Changes in Firmness, Mineral Composition and Pectic Substances of Mume(Prunus mume Sieb. et Zucc) Fruits during Maturation (매실의 성숙중 경도, 무기성분 및 펙틴질의 변화)

  • The changes in firmness, mineral compositions and pectic substances of Mume(Prunus mume Sieb. et Zucc) fruits during maturation were determined. An average weight of the fruits in 92days after full bloom was increased during maturation proceeded up to the range of 212∼232%, as compared with that of 64days. The rate of weight increase of 'Ohshuku' fruits was 257%, and it was highest among four varieties. The ratio of stone to flesh weight was decreased, but the diameter of the flesh of fruits was increased during maturation. The firmness of 'Koume' fruits was rapidly decreased from 78days after full bloom. Three varieties, except 'Koume' fruits, showed similar changes in firmness. Potassium content of fruits was 85%. Calcium and Mg were decreased as the flesh of fruits became plump. The ratios of hydrochloric acid-soluble pectin(HSP) , water-soluble pectin(WSP), sodium hexamethaphosphate-soluble pectin(PSP), and sodium hydroxode-soluble pectin(SSP) contents to the total pectin content of the fruits were 66∼76, 8.4∼19.7, 5.4∼7.5 and 7.1∼8.3%, respectively. The total pectin content was increased up to 71days after full bloom, but it was decreased thereafter. Also, a significant increase of WSP and a decrease of HSP were observed during the softening process of fruits.

Grading of Harvested 'Mihwang' Peach Maturity with Convolutional Neural Network (합성곱 신경망을 이용한 '미황' 복숭아 과실의 성숙도 분류)

  • This study was conducted using deep learning technology to classify for 'Mihwang' peach maturity with RGB images and fruit quality attributes during fruit development and maturation periods. The 730 images of peach were used in the training data set and validation data set at a ratio of 8:2. The remains of 170 images were used to test the deep learning models. In this study, among the fruit quality attributes, firmness, Hue value, and a* value were adapted to the index with maturity classification, such as immature, mature, and over mature fruit. This study used the CNN (Convolutional Neural Networks) models for image classification; VGG16 and InceptionV3 of GoogLeNet. The performance results show 87.1% and 83.6% with Hue left value in VGG16 and InceptionV3, respectively. In contrast, the performance results show 72.2% and 76.9% with firmness in VGG16 and InceptionV3, respectively. The loss rate shows 54.3% and 62.1% with firmness in VGG16 and InceptionV3, respectively. It considers increasing for adapting a field utilization with firmness index in peach.

Change in the Quality of Apples Treated with Postharvest Fungicides under Different Storage Conditions (Postharvest 약제가 처리된 사과의 저장조건에 따른 품질변화)

  • This study was conducted to determine the effects of storage conditions on apples treated with postharvest fungicides, benomyl and bitertanol. The fungicideds were applied to control Postharverst disease in apples during CA and cold storage. The stored Apple were tested monthly for weight loss, flesh firmness, titratable acidity, prix and free sugar. Relative to the control group, the pstharvest fungicide stoup had less disease. The fungicide treated apples stored in CA had a higher measured weight, better firmness and maintained acidity, prix and free sugar when compared to the control stoup monthly and after 200days. The fungicide treated apples in cold storage maintained their quality for 120days.

Extending Shelf-life of Rice Cake Using Coating Agent Containing Soy Protein Isolate (찹쌀떡의 보존기간 연장을 위한 대두단백질 코팅제의 특성)

  • The objective of this study is to determine the effect of soy protein isolate (SPI) film coating on the color, firmness, viscosity and weight loss of Rice Cake stored at 15, 20 and $25^{\circ}C$ (RH 50%) for 30 days. Raw materials mixed with SPI and cocoa powder (10:0, 7:3, 5:5, 3:7, w/w) were prepared. After adding sugar and shortening to raw materials, the mixture were refined to 25 micron of particle size. Coating of Rice Cake were carried out at $65^{\circ}C$. SPI coated Rice Cake had higher internal and external firmness comparing to the control at $25^{\circ}C$. SPI coated Rice Cake showed smooth surface morphology and had 0.71-1.01 mm of thickness. SPI coated Rice Cake showed less weight loss for 30 days compared to controls. SPI coating solution was successfully coated on Rice Cake and extended shelf-life over 15 days at room temperature.

Effects of MA Storage with Fine Holes For Red Chili Pepper and Red Bell Pepper Fruits (홍고추 및 홍피망의 미세공 MA저장 효과)

  • The effects of modified atmosphere(MA) storage for fresh red chili pepper and red bell pepper fruits were investigated with storing in polyethylene film with various fine holes. During the storage of the both pepper fruits, the weight loss, color change, mold emergence, and firmness were evaluated. The weight loss of pepper fruits packaged without holes on film was less than 3%, even though it was each 50% and 25% for non packaged red chili pepper and red bell pepper fruits. The rates of mold emergence of red chili pepper and red bell pepper fruits were reached to each 60% and 50% at the end of storage period as stored in film without holes. However, the rate of mold emergence of pepper fruits was lowered when fruits were stored in MA with low relative humidity (70∼80%). The color and firmness of pepper fruits were not much changed when fruits were stored in MA with high humidity.

Formulation Optimization of Melon Jam (멜론잼의 재료 혼합 비율의 최적화)

  • This study investigated the quality characteristics of melon jam with RSM. The melon jam was prepared with 50~65% sugar, 0.5~2.0% pectin, and 0.1~0.5% citric acid. Sugar and pectin caused the increase in sweetness, Hunter's colorimetric characteristics (a, b), and firmness. Citric acid caused decrease in pH, sweetness, firmness. Sensory evaluation results showed that preferences for the melon jam increased as sugar, pectin, and citric acid approached their optimum values and then decreased as they exceeded optimum levels. Consequently, the proposed optimum levels in the ingredient formulation for manufacture of the standard melon jam were 59.0% sugar, 1.4% pectin, and 14.9% citric acid, as based on both numerical and graphic statistical analyses. Ultimately, this study was expected to contribute to the commercialization of melon jams of high quality.

감초(Glycyrrhiza uralensis Fiscch)추출물이 밀가루 물성 및 빵의 품질에 미치는 영향

  • This study is to investigate the effect on the quality and properties of bread affected by licorice extract addition. The measurements of the farinograph, extensograph and amylograph on dough are carried out. And the evaluations of volumetric changes during fermentation, shape of bread crumb, sensory test, firmness are obtained. The obtained results are as follows. 1. Proximate compositions of licorice extract are as follows: moisture 73.7%, crude protein 4.1%, crude lipid 2.8%, crude ash 1.4%. 2. Water absoorption, arrival time dough development time mechanical tolerence index and valorimeter value are increased but stability is decreased with the addition of licorice extract. 3. The resistance to extension is increased but extensibility is decreased with the addition of licorice extract. 4. The initial pasting and highest viscosity temperatures are not affected but the highest viscosity is steepy decreased over 1.0% addition of licorice extract. 5. The volume of dough during fermentation and specific volume of bread is decreased with the addition of licorice extract. 6. The grain of bread is to be rough and irregular and the firmness is increased with the addition of licorice extract. 7. The records of sensory test are decreased with the addition of licorice extract.

  • Effect of circumference, net weight, and moisture content on the physicochemical propesties of cigarette were investigated. At the same net weight of cigarette, the pressure drop(E.P.D) of cigarette was increased as the circumference was decreased. Loseend and firmness were improved by reduction of circumference. In this condition, tar, nicotine, and carbon monoxide deliveries were decreased, and the puff count was significantly increased. When the moisture content of the cigarette were decreased, firmness and loseend were increased. Also in this condition nicotine and carbon monoxide tend to be increased. Key words : cigarette design, circumference, net weight.
