In the Health Promotion Law proclaimed on January 1995, nutritional improvement at national level was emphasized and designated as one of the jobs to be carried out by local governmnets. With such a situational necessity, we conducted a dietary survey along with an anthropometric measurement, biochemical assessment and questionnaire analysis on general characteristics of the students from 3 junior higher schools in Seoul area. About 300 students had participated in the study and the data from only 139 students, 28 boys and 111 girls, with complete report of dietary intake were subjected to analysis, comparison and discussion. Fasting blood samples were drawn and analyzed for hemoglobin, hematocrit and total cholesterol. Dietary intake was monitored by 1-day 24hr recall +2-day food record. In general, the average intake of nutrients for most of the subjects were above RDA for korean of that age except for 2 nutrients namely, vitamin A and calcium, of which average intake corresponded to 46-69% of RDA. In addition to this kind of nutritional imbalance, there were several other factors of nutritional problems such as skipping breakfast, overeating at dinner and frequent eating of snacks. As the best countermeasure for these kinds of nutritional problems, more detailed campaign and prractical nutrition education for these adolescents are necessary. Only through proper education and guidance for them, the healthy and intellectual man power could be guaranteed for the forthcoming 21st century.
This cross-sectional study was designed to describe in nutritional and health status of the Korean elderly residing in America using demographic variables, dietary, anthropometric and functional status indicators, and to investigate possible relationships among these variables. Sixty elderly persons aged 61-91 years were assessed in their homes. Dietary intake was estimated by the 24-hour recall and brief dietary questionnaire. The following anthropometric measures were taken : weight, height, knee height, triceps skinfold, and midarm circumference. Functional status was measured by activities of daily living(ADLs), instrumental activities of daily living(IADLs) questionnaires, and a measure of psychosocial status as "happiness score"(a life satisfaction questionnaire). Intakes of energy, calcium, magnesium, folacin, vitamin B6, and zinc were low in this elderly sample. Females 75 years of age and older had extremely low energy intakes. A large percentage of subjects reported difficulty with both activities of daily living and instrumental activities of daily living. Subjects over 75 years of age reported more difficulty than younger subjects for most activities. Gender differnces were seen in anthropometric variables and energy intake. Happiness scores were similar in subjects, regardless of age or gender, however, happiness score was significantly correlated with the energy and protein intake(p<0.05). Several difficulties were encountered during the assessment of this elderly sample. The conditions in the home were unpredictable and often inadequate for the anthropometric measures in particular. Further research is needed to improve current methodologies so that they may be more adaptable to the conditions found in homes. in homes.
This study assessed the nutrient intake for Korean adolescents using the estimated usual intake. The usual intake of 1,763 adolescents aged 12-17 years old was estimated from one-day 24-hour recall data in the 2010-2012 Korean National Health and Nutrition Survey. The nutrient intakes of four groups according to sex (male and female) and age (12-14 and 15-17 years old) were then assessed in reference to the 2015 Dietary Reference Intakes for Koreans. For macronutrients, the proportions of subjects below and above the Acceptable Macronutrient Distribution Ranges (AMDR) were calculated. The Estimated Average Requirement (EAR) cut-point method was used to assess insufficient intakes of protein, vitamin C, thiamin, riboflavin, niacin, calcium, phosphorus, and iron; the full probability approach was used to assess the insufficient intake for iron among females. The proportions of subjects over the Tolerable Upper Intake Levels for vitamin C, niacin, calcium, phosphorus, and iron and the proportions over the Intake Goal for sodium were calculated to assess excessive intake. The proportions of subjects above AMDR for carbohydrates ranged from 22.5% to 38.0% by group. The proportions of subjects by group with insufficient intake for vitamin C, riboflavin, calcium, phosphorus, and iron ranged 29.1-39.7%, 22.5-34.3%, 73.1-89.3%, 14.3-43.6%, and 23.2-55.5%, respectively. The proportions of subjects by group with excessive intake for sodium ranged from 91.5% to 99.3%. The results of this study represent important basic information to establish nutritional standards for school lunches as well as to decide on relevant nutrition policies for adolescents.
This study aimed to examine the relationship between nutrient intake and attention deficit hyperactivity (ADH) of children suffering atopic dermatitis. We examined clinical symptoms as well as the status of ADH and the dietary intake of 47 children with atopic dermatitis aged between 4 and 6 against 84 children in the control group. Family history of the atopic dermatitis group was significantly higher than the control group. There was no significant difference between the diet habit of the two groups. The daily energy intake of the atopic dermatitis group and the control group were 1,189.7 kcal and 1245.0 kcal, respectively. There was no significant difference between the nutrient intake of the two groups. In regards to the clinical symptom items, the point for 'anxieties' was 0.5 in the atopic dermatitis group, which was significantly higher than 0.3 of the control group (p<0.05). In terms of the detailed items in ADH assessed by kindergarten teachers, the point for 'changeable feeling' was 0.8 in the atopic dermatitis group, which was significantly higher than 0.5 of the control group (p<0.05). As for the correlation among nutrient intake, the ADH score and clinical symptoms, total fat intake (p<0.05) and animal fat intake (p<0.05) showed a significantly negative correlation with the point of ADH assessed by the teachers, while the intake of fiber (p<0.05) displayed a significantly negative correlation with the point of ADH assessed by the parents. Since atopic dermatitis and ADH may be caused by the same dietary factors, it will be necessary to conduct more studies in this field in the future. In addition, appropriate nutrition management will be necessary for children in the growing period who suffer from atopic dermatitis.
The consumption of a wide variety of food groups is considered one of the key components of nutritional adequacy. The 2005 Dietary Guidelines for Koreans includes the consumption of a variety of foods from diverse food groups as a component of a normal diet. A survey was conducted to evaluate the relationship between the dietary diversity of food groups and nutrient intake in elderly patients (age 65 and above) at a rural area in Korea (Inje). 296 subjects (111 male and 185 female) were probed in a 3 day 24-recall dietary survey. Subjects were grouped according to food group intake frequency, based on six food groups (grain, meat/fish/legume/egg, vegetable, fat/oil, dairy, fruit). Nutritional quality was evaluated according to the numbers of nutrients under EAR (Estimated Average Requirements), and MAR (mean adequacy ratios). The frequency of elderly subjects consuming a meat/fish/legumes/egg food group less than once per day was 29.4%. The frequency of elderly subjects consuming fat/oil food group less than once per day was 65.8%. The percentage of subjects who did not eat dairy food was 88.8%, and that of subjects who did not eat fruit was 57.5%. A stepwise multiple regression analysis was used to develop models relating nutritional quality to possible food group intake frequency factors. Using the number of nutrients under EAR as a dependent variable, the meat/fish/legume/egg food group intake frequency explained 9.9% of variance, followed by the grain group, fat/oil group, dairy group, and vegetable and fruit group (Model $R^2$=0.260). For mean nutrient adequacy ratio as a dependent variable, the model $R^2$ was 0.326. The results of this study suggest that a highly varied diet in elderly might be associated with better nutritional quality, as assessed by nutrient intake. Accordingly, dietary guidelines should take into consideration nutritional characteristics in order to improve intake from all major food groups and to provide a variety of foods in the diet.

The dietary requirement for zinc to maintain optimally the various metabolic and physiological funcitons is still under study. Human beings adapt to reductions in zinc intake by reducing the rate of growth or zinc excretion. Reductions in dietary zinc beyond the capacity to maintain homeostasis lead to utilization of zinc from an exchangeable pool. Loss of a small, critical amount of zinc from this pool leads to both biochemical and clinical signs of zinc deficiency. Zinc requirements have been assessed by balance studies and factorial method. As tissue zinc status influences endogenous losses and the dietary needs, individuls in good status may require higher amounts of zinc than those in poor status. While plasma zinc is insensitive to reducitons in dietary zinc, it is regarded as a valid, useful indicator of the exchangeable pool of zinc. Plasma metallothionein concentrations may prove useful for identifying poor zinc status. It has been suggested that functional end point measurement is the new direciton for zinc requirement. However, determination of the functional response to a marginal zinc intake is difficult because of the lack of a specific, sensitive indicator of zinc status. Presently, no good method for assessment of human zinc requirements exists.
BACKGROUND/OBJECTIVES: The dietary intake of foods with fermentable oligosaccharides, disaccharides, monosaccharides, and polyols (FODMAP) is known to adversely affect patients with irritable bowel syndrome (IBS). However, the effects of FODMAP have been studied predominantly among Western populations. This study aimed to identify foods high in FODMAP content which form a part of the Korean adult diet and obtain basic data for the preparation of IBS guidelines. SUBJECTS/METHODS: An online survey of 1,000 adults from the general population in the age group of 20 to 40 years was performed. Data from 787 participants (men, 386; women, 401) were analyzed. The general characteristics of the participants, health status, IBS diagnosis using the Rome III diagnostic criteria, semi-quantitative food frequency questionnaire findings, and food items causing symptoms were analyzed. RESULTS: Overall, 169 participants (21.5%) had IBS. The contribution of the FODMAP nutrients in both IBS and healthy groups was as follows: fructan > lactose > excess fructose > sorbitol > mannitol > galacto-oligosaccharides (GOS). The fructan intake was 4.6 ± 2.2 g/day and 4.3 ± 2.5 g/day in the IBS and healthy groups (P = 0.014), respectively. In the IBS group, the ratio of the intake of fructan to the total FODMAP intake was 39.5%, 29.8%, and 5.8% through onions, garlic, and bananas, respectively. CONCLUSIONS: Fructan was the FODMAP nutrient most consumed by Korean adults. Therefore, given the difference in the dietary habits of each country's population, the dietary guidelines for IBS should be country specific.
A cross-sectional study to determine dietary intake and plasma triglyceride total cholesterol LDL-cholesterol and HDL-cholesterol of 185K Korean men was conducted across three different age groups The younger group (age 21 to 34) was significantly (p<0.001) taller but showed lower (p<0.05) percent body fat than the older group (age 45 to 60) Weight and body mass index was not different among age groups. However, anima fat intake was significantly (p<0.05) correlated with plasma total cholesterol and triglyceride concentrations in the older age group. On the hand percent body fat was correlated (p<0.05) with all of the plasma lipid and lipoprotin concentrations examined for all age groups Results indicate both dietary intake and percent body fat are important determinants of the plasma lipid concentrations is the elderly but only percent body fat or body mass could be valid predictors for the plasma lipid concentrations of the younger age group.
BACKGROUND/OBJECTIVES: The long-term health impacts of dietary sugar have begun to be reported. The committee on the 2020 Dietary Reference Intakes for Koreans for sugar intended to update the scientific evidence on the association of added sugar intake with health outcomes, including mortality. This study evaluated the evidence on the association of dietary sugar with the all-cause and cardiovascular disease mortality from cohort studies. SUBJECTS/METHODS: The PubMed and ScienceDirect databases were searched until July 2021. The search terms were based on multiple combinations of keywords, such as added sugar, beverage, and mortality, included in the title or abstract. Two authors independently assessed the eligibility criteria of study selection and extracted the information from each selected article for this systematic review. RESULTS: The literature search identified 276 articles. Seventeen cohort studies met the inclusion criteria and were included in this systematic review. This study extracted information on the cohort and participants, dietary assessment methods, exposure and its comparison groups, health outcomes, and risk measures. Five articles reported added sugar intake, and 15 articles reported the food sources of the added sugar in the association with mortality. Increased mortality was observed in higher added sugar intake and a lower intake of less than 5% of energy, while higher discrepancies between gender, age groups, and countries were noted. In addition, nutritious sugary foods and beverages did not increase mortality. CONCLUSIONS: A 'U' or 'J' shaped relationship between the added sugar intake and mortality was estimated. The observed discrepancy indicated the need for more evidence to establish the dose-response relationship for Koreans.

BACKGROUND/OBJECTIVES: Vitamin D is produced in the skin during sun exposure and is also ingested from foods. The role of vitamin D needs to be considered in the prevention and management of various diseases. Moreover, since the majority of Koreans spend their days indoors, becoming susceptible to the risk of vitamin D deficiency. The current study aims to prepare a basis for determining dietary reference intake of vitamin D in Korea, by reviewing the evidence against various diseases and risks. MATERIALS/METHODS: Literature published in Korea and other countries between 2014 and 2018 was prioritized based on their study design and other criteria, and evaluated using the RoB 2.0 assessment form and United States Department of Agriculture Nutrition Evidence Library Conclusion Statement Evaluation Criteria. RESULTS: Of the 1,709 studies, 128 studies were included in the final systematic analysis after screening. To set the dietary reference intakes of vitamin D based on the selected articles, blood 25(OH)D levels and indicators of bone health were used collectively. Blood vitamin D levels and ultraviolet (UV) exposure time derived from the Korean National Health and Nutrition Examination Survey were analyzed to establish the dietary reference intakes of vitamin D for each stage of the life cycle. The adequate intake levels of vitamin D, according to age and gender, were determined to be in the range of 5-15 ㎍/day, and the tolerable upper intake level was established at 25-100 ㎍/day. CONCLUSIONS: The most important variable for vitamin D nutrition is lifestyle. A balanced diet comprising foods with high contents of vitamin D is important, as is vitamin D synthesis after UV exposure. The adequate intake level of vitamin D mentioned in the 2015 Dietary Reference Intakes for Korean (KDRI) remained unchanged in the 2020 KDRI for the management of vitamin D nutrition in Koreans.
