Ngoc Linh ginseng is one of the most valuable endemic medicinal herbs in Vietnam. In this study, Ngoc Linh ginseng callus was fermented by Lactobacillus plantarum ATCC 8014 (at 6, 7, and 8 log CFU/ml) to evaluate the extraction efficiency of bioactive compounds. The post-fermentation solution was spray-dried using maltodextrin with or without Stevia rebaudiana (3% and 6% v/v) as the wall material. Bioactive compounds such as polyphenols, polysaccharides, and total saponins, and L. plantarum viability during fermentation and after spray-drying, as well as under simulated gastric digestion, were evaluated in this study. The results showed that probiotic density had a significant effect on bioactive compounds, and L. plantarum at 8 log CFU/ml showed the best results with a short fermentation time compared to other tests. The total content of polyphenols, polysaccharides, and saponins reached 5.16 ± 0.18 mg GAE/g sample, 277.2 ± 6.12 mg Glu/g sample, and 4.17 ± 0.15 mg/g sample, respectively after 20 h of fermentation at the initial density of L. plantarum (8 log CFU/ml). Although there was no difference in the particle structure of the preparation, the microencapsulation efficiency of the bioactive compound in the samples containing S. rebaudiana was higher than that with only maltodextrin. The study also indicated that adding S. rebaudiana improved the viability of L. plantarum in gastric digestion. These results showed that S. rebaudiana, a component stimulating probiotic growth, combined with maltodextrin as a co-prebiotic, improved the survival rate of L. plantarum in simulated gastric digestion.
In Korea, fermented fish has been playing an important role as a preserved and flavor rich food. It is said that the digestion of fish protein is due to both action of intrinsic (autolytic enzymes) and bacterial enzymes in fish. The mass production of fermented fish has been impeded since traditional method of fermentation requires a long duration for a complete digestion. A high concentration of salt and unsanitary condition are also considered disadvantages of the old method. To improve the quality of the product and to develop mechanized process of fermentation, fermentors which have such control device as temperature, pH and agitation control system have been urgently needed. In this study, a model design of a fermentor is studied. The calculation was based on the optimum conditions for enzymatic hydrolysis of fish protein which involve temperature, pH, viscosity and other factors.
Since 2005, food waste has been separately collected and recycled to animal feed or aerobic compost in South Korea. However, the conventional recycling methods discharge process wastewater, which contain pollutant equivalent to more than 50% of food waste. Therefore, anaerobic digestion is considered as an alternative recycling method of food waste to reduce pollutant and recover renewable energy. Recent studies showed that hydrogen can be produced at acidogenic stage in two-stage anaerobic digestion. In this study, the authors investigated the effects of pretreatment time and pH low set value on continuous mesophilic hydrogen fermentation of food waste. Food waste was successfully converted to $H_2$ when heat-treated at $70^{\circ}C$ for 60 min, which was milder than previous studies using pH 12 for 1 day or $90^{\circ}C$. Organic acid production dropped operational pH below 5.0 and caused a metabolic shift from $H_2/butyrate$ fermentation to lactate fermentation. Therefore, alkaline addition for operational pH at or over 5.0 was necessary. At pH 5.3, the result showed that the maximum hydrogen productivity and yield of 1.32 $m^3/m^3$.d and 0.71 mol/mol $carbohydrate_{added}$. Hydrogen production from food waste would be an effective technology for resource recovery as well as waste treatment.
Soybean contains a high concentration of carbohydrates that consist mainly of non-starch polysaccharides (NSP) and oligosaccharides. The NSP can be divided into insoluble NSP (mainly cellulose) and soluble NSP (composed mainly of pectic polymers, which are partially soluble in water). Monogastric animals do not have the enzymes to hydrolyze these carbohydrates, and thus their digestion occurs by means of bacterial fermentation. The fermentation of soybean carbohydrates produces short chain fatty acids that can be used as an energy source by animals. The utilization efficiency of the carbohydrates is related to the chemical structure, the level of inclusion in the diet, species and age of the animal. In poultry, soluble NSP can increase digesta viscosity, reduce the digestibility of nutrients and depress growth performance. In growing pigs, these effects, in particular the effect on gut viscosity, are often not so obvious. However, in weaning piglets, it is reported that soy oligosaccharides and soluble NSP can cause detrimental effects on intestinal health. In monogastrics, consideration must be given to the anti-nutritive effect of the NSP on nutrient digestion and absorption on one hand, as well as the potential benefits or detriments of intestinal fermentation products to the host. This mirrors the needs for i) increasing efficiency of utilization of fibrous materials in monogastrics, and ii) the maintenance and improvement of animal health in antibiotic-free production systems, on the other hand. For example, ethanol/water extraction removes the low molecular weight carbohydrate fractions, such as the oligosaccharides and part of the soluble pectins, leaving behind the insoluble fraction of the NSP, which is devoid of anti-nutritive activities. The resultant product is a high quality soy protein concentrate. This paper presents the composition and chemical structures of carbohydrates present in soybeans and discusses their nutritive and anti-nutritive effects on digestion and absorption of nutrients in pigs and poultry.
Microbial digestion of feed in the rumen involves a sequential attack culminating in the formation of fermentation products and microbial cells that can be utilized by the host animal. Most feeds are protected by a cuticular layer which is in effect a microbial barrier that must be penetrated or circumvented for digestion to proceed. Microorganisms gain access to digestible inner plant tissues through damage to the cuticle, or via natural cell openings (e.g., stomata) and commence digestion from within the feed particles. Primary colonizing bacteria adhere to specific substrates, divide to form sister cells and the resultant microcolonies release soluble substrates which attract additional microorganisms to the digestion site. These newly attracted microorganisms associate with primary colonizers to form complex multi-species consortia. Within the consortia, microorganisms combine their metabolic activities to produce the diversity of enzymes required to digest complex substrates (e.g., cellulose, starch, protein) which comprise plant tissues. Feed characteristics that inhibit the microbial processes of penetration, colonization and consortia formation can have a profound effect on the rate and extent of feed digestion in the rumen. Strategies such as feed processing or plant breeding which are aimed at manipulating feed digestion must be based on an understanding of these basic microbial processes and their concerted roles in feed digestion in the rumen.
Fifteen Inner Mongolian wethers with permanent ruminal and duodenal cannulas were used to study the effects of dietary rumen-undegradable protein (RUP) to rumen-degradable protein (RDP) ratios or protein sources on fiber digestion in the gastrointestinal tract and ruminal fluid characteristics. Fiber digestion and ruminal fermentation were not affected (p>0.05) by dietary RUP to RDP ratios (from 1.54 to 0.72). Soybean meal supplementation improved ruminal digestion. Fish meal supplementation increased (p<0.05) the ruminal degradability of fiber. The different RUP to RDP ratios (from 1.54 to 0.72) did not influence (p>0.05) ruminal fluid pH, but there were differences (p<0.05) in ruminal fluid $NH_3-N$ concentration because of urea replacement. Soybean meal as a dietary protein source decreased (p<0.05) ruminal fluid pH and increased (p<0.05 or p<0.01) $NH_3-N$, acetate, propionate and butyrate concentrations in the rumen. Fish meal as a dietary protein source decreased (p<0.05 or p<0.01) ruminal $NH_3-N$ and acetate concentrations and increased (p<0.05) ruminal propionate concentration. It can be concluded that dietary protein sources have more significant effect on fiber digestion and ruminal fermentation than different dietary RUP to RDP ratios, when the dietary crude protein requirements of growing sheep are satisfied.
This study has been conducted to investigate biodegradation characteristics and optimum mixing ratio for co-digestion with thermophilic acid-fermented food waste and sewage sludge using batch anaerobic digester. As the basis operating conditions for anaerobic digestion, the reaction temperature was controlled $35{\pm}1^{\circ}C$ and stirrer was set 70rpm. Thermophilic acid-fermented food waste and sewage sludge were mixed at the ratio of 10:0, 7:3, 5:5, 3:7, 0:10 and 5;5(food waste : sewage sludge) as the influent substrates. In results of co-digestion according to mixing ratio of thermophilic fermented food wastes and sewage sludge in batch mesophilic anaerobic digestion reactor, $385mL\;CH_4/g\;VS_{added}$ of methane production rate at 1:1 mixing ratio was more than that of any other mixing ratios. Compared with $293mL\;CH_4/g\;VS_{added}$ of methane production rate at 1:1 mixing ratio of food wastes and sewage sludge, pretreatment of food wastes by thermophilic acid fermentation was more effective in co-digestion with sewage sludge.
In this study, Sunroot was used as material in the fermentation process. Sunroot are widely distributed in Korea, The main component is composed of inulin. Fermented vinegar stimulates digestion in the body, as well as to relieve stress is a cause of increasing the neurotransmitter-Serotonin of the body. Therefore, we conducted fermentation studies using sunroot. This research conducted seven days, and the pH and brix value analysis was done every 12 hours during fermentation process. The experimental results show that the fermentation product under blender treatment is better than cutting treatment and without cutting treatment. Initial brix 25% is the best treatment for fermentation because produce fermentation product with a good taste and aroma than other treatment.
본 연구는 바실러스, 효모 그리고 유산균으로 발효한 다양한 주스박들과 말 분변을 첨가한 in vitro 발효 시험을 통해 pH, 건물 분해율, 암모니아성 질소, 가스 발생량, 휘발성 지방산의 변화를 조사하였다. 주스박 첨가에 따른 발효액의 pH의 범위는 6.4~7.1로 미생물 발효에 의한 소화가 정상적으로 나타났다. 48시간 후 발효액에서 $10^9CFU/m{\ell}$ 정도 미생물이 증식함에 따라 사용한 주스박들이 장내 미생물에 의한 소화작용에 유용하게 이용될 것으로 판단되었다. 건물 분해율은 배양 12시간 이후부터 증가하여 48시간째에 사과박 39.19%, 포도박 38.22%, 당근박 37.02%, 감귤박 36.2% 그리고 혼합박 34.35%로 나타났다. 암모니아성 질소의 농도는 배양 12시간까지는 전 처리구에서 $1.5mg/100m{\ell}$의 수준이었으며 배양 24시간 이후부터 급격히 증가하였다. 가스 발생량은 혼합박이 가장 낮았으며, 배양 12시간 이후부터 급격히 증가하였다. 총 VFA는 배양 24시간부터 증가하여 48시간에 가장 높았다. 본 연구결과로부터 발효 주스박은 말 in vitro 소화과정에서 적정 pH를 유지하면서 건물 분해가 진행되었고 말의 맹장과 대장에서 섬유소 분해 미생물의 작용이 활발히 이루어질 수 있음을 제시하였다.

The diet plays a fundamental role in the formation of the gut microbiota, determining the interrelationship between the gut microbiota and the host. The current study investigated the effect of Chlorella vulgaris on the gut microbiota by using simulated in vitro digestion and colonic fermentation. Bioaccessibility was measured after in vitro digestion, and SCFAs and microbial profiling were analyzed after colonic fermentation. The bioaccessibility of C. vulgaris was 0.24 g/g. The three major SCFAs (acetate, propionate, and butyrate) increased significantly when compared to the control group. In microbial profiling analysis, microorganisms such as Faecalibacterium, Dialister, Megasphaera, Dorea, Odoribacter, Roseburia, Bifidobacterium, Butyricmonas, and Veillonella were high in C. vulgaris group. Among them, Faecalibacterium, Dialister, Megasphaera, Roseburia, and Veillonella were thought to be closely associated with the increased level of SCFAs. Finally, it can be expected to help improve gut microbiota and health through ingestion of C. vulgaris. However, further studies are vital to confirm the changes in the gut microbiota in in vivo, when C. vulgaris is ingested.
