This study was carried out to estimate the effects of loess ($0\%$, $1.5\%$, $3\%$ and $5\%$) on the growth performance, meat quality, and blood composition of broiler chicks. A total of 320 broiler chicks at 1 day of age were divided into 4 groups to feed basal diet (control) and basal diet plus $1.5\%$ to $5.0\%$ loess respectively for 6 weeks. The body weight gain and feed conversion rate were not significantly different among the groups. The contents of moisture and crude fat of meats were significantly different in treatments when compared to that of the control group (P<0.05), but did not show any differences among the groups. The pH values of meats were not different among the treatments. However, water holding capacity was higher in all treated groups than the control. The L of meat color was also increased in all treated groups, but a and b of meat color were not different among the groups. In addition, the contents of unsaturated fatty acid content of meat were higher in the treated groups than the control. The concentrations of HDL cholesterol and triglyceride were significantly lower in all treated groups than the control (P<0.05). Finally, the contents of moisture of excreta were significantly lower in all treated groups than control (P<0.05). Taken together, it was concluded that loess did not improved the growth performance, but had effects on the improvement of meat quality.
This study was conducted to evaluate the quality characteristics of sulgidduck with addition of 0, 1, 3, 5 and 7% turmeric powder. The moisture content of sulgidduck ranged from 33.71% to 37.75. The addition of turmeric powder to sulgidduck tended to decrease the pH value, whereas it did not change $brix^{\circ}$ values of the samples. For Hunter color values, addition of turmeric powder to sulgidduck tended to decrease lightness (L) and increase redness (a) and yellowness (b). For textural characteristics, addition of turmeric powder decreased hardness, whereas adhesiveness and springiness of the samples were unaffected. The addition of turmeric powder to sulgidduk tended to increase gumminess. The addition of turmeric powder to sulgidduk tended to decrease chewiness. In the sensory evaluation, addition of 3% turmeric powder resulted in the best score in terms of taste and overall preference. Therefore, these results suggest that addition of 3% turmeric powder could be applied for making turmeric powder sulgidduk.
This study was performed to determine the optimal roasting temperature of mung beans for enhancement of antioxidative activities. Mung beans were roasted various roasting temperatures ($90{\sim}120^{\circ}C$ for 20 minutes), after which physicochemical compositions were determined. Variations in pH from 6.1 to 6.3, and reducing sugar content was highest in raw mung beans. Moisture decreased with increasing roasting temperature, whereas crude fat, crude ash, crude protein and carbohydrate contents showed no significant differences according to roasting temperature. The highest total phenol and flavonoid contents were under roasting conditions of $110^{\circ}C$ for 20 minutes. The highest DPPH radical, ABTS radical, and xanthine oxidase inhibitory activities were under conditions of $110^{\circ}C$ for 20 minutes. From these results, optimal roasting temperature of mung beans as a functional food resource was 110.

The objective of this study was to determine the proximate composition and antioxidant activities of Dioscorea spp. Samples were divided into Dunggeunma (D. bulbifra L), Danma (D. polystachya Turcz), Jangma (D. batatas Decaisne) and Danpungma (D. quinqueloba Thunb). The samples were extracted with 70% ethanol and analyzed for total flavonoid contents, polyphenol contents, DPPH radical scavenging activity, and ABTS radical scavenging activity. The moisture contents ranged from 11.96% to 15.01%. The crude protein contents were in the range of 7.86% to 11.55% (Dunggeunma 11.55%, Danpungma 10.48%, Danma 9.43%, Jangma 7.86%). The crude fat contents were between 0.37% and 0.43% (Danpungma 0.43%, Jangma 0.37%, Dunggeunma 0.37%, Danma 0.37%). In the antioxidant activities assay, total polyphenol content of Danma was significantly higher than those of other species at 115.47 mg/100 g gallic acid equivalent (GAE) (p<0.05), whereas it was significantly lowest in Jangma at 66.31 mg/100 g gallic acid equivalent (GAE) (p<0.05). ABTS and DPPH radical scavenging activities of Danma were significantly highest at 104.43 and 56.72 mg trolox eq/100 g (p<0.05). Therefore, antioxidant activities of Dioscorea spp. provide a possible scientific basis for assessing the performance of functional material of Dioscorea spp.

An investigation was conducted to evaluate the effects of supplementing Alisma canaliculatum, Viscum album and Cornus officinalis probiotics on the growth performance and immune response in growing pigs. This experiment was conducted using 120 pigs (crossing of Landrace${\times}$Yorkshire and castrated) which were assigned to 5 treatments in 3 replications with 8 pigs per replications. The dietary treatments were NC group (without antibiotics), PC group (basal+Oxytetracycline 50ppm), AC group (basal+A. canaliculatum 0.5%), VA group (basal+V. album 0.5%) and COP group (basal+C. officinalis probiotics 0.5%). The initial body weights of pigs were 35kg on average and the experiment lasted for 9 weeks. The experimental animals were kept in the pens following a completely randomized design. They were provided the diets adequate for grower stage as recommended by NRC (ME:3,265 kcal/kg and CP:16%). COP fed pigs showed lower weight gain up to 6 weeks of age compared to NC group and other groups without significant differences (P>0.05). The carcass weights of pigs fed VA and COP were significantly higher compared to NC group (P<0.05), Back fat thicknesses groups fed three different additives were higher than NC group and lower then PC group (P<0.05). Crude fat contents in loin meat were significantly lower in groups fed three different additives while moisture contents of those three groups were higher than other groups (P<0.05). The thiobarbituric acid reaction substance (TBARS) value measured at fresh and $2^{nd}$ weeks was lower in additives fed groups but no statistical differences were observed among the treatments (P>0.05). Significantly highest PUFA (16.42g/100g) and ${\omega}$-3 fatty acids (ALA, EPA and DHA) content of meat were observed in COP fed pigs compared to NC group (P>0.05), which might mean that three additives function to enhance serum IgG in pigs. In consequence, it can be suggested that AC, VA and COP may have a potential to replace antibiotics as growth promoter and immune enhancer in the diets for growing pigs.
Three feeding experiments were conducted to investigate the effects of herbs (Obosan-C or Obosan-O) as an additive in formulated diets on growth and body composition of juvenile abalone (Haliotis discus hannai), Three replicate groups of abalone initially average weighing 206 mg, 827 mg and 432 mg were fed the each one of experimental diet containing $0\%\;or\;1\%$ Obosan for 10 (experiment 1), 7 (experiment 2) and 19 weeks (experiment 3), respectively. In addition, an imported commercial diet for abalone was also employed to compare growth performance of juvenile abalone. Weight gain of abalone fed the diet containing Obosan-O was significantly (P<0.05) higher than that of abalone fed the control diet in the experiment 3. Moisture, crude protein and ash contents of soft whole body were not influenced by dietary herbs (P>0.05), whereas crude lipid content of abalone fed the diets containing Obosan-C was significantly (P<0.05) lower than that of abalone fed the control diet in the experiment 2. The results indicate that Obosan-O as an additive in formulated diet can improve body growth of juvenile abalone.
The aim of this study was to investigate the physicochemical characteristics of native Korean Allium wakegi Araki samples, which were grown from seven local seed bulbs(Yesan, Muan, Anmyon-do, Deokjeok-do, Jeju-do, Yecheon, and China) to produce high quality native Korean Allium wakegi Araki. For the proximate composition of samples, moisture contents were in the range of 90.69~92.43%. The crude protein content of the Jeju-do sample was highest compared to the other samples. However, there were no significant differences in total sugar contents between samples. The seed bulb origin did not affect the hardness of the stem part, but was high for the leaves of the Yesan sample compared to the other samples. The results for anti-oxidative activity were as follows: Yesan(2.30 mg/mL) > China(2.51 mg/mL) > Muan (2.56 mg/mL) > Yecheon(2.74 mg/mL) > Jeju-do(2.85 mg/mL) > Anmyon-do(2.87 mg/mL) > Deokjeok-do(3.18 mg/mL). In terms of mineral and amino acid contents, the Yesan sample showed the highest levels, respectively, compared with the other samples. Food values such as contents of total phenolics and pyruvic acid were highest in the Jeju-do sample. These results show that the physicochemical characteristics of Allium wakegi Araki were significantly different according to different seed bulb origins.

Moisture content of muffin tended to increased as increasing mixing rate of maesangi. For crude protein, sample group of 9% replaced by maesangi powder was the highest. For crude fat and crude ash, there was no significant difference among sample groups. The average height of muffin was 4.7 cm, but was no significant difference among sample groups. Volume of muffin has been gradually increased as increasing mixing rate of maesangi powder, but was no significant difference among sample groups. From the SEM (scanning electron microscope) result, thick cell wall and rough blowholes were appeared. L-, a and b-values of muffin was declined as per increase of mixing rate of maesangi powder. Hardness was inclined as per increase of mixing rate of maesangi powder. There were significant differences between sample groups and reference group for adhesiveness, springiness and cohesiveness, but was no significant difference among sample groups. For gumminess, sample group of 9% replaced by maesangi powder was the highest, but there were no significant difference from sample groups of 3% and 6% replaced by maesangi powder. Chewiness was inclined as per increase of mixing rate of maesangi powder, and sample group of 9% replaced by maesangi powder was the highest. From sensory test result, sample group of 9% replaced by maesangi powder was the highest for color, and there were significant differences among sample groups. Sample group of 6% replaced by maesangi powder was the highest for flavor and taste, and there were significant differences among sample groups. Sample groups of 6% and 9% replaced by maesangi powder were the highest for texture. Sample group of 9% replaced by maesangi powder was the highest for overall preference. From all these results, the most suitable one would be the sample group of 9% replaced by maesangi powder.

Sensory analysis and quality properties were performed on post-aged doenjang (fermented soybean pastes) in order to elucidate the contribution of citrus, green tea and cactus powder to their sensory evaluation. The doenjang added citrus fruits, green tea and cactus powder used a concentration of 0, 3 and 7% (w/w) at 4, 20, $30^{\circ}C$ respectively and analyzed the proximate composition, pH, salt, mineral and amino acid contents after 60 days. Moisture and protein changes during ripening did not show any significant difference. The pH showed lower in the doenjang added citrus and cactus powder than no added soybean paste. The glutamic acid content of doenjang added citrus fruits showed a little decreasing value although there were no differences between samples with various addition contents. Sensory evaluation of doenjang showed that there were no significant differences in preference in the case of added green tea and cactus powder; However, the flavor significantly increased doenjang added 3% citrus powder at $30^{\circ}C$. These results showed that the preference of doenjang containing 3% citrus powder was superior to green tea and cactus powder.
In this study, Bokbunja (Rubus coreanus), which has various medical applications and excellent functionality, was used together with Teriyaki sauce to compare and analyze the effect of different amounts of Bokbunja (0, 3, 6, 9, 12%) on the physico-chemical quality of a Teriyaki sauce. The sensual quality of Bokbunja Teriyaki sauce and a roasted eel spread with Bokbunja Teriyaki sauce was analyzed to detemine the merchandising potential of this sauce. The moisture content of the Teriyaki sauce decreased as the amount of added Bokbunja increased, and the 3% group showed the highest decrease, which was 73.1%. As the amount of added Bokbunja increased the pH was showen to decreased, and the sweetness of the Teriyaki sauce increased. The sauce containing 12% Bokbunja had the highest increase of $36.9^{\circ}Brix$. The amount reducing sugar was significantly different between each sample. In terms of the L (lightness) value, highter amounts of added Bokbunja resulted in an increase in the L (lightness) of the sauce and significant differences were obsered between sample groups. In regards to the texture, no significant changes were shown for hardness even though the amount of Bokbunja added was different. There was a significant difference between samples for gumminess, a highter concentration of Bokbunja resulted in a higher gumminess of the sauce. As for adhesiveness, there was a significant difference between samples; as more Bokbunja was added, the sauce became betwkier. In regards to the preference of roasted eel containing this sauce, the 6% Bokbunja sauce was the most preferred with a score 7.98 points, and as for flavor, there was significant difference between sauces containing 3, 6 and 9% Bokbunja. In addition there wasn't any significant difference between each sample for sweetness. For softness, the 6% Bokbunja sauce was the most preferred with a score of 9.36 points. The overall-acceptability was in this order: 6>9>3>0>12%, Thus, from the physico-chemical and sensual perspective, the 6% Bokbunja sauce is highly recommended for potential commercial use. In conclusion, we examined the effect of combining Bokbunja, which has medicinal applications and excellent functionality, with Teriyaki sauce and the results of this study indicate that Bokbunja combined Teriyaki sauce produce a high quality food that holds promise for commercialization.
