Procyanidins, which are natural antioxidants and antimicrobials found in grapes, enhance the quality and extend the shelf life of meat. We explored the effects of edible films incorporating procyanidins on pork loin stored for various times. Procyanidins (0, 0.1, and 0.3%, w/w) were incorporated into the edible films. We assessed meat color, pH, levels of volatile basic nitrogen (VBN) and 2-thiobarbituric acid-reactive substances (TBARS), and microbial populations for 14 d. The chromaticities and pH values of pork loin wrapped in film containing procyanidins (0.1% and 0.3%) generally increased (p<0.05) with storage time. VBN and TBARS levels, and total bacterial and Escherichia coli (E. coli) counts, significantly decreased (p<0.05) in the procyanidin groups. In particular, procyanidins strongly inhibited TBARS formation. Thus, our findings suggest that edible film impregnated with procyanidins inhibits lipid oxidation and microbial growth, thereby enhancing the quality and shelf life of pork meat.
This study was undertaken to examine the feasibility of black locust (Robinia pseudoacacia) as substrates for several edible mushrooms. For the cultivation of several edible and/or medicinal fungi on black locust, optimum bulk densities, synthetic or semisynthetic additives, natural additives and pretreatment methods were investigated. Fruit body yields of the fungi on various sawdust media composed of different wood species were also analyzed for testing the capability of black locust as a substrate for mushroom production. Mycelial growths decreased proportional when the bulk density increased. The most suitable carbon and nitrogen sources as additives to promote the mycelial growth were sucrose (2%, w/w) and ammonium phosphate (0.2%, w/w) respectively. When corn-powder and beer-waste as natural additives were added to sawdust of black locust showed the significant growth of mycelia. And the optimum mixing ratio was 10:2:1 (sawdust: corn-powder: beer-waste, w/w). Black locust after cold water treatment showed the outstanding mycelial growths. Any significant changes of pH, moisture content (%) and dry-weight losses (%) could not be found among culture substrates (sawdust of black locust, oak and poplar wood) examined before and after harvesting of fruit bodies. Yield of fruit bodies on black locust culture media were comparable with those culture media composed with oak and poplar wood. The present work indicated strongly the potentiality of black locust as raw materials for edible and medicinal mushrooms.
Effect of pulsed power was investigated on fruit body formation of 10 edible mushrooms, Lentinula edodes, Glifola frondosa, Pholiota nameko, Flammulina velutipes, Hypsizygus marmoreus, Pleurotus ostreatus, Pleurotus eryngii, Pleurotus abalonus, Agrocybe cylindracea and Sparassis crispa. Pulsed power of 100-170 kV was directly charged to the substrate just before fructification. The effect of the pulsed power resulted to promote for 10 edible mushrooms fructification. The treatment especially stimulated the fructification on Pleurotus species.

This study was aimed to screen edible herbs which control the composition of intestinal microflora. With in vitro experiments, we screened the water or ethanol extracts of about 60 edible herbs and wild plants in terms of the inhibition activity on the growth of the harmful Clostridium perfringens and growth promoting activity for the beneficial Bifidobacteria. The water extracts of mugwort and small water dropwort inhibited the growth of Cl.perfringens both in agar diffusion method and broth culture. On the other hand, the water extracts of petasites, mugwort, yellow day-lily and bitter cress have shown the promotion effect on the growth of Bifidobacterium longum. In the culture test using human feces as starter, the extracts of the above selected herbs increased the population of Bifidobacteria and Lactobacillus while they reduced the numbers of Cl.perfringens and E.coli.
This study investigated the contamination of trace metals on edible visceras : tongue, intestine, lung, testis, gira, blood, liver, stomach, and kidney. The edible visceras were selected at random from ten markets in Seoul. The edible visceras underwent freeze drying prior to analysis. The contents of arsenic, cadmium, cobalt, chromium, copper, magnases, molybdenum, lead, and zinc were detected by ICP(Inductively Coupled Plasma Spectrophotometry). The results showed that the levels of trace metals in all the samples fall within the tolerance limit and cadmium in lung tended to be high(>0.1 ppm). Therefore, we may study and investigate continuously on the food contamination of heavy metals for the public health.

A species of edible Scyphomedusae jellyfish has been used as food by the local people in Ganghwado, Korea since the 1990s. In order to identify this jellyfish, we collected specimens in Ganghwado during September 2013, and compared these specimens with original descriptions made by Kishinouye (1890). Mitochondrial cytochrome oxidase subunit 1 (CO1) sequences of these specimens were compared with those of Rhopilema esculentum retrieved from GenBank. Our specimens were also compared with jellyfish collected in China, previously confirmed as R. esculentum, based on morphological characters and DNA sequences. Using these two methods, the jellyfish specimens caught in Ganghwado were correctly identified as R. esculentum, a species new to Korean waters. This edible jellyfish has been named 'Gisusik-Yonghaepari' as Korean name.
The amount of $\beta-glucans$ in 12 edible mushroom species was determined and their water-solubility was assessed. A large variability in $\beta-glucans$ content was observed in the mushroom species, ranging from 4.71 to $46.20\%$ on a dry basis. Gyrophora esculenta, Lentinus edodes, Coriolus versicolor, Ganodenna lucidum, and Flammulina velutipes had high levels of $\beta-glucans$ Soluble $\beta-glucans$ content, which plays a key role in the physiological effects of mushrooms, also varied greatly according to the mushroom species, ranging from 2.12 to $19.66\%$. Water-solubility of $\beta-glucans$ in the edible mushrooms, as a percentage of total $\beta-glucans$ content varied from 42.55 to $73.35\%$.
General components, amino acids and minerals contained in T kind of edible wild grasses were estimated. Samples were collected from the field of Kapyong area, Kyung-ki, Korea. Results of the estimation were summarized as follows ; 1) A relatively large amounts of protein and fat were contained in the edible parts of each sample. 2) The most abundant amino acids in the edible parts of each sample were glutamic acid (26.6%), serine(18.7%), valise(22.4%), respectively. 3) A high level of calcium and iron was found in the edible parts of each samples. Especially calcium was abundant in the leaves of Rumex coreanus Nakai and iron was abundant in the Commelina communis L. Both copper and zinc were abundant in the Sanguisorba officinalis L.
Recently, researches on oil crops Ln Korea were breeding on edible oil crops such as rapeseed sesame, peanut , periLla.Numerous varieties were released as a result of ective breedingworks on edible oil crops, that is 7 rape varieties including Yu-dal, Mokpo-11, Yongdang, Nozeogchae, Naehan, Yeongsanyuchae and Ch-eongpungyuchae (hybrid),5 varieties sesame including Suweon-5,9,21,Kwangsan99ae and Dabaekggae, 5 peanut varieties including Seodun-tangkonT,Yeonghotangkong, 01tankong , ShinpungtanTkong and SaedI-tanGkong, 3 periLLa varietLes including Daegu, Suweon8 and 10,res-pectively. This varietLes showed a good oil quality with high o-Leic and LinoLeic acids content, but periLLa oil seemed to be un-suitable for a edible use, since about 53 Percent of Its fatty a-cids was in the from of unsaturated LinoLenic acid.
