농가맛집의 유형별 신메뉴 개발 및 메뉴개선 사례연구 (Case Studies on New Menu-Development and Menu-Improvement Based on Types of Farm Restaurants)

  • It is very important that the development of rural tourism resources and contents for agritourism increases rural household income and vitalizes local economy. In this sense, accelerating the rural traditional food materials into resources plays significant roles for the local economy. The farm-restaurant project, as a part of a development of rural traditional foods can not only help popularize the rural food-culture, but it also promote the consumption of local products by urban customers. It is difficult to manage both types of restaurants which are the dining type and the experience-centered farm restaurants as a farmer. In particular, the managers of the farm restaurants have some operational problems in developing a new menu and an experiential-program using their local farm products. The purpose of this study was to present steps that can be used for the existing menu-improvement and developing new menu processes of the farm restaurants that have been in operation for more than two years. By the purpose of menu developing for a restaurant, this research is designed for the case study. For collecting date for the study, we gained knowledge about the issues concerning menus from in depth interviews with the managers in two subject farm restaurants. The results suggested that a new menu, such as table d'h$\^{o}$te, $\`{a}$ la carte meals, specialties, kids meal, various dressing, are based on solving issues such as a limitation of food materials and the necessity of a kids meal in dining type of farm restaurants. Also, the suggested new menu, such as seasonal specialties and side dishes, are based on solving issues such as urgent development of various experiential programs and necessity of seasonal specialties in experiential type of farm restaurants.

  • Green tourism has recently focused on an alternative plan for activating a rural economy and coping with an income inequality between urban and rural areas. The Rural Development Administration has supported farm restaurants with the aim of increasing the income of farmers, determined unique native local foods and developed programs based on the experience rural life since 2007. Farm restaurants, which are the new type of local food restaurants, have unique food and various experiencing programs that reflect their own regional characteristics. We would like to understand how the farm restaurants have been developed and what types of characteristics they have based on the currently operating farm restaurants. The management situations and value of farm restaurants as tourist attractions were investigated as well in the tools for rural development.

농가맛집 운영유형별 방문객의 기대 및 인식, 만족도 조사 (A Study on Visitor’s Expectations, Perception and Satisfaction When Dining in a Farm Styled Restaurant)

  • Farm themed restaurants is an initiation by the Rural Development Administration (RDA) in order to perpetuate and develop Korean traditional food-culture. This food business model contributes to the increase of local food consumption and non-farm income for rural communities. Thus, the purpose of this study was to investigate the visitor's expectations, perception and satisfaction on the farm restaurant management type in order to assist activation of farm restaurants. Farm restaurants were categorized into two types; restaurant style and experience style. The majority of subjects(67.9%) were experiencing their first time to dine at farm restaurants. Regardless of farm restaurant style, the subjects perceived that farm restaurants use high quality food ingredients. The degree of subjects expectations prior to visiting a farm restaurant was estimated by 7 Likert scales. The results show that most subjects had high expectations for using good-quality food ingredients such as ‘fresh food (restaurant style 6.25, dietary education style 6.02)’ and ‘environment-friendly food (restaurant style 6.07, dietary education style 5.91)’. Overall satisfaction of the farm restaurants was also high. The satisfaction of food scored 4.1 and the satisfaction of experience program scored 3.8.

  • The rural tourism in Korea is expanding in scope including experience tours and integrating with dining industry these days. The Rural Development Administration in Korea has been supporting the farm restaurant project across the nation as part of its efforts to utilize local or rural food recipes as tourism resource for seven years. Over the years, however, case studies are rarely done or reported regarding physical environment of farm restaurants. This study offers an opportunity for farm restaurateurs and policy makers related to recognize the importance of developing brand identity and inner culture contents for the rural community by presenting a case of integrated design marketing. In the study, definitions of the "authentic food" in Korea and other countries are compared before farm restaurants at home and abroad are investigated. It also addresses the foundation on the significance of physical environment and design to build a brand identity of authentic food. The case presented is naming, designing and developing logos and design applicable to various product packages for "Hwanggeum Bori Aechan", which is the barley (main crop in Gimje)- dish development project for Gimje, North Jeolla Province in 2012.

농가레스토랑 이용고객의 중요도-만족도 분석 - 완주군 비비정을 사례로 - (Analysis on Factors of Importance and Performance in terms of Securing Customers of Farm Restaurants - Based on the Case of Bibijeong in Wanju-Gun -)

  • This study aimed to analyze factors of importance and performance picked by customers of Bibijeong, a farm restaurant operated by the local community of Wanju-gun. Major points include: Recognition paths mostly were word of mouth and mass media, types of visit were in the company of friends, family members or work colleagues, and purposes of visit included consumption of meal and identifying features of the restaurant. Secondly, factor analysis showed that level of facility, atmosphere/cleanness, diversity of menu, employees, ingredients and network. The Cronbach Alpha coefficient was +0.6. Thirdly, average of importance of factors was 3.861 while average performance was 3.429. IPA analysis showed that employee(communication, customer contact) in the first quadrant proved the need for fast improvement through training. Atmosphere/cleanness (interior atmosphere, table clean, kitchen cleanliness, clean dishes, interion design) and employee(proficiency, menu recognition), foodstuff(freshness, origin, safety) in the second quadrant showed that the marketing strategy of improvement as well as maintaining current status is needed, including regular training and hygiene inspection. The third quadrant contains facilities(disability, baby, fire protection) and food menu(food packing, various menu, creative menu, menu description), network(village economic links), which showed the need for gradual improvement. The forth quadrant contains network(sights's near contains. The results so far can be summed into the statement that overcoming the basic functionality of providing meals and linking the restaurant with local attractions and local economy would be need, as well as building up the image of unique farm restaurant with local features, so that Bibijeong can serve as the centerpiece of community and foundation of exchange with other areas.

전통한식당과 서양식 레스토랑의 음식품질의 비교분석에 따른 전통한식당 활성화 방안에 관한 연구 (Study of the Traditional Korean Restaurant Activation Plan in Accordance with the Comparative Analysis of the Quality of Traditional Korean Restaurants and Western Food Restaurants)

  • 본 연구는 전통한식당과 서양식 레스토랑의 음식품질의 차이점을 비교한 다음 서양식음식에 비하여 선호도가 점점 떨어지는 우리 전통음식이 가지는 부족한 부분을 파악하여 국내 외식시장에서 우리 전통음식을 활성화를 하고자 하는데 기초자료를 제공할 뿐만 아니라, 농 어촌에서 생산되는 식재료 판매량을 증가시켜 농 어촌경재를 활성화 하고자 하였다. 본 연구를 위해서 서양식 레스토랑 음식품질 및 전통한식당 음식품질 요인분석을 실시하였고, 이에 대한 각각의 중요도와 만족도를 파악하기 위하여 IPA 분석을 실시하였다. 서양식 레스토랑과 전통한식당의 IPA 분석결과, 지역특산물 식자재 사용 정도, 건강식 음식, 세트음식의 가짓수 등은 공통적으로 1사분면에 포함되어지기 때문에 향후 한정식당을 운영하는 메뉴 기획자는 지역에서 명성이 나 있는 조리장이 지역특산물을 이용한 전통음식과 조미료를 사용하지 않는 맛이 우수한 건강식 음식이 개발되어야할 것이며, 또한, 인구통계적 특성을 고려하여 40대의 300~400만원 수입의 동료 또는 친구들과 함께 할 수 있는 기존에 제공되는 음식보다 푸짐하게 제공되어야 할 것이다.

스마트팜의 발전과정과 유형별 사례 조사 - 한국과 일본의 사례를 중심으로 - (A Study on the Growth Process and Cases Type of Smart Farm - Focused on the Case of Korea and Japan -)

  • The city is developing into a smart city. Smart villages and smart farms are developing in rural areas. Architectural technology needs synergy with smart cities, smart villages, and smart factories (intelligent factories) to help architectural experts understand smart farms and build facilities and equipment. Smart farms require design and construction technology with architectural structure and function. The purpose of this study was to investigate the current status and cases of smart farms in Korea and to investigate cases abroad. The conclusion is as follows. ① Smart farms are developing rapidly. The Korean government is expanding smart farms by utilizing ICT technology and infrastructure. ② 'Smart Farm Innovation Valley', which has been promoted since 2018, is a cutting-edge convergence cluster industrial complex that integrates production, education, and research functions such as start-ups and technological innovation. ③ In domestic cases, smart farms are operated in subway stations, buildings, supermarkets, and restaurants. ④ In the Japanese case, a dome-type smart farm was being operated. It utilized factory wastewater, waste heat, renewable energy, and used new materials. Otemachi Ranch raised livestock and provided a lounge on the 13th floor of the building. ⑤ In the cases of Korea and Japan, the smart farm technology is very similar. As stated earlier, since the food culture and agricultural technology of both countries are similar, we hope to promote the development of smart farms that can reduce concerns about future food by communicating and sharing mutual technologies.

농촌관광산업의 경제적 파급효과 (The Effects of Rural Tourism on National Economy)

  • The increase in demand for leisure time by the public and the vitalization of agricultural tourism resulting from the expansion of the five-day work week are expected to greatly contribute to the rural economy, but actual studies analyzing the ripple effect of the agricultural tourism industry are lacking. In order to analyze the economic ripple effect, tourism or agricultural tourism must become an independent sector in the inter-industry relations table's sector classification, but because it is not, the study uses a method of analysis which involves creating a satellite account. However, because agricultural tourism has a clear main agent in farms unlike general tourism which does not, there is one method in which provisions are made by farms or farm villages and another method in which outside products are used. The purpose of the present is to measure the economic ripple effect of agricultural tourism with a focus on 162 subclasses by applying positive data from the education sector input into agricultural tourism. Satellite accounts which considered intermediate input were created and applied to positive data, the analysis of which revealed agricultural tourism to account for 462 billion won, which is 0.01% of the total production amount of 3,503,480 billion won, while the production inducement coefficient was 3.2895 units when the final demand of agricultural tourism occurs. When the production inducement coefficient is at 3.2895 units, highest sector was agricultural tourism at 0.9968 units followed by restaurants and bars at 0.3325 units, roadt transportation services at 0.3183 units, lodging services at 0.1520 units, and petroleum products at 0.1290 units.

The Impact of COVID 19 on the Meat Supply Chain in the USA: A Review

  • The COVID 19 pandemic resulted in a considerable influence on the world economy. Being a big sector of the economy, the food supply chain struggled. The meat supply chain was most notably affected as every part of the supply chain from farm to shelf was closely inter-related. With the closure of businesses and restaurants the demand for at home food from grocery stores increased. Meat production facilities were impacted when the virus spread to the workers causing facilities to close or line speeds to slow. The combination of these two issues, in turn, led to there being less meat on the shelves. With less meat animals being harvested, there was less demand for livestock leading to farmers having an excess in slaughter ready animals. The decreased demand for livestock led to economic issues as money was lost in multiple sections of the supply chain. Aside from the economy and supply chain issues, other issues include concerns over the safety of meat products due to decreased safety protocols to increase line speed. Additionally, concerns of animal welfare with the excess of animals being culled were raised due to decreased capacity in processing facilities. While this review paper mainly focuses on characterizing the impact of COVID 19 on the meat supply chain in the USA, the compiled information should be able to provide practical insights to the meat/food industry across the globe to develop potential mitigating strategies against the COVID 19 and/or any similar pandemic incidences in the future.
