동북아 아시아인의 짠맛에 대한 인지도 및 기호도 비교 연구 (A Cross-Cultural Study of the Awareness and the Preference on Salinity among the Northeast Asians)

  • The purpose of this study was to compare the ability of Northeast Asians to discriminate the salinity in salt solution and foods, and to compare their preference of salinity. Panels of Korean, Japanese and Chinese evaluated three kinds of samples that contained different level of salt such as salt solutions, julienned radish salad, Bulgogi. The salt levels had been manipulated to produce five samples of each one. The salt solutions were prepared by adding 0.3%, 0.7%, 1.1%, 1.5%, 1.9% salt into water. Different levels of salt in Julienned radish salad and Bulgogi were prepared by adding 0.5%, 1.5%, 2.5%, 3.5%, 4.5% salt to the recipe. The results of this study showed that the three ethnic groups had significant differences in their ability to distinguish the intensity of salinity in solutions containing a high contents of salt(1.5~1.9%). According to the regression analysis, Koreans(a=1.050) turned out to be the most able to detect the intensity of salinity, compared to the Japanese (a=0.988) and Chinese (a=0.807). All ethnic groups preferred a salt concentration of 0.3%, and the preference for this concentration was lower in Japanese than in Koreans and Chinese. There were significant differences in the perception of salinity in the julienned radish salad containing more than 3.5% salt between Koreans and Chinese. Koreans (a=1.168) appeared to be the most able to detect the intensity of salinity, compared to the Japanese (a=0.908) and Chinese (a=0.793). Both Koreans and Japanese had the strongest preference for the julienned radish salad containing a 1.5% salt concentration, while the Chinese preferred a salt concentraion of 2.5%. The ability of ethnic groups to detect the salinity in Bulgogi were significantly different at high salt -concentrations (more than 3.5%), and the awareness of salinity was as fallows : Koreans(a=0.161) > Japanese (a=0.896) > Chinese (a= 0.845). Koreans and Japanese had a higher preference or the Bulgogi containing a salt concentration of 1.5%, and the Chinese had higher preference at a salt concentration of 2.5%.

  • How did the Korean religious culture which was consisted of three different religions- Shamanism, Buddhism, Confucianism- be combined and transformed? The author focused the mixture and transformation of the procedure of sacrificial rite and the arrangement of sacrificial food in each religion. In this thesis, the author studied first, the conception in sacrificial rite, second, the procedure of sacrificial rite, third, the items of sacrificial rite food according to each period. In consequence of the research each religion had lost its uniqueness and became mixed to each other and settled down in Korean culture.

4차 산업혁명 시대 맞춤형 식이 (Personalized Diet in the Era of the 4th Industrial Revolution)

  • This paper elucidates the novel direction of food research in the era of the 4th Industrial Revolution characterized by personalized approaches. Since conventional approaches for identifying novel food materials for health benefits are expensive and time-consuming, there is a need to shift towards AI-based approaches which offer more efficient and cost-effective methods, thus accelerating progress in the field of food science. However, relevant research papers in this field present several challenges such as regional and ethnic differences and lack of standardized data. To tackle this problem, our study proposes to address the issues by acquiring and normalizing food and biological big data. In addition, the paper demonstrates the association between heath status and biological big data such as metabolome, epigenome, and microbiome for personalized healthcare. Through the integration of food-health-bio data with AI technologies, we propose solutions for personalized healthcare that are both effective and validated.

Utilization of snails as food and therapeutic agents by Baiga tribals of Baihar tehsil of Balaghat District, Madhya Pradesh, India

  • We explored the indigenous local knowledge associated with the use of snails by Baiga people in Baihar tehsil of Balaghat district in central India through interview with a semi-structured questionnaire. Results revealed that Baiga people widely accept snails of 3-5 morpho-groups belonging to Ampullariidae, and Viviparidae family as food. Besides, use of snail as therapeutic agents for ailments like body ache, joint pain, digestion, weakness of bones etc. were found common. Hand-picking of snails from the wild environments as well as agriculture field was the primary way of harvesting edible snails. We advocate the development of a farming system for the continuous supply of snails as a food resource, advancement of scientific investigation of functional properties of them, economic progress of the region and therefore the overall sustainability.

  • The use of medicinal food, food supplements and nutraceuticals is steadily increasing worldwide. These products are derived from a variety of sources of ethnic traditions and new research findings. They are being utilised in a diverse range of preventive and therapeutic situations. Because of this increased interest there is greater use of multiple natural products simultaneously. The use of combinations needs to be treated with circumspection. Mixing may have no unexpected consequences or it may have rather unanticipated beneficial outcomes. Just as likely are deleterious effects from combining the intake of natural products. Recent research has been quite useful in the characterisation of the consequences of some of these combinations and examples will be presented.

Eating Ethnic: "Culinary Tourism" and "Food Pornography" in Kitchen Chinese

  • According to Wenying Xu, Asian American literature abounds in culinary metaphors and references (8); subsequently, a growing number of critics have begun to recognize that food "feeds into the literary rendering of Asian American subjectivity [and] provides a language through which to imagine Asian alterity in the American imagination" (Mannur 13). Ann Mah's Kitchen Chinese: A Novel about Food, Family, and Finding Yourself (2010) is yet another text within which to investigate how food "operates as one of the key cultural signs that structure people's identities" (Xu 2). Even as Kitchen Chinese insists on underscoring that Chinese food, as much as the voyage to her "motherland" China, is critical to protagonist Isabelle's quest to gain a better understanding of herself, we are able to observe how Isabelle exploits Chinese culture and its foodways as "food pornography" in order to align herself with mainstream America. Needless to say, the novels' relegation of Chinese food as "food porn" is problematic in that it encourages readers to participate in the exoticization of Asia and its culture, and the reduction of its people as the other. Ultimately, this essay aims to consider how the consumption and rejection of food becomes a critical means by which the Asian American subject fashions her identity.

재미 한인의 문화 적응도에 미치는 인구통계학적 요인과 식생활 습관과의 관련성 (Relationship of Acculturation to Demographics and Dietary Habits Among Korean Americans)

  • This study investigated how acculturation varies with demographic variables and is related to dietary habits among Korean Americans. The respondents were 162 Korea Americans aged at least 18 years old residing in the Greater New York metropolitan area. The level of acculturation was measured using a modified Suinn-Lew Asian Self-Identity Acculturation(SL-ASIA) scale. Acculturation was operationally defined to be composed of 6 factors, which are language, media use, friendship, food, pride, and ethnic self-identity. Each factor in the level of acculturation was identified by how it is related to demographics and dietary habits in the method of correlation coefficients and stepwise multiple regressions analyses. The reliability of the modified SL-ASIA scale was high as measured by Cronbach alpha of .92. The level of acculturation was related to place of birth, age, length of residence in the U.S., and education. The younger, the longer they had lived in the U.S., and the more they were educated, the more acculturated. Acculturation could be predictable for 52% of its variance with all demographic variables. Among the 6 factors in the level of acculturation, five of them, language, media use friendship, food, and ethnic self-identity were correlated with dietary habit changes after immigration and type of meals. All 6 acculturation factors could predict 21% of change in dietary habits. the information from this study can be used to describe usual describe usual dietary habits according to various aspects of acculturation to better understand the dynamics among acculturation, demographics, and dietary habits.

『조선녀성』을 통해 본 북한의 식생활 연구 - 1999~2017년 식생활 관련 기사를 중심으로 - (A Study of North Korea's Dietary Life through Joseon Nyeoseong - Focus on dietary life articles from 1999 to 2017 -)

  • This study was conducted to understand the dietary life of North Koreans by analyzing dietary life-related articles published in Joseon Nyeoseong, which is the only women's magazine in North Korea. This study employed content analysis of 769 articles from 1999 to 2017. The major findings of this study were as follows. Out of the 769 articles, 131 (17.0%) were about dietary culture, 541 (70.4%) were about the food and nutrition, and 97 (12.6%) were about food production. The articles emphasized ethnic food and North Koreans ingredients, spices, cooking methods, containers, and etiquette. A variety of foods and ingredients were used to maintain health, as well as to treat common illnesses and health problems. There were 173 recipes mentioned in the magazine, but no foreign food recipes. There were many dishes that could be preserved for a long time such as Kimchi and pickles. For food security, many vegetables and plant-eating animals such as rabbits were cultivated. Overall, the results indicate that North Korea has been maintaining its unique dietary life without being influenced by foreign countries.

Australian Lamb Meat - The Response to Societal and Ethnic Influences

  • Lamb has long been considered a traditional meal within Australia; however as consumer preferences have changed since the 1950's, consumption of lamb has decreased from the 1980's. This is the result of changing societal roles, particularly for females, decreasing household sizes and increasing awareness of the impact of food choices on human health. Since the 1980's improvement of farm practices and increases in genetic gains has addressed part of this decline by increasing the amount of lean meat and decreasing fat in lamb retail cuts. Yet, this has created a challenge for the industry to utilise the larger carcases now being produced. Thus, a whole value chain approach to increasing consumption has been undertaken through several research programs to create cuts which suit the modern consumer, examine nutritional and eating quality and increase adoption of value added cuts. Therefore, this paper outlines this history of changing consumer patterns and the consequent research to address these changes.

연변 조선족 어머니의 문화접변 및 양육행동과 청소년의 적응간의 관계 (The Relations of Acculturation and Parenting Behaviors of Korean-Chinese Mothers in Yanbian Area to Adjustment of their Children)

  • This study examined the relations of acculturation and parenting behaviors of 279 Korean-Chinese mothers living in Yanbian Area in China to Adjustment of their eighth- and ninth-grade children. The mothers completed a questionnaire consisted of items regarding daily eating habits(food life) and language use, the acculturation scale, and the parenting scale, and their children completed the depression, self-esteem, and social competence scale. While most of mothers preferred Korean food to Chinese food, they preferred Chinese to Korean in daily language use. The mothers'ethnic identity was negatively related to depression of their children, whereas their out-group orientation was positively related to social competence of their children. In general, the relation between mothers'acculturation and adjustment of their children was not mediated by their parenting behaviors. But maternal warmth and acceptance partly mediated the relation between their out-group orientation and social competence of their children. These results imply that their acculturation tends to have direct effects on adjustment of their children.
