Assessment of Microbial Quality on the Preparation of Stir-Fried Dried-Shrimp with Garlic stems in the Meal Service Operation for the Elderly (노인급식에서 제공되는 마늘쫑 새우 볶음의 미생물학적 품질평가)

  • The purpose of this study was to identify HACCP-based CCP and CP from the microbial quality assessment on the process of side dish (stir-fried dried-shrimp with garlic stems) production in the meal service operation for the elderly. Total plate counts (TPC) of fresh garlic stalks were $7.80{\times}10^{3}$ CFU/g and they were above the standard value of microbial growth potential. The TPC, Coliform and E.coli were not detected in the dried shrimps. The TPCs after rinsing and slicing the garlic stems were $2.5{\times}10^{2}$ CFU/g and $5.5{\times}10^{2}$ CFU/g, respectively. The TPC number of cook’s hand and cutting board were also exceeded the standard limit with values of $2.2{\times}10^{2}$ CFU/g and $10.0{\times}10$ CFU/g, respectively. However, the TPC, Coliform and E.coli were not detected in the other cooking instruments. The identified CCP in inspection step was fresh garlic stems and that of prepreparation step was slicing the stems after blanching. Cook’s hand and cutting board were also verified as CCP and the other steps in cooking process and utensils tested were identified as CP’s. These result’s suggest that it is important to control the microbial contamination of raw materials at purchasing step and the sanitary education program should be developed for the employees for continuous supplement of safe and sound meal service for the elderly.

Antioxidant activities of hot-water extracts from Aster scaber by cultivation and drying methods (참취의 재배 및 건조 방법에 따른 열수 추출물의 항산화 활성)

  • This study was conducted in order to analyze the polyphenol contents and antioxidant activities of hot-water extracts of Aster scaber in the wild field and cultivated field, and through the drying methods for the comparison on the quality characteristics of Aster scaber, according to cultivation and drying methods, and the development of functional materials. The extraction yield was higher in the Aster scaber cultivated field than those of the Aster scaber in the wild field, and high from the dried Aster scaber. The total polyphenol and flavonoid contents of Aster scaber hot-water extracts from the wild field were higher than those in the cultivated field. The total polyphenol contents were high in the extract of blanched and dried Aster scaber, and the flavonoid content was high in the non-treated Aster scaber. The electron donating ability (EDA) values of Aster scaber hot-water extracts were increased along with the increase of extract concentration, while the EDA of the blanched and dried Aster scaber extracts was higher than the other extracts. Furthermore, the SOD-like activity was increased by the extract concentration, and was high in the extract of the non-treated Aster scaber. The nitrite scavenging ability in pH 1.2 was high in the non-treated, blanched, dried, and natural dried Aster scaber. The xanthine oxidase inhibitory activities were increased through the increase of extract concentrations, and higher in the hot-water extract from Aster scaber in the wild field (WRA) than those in the other extracts. The inhibition of tyrosinase and reduction of power were increased by the increased extract concentration, and high in the extracts of blanched and dried Aster scaber. The reduced power was higher in the Aster scaber hot-water extracts of cultivated field, and was higher in the extracts of blanched and dried Aster scaber than those in the extracts dried through the use of other drying methods. Aster scaber has a high content of polyphenol and flavonoid, and antioxidant activities, which were developed as functional materials.

A Study on the Effect of Thermal Deformation and Color Changes during the Firing Processes of Porcelain Clay(I) (자기소지의 소성 과정 중 열변형과 색 변화에 관한 연구(I))

  • There were the changes of shapes and color tones when the soil materials e.g. Blue-Porcelain, White-Porcelain, Bunchong, mixed A and B, mullite, Sanchong and Ongki - used by most domestic ceramic artists - were glazed at $ 950^{\circ}C,; 1200^{\circ}C,; 1250^{\circ}C,; 1280^{\circ}C,;1300^{\circ}C$ After the materials were dried out at 120t: in an electric oven, they were mixed with water, keeping the percentage of moisture content 25% and kneaded specimens which are hexahedron by $$ 250{\times}30{\times}8mm$$were produced and dried after calibrated at 200mm interval with a vernier caliper. After the materials were dried and glazed, they showed few shape-changes at $950^{\circ}C$ but began to changed at $1200^{\circ}C$,especially Bunchong and Ongki made rapid changes. In the case of color-change, White-Porcelain changed very little. The color of Blue-Porcelain, mixed A and B, Sanchong, Mullite changed to ]aune brilliant as temperature went up but Bunchong and Ongki changed to dark brown or dark chocolate under the same conditions. This study aims at suggestion of the basic data which minimize failure rates by recognizing the property of the materials on the basis of this study and regulating shape-change phenomena and sensitive changes of color when ceramic artists work.

Analysis of Volatile Organosulfur Compounds in Korean Allium Species (국내산 Allium속(마늘, 양파, 대파)의 휘발성 함유황 유기화합물 분석)

  • We identified volatile organic compounds in Korean Allium species. Volatile organic components in three Korean Allium species, dried garlic, dried onion, and dried Welsh onion, were extracted using a simultaneous distillation and extraction (SDE) method and identified by GC/MS analysis. The numbers of volatile compounds were 48, 32, and 33 in the three species, respectively. In dried onion, the major compounds were dipropyl trisulfide, methyl propyl trisulfide, and propanethiol. (Z), (E)-propenyl propyl trisulfide, methyl propyl trisulfide, and dipropyl trisulfide were detected at high levels in Welsh onion. In dried garlic, presence of the allyl group identified characteristic volatile organosulfur compounds including diallyl disulfide and diallyl trisulfide. Qualitative and quantitative analysis of volatile compounds in three Korean Allium species showed that sulfur-containing compounds were dominant, and allyl groups derived from (+)-S-(2-propenyl)-L-cysteine sulfoxide (ALLYL CSO, alliin) were more abundant in dried garlic, than in other materials.

The effect of human demineralized freeze-dried xenograft on vertical bone formation in beagle dogs (탈회동결건조골이 수직골 형성에 미치는 영향)

  • Purpose: The purpose of this study was to evaluate exophytically vertical bone formation in the mandibular premolar area of beagle dogs by the concept of guided bone regeneration with a titanium reinforced e-PTFE membrane combined with human demineralized freeze-dried bone. Materials and Methods: Four one-year old beagle dogs were divided into control and experimental group. All mandibular premolars were extracted and surgical vertical defects of 5 mm in height were created in the extracted sockets. At 8 weeks after the extraction, TR e-PTFE membrane sized with 8 mm in length, 5 mm in width, and 4 mm in height was placed on the decorticated mandible, fixed with metal pins and covered with full-thickness flap and assigned as control group. In experimental group, decorticated mandibule was treated with TR e-PTFE membrane and human demineralized freeze-dried bone. The animals were sacrificed at 16 weeks after the regenerative surgery, and new bone formation was assessed by histomorphometric as well as statistical analysis. Results: Average of new bone formation was 38% in the control group, whereas was 25% in the experimental group (p<0.05). Average of connective tissue formation was 42% in the experimental group, whereas was 30% in the control group (p<0.05). The lamellar bone formation with haversian canals was observed in the both groups. In the experimental group, the particles of human demineralized freeze-dried bone were observed after 16 weeks and complete resorption of graft was not observed. Conclusion: On the basis of these findings, we conclude that titanium reinforced e-PTFE membrane may be used alone for vertical guided bone regeneration, but demineralized freeze-dried bone has no additional effect on vertical guided bone regeneration.

Food Functionality and In Vitro Bioactivity of Olive Flounder Paralichthys olivaceus Roe Concentrates Prepared by Cook-dried Process (가열-건조처리 넙치(Paralichthys olivaceus) 알 농축물의 식품기능성 및 생리활성)

  • Boil-dried concentrate (BDC) and steam-dried concentrate (SDC) were prepared from olive flounder Paralichthys olivaceus roe using the cook-dried process, and their food functionality and in vitro bioactivity were examined. The buffer capacity of BDC and SDC was found to be stronger in the alkaline region than in the acidic region, and the buffer capacity of SDC was superior to that of BDC. The water holding capacities of these concentrates were 7.6 and 7.4 g/g protein, respectively, both of which were significantly lower than that of freeze-dried concentrate (FDC). The solubility of BDC (13.4%) and SDC (12.7%), foaming capacity of BDC (107.7%) and SDC (110.6%), and oil-in-water emulsifying activity index of BDC (7.7 m2/g) and SDC (9.7 m2/g) were all significantly lower than the corresponding values for FDC (P<0.05). The lower food functionality of BDC and SDC compared with FDC can be attributed to the high-temperature denaturation of proteins during the cook-dried process. The 2,2'-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid radical scavenging activities (IC50) of SDC (2.5 mg protein/mL) was 60.4 ㎍/mL, and the angiotensin I converting enzyme inhibitory activity was 80.9%. Olive flounder roe concentrates have good antioxidant and antihypertensive activities, and can be used as materials or ingredients in the processing of seafood and other foods to enhance protein contents and food functionality.

  • Most concrete is recently made of an aggregate which is properly absorbed, and carried in it according to its capability at every fields. We have been close to demand new capability of high flowing and enduring for specific concretes. That is difficult to cope with claiming the efficiency on deterioration from lack of a high Quality aggregate. Therefore, For solving the problems we apply to method of packaged dry combined materials for concrete using dried materials. That is to say that it is a kind of making into an instant. In this study, There is a purpose to present fundamental data, comparing and analyzing a phenomenon of aggregate's absorption following the rate of adding water, for using existing materials.

Ambient Pressure Dried Silica Aerogel Thin Film from Water Glass

  • A nano structured silica aerogel thin film was manufactured from inexpensive sodium silicate (water glass) using an ambient pressure drying method. High purity silicic sol was prepared by passing a water glass solution through an ion exchange resin, and the gel films were prepared on a modified glass substrate via dip coating. The dip coating conditions, such as coating time and solvent, were optimized. The optical and physical properties of the obtained silica aerogel thin film were characterized using a UV-visable spectrometer and a scanning electron microscope.

Studies on Pyrolysis Behaviour of Banana Stem as Precursor for Porous Carbons

  • Porous carbons have been prepared from different parts of banana stems using two different routes, viz., by pyrolysing the mass at different temperatures as well as by treating the dried mass with chemicals followed by pyrolysis. The pyrolysis behaviour of all these materials has been studied up to $1000^{\circ}C$. Samples treated with acids exhibit more increase in surface area as compared to those treated with alkalies or salts. Analysis of BET surface area shows that the carbon prepared at low temperature shows mixed porosity, i.e., micro and mesopores. Samples heated to high temperature above $700^{\circ}C$ show decrease in macroporosity and increase in microporosity. Liquid adsorption studies have been made using methylene blue and heavy oil. The activated carbons so prepared exhibit higher oil adsorption mainly in the macro and mesopores.

Preparation of Porous Inorganic Materials by Foaming Slurry (슬러리 발포에 의한 연속성 무기질 다공체의 제조)

  • Foaming method is presented the preparation of porous materials from high-concentrated kaolin silica and flyash slurries. The slurries were foamed dried and sintered respectively. The porosity of sintered ma-terials was about 70-75% Mean pore-size was the range of 70-150$\mu\textrm{m}$ and pore structure was continuous Sodium lauryl sulfate anionic surfactant was used as a foaming agent. The foaming ability and the froth sta-bility were increased with increasing the concentration of the foaming agent. But the size of the constituent bubble of froth after foaming process was not affected by the concentration of the foaming agent. These results showed that the mean pore-size of sintered materials was closely related to the froth stability which is related to the change of bubble-size during the drying process.
