Background: Maize fodder is being used as staple feed for livestock but it lacks protein and essential amino acids; lysine and tryptophan. Intercropping maize with leguminous soybean crop is promising technique under limited land resources of South Korea but it can only give considerable advantages when adequate distance is provided between corn and soybean rows. Main aim of present study was to find-out adequate distance between corn and soybean seeding rows for optimum growth, yield and nutritive value of intercropped forage. Methods: Different interrow distances between corn and soybean were evaluated under four treatments, viz. 1) Corn sole as positive control treatment 2) Zero cm between corn and soybean (control); 2) Five cm between corn and soybean; 3) 10 cm between corn and soybean, with three replicates under randomized block design. Results: Findings depicted that height and number of corn stalks and ears were similar (P > 0.05) among different treatments. Numerically average corn ear height was decreased at zero cm distance. Dry matter percentage in all components; corn stalk, corn ear and soybean was also found not different (P > 0.05) but dry matter yield in component of corn ear was lower (P < 0.05) at zero cm distance as compared to that of 5 and 10 cm interrow distances. In case of nutritive value, total digestible nutrient yield in intercropped corn was also found lower (P < 0.05) at zero cm distance than that of 5 and 10 cm interrow distances between corn and soybean seeding rows. Substantial decrease in dry matter yield of maize ear at zero cm distance might be attributed to factor of closed interrow spacing which made interplant competition more intensified for light interception, necessary for photosynthetic activity. Lower dry matter yield in ear also reduced total digestible nutrients in intercropped maize because it was determining factor in calculation of digestible nutrients. The optimum yield and nutritive value of forage at wider interrow distance i.e. 5 cm between corn and soybean might be due to adequate interseed distance. Conclusion: Conclusively, pattern of corn and soybean seeding in rows at 5 cm distance was found suitable which provided adequate interrow distance to maintain enough mutual cooperation and decreased competition between both species for optimum production performance and nutritive value of intercropped forage.

The water in the crop cultivation shows difference according to the variety of crop, cultivations period and climatic condition. The growth and development, quantity and fruit enlargements are affected by soil water conditions. In previous study, leaf area and photosynthesis are decreased by lower soil moisture. Other research reported that excess moisture condition at vegetative and reproductive growth period in cultivation of soybean caused highest reduction in crop growth rate (CGR) and dry weights of plant parts. In particular, the damage was bigger during vegetative growth stage than reproductive growth period. Soybean (Glycine max (L.) Merill) is useful and popular crop throughout the world. It is very popular crop in Korea, China, Japan and other Asian countries. Soybeans used in various way including soybean sprouts, paste, soymilk, oil and tofu. Two soybean cultivars grown in four different irrigation conditions were determined for physiological responses. In this study, we examined leaf area (LA), leaf dry weight (LDW), specific leaf area (SLA), root dry weight (RDW) and shoot height (SH) in different water conditions. 50mL/9day irrigation periods showed the lowest contents in LA, LDW, RDW, SH. Water deficit caused increase of leaf Water saturation deficits (WSD), Cheongjakong 3 and Taekwangkong showed increase of leaf water saturation deficits (WSD) in drought conditions and leaf water potential and stomatal conductance were decreased. Photochemical efficiency was decreased in 50mL/1day irrigation condition while, there was decrease of growth and development in 50mL/9day with drought.
The purpose of this study was to compare the effect of solid-state fermentation on soybean using three microbial strains under four different fermentation times. Soybean was fermented for 12, 24, 36 or 48 hours with highly proteolytic microbes, either Bacillus amyloliquefaciens (BA), B. subtilis (BS), or B. subtilis var. natto (BN), and levels of total protein concentration, protein distribution, and antioxidant activity were analyzed. Total protein was highest in the BS 12 h group (9.21 ㎍·µL-1) and lowest in BN 48 h (6.80 ㎍·µL-1), respectively (p < 0.001). Furthermore, three microbes decomposed large molecular weight proteins as well as major allergens of soybean such as β-conglycinin, Gly m Bd 30K, and glycinin. Each treatment group showed the highest degradation rate at 48 h fermentation and among the three microbes, BS showed a relatively higher degradation rate. The radical scavenging ability, known as an indicator of antioxidant activity, showed a significant increase in all treatment groups except BA 24 h. The results from this study suggest that protein concentration, and degradation and antioxidant activity were affected by different types of microbial trains and fermentation period and that B. subtilis fermentation might be the most effective way to increase nutritional and functional properties of soybean.

Mesophilic aerobic bacterial counts were measured and compared for seasoned soybean sprouts produced in different seasons and sold in different market types. Very significant differences in microbial counts were found among seasoned soybean sprouts produced in different seasons (winter, spring, and summer) and among different market types (a traditional market, discount store, and department store). However, there was no significant difference among the stores within each market group. The interactions were significant at a 1% significance level. The variance of summer counts was much lower than spring and winter counts. Discount and department stores showed a higher variation in microbial counts than traditional markets. The microbial counts differed substantially from season to season in the same market group (summer > spring > winter) except between spring and summer in traditional markets. The microbial loads in the winter and spring seasons of seasoned soybean sprouts in traditional markets were clearly higher than in other market groups, while discount stores had the highest microbial count in summer.

The objective of this study was to investigate the physicochemical characteristics of soybeans cultivated in different regions and the accompanying soybean curd properties. To produce soybeans with regional competitiveness and demonstrate the distinctiveness of the soybean product, four regions(Paju, Andong, Muju, Hadong) and four varieties of soybean(Daewonkong, Daepungkong, Seonyukong, Cheogja 2) were selected for these experiments. There was a significant difference in the isoflavone content of soybeans and soybean curds(p<0.05). Soybeans from Andong had the highest content of genistein, daidzein and total isoflavone and soybeans from Hadong had the lowest content of these compound. Fatty acid composition of soybeans demonstrated a significant difference according to region(p<0.05). In particular, soybeans grown under adverse environmental conditions, such as high temperature and low latitude, contained the highest composition of oleic acid and the lowest composition of linoleic acid and linolenic acid. Although fatty acid content of soybean curd had a third of the fatty acid concentration of soybean, the same characteristic was observed in the fatty acid composition of soybean curd. In addition, both soybean and soybean curd had more than 80% unsaturated fatty acids and 50% of the unsaturated fatty acid content was linoleic acid. In conclusion, these results demonstrate the significant difference of soybean and soybean curd originating from different regions and showed the transition of nutritional constituents from soybean to soybean curd as a function of environmental factors. Therefore, we must consider these factors when manufacturing soy products.

The differences between organic and conventional soybean were studied based on their physicochemical properties by steaming treatment. There was no difference between the two kinds of soybean regarding crude protein, crude fat and crude ash contents. Reduction in sugar content was higher in raw organic soybean than raw conventional soybean. However, there was no difference between the two soybeans after steaming. Amino nitrogen content was higher in organic than conventional soybean. Further, there was no difference between the two soybeans after steaming. Regarding pH, acidity and salinity, there was no differences between the two soybean after steaming. Organic soybean was more bright than conventional soybean after steaming. The yeafercontent and number of bacteria in raw soybean were not different between the two soybean types. The number of fungi was higher in organic than conventional soybean. Upon steaming, the yeast number was different between two kinds of soybean. Further, the number of bacteria was higher in organic than conventional soybean. The number of fungi was not different between the two soybeans.
In order to cultivate the soybean sprout fortified with organogermanium, we observed growth characteristics and germanium content of soybean sprout watered with the aqueous organogermanium, Ge-132[bis(2-Carboxyethylgermanium sesquioxide)]. Soybean sprout did not show difference in growth when treated with different times and frequencies of organogermanium or different types of germanium. Growth of Orialtae soybean sprout was smaller in diameter of hypocotyledonary axis and longer in total length than that of Danyeob soybean sprout. Three hour's soaking was better in growth than half an boar's treatment. Germanium absorbed by soybean sprout was greater in content in Danyeob soybean sprout than in Orialtae soybean sprout and highest at 20 ppm in water. Prolonged period and increased frequency in treatments with organic germanium resulted in increase of germanium uptake. Germanium content in soybean sprout was greater with treatment of organic germanium than with inorganic germanium.

A double-cropping system with soybean (Glycine max) following the cultivation of potato, garlic, and onion is widely adopted in the southern region of Korea. For this system, marginal dates for planting must be determined for profitable soybean yields, because the decision to plant soybean as a second crop is occasionally delayed by harvest of the first crop and weather conditions. In order to investigate the effect of planting date on soybean yield, three cultivars (early and late maturity) were planted on seven different dates from May 1 to July 30 in both paddy and upland fields across 2012 and 2013. Soybean yields were significantly different among the planting dates and the cultivars; however, the interaction between cultivar and planting date was not significant. Based on linear regression, the maximum yield of soybean was reached with a June 10 planting date, with a sharp decline in yield for crops planted after this date. The results of this study were consistent with those of a previous one that recommends early and mid-June as the optimum planting period. Regardless of soybean ecotype, a reduction in yield of greater than 20% occurred when soybean was planted after mid-July. Frost during soybean growth can reduce yields, and the late maturity cultivars planted on July 30 were damaged by frost before completing maturation and harvest; however, early maturity cultivars were safely harvested. For sufficient time to develop and reach profitable yields, the planting of soybean before mid-July is recommended.
Soybean rice cake, which is often used in Hamkyungdo, is well hewn for a good taste and the slow firiming rate. Since soybean rice cake may taste different according to the amount of ingredients, this study will make a test of the taste and properties of two groups of soybean rice cake. One is prepared from rice flour mixed with yellow soybean and peanut flour at several rate, and the other is prepared from rice flour mixed with oil extracted from yellow soybean and peanut, the containing amount of which is the same as that of oil ingredient contained in each flour. Rice cake prepared mixed with extracted soybean oil shows better characteristics than that which is prepared mixed with soybean flour containing the same amount of oil. The result by sensory test reveals that the element which has a great influence on soybean rice cake is oil. Prepared mixed with extracted oil, soybean rice cake tastes best at 6% of oil, while rice cake prepared mixed with flour instead of oil tastes best at 8% of flour. As this study shows that the relation between firiming rate and oil has a significant influence on cohesiveness, moistness, and chewiness, it is needed to further study the effect of oil according to the kinds of the flour of rice or other grains used.
This investigation was conducted to study the effect of soybean mosaic virus (SMV) on various parameters of nodule formation at different stage of soybean plants. Differences in nodule formation were marked between soybean varieties tested, but nodules were small within soybean varieties infected with SMV. SMV-infection on soybeans were greatly reduced the number, size and weight of nodules, and the earlier the infection of SMV, the greater the reduction of nodules. Maximum reduction(83%) of nodules observed when "Kumkang-Daerip" soybeans were inoculated 2 weeks after seeding, but none occurred 8 weeks or later. Prominent decreases in number of nodules often resulted in an increase in nodu'e sizes in SMV-infected soybean plants.an plants.
