우육 및 돈육 부위에 따라 고기 유화물의 유화맵에 미치는 영향 (Effects of Emulsion Mapping in Different Parts of Pork and Beef)

  • This study was conducted in order to evaluate emulsion mapping between emulsion stability and moisture content, cooking yield, hardness, protein solubility, apparent viscosity, and overall acceptability of pork or beef emulsion batters. The pork and beef emulsion batters were added to different parts of the meat. The formulations indicating low emulsion stability and high cooking yield were T1 (pork shoulder), T2 (pork ham), and T5 (beef tenderloin) treatments. Low stability, low hardness and protein solubility were also T1 (pork shoulder), T2 (pork ham), and T5 (beef tenderloin) treatments. The Pearson's correlation coefficients show that emulsion stability is negatively correlated with cooking yield (p<0.05), with a value of -0.90, and positively correlated with hardness (p<0.05), and protein solubility (p<0.01) with values of 0.65 and 0.59, respectively. This approach has been found to be particularly useful for highlighting differences among the emulsified properties in emulsion meat products. Therefore, the results obtained with emulsion mapping are useful in the making of new emulsified meat products of the desired quality.

Turbiscan®을 이용한 Glyceryl Monooleate(GMO) 함유 W/O 유제의 안정성 평가 (Evaluation of Glyceryl Monooleate(GMO) W/O Emulsion Stability by using Turbiscan®LAB)

  • The main object of this study was to prepare of w/o emulsion including glyceryl monooleate(GMO) and to evaluate its stability by using the recently developed $Turbiscan^{(R)}LAB$. GMO is the polar oily surfactant with the low HLB value, and it forms the gel phase of cubic structures after dissolves in aqueous media. Phosphate buffer solution (PBS) of pH 7.4 was prepared as the water phase and Marcol 52(mineral oil) was used as the oil phase in this study. GMO was used as the surfactant of W/O emulsion. W/O emulsion using GMO alone as a surfactant was very unstable. But the emulsion using both GMO and poloxamer 407 was more stable. The stability of W/O emulsions was evaluated after centrifuging the emulsions. But it was difficult with naked eye because an opaque and concentrated system like W/O emulsion was very turbid. So $Turbiscan^{(R)}LAB$ was used to detect the destabilization phenomena in non-diluted emulsion. As a result, the W/O emulsion using the proper amounts of GMO and poloxamer 407 was more stable among them using GMO of various amounts. But it seems that the other element for the stability of W/O emulsion including GMO was required. Furthermore, the $Turbiscan^{(R)}LAB$ was a very efficient analyzer for evaluating the physical stability of emulsion.

  • 본 논문에서는 poly(vinyl acetate-co-ethylene)을 산화, 환원 방법으로 중합할 때 poly(vinyl alcohol) (PVOH)이 최종 에멀젼의 물성에 미치는 영향과 pH의 변화가 최종 에멀젼의 물성에 미치는 영향에 대하여 알아보았다. 실험 결과 PVOH의 분자량이 에멀젼 성질에 크게 영향을 미쳤다. 분자량이 낮은 PVOH 이용 시는 점도가 낮은 제품을 얻었고, 분자량이 큰 PVOH를 이용 시는 높은 점도의 제품을 얻었다. 그러나 pH를 변화 시키면서 중합한 제품의 최종 성질은 PVOH에 대하여 다른 결과를 얻었다. 일반적으로 중합도가 높고 부분 검화물의 PVOH를 이용한 poly(vinyl acetate) 에멀젼 최종점도는 상대적으로 매우 높은 점도를 유지하는 데 비하여, VAE 에멀젼에서는 높은 pH에서 합성 시에는 낮은 에멀젼의 점도를 얻었다. 이것은 에멀젼 합성 중에 PVOH의 분자량의 저하에 의한 영향으로 판단된다. pH가 증가 할수록 그라프트율이 감소하고, 분자량이 감소하면서 점도가 낮아진다는 결과를 얻었다.

복합비타민 유제의 제조와 평가 (Preparation and Evaluation of Mutivitamin Emulsion)

  • Water-lipid soluble multivitamin formulations were widely used to reduce the disease and stress of animals as husbandry has made a remarkable progress in recent. But the efficiency of these formulations is far from satisfactory. So, this study was attempted to develop the physically and chemically stable and useful multivitamin o/w emulsion. Multivitamin o/w emulsion composed of water, soybean oil (10%, v/v), vitamin A, D, E, K, $B_2,\;B_6,\;B_{12}$ and panthenol. To make a stable o/w emulsion, the egg lecithin (2%, w/v) and glycerin (2.5%, w/v) were used for emulsifier and thickening agent, respectively. The oil in water emulsion system was manufactured by microfluidizer and the physicochemical stability of this emulsion was evaluated. The average particle size and interfacial tension were measured. From the result of interfacial tension tested, critical micelle concentration of the egg lecithin was 0.5% (w/v) and optimal concentration for the preparation of emulsion was 2% (w/v). The mean particle size was about $0.6\;{\mu}m$ which was suitable for injections. Short-term accelerated stability as physical stability study was tested by centrifuging and freeze-thawing the emulsion samples. The additions of vitamins resulted in the increment of particle size and reduction of physical stability of emulsion. But it is not an enormous problem for the stability of emulsion. Also, we have performed the long-period preservation stability test for the vitamins. All vitamins were analysed by HPLC. The result of storage under $4^{\circ}C$ and dark conditions demonstrated that all vitamins were maintained stable at least 16 weeks, except for vitamin $B_{12}$.

들기름 에멀젼의 산화안정성 및 산화방지제에 대한 클로로필 첨가 및 빛의 영향 (Effects of Chlorophyll Addition and Light on the Oxidative Stability and Antioxidant Changes of Perilla Oil Emulsion)

  • Lipid oxidation and antioxidants changes in perilla oil emulsion added with chlorophyll were studied during storage in the dark or under 1,700 lux light at $25^{\circ}C$ for 48 h. The emulsion was consisted of perilla oil (33.12 g), 5% acetic acid (66.23 g), egg yolk powder (0.5 g), and xanthan gum (0.15 g), and Chlorophyll b was added to the emulsion at 0, 2.5 and 4 mg/kg. The lipid oxidation was evaluated by headspace oxygen consumption and hydroperoxide formation, and tocopherols and polyphenols were monitored by HPLC and spectrophotometry at 725 nm, respectively. The lipid oxidation of the perilla oil emulsion in the dark was not significant regardless of the addition of chlorophyll. Light increased and accelerated the lipid oxidation of the emulsion, and increased addition level of chlorophyll under light increased it further. However, there was no significant change in fatty acid composition in any case. Contents of tocopherols and polyphenols in the emulsion were not significantly changed during storage in the dark regardless of chlorophyll addition, indicating their little degradation. Tocopherols and polyphenols in the emulsion were significantly degraded during storage of the emulsion under light, and the degradation rate of polyphenols was increased with addition level of chlorophyll. The lipid oxidation of the perilla oil emulsion was inversely related with the residual amounts of tocopherols and polyphenols, with more dependent on the retention of polyphenols than that of tocopherols.

비이온 계면활성제, 유화안정제 종류에 따른 O/W 유화 제형의 유변학적 특성 변화 (Changes in Rheological Properties of O/W Emulsions according to the Type of Nonionic Surfactant and Emulsion Stabilizer)

  • 비이온 계면활성제와 유화안정제가 O/W 유화 제형에 미치는 영향을 살펴보기 위하여 비이온 계면활성제와 유화안정제 종류를 달리한 여러 제형을 만들어 이들의 유변학적 특성을 비교하였다. 친수성 비이온 계면활성제는 polysorbate 60 (Tween 60), PEG-60 hydrogenated castor oil (HCO 60), octyldodeceth-16 (OD 16), ceteareth-6 olivate (Olivem 800) 등을 사용하였고, 유화안정제로는 cetyl alcohol, glyceryl monostearate, stearic acid 등을 각각 사용하였다. Octyldodeceth-16을 사용한 유화 제형에서만 상분리가 일어나고 나머지 제형은 모두 안정한 상을 유지하였다. 계면활성제 ceteareth-6 olivate와 유화안정제 cetyl alcohol을 혼합 사용한 제형의 점도, 경도, 크림성 등이 가장 높게 나타나고 유화된 입자 사이즈도 가장 큰 값으로 측정되었다. 이와 같은 결과는 유화 제형에 액정이 많이 생성되면서 네트워크 구조의 텍스처가 형성되었기 때문이다. 이 제형에서는 탄성적 특성이 크게 나타나고 힘이 가해지는 이력에 따라 점도 값이 달라지는 씩소트로픽 현상이 나타났다.

유화중합을 이용한 PMMA/Clay 나노컴포지트의 제조 (Synthesis of PMMA/Clay Nanocomposite via Emulsion Polymerization)

  • Poly(methyl methacrylate)/clay nanocomposite particles with particle size of 275${\sim}$292 nm range were successfully prepared using emulsion polymerization. The content of montmorillonite based on the methyl methacrylate monomer was chosen as 30 wt.%. 2,2-azobis(isobuthylamidine hydrochloride) and n-dodecyltrimethylammonium chloride were used as an initiator and a surfactant in cationic emulsion system. Potassium persulfate and sodium lauryl sulfate were used as an initiator and a surfactant in anionic emulsion system. The evidence of intercalated /exfoliated structure of montmorillonite in the nanocomposite prepared in our experiment was confirmed by wide angle x-ray diffraction patterns of $d_{001}$ plane. Thermal behavior of nanocomposite was traced using DSC and TGA. It was found that the nanocomposite particle prepared by cationic emulsion system showed intercalated structured. We also found that the nanocomposite particle obtained from anionic emulsion system resulted in the fully exfoliated structure.

바이칼린을 함유한 황금 엑스 유제의 제조 및 항균효과 (Preparation and Antibacterial Effects of Scutellariae Radix Extract Emulsion Containing Baicalin)

  • The O/W and W/O emulsions containing Scutellariae Radix extract(SRE) which is very slightly soluble in oil phases and sparingly soluble in water phases, were prepared by homogenizing water and oil phases with emulsifier. The diameters of emulsion were ranged from 100 to $300\;{\mu}m$. The viscosity of W/O emulsion was higher than that of O/W emulsion. W/O emulsion was more stable than O/W emulsion which was gradually degraded when tested by centrifuge method and temperature tolerance method at $50^{\circ}C$. The antibacterial activity of two emulsions was not significantly different from that of aqueous solution of SRE, and showed similar MIC and bacterial growth inhibition rate.

Silicone oil에 기초한 microemulsion을 이용한 DNAPL의 제거

  • In this study, the solubilization of dense nonaqueous phase liquid (DNAPL) using oil-based emulsion was investigated for aquifer remediation. The micro-sized oil emulsion has large surface areas and buoyancy force, therefore it can be effective in treating DNAPL pool of the aquifer without downward migration of DNAPLs. The emulsion was prepared using silicone oil and mechanical homogenization. And the prepared emulsion had micro-sized similar distribution: 99 % in number and 80 % in volume were less than 10${\mu}{\textrm}{m}$. As target pollutants, trichloroethylene and 1, 2 dichlorobenzene were selected. All of used DNAPLs were solubilized successfully in oil-based emulsion. Even at low oil percentage, emulsion showed good solubility against pollutants. Therefore, the remediation using oil-based emulsion was considered as an effective alternative in dealing with DNAPLs of the aquifer.

The Formulation of Semi-Transparent Gel Emulsion by the Liquid Crystal Emulsification Method

  • Liquid crystals offer plenty of useful activities as improving the stability of emulsion, increasing moisturizing power, drug release, improving skin feeling and visual effect for cosmetics fields. In order to prepare stable semi-transparent gel emulsion, liquid crystal emulsification method was used. The emulsion stabilities of systems containing glycerin, fatty alcohols, surfactants, water and oil were investigated at various temperatures as time passed. The stabilities of all emulsions were evaluated by means of a polarizing microscope, SEM, rheometer, colorimeter and DSC. Even though the samples stored at $50^{\circ}C$ thermostatic chamber were occurred the reduction of hardness, turbidity and ${\Delta}H$ and the peak shift, the semi-transparent gel emulsion was very stable without separation between water and oils phase in emulsion.
