Using mixed nonionic surfactants Span/Tween, we investigated the effects of HLB value on the O/W emulsion stability and rheological behaviors. In this study, MS-01 (Span 60 & Tween 60) and MS-02 (Span 80 & Tween 80) was used as mixed nonionic surfactants. We considered required HLB value 10.85 and selected corresponding HLB value range 8-13. The droplet size distributions, droplet morphology, rheological properties, zeta-potential and creaming index of the emulsion samples were obtained to understand the mechanism and interaction of droplets in O/W emulsion. The results indicated that optimal HLB number for O/W emulsions was 10.8 and 10.7, while using MS-01 surfactant and MS-02 surfactant respectively. MS-01 (HLB = 10.8) sample and MS-02 (HLB = 10.7) sample showed smallest droplet size and highest zeta-potential value. Rheological properties are measured to understand rheological behaviors of emulsion samples. All emulsion samples showed no phase separation until 30 days storage time at $25^{\circ}C$.

We established the emulsion method using membrane filter with precise control of LC droplet distribution in PDLC. PDLC cells with various LC droplet size distributions such as single droplet sizes of $1.0{\mu}m$, $1.9{\mu}m$ and $3.5{\mu}m$, the mixture of two different LC droplet sizes and the mixture of three different LC droplet sizes were fabricated and the electro-optical properties of the emulsion type PDLC cells with various droplet size distribution were investigated. In the appropriate droplet size range, the PDLCs with the single droplet sizes distributions have good electro optical properties than those with the mixture of three different LC droplet sizes. In addition, the PDLC cells with the mixture of two different LC droplet sizes have the better electro optical properties than those with single droplet sizes distribution. The PDLC cell with dual droplet size distribution of $1.0+1.9{\mu}m$ shown the best electro optical properties than the PDLC cells with other size distributions. This method enabled us to find the proper LC droplet size distribution for achieving both high transmittance and contrast ratio.
An oil-in-water (O/W) emulsion [20 wt% com oil, 0.5-6.0 wt% fish gelatin (FG), pH 3.0] was produced by high pressure homogenization, and the influence of pH, protein concentration, and homogenization condition on the formation of FG-stabilized emulsions was assessed by measuring particle size distribution, electrical charge, creaming stability, microstructure, and free FG concentration in the emulsions. Optical microscopy indicated that there were some large droplets ($d>10\;{\mu}m$) in all FG-emulsions, nevertheless, the amount of large droplets tended to decrease with increasing FG concentration. More than 90% of FG was present free in the continuous phase of the emulsions. To facilitate droplet disruption and prevent droplet coalescence within the homogenizer, homogenization time was adjusted in O/W emulsions stabilized by 2.0 or 4.0 wt% FG. However, the increase in the number of pass rather promoted droplet coalescence. This study has shown that the FG may have some limited use as a protein emulsifier in O/W emulsions.
A highly dispersed W/O emulsion of silicone oil (cyclomethicone)/water system was prepared with a nonionic surfactant. The surface and interfacial tension between the oil and water were characterized in terms of the droplet size distribution and viscosity change of the emulsion. When the dispersed phase concentration was relatively high, the viscosity of the emulsion was rapidly increased and the droplet size of the emulsion was decreased. The rheological behavior of the emulsion system showed non-Newtonian and shear thinning phenomena depending upon the content of the dispersed phase. The droplet size of the emulsion was decreased with increasing surfactant content and water concentration. The relative viscosity of the emulsion was better predicted with the Choi-Schowalter model than with the Taylor model. The value of the complex modulus increased with increasing surfactant concentration. The linear viscoelastic region was expanded with a dispersed phase concentration. According to the change in the viscosity, the behavior was classified into three distinct regions: [I] linear viscoelastic, [II] partially viscoelastic, and [III] viscous. The creep/recovery behaviors in each region were characterized.

Formation of oil-in-water nano-emulsions has been studied in oil/hydrogenated lecithin/water systems by two shear different instrument. The influence of surfactant concentration on nano-emulsion droplet size and stability has been studied. Droplet size was determined by dynamic light scattering, and nano-emulsion stability was evaluated by measuring the variation of droplet size as a function of time. The results obtained showed that the breakdown process of nano-emulsions studied could be attributed to Ostwald ripening. An increase of nano-emulsion instability with increase in surfactant concentration was found in the droplet size in the range of 100~200nm, however, an decrease of instability was found in the droplet size in the range of 300~400nm.
The static and dynamic rheological behavior of concentrated sodium dodecylsulfate (SDS) stabilized, deformability controllable polydimethylsiloxane (PDMS) emulsions is reported and comparisons made with silica (hard sphere) suspensions. Steady-mode measurements indicate 'hard' (viscoelastic) droplets behave as hard spheres, while 'soft' (viscous) droplets induce structural flexibility of the emulsion against shear. Dynamic-mode measurements reveal that viscoelasticity of droplets provides the great magnitude of elasticity for the 'hard' emulsion, while formation of planar films between droplets is the origin of the elasticity of 'soft' emulsions. Combination of steady and dynamic rheological behavior has enabled depiction of droplet structure evolution in relation to the shear stress applied, especially by taking advantage of the normal force that reflects the transient deformation of droplets.

The characteristics of auto-ignition and combustion process of a single droplet of emulsified fuel suspended in a high-temperature air chamber have been investigated experimentally with various droplet sizes, surrounding temperatures, and water contents. The used fuels was n-Decane and it was emulsified with varied water contents whose maximum is 30%. The high-speed camera has been adopted to measure the ignition delay and flame life time. It was also applied to observe micro-explosion behaviors. The increase of droplet size and chamber temperature cause the decrease of the ignition delay time and flame life-time. As the water contents increases, the ignition delay time increases and the micro-explosion behaviors are strengthened. The starting timings of micro-explosion and fuel puffing are compared for different droplet sizes and the amount of water contents.
Lipid emulsions with saturated triacylglycerols (TAGs) with 4 to 10 carbons in each acyl chain were prepared to study how the oil component alters the stability of the lipid emul-sions when phosphatidylcholines were used as emulsifiers. The average droplet size of the emul-sions became smaller as the chain length of the TAG increased. For a given oil emulsion with smaller droplets was formed with an emulsifier having higher HLB value. The influence of HLB values on the droplet size was biggest for the tributyrin (C4) emulsion. For the tricaprylin(C8) emulsions, droplet size was identical at given emulsifier concentrations regardless of HLB values. The HLB value and the concentration of the emulsifiers also affect the droplet size of the emul-sions. The emulsions with smaller average droplet size were more stable than with bigger size for 20 days. The oil and water (o/w) interfacial tension in inversely proportional to the initial droplet size of the emulsion.
Microring/nanoring structure has high applicability for nano-antenna and biosensor thanks to its superior optical characteristics. Although coiling nanowires manufactured using immiscible emulsion droplets have an advantage in mass production, this process also forms nanowire bundles. In this study, we solved the nanowire bundle problem by size-selective sorting of the emulsion droplets in a pinched flow fractionation microchannel. Utilizing silver nanowires and immiscible emsulsion droplets, we investigated the correlation between the size of ring droplets and bundle droplet. We visualized the sorting process for glass particles and microring-containing emulsion droplets. Droplets were sorted based on their size, and the ratio of bundle droplets in solution decreased. This droplet-sorting strategy has potential to help the printing and coating process for manufacturing of ring structure patterns and developing of functional materials.

Caprylic/Capric triglyceride-in-water emulsions stabilized by Nikkol HCO-60 and HCO-10 were prepared using emulsion inversion point method at different HLB values. Emulsions with various droplet sizes were formed, and emulsion inversion point was detected by electrical conductivity. The change in emulsion droplet sizes and long term stability were monitored using laser scattering method and visual method. The droplet sizes and stability of emulsions were affected by HLB of surfactant. At emulsion inversion point, the water volume fraction increased as the HLB of surfactants decreased. According to our analysis, this resulted from a tendency of forming the W/O (water-in-oil) emulsion as the HLB of surfactants was decreased. The emulsion inversion point was clearly detected by the microscope and the electric conductivity meter. Nanometer-sized emulsion was obtained at the optimum HLB by using emulsion inversion point method. The main pattern of instability of emulsions in HLB 12 and 13 systems was Ostwald ripening. However, The patterns of instability of emulsions below 11 of HLB systems were Ostwald ripening and coalescence. All emulsions produced with surfactants in the range of HLB 8-13, creaming caused by density difference between water phase and oil phase.
