Drying Characteristics by Infrared Heating of agricultural products (원적외선 가열에 의한 농산물의 건조특성)

  • Infrared heating has been traditionally used in industrial applications for processes such as dehydration of food industrial. This heating method involves the application of radiation in the wavelength range of 2 to 50 micrometers. In this work, simultaneous heat balance equations were developed to simulate the infrared radiation heating of agricultural products. The equations assume that moisture diffuses to the outer boundaries of the material in liquid form and evaporation occurs at the surface of the agricultural products. Energy for moisture evaporation is supplied by the infrared radiant energy. The optimum temperature and drying time for the best drying conditions of changing the red peppers with the moisture content of 18% and the restore rate of 80~85% are $80^{\circ}C$ and 44 hours. The performance of radiation tubes coating with the radiation paint developed in this research has the energy of $2.27{\times}103W/m^2{\mu}m$, $150^{\circ}C$ within the scope of radiation wave length of $2{\sim}30{\mu}m$ and has the radiation 0.92~0.93, which is superior to the general radiation tubes. The extinction coefficient according to the band pass filter using the 4 flux theory ha higher dependability on wave length, accounting for $2{\sim}17{\mu}m$ and $5{\times}105{\sim}106m-1$. A comparison between the theoretical energy transfer whose figures are interpreted according to 4 flux theory and the experimental energy transfer of far infrared dryer leads to the findings of the agreement less than 5%.

  • The application of high velocity air jets to heat transfer surface has tremendous engineering potential in various industries. The impinging jets are therefore widely used for their enhanced transport characteristics, especially for drying of continuous materials such as sheet, film, carpets, forming materials and pallets. This paper presents the drying characteristics of plate type material and performs the test with the change of operating conditions in conveyer band dryer using the impinging jet nozzles. The factors influencing drying rate were confirmed, also the design data of band dryer using the impinging jet was obtained.

Preparation of Hollow Silica by Spray Drying of Nano Silica Particles and Its Heat Transfer Property (나노 실리카의 분무건조를 이용한 중공구 입자 제조와 실리카중공구의 열전달 특성)

  • Hollow silica spheres were prepared by spray drying of precursor solution of colloidal silica. The precursor solution is composed of 10-20 nm colloidal silica dispersed in a water or ethanol-water mixture solvent with additives of tris hydroxymethyl aminomethane. The effect of pH and concentrations of the precursor and additives on the formation of hollow sphere particles was studied. The spray drying process parameters of the precursor feeding rate, inlet temperature, and gas flow rate are controlled to produce the hollow spherical silica. The mixed solvent of ethanol and water was preferred because it improved the hollowness of the spheres better than plain water did. It was possible to obtain hollow silica from high concentration of 14.3 wt% silica precursor with pH 3. The thermal conductivity and total solar reflectivity of the hollow silica sample was measured and compared with those values of other commercial insulating fillers of glass beads and $TiO_2$ for applications of insulating paint, in which the glass beads are representative of the low thermal conductive fillers and the $TiO_2$ is representative of infrared reflective fillers. The thermal conductivity of hollow silica was comparable to that of the glass beads and the total solar reflectivity was higher than that of $TiO_2$.

  • Pepper is considered as one of main crops not only in the agricultural production but also in farmer's income. Red-pepper is much consumed by Koreans everyday in the form of powder, but its processing processes such as drying and grinding cause many problems. Consequently, it is required to improve the quality of red-pepper powder for high dietary life. This study was conducted to investigate the heat and mass transfer characteristics of red-pepper powder by convection and radiation conditioning. Physical and thermal properties such as specific heat, thermal conductivity and thermal diffusivity were also determined in terms of moisture content of the powder.

In this work, simultaneous heat balance equations were developed to simulate the infrared radiation heating of red peppers. The equations assume that moisture diffuses to the outer boundaries of the material in liquid form and evaporation occurs at the surface of the red peppers. Energy for moisture evaporation is supplied by the infrared radiant energy. The equations were validated with experimental data on surface temperature and average moisture content of red peppers. Average deviations of predicted surface red peppers temperature and average red peppers moisture from experimental data were 323~353K and 50~80%, respectively. The spectral extinction coefficients in the wavelength range $1.5<{\lambda}<27$ micrometer at 293K for Red Peppers were determined from results of reflection measurements and the four flux radiative heat transfer calculation. The radiation extinction coefficients were obtained from effective drying factor the temperature 373K.

  • Experimental external collector type solar lumber dryer with $1.6m^2$ of collector area and $1.0m^3$ of maximum dryer capacity was designed and constructed to investigate the conditions inside and outside the dryer and collector. The efficiency of collector was calculated and numbers of drying-days and collector areas required to dry $0.2m^3$ and $1.0m^3$ of pine and oak at various an flow rate inside collector were estimated for eight cities in Korea. Average temperatures of collector-inlet and -outlet air and heat absorber were $52.5^{\circ}C$ $57.9^{\circ}C$, and $71.1^{\circ}C$. respectively at 4m/sec of an flow rate inside collector on sunny day in summer. Overall heat transfer coefficient of collector was 4.875W/$m^2^{\circ}C $ and collector efficiency was 52%. Estimated numbers of drying-days required to dry $0.2m^3$ of pine and oak from 80% to 15% moisture content at various air flow rate inside collector were 38 and 66 days. respectively. Areas of collector required to dry $1.0m^3$ of lumber at desired safe drying rate were estimated as $13.7m^2$ for pine and $16.0m^2$ for oak.

  • Recently, various types of towels and dishcloth dryer products are being widely distributed in Korea. Evaluation methods for water absorption properties of various fabrics have been developed, and there are many studies using them. This study newly intended that whether it is possible to obtain data that can quantitatively analyze the water absorption characteristics of various fabrics, to show the correlation between the water absorption height and the amount of water (water holdup) absorbed, and to experimentally suggest the applicability to evaluate the drying capacity of towel dryer using IR camera. Through these experiments, it was confirmed that quantitative data on the water absorption height of various fabrics can be measured using an IR camera and can be clearly applied to the performance evaluation of actual products.

Analysis of Flow Characteristics of Forced Ventilated Pre-drying Facility for Mandarin (강제 통풍식 감귤 예건시설의 유동 해석)

  • Uniform and rapid pre-drying of mandarin is important to improve the storage quality. The aim of this study was to suggest the basic design of forced ventilated pre-drying facility for mandarin by thermal flow analysis using computational fluid dynamics software (FLUENT 6.2). Developed CFD simulation model was verified by comparison with experimental data. Airflows and temperature distributions in the five conceptional designs including existing ordinary temperature storage rooms were analyzed and appropriate basic design was determined. Analysis of the effect of arrangement of windows and exhaust fans on thermal flow in facility was carried out for more detailed design. The results of this investigation showed that the predicted airflow velocity by CFD simulation showed a good agreement with the measured value and optimum design condition for simulated forced ventilated pre-drying facility of mandarin has two exhaust fans and two windows on both sidewalls and cover on loaded mandarin.

Changes in Ice Dendrite Size during Freezing Process in Gelatin Matrix as a Model Food System (모델 식품으로 젤라틴 매트릭스에서 동결과정에 따른 얼음 결정체 변화)

  • The objective of this study was to investigate the changes in ice dendrite size during freezing process in gelatin matrix as a model food system in order to provide mathematical relation between freezing condition and ice dendrite size. Gelatin gel as a model matrix was frozen in unidirectional Neumann's type of heat transfer. The thermograms' analysis allowed to determine the freezing temperature of the sample, the position of the freezing front versus time, and thus, freezing front rate. The morphology of ice dendrites was observed by scanning electron microscopy after freeze-drying. We observed that the means size of ice dendrite increased with the distance to the cooling plate; however, it decreased with the cooling rate and the cooling temperature. In addition, the shorter durations of the freeze-drying process was shorter decreeing the decreased the freezing front rate, resulted in their resulting in a larger pore size of the ice dendrite pores for the sublimation channel of that operate as water vapor sublimation channels. From these results, we could derive a linear regression as an empirical mathematical model equation between the ice dendrite size and the inverse of freezing front rate.
