비만도에 따른 대학생의 혼자 식사 및 함께하는 식사 시의 식행동 비교 (Comparison of Eating Behavior between Commensality and Solo-eating of University Students by BMI)

  • The objective of this research was to explore the influences of 'having a meal with someone' on individuals' eating pattern. Eating is not a simple matter of energy intake but also serves to anchor daily routines being cultivated by people and society. This study was conducted using a cross-sectional eating behavior survey of university students (N = 893, 380 men, 513 women) aged 20 to 24 years. Results were analyzed and presented as frequencies, means and ${\chi}^2$-test with SPSS 14.0. Differences in dietary habits by commensality and solo-eating were observed; Students who ate alone, spent 15 min for a meal and ate convenience food items when they didn't feel hungry. Compared to students who ate alone, those who ate together with someone spent 30 min for a meal and ate more amount of food. Eighty percent of respondents ate more various menus in commensality than solo-eating. They felt lonely when they ate alone and preferred to eat together. In conclusion, university students start to decide and select their own meals by themselves after junior and high school food services which are fixed with regard to menu and the amount. Dietary habits of Koreans rapidly changed concomitant with social changes over the past half century. Governments and health experts recognize that unbalanced meals cause lifestyle-related diseases, in particular obesity. Our research findings will contribute to more comprehensive efficient nutrition education programs in order to prevent obesity and other lifestyle-related diseases in early stages of adulthood.

성인의 외식 빈도와 관련된 식습관 및 생활습관 요인 분석 (Dietary Behaviors and Lifestyle Characteristics Related to Frequent Eating Out Among Korean Adults)

  • 본 연구에서는 제4기 국민건강영양조사 중 성인 남녀를 대상으로 외식 현황과 이와 관련된 인구사회학적 특성, 영양섭취 수준, 식습관 등을 분석하였다. 본 연구의 결과를 요약하면 첫째, 남성이 여성과 비교하여 외식을 자주하는 경향을 보였고, 도시에 거주하는 젊은 성인일수록, 가구소득 및 교육 수준이 높을수록 더 자주 외식을 하는 것으로 보였다. 둘째, 외식 빈도에 따라 영양 섭취 기준 대비 영양소 섭취비율을 분석한 결과 남녀의 패턴이 유사한 경향을 보였는데, 외식을 자주 하는 사람에게서 대부분의 영양소 섭취가 더 높은 반면 탄수화물 및 조섬유의 섭취는 더 낮은 수준을 보였다. 또한 외식 빈도가 높은 그룹에서 낮은 그룹에 비해 에너지/지방 과잉 섭취자의 비율이 더 높은 경향을 보였다. 셋째, 외식 빈도에 따른 아침 결식률을 분석한 결과, 남녀 모두 외식을 자주 하는 사람일수록 아침결식률이 더 높았고, 특히 이는 여성에게서 두드러졌다. 넷째, 대상자의 한국인 식생활 지침 실천도를 분석한 결과, 나이가 많은 여성일수록 식생활 지침 실천도가 더 높은 것으로 보였고, 남녀 모두 외식을 자주 하는 사람일수록 식생활 지침 실천 점수가 더 낮은 경향을 보였다. 이를 바탕으로 구체적인 문항에 대한 실천도를 비교한 결과, 성별, 연령별로 상이한 식생활 문제점이 파악되었다. 따라서 한국인 식생활 중 외식의 비중이 꾸준히 높아지고 있는 가운데, 성인의 건강한 외식 관련 식생활 문화에 기여하기 위한 공중보건안이 마련되어야 하며, 이러한 영양교육 및 정책 마련 시 본 연구 결과에 근거하여 집단의 특성에 따라 외식 관련 식습관문제점이 차이가 있음을 고려하여야 한다.

유아들의 식습관 개선을 위한 "위험한 먹거리 프로그램"의 효과에 대한 연구 (The Study on Effects of "the Unsafe Food Program" designed For Improving Children's Eating Habits)

  • 본 연구에서는 유아들의 식습관과 식품 선호도에 관한 최근의 실태와 문제점을 살펴보고 각종 조미료와 식품첨가물이 함유된 인스턴트식품과 패스트푸드, 불량식품에 무방비로 노출되고 길들여진 유아들의 식습관을 개선시켜 주고자 실시한 "위험한 먹거리 프로그램"이 효과가 있는지 알아보기 위한 것이었다. 연구 대상은 연구자가 운영하고 있는 어린이집 만5세 유아들로, 2달 동안 매일 "위험한 먹거리 프로그램"이 실시되었다. 이 프로그램은 먹거리와 건강에 관한 부모의 인식과 유아의 식습관을 파악하기 위한 설문 조사, 유아들을 대상으로 자신들이 먹고 있는 음식에 대한 관심 유도 프로그램, 운동프로그램, 건강식품과 불량식품에 대한 충분한 정보 제공, 인스턴트식품과 패스트푸드가 인체에 미칠 수 있는 악영향에 대한 정보 제공 등의 다양한 프로그램으로 구성되었다. 또한 본 프로그램은 유아들의 신체 변화에 미친 영향을 파악하기 위해서 프로그램 실시 전에는 아동의 체내 중금속(독성미네랄) 상태를 측정하기 위한 SH제약의 모발검사와 프로그램 실시 전후로 유아의 체중, 골격근량, 체지방, BMI, 체지방률 등을 측정하기 위한 일산 보건소의 건강 검진 진단(INBODY) 프로그램을 실시하였다. 본 연구의 결과는 다음과 같다. 첫째, '위험한 먹거리 프로그램' 과정에 참여했던 부모의 의식이 바뀌면서 안전하지 않은 음식들이 식단에서 배제되었다, 둘째, 유아 스스로 자료를 찾고 토론하며 식품을 분석. 실험하는 과정을 통해 자신이 먹는 음식에 대한 관심도가 높아지게 되어 패스트푸드와 인스턴트식품 같은 안전하지 않은 식품에 대한 자제력 향상으로 이어졌다. 셋째, 운동프로그램을 병행하면서 유아들의 체질이 개선되는 결과를 측정할 수 있었다. 넷째, 유아들의 먹거리 습관을 개선시킬 수 있는 다양한 활동들로 구성된 프로그램을 통해 아동들은 야채, 잡곡밥, 과일 등을 골고루 먹는 균형 잡힌 식습관이 형성되었다. 이상의 연구결과를 통해 "위험한 먹거리 프로그램"이 유아의 식습관을 개선시키는 데 효과가 있었음을 확인할 수 있었다.

서울·경기지역 일부 중장년 성인의 주관적 건강인지, 식습관 및 건강 관련 습관에 관한 연구 (A Study on Perceived Health Status, Dietary Habits and Health-Related Lifestyle Factors of Middle-Aged Men and Women in Seoul and Gyeonggi Area)

  • The study examined the perceived health status, dietary habits, and health-related lifestyle habits of middle-aged men and women in Seoul and Gyeonggi-do areas. The survey was conducted on 670 individuals (320 men and, 350 women), aged 40~64 years, in Seoul and Gyeonggi-do areas. The online and written data were analyzed using the SPSS WIN 25.0 program. Although there was a significant difference in the perceived health status (P < 0.01), there were no significant differences in the subjective stress and the current disease status according to sex. For dietary habits, the scores for fruit intake (P < 0.05), meat and fish intake (P < 0.05), milk and dairy products intake (P < 0.01), and seaweed intake (P < 0.05) were higher in women than men. The scores for three-meal eating (P < 0.05) and water intake (P < 0.01) were higher in men than women. For the health-related habits, alcohol-drinking frequency, daily alcohol consumption, smoking experience, and daily smoking were higher in men than women (P < 0.001). In contrast, caffeinated beverage intake, exercise frequency, and daily smart-phone, computer, and TV using time were similar in both sexes. The meal-eating time was faster in men than women (P < 0.01). For dietary behavior changes, only appetite showed a significant gender difference (P < 0.05). This study provides essential information on the perceived health status, dietary habits, and health-related lifestyle habits in middle-aged men and women. Nevertheless, further research and a practical nutrition program will be needed to solve undesirable dietary habits and improve the health and lifestyle of middle-aged adults according to sex.

A Study of the Anthropometric Indices and Eating Habits of Female College Students

  • A study was conducted to investigate the anthropometric indices, fat distribution, eating habits and levels of daily physical activity based on the body mass index (BMI ; kg/㎡) of 180 female college students. This stady was based on survey 2001 using a questionnaire. The results are as follow ; The mean age, height, weight and BMI were 20.41 ${\pm}$ 1.82 years, 161.86 ${\pm}$ 4.51cm, 53.49 ${\pm}$ 7.02kg, and 20.43 ${\pm}$ 2.65kg/㎡, respectively. The group with BMI of under 20 (the lean group) comprised 48.9% : the group with BMI of 20 to 25 (the normal group) comprised 44.4% and the group with BMI of over 25 (the obese group) comprised 6.7% of the subjects. Even though the lean and the normal groups were determined according to BMI. 12.5% of the lean group and 31.3% of the normal group had more than 25% body fat. Of the students, 11.5% of the lean group, 25.0% of the normal group and 58.3% of the obese group had of more than 0.8 waist/Hip Ratio (WHR). The medical problems suffered by the subjects were constipation (24.4%), gastroenteritis (20.6%), anemia(15.0%) and edema(13.3%), which was a result of their eating habits. Out of all the subjects, 27.2% ingested their meals irregularly, 74.4% skipped breakfast, and 92.4% of the lean group, 89.2% of the normal group and 81.8% of the obese group ingested snacks on a daily basis. Their favorite types of snacks were cookies breads and cakes (33.7%), spicy sliced rice cakes pork sausage and boiled fish cakes (18.5%), fruits (15.2%), juices and sodas (13.5%) and hamburgers and pizzas (3.9%). Their consumption of high calorie and processed foods was high, Of the subjects, 38.9% ate out daily. 45.1% had tried weight loss. Those with large upper bodies comprised 11.5%, large intermediate bodies 18.5% and large lower bodies 69.0%. Most of the students were dissatisfied with their body snaps. Of the subjects, 95.1% exercised irregularly. Daily physical activity tended to increase significantly with an increase in BMI : the lean group's average energy consumption was 1509.40㎉ the normal group's was 1792.21㎉ and the obese group's was 2334.63㎉, which were below the recommended value. This study suggests that the maintenance of an ideal weight, the improvement of eating habits and adequate exercise are needed for female college students to improve their health and nutritional status. 영양·위생교육 프로그램 수행이 충북지역 노인의 건강한 식습관 및 식행동에 미치는 영향 (Effects of nutrition and hygiene education program on healthy eating habits and behavior of the elderly in Chungbuk)

  • 충북지역 65세 이상 노인들의 조리실습을 병행한 영양교육의 효과를 연구한 결과에서 위생, 식습관, 영양지식, 만족도 모든 항목에서 1, 2차연구에 지속적으로 참여한 지역 (괴산, 보은, 진천)이 위생, 식습관, 영양지식, 만족도 점수 모두 유의적 (p < 0.001)으로 높은 것으로 나타났다. 고령사회에서 65세 이상 인구가 20%이상인 초고령 사회로 빠르게 진입하고 있는 우리나라 농촌지역에서는 고령층의 식생활 향상을 통한 건강증진 및 질병예방을 위한 효과적인 영양교육이 필수적이라 사료된다.

청주시 노인들의 영양섭취 실태와 식행동 및 관련요인과의 연관성 (Relationship among Nutritional Intake Status, Eating Behaviors and Related Factors of the Elderly in Cheongju City)

  • This study was performed to assess the effect of eating behaviors and health-related variables on overall dietary quality. Ninety-four(male 21, female 73) elderly who were over 60 residing in middle income areas in Cheongju city participated. Information on general characteristics of the elderly, health-related life style, regularity of meal, meal balance and desirable eating habits were obtained by interview based on questionnare. Dietary nutrient intake data were obtained through the 24 hour recall method. The mean age and BMI of the subjects were 73.3 years old and 23.3(male 21.8 female 23.7) respectively. The proportions of underweight and hypertension were 19.2% and 36.2%. Most nutrients except vitamin $B_2$ and calcium were consumed over 75% of the RDA. The Mean Adequacy of Ratio(MAR) of nutrient intake was 0.64(male 0.72, female 0.62). The average score of regularity of meal, meal balance, and desirable eating habits was 14.4 out of a possible 16, 13.7 out of a possible 24 and 5.5 out of a possible 16 points respectively. Male than female, older subjects than young subjects, and those living with their spouses than with other family or living alone had better scores in eating behaviors. Smoking, chewing ability and eating alone vs eating with company affected overall of regulality of meal and meal balance(p<0.05). Positive correlation (p<0.05) was also dietary quality. There was a positive correlation between the mean adequacy ratio, score observed between scores in regularity of meal and meal balance. Therefore, the elderly should be encouraged to eat a variety of food, maintain good dental health, keep regularity of meal and have meals with company to help improve overall dietary quality and eventually achieve optimal nutritional status.

조선시대 반가의 식사.취사생활과 공간사용 (The Eating and Cooking Spaces of Yang-ban Houses in the Cho-sun Dynasty)

  • Eating was done on a respective one-man dining table, which reflect the esteem for the individual. The family eating place was generally An-bang of the house, The eating space of Yang-ban housing with its hierarchical, spatial method of tabling and eating around the head of the family served as a synchronically meaningful space which was to strengthen the solidarity of patriarchy beyond the mere funtioning place of eating. That meaning seems to reveal itself more conspicuously when we consider that the eating place is An-bang, the center of the main house. The basic space for cooking was Bu-oak (Chung-ji). Thre was no water-supply system or drainage in the kitchen, so all the water needed for cooking was drawn from outdoor well with a bucket. The traditional eating habits, the entertainment for the bustling guests, and the frequent sacrificial rites required many store rooms for the subasidiary food and wide space for putting food into order.

산업장 근로자의 건강상태와 건강습관의 관련요인분석 (The Relationships between Health Status and Health Practices among Industrial Workers)

  • This study attempted to analyze the health habits affecting health status of industrial workers. Data was collected from 57 industries of 900 workers at Inchon. The research has been carried out through self-administered questionnaire and from the analysis of the health examination records and the results were as follows: 1. Among 861 respondents, men were 81.2%, women were 18.8%, 42, 6% were of the 30-40 age group, the married were 65.7%, the single were 32.5%, the high school graduates were 62.4% and 37.3% were of people who worked between 1 and 5 years. 2. As far as the seven health habits, current smokers were 54.9%, people who regularly exercise was 31.7%, 7-8 hour of sleep, on the average were 74.0%, people eating breakfast nearly every day were 8.0%, and people eating between meals almost every day were 54.2%. Heavy drinkers who drink 3-4 times or more per week were 13.2%, 1-2 times per week were 26.8% and the obese were 4.6%, 3. Health status of A and B, estimated by doctors in the health examination were 81.7% and C, D1, D2, the unhealthy were 18.3%. Men were reported more than women in unhealthy groups and the results regarding health status reflect gender, educational level and age, That is to say that, lower educational level group and over 30 years of age group perceive their health to be worse than the higher educational level and under 30 age group, And these differences were statistically significant. 4. The relationship between health habits and health status, expressed in terms of the odds ratio. Current smokers had a consistently worse health status than a nonsmokers with a 1.36 odds ratio. The workers who reported eating breakfast rarely or never were more associated with the unhealthy group than the regular breakfast eating group with a 2.48 odds ratio. One or more drink per week had a worse health status than a never or a little drinker with a 1.42 odds ratio. 5, The Health habits score and duration of work were selected as significant factors influencing health status based on logistic analysis. According to the results of this model, the odds ratio of good health status was 2.06 for good health habit score, 1.55 for population who worked seven years or more duration of work. As we have seen, good practices were found to be associated with better health and the effect of the health habits was cummulative;those who followed 6-7 health habits were in better health, even though they were older than those who failed to do so. Therefore, in order to provide the health promotion of workers it is necessary to establish a health management plan for an effective health education and health service. If we use this type of study as a prospective study design, we can get a precise basic data for health promotion and a management plan for industrial workers.

일부 농어촌과 도시 청소년들의 식행동 특성 및 식품기호도 (Food Behaviors and Food Preferences of the Teenagers in Urban, Fishing, and Rural Areas)

  • The purpose of this study was to investigate the food behaviors and food preferences of teenagers by regional groups. The subjects were composed of 365 third grade students in middle schools from urban, rural and fishing areas in Kyungpook province. The data was collected by using a survey questionnaire. The results of the study are summarized as follows: Eating habits of 21-47% of the subjects, according to the regions, were poor and female students in large city showed the best eating habits while female students in fishing village showed the poorest eating habits. Out of the three regional groups studied, the subjects from the fishing villages had the highest rates of skipping meals and eating between meals. Out of all the people investigated, thirty to forty percent had unbalanced diets, the highest percentage coming from the urban areas and the lowest from the fishing villages. All together an allergic reaction to food was the highest in the fishing villages' subjects and female students were more sensitive compared to the male students. Students from the urban area had higher frequency of symptoms of lactose intolerance. Upon the investigation of the subjects 'food preferences, they preferred boiled rice to any other rice as a staple food. Cha jang myun was the most preferred out of all noodles and breads. It was found that teenagers preferred one course meal such as fried rice to a rice-centered regular meal. Out of all various meat soups, beef soup and beef-rib soup were preferred the most. As for subsidiary foods the most preferred were soybean paste stew and cuttlefish stew which they ate daily. There was a very high preference for fried foods, the most favored being pork cutlet followed by fried vegetables, sweet potatoes, and minced meat. The most preferred cooked vegetables were bean sprouts and seasoned cucumber. Seasoned cubed radish roots were the most preferred kind of kimchi. For desserts there was a very high preference for the following fruits: apples, plums, strawberries, and oranges. For beverages the most popular choice were chocolate drinks followed by orange juice, apple juice, milk and tomato juice. According to these investigations, most teenagers liked daily foods which they are used to. The study showed that on the whole the teenagers had poor eating habits. A problem that needs immediate attention is that female students and students from the fishing villages have a high rate of skipping meals. It is expected that the results of this food preference test of teenagers could be useful in the meal planning of middle school lunch programs in the future.
