Fatty Acid Profiles of Marine Benthic Microorganisms Isolated from the Continental Slope of Bay of Bengal: A Possible Implications in the Benthic Food Web

  • Marine bacteria, actionmycetes and fungal strains were isolated from continental slope sediment of the Bay of Bengal and studied for fatty acid profile to investigate their involvement in the benthic food-web. Fifteen different saturated and unsaturated fatty acids from bacterial isolates, 14 from actinomycetes and fungal isolates were detected. The total unsaturated fatty acids in bacterial isolates ranged from 11.85 to 37.26%, while the saturated fatty acid ranged between 42.34 and 80.74%. In actinomycetes isolates, total unsaturated fatty acids varied from 27.86 to 38.85% and saturated fatty acids ranged from 35.29 to 51.25%. In fungal isolates unsaturated fatty acids ranged between 44.62 and 65.52% while saturated FA ranged from 20.80 to 46.30%. The higher percentages of unsaturated fatty acids from the microbial isolates are helpful in anticipating the active participation in the benthic food-web of Bay of Bengal.

Fatty Acids as Tracer of Trophic Relationships in a Subtropical Mangrove Wetland

  • To elucidate the trophic relationships within a subtropical wetland, the profile of fatty acids in producers, consumers and sediments of the mangrove forest and intertidal mudflat was studied. Results indicated a close relationship in fatty acid profiles between the mangrove plants Aegiceras corniculatum and Avicennia marina and the sesarmid crab Sesarma bidens, and between the fiddler crab Uca arcuata and diatoms. The fatty acid profile of the mudskippers Boleophthalmus pectinirostris and Periophthalmus cantonensis, however, showed a mixed diet of diatoms, macroalgae, protozoa and crabs. Seasonal changes in fatty acid profiles in mangrove plants, sediments and sesarmid crabs were noted. The implication of using fatty acids as tracer of trophic relationships was discussed.

  • The effect of slaughter weight and gender on fatty acid composition of homogenised rib samples of Hungarian Simmental (HS) and Holstein-Friesian (HF) cattle breeds was investigated. In the first experiment 22 Hungarian Simmental and 18 Holstein-Friesian cattle's meat, in the second experiment 15 females and 12 males Holstein-Friesian cattle's meat was analysed on fatty acid content. Saturated and mono- or polyunsaturated fatty acid profile did not seem to vary either by breed or by slaughter weight categories. The effect of gender, however, proved to be significant in influencing the quantity of polyunsaturated fatty acids, including linoleic and linolenic acids, as well as polyunsaturated fatty/saturated fatty acids (PUFA/SAFA) ratio. The amount of polyunsaturated fatty acids (PUFA) was higher in males than in females. Negative correlation was established between the quantity of PUFA and the amount of adipose tissue in rib samples.

Discriminating Eggs from Two Local Breeds Based on Fatty Acid Profile and Flavor Characteristics Combined with Classification Algorithms

  • This study discriminated fatty acid profile and flavor characteristics of Beijing You Chicken (BYC) as a precious local breed and Dwarf Beijing You Chicken (DBYC) eggs. Fatty acid profile and flavor characteristics were analyzed to identify differences between BYC and DBYC eggs. Four classification algorithms were used to build classification models. Arachidic acid, oleic acid (OA), eicosatrienoic acid, docosapentaenoic acid (DPA), hexadecenoic acid, monounsaturated fatty acids (MUFA), polyunsaturated fatty acids (PUFA), unsaturated fatty acids (UFA) and 35 volatile compounds had significant differences in fatty acids and volatile compounds by gas chromatography-mass spectrometry (GC-MS) (p<0.05). For fatty acid data, k-nearest neighbor (KNN) and support vector machine (SVM) got 91.7% classification accuracy. SPME-GC-MS data failed in classification models. For electronic nose data, classification accuracy of KNN, linear discriminant analysis (LDA), SVM and decision tree was all 100%. The overall results indicated that BYC and DBYC eggs could be discriminated based on electronic nose with suitable classification algorithms. This research compared the differentiation of the fatty acid profile and volatile compounds of various egg yolks. The results could be applied to evaluate egg nutrition and distinguish avian eggs.

Effect of Different Vegetable Oils on Growth and Fatty Acid Profile of Rohu (Labeo rohita, Hamilton); Evaluation of a Return Fish Oil Diet to Restore Human Cardio-protective Fatty Acids

  • Two experiments in the sequential order were conducted to determine the effects of different dietary lipid sources on the growth and fatty acid composition of rohu (Labeo rohita) and to examine the viability of a return fish oil finisher diet in restoring the human cardio-protective fatty acid profile. In the first experiment, fish were fed either with coconut oil (D1), olive oil (D2), sunflower oil (D3), linseed oil (D4) and fish oil (D5) as the main lipid source in the isonitrogenous diet for 90 days. No significant differences in growth were observed. Among the experimental diets moisture content of fish varied significantly (p<0.05) between the groups. Dietary lipid sources had a profound influence on the fatty acid profile of the muscle and liver as tissue fatty acid profile reflected the dietary fatty acid composition. Increased amounts of eicosapentaenoic acid and docosahexaenoic acid were observed in tissue of fish fed D4 and arachidonic acid was observed in the tissue of fish fed D3. We have also detected the metabolites of n-3 and n-6 pathway in D4 and D3 groups respectively, which prompted us to conclude that rohu, can desaturate and elongate $C_{18}$ essential fatty acids to $C_{20}$ and $C_{22}$ HUFA. A second feeding trial was conducted using the animals from the five different treatment groups for the duration of 30 days with fish oil rich diet (D5). Feeding with fish-oil rich washout diet resulted in the near equalization of all the other treatment groups tissue fatty acid profiles to that of fish oil (D5) fed group. These results indicate that a finishing fish oil diet can be effectively used to restore the human cardioprotective fatty acid profile in rohu fed with vegetable oils as lipid source.

Alteration of the Fatty Acid Profile of Pork by Dietary Manipulation

  • This work was undertaken to study the effect of dietary fat source on the fatty acid profile of pork, and to evaluate the effect of inclusion of vitamin E in pig diets on lipid oxidation of pork tissue and processed pork products. Fifty-six pigs were allocated to four treatments, that included two dietary fat sources and two levels of vitamin E inclusion. Dietary fat was derived from either tallow, a source of saturated fatty acids (SFA), or from a mixture of soybean and linseed oils, which contain polyunsaturated fatty acids (PUFA). Vitamin E was included at either 0% or 0.011% of the diet. Growth and carcass characteristics were not affected by the dietary treatments. Dietary fat source affected the fatty acid profile of the longissimus muscle and subcutaneous fat tissue, with the PUFA diet resulting in significantly more polyunsaturated fatty acids in the tissues, and more favourable ratios of SFA to PUFA and C18:2 to C18:3 in terms of human health considerations. Lipid oxidation was significantly greater in tissues and processed products from PUFA-fed pigs. Inclusion of vitamin E in the diets, however, reduced the extent of lipid oxidation in the meat and meat products. Dietary manipulation of the fatty acid profile of pigs is an effective means of altering the fat composition of pork in order to provide human consumers with a healthy product. Vitamin E is effective as an antioxidant agent, particularly where processed products are concerned.

성인 남녀의 혈청 콜레스테롤의 수준과 지방산 섭취 양상, 혈중 지질 및 지방산 조성의 상관 관계 연구 (The Relationship between Serum Cholesterol Levels and Dietary Fatty Acid Patterns, Plasma Fatty Acids, and Other Lipid Profile among Korean Adults)

  • The purposes of this research were to assess dietary fatty acid patterns and to elucidate the relationship between the serum cholesterol levels and dietary fatty acid patterns, plasma fatty acid compositions, BMI (body mass index), and other lipid profile. The subjects were 151 adults aged 23 to 80 years, selected from the Outpatient Clinic and Cardiova-scular Department of the Seoul Municipal Hospital. Dietary data were obtained using three day food records. Sixteen dietary fatty acids were analyzed using Korean and US nutrient databases. The subjects were divided into three serum cholesterol levels: desirable (< 200 mg/dl, N = 44), borderline-risk ($\geq$ 200 - < 240 mg/dl, N = 35), and high-risk ($\geq$ 240 mg/dl, N = 72) groups. The high-risk group had higher BMI, waist, and waist to hip ratio (WHR) than the desirable and borderline-risk groups. Serum concentrations of triglyceride, LDL cholesterol and LDL/HDL cholesterol ratio were significantly higher in the high-risk group as compared to those in the other two groups. The serum cholesterol levels were highly correlated with BMI (r = 0.435), triglyceride (r = 0.425) and LDL/HDL cholesterol (r = 0.870) ratio. The highest fatty acid intake was from oleic acid (33 - 34% of total fatty acid intakes), which was followed by linoleic acid (27%), palmitic acid (19%), and stearic acid (7%). There was no correlation between the serum cholesterol levels and the dietary fatty acid intakes, polyunsaturateumonounsaturateusaturated fatty acids (P/M/S) and $\omega$6/$\omega$3 ratios. The correlation between plasma fatty acids such as myristic acid, oleic acid, linoleic acid, and docosahexaenoic acid and serum cholesterol levels was also weak. Lipid Sources with Different Fatty Acid Profile Alters the Fatty Acid Profile and Quality of Beef from Confined Nellore Steers

  • The present study was conducted to determine the effects of lipid sources with different fatty acids profile on meat fatty acids profile and beef quality traits of Nellore. A total of 45 Nellore animals with an average initial body weight of $419{\pm}11kg$ (at $15{\pm}2mo$) were distributed in a completely randomized design consisting of 5 treatments and 9 replicates. The roughage feed was maize silage (600 g/kg on a dry matter [DM] basis) plus concentrate (400 g/kg on a DM basis). The dietary treatments were as follows: without fat (WF), palm oil (PO), linseed oil (LO), protected fat (PF), and soybean grains (SG). No effects of lipid sources were observed (p>0.05) on beef color, pH, water-holding capacity, and sarcomere length. Beef from cattle fed PO had greater shear-force values (p<0.05) compared to beef from cattle fed WF. Deposition of main unsaturated fatty acids (oleic, linoleic, and linolenic) was greater in treatments WF, SG, and LO, respectively, while the values of conjugated linoleic acid (CLA) were greater when animals were fed LO. The inclusion of LO in the diet enhances the concentration of CLA in longissimus muscle and subcutaneous fat besides improving the atherogenicity index and elongase activity. As such, LO can be used with the aim to improve the quality of beef from confined Nellore cattle. Conversely, the use of PO is not recommended since it may increase the concentration of undesirable unsaturated fatty acids in muscle and subcutaneous fat, shear-force and the atherogenicity index.

Immunomodulatory Activities of Body Wall Fatty Acids Extracted from Halocynthia aurantium on RAW264.7 Cells

  • Tunicates are known to contain biologically active materials and one species in particular, the sea peach (Halocynthia aurantium), has not been thoroughly studied. In this study we aimed to analyze the fatty acids profile of the H. aurantium body wall and its immunomodulatory effects on RAW264.7 macrophage-like cells. The fatty acids were classified into three categories: saturated fatty acids (SFAs), monounsaturated fatty acids (MUFAs), and polyunsaturated fatty acids (PUFAs). Omega-3 fatty acid content, including EPA and DHA, was higher than omega-6 fatty acids. H. aurantium body wall fatty acids exhibited enhanced immune response and anti-inflammatory effects on RAW264.7 macrophage-like cells. Under normal conditions, fatty acids significantly increase nitric oxide (NO) and PGE2 production in a dose-dependent manner, thereby improving the immune response. On the other hand, in LPS-treated RAW264.7 cells, fatty acids significantly decreased nitric oxide (NO) and PGE2 production in a dose-dependent manner, thereby enhancing anti-inflammatory effects. Fatty acids transcriptionally control the expression of the immune-associated genes, iNOS, IL-1β, IL-6, COX-2, and TNF-α, via the MAPK and NF-κB signaling cascades in RAW264.7 cells. However, in LPS-stimulated RAW264.7 cells, H. aurantium body wall fatty acids significantly inhibited expression of inflammatory cytokine; similarly, production of COX-2 and PGE2 was inhibited. The results of our present study provide insight into the immune-improving and anti-inflammatory effects of H. aurantium body wall fatty acids on macrophages. In addition, our study demonstrates that H. aurantium body wall is a potential source of immune regulatory components.

산지 초지 방목우의 우유로 제조한 목장 버터의 조직 특성 및 지방산 조성 (Rheological Properties and Fatty Acid Profile of Farm Butter Made from Cows' Milk Grazing on Mountain Pasture)

  • This study was carried out to investigate the rheological properties and composition of unsaturated fatty acid of farm butter made from the milk of cows grazing at high mountain pasture in Pyronogchang SKY ranch (above sea level, 935 m). From two groups containing 7 cows each, a group was fed in-door with TMR (total mixed ration) feed and whereas the other group was grazed pastures for 12 h. The daily intake of feed on basis of dry matter (DMI), milk yields, concentration of milk constituents, and fatty acid profile of pasture milk were compared with control TMR milk. In addition, the physiochemical properties and composition of unsaturated fatty acids of the butter were also compared with those of the butter made from control TMR milk. Upon comparison, the health-promoting index (HPI) of fatty acids; the ratio of omega-6 fatty acids to omega-3 fatty acids (n-6 to n-3 UFA), the atherogenicity index (AI), and the ratio of linoleic acid to ${\alpha}$-linolenic acid (LA to ALA) was apparently improved in farm butter than those of control butter. Thus, it could make the dairy farm visitors to consume the farm butter containing the health-promoting fatty acids from the milk of cows grazing on mountain pasture.
