products mainly appeared. Based on the results of the study, it was found that there is no specialized information sharing system for each community, that online communities can contribute to providing food information applicable to reality, and that it is possible to verify the performance of regional food policies through social media.

Nutrition Knowledge, Dietary Attitudes, and Food Behaviors of College Students (남녀 대학생의 영양지식, 식태도 및 식행동)

  • This survey was carried out with Choongbuk university students to study their nutrition knowledge, dietary altitudes, and flood behaviors, in September, 1994 It showed women had more nutrition knowledge, more positive dietary altitudes, and ate various floods mort frequently. Students boarding themselves had poor food behaviors. There were positive relationships between nutrition knowledge and dietary attitudes, and dietary attitudes and flood behaviors. More reasonable nutrition education is needed far desirable food behaviors.
