Effect of Dried Leaf Powders and Ethanol Extracts of Perilla Frutescens, Artemisia Princeps Var. Orientalis and Aster Scaber on Lipid Metabolism and Antioxidative Capacity in Rats (깻잎, 쑥, 참취의 건분 및 에탄올 추출물이 흰쥐의 지방대사와 항산화능에 미치는 영형)

  • This study was performed to investigate the effects of dried leaf powders and ethanol extracts of Perilla frutescens(perilla leaf), Artemisia princeps var. orientalis(mugwort) and Aster scaber(chamchui) on lipid metabolism and antioxidative capacity in rats. Forty-nine male Sprague-Dawley rats weighing 105.9$\pm$1.7g were blocked into seven groups according to body weigth and raised for four weeks with diets containing 5% dried powders of perilla leaf, mugwort and chamchui, or ethanol extracts from the same amount of each dried leaf powder. Food intake was higher in the control and chamchui powder groups than the other remaining groups. Weight gain was not significantly different among all experimental groups. Food efficiency ratio was highest in the perilla leaf powder group. Plasma total lipid and cholesterol, liver total lipid and triglyceride levels were highest in the perilla leaf powder group. In contrast, dried powders of mugwort and chamchui showed hypolipidemic effects in plasma and liver. Plasma and liver TBARS levels in both dried powder and ethanol extract groups of the three plants were lower than control. There was also no significant difference between corresponding dried powder and ethanol extract groups. Catalas and GSH-Px activities in erythrocyte and liver were not different among all the experimental groups. However, SOD activities were significantly different among the esperimental groups. In erythrocyte. SOD activiteis of all dried powder and ethanol extract groups except the perilla leaf powder group were higher than control, and the chamchui power group showed the highest activity among them. In liver, all the plant groups showed higher SOD activities than control. There was no significant difference between corresponding dried powder and ethanol extract groups. In conclusion, the dried chamchui powder and liver. All the dried plant powder and ethanol extract were effective in decreasing the TBARS levels of liver and particularly plasma. Among the antiocidative enzymes, SOD activity was most responsive to the experimental diets. All the plant groups showed increases in liver SOD activities and there were more increments in dried powder groups. Since the effects of dried powder groups on lipid metabolism were better than those of extract groups, it is plausible that the high dietary fiber level in dried powders was effective. Antioxidative effects were not significantly different between corresponding dried power and extract groups, and it was thought that ethanol extracts from three plants also had similar antioxidative effects as dried powderers.

  • This study analyzed the nutritional composition (proximate composition, total dietary fiber, calories, minerals, fatty acids, and amino acids) of 10 noodle products (tteok ramyun, jjamppong ramyun, kimchi ramyun, instant udon, cup ramyun, jajangmyun, bibimmyun, cream spaghetti, ssalguksu, and milmyun), which account for 85% of the cumulative intake of one or more key nutrients, using data from the 7th Korea National Health and Nutrition Examination Survey. The moisture contents of bibimmyun, jajangmyun, and cream spaghetti were lower than those of the other noodle products, whereas the crude fat, crude protein, carbohydrate, and calorie contents were the highest. Cream spaghetti had the highest mineral, fatty acid, and amino acid contents, followed by bibimmyun and jajangmyun. Ssalguksu had the lowest contents of most nutrients. These data could be used to populate a food composition database, which can provide consumers with the nutritional information about frequently consumed noodle products.

  • The study was conducted to investigate the effect of whole-wheat ratio and nutrition information provision on purchasing behavior and consumer intention among individuals in their twenties who lack calcium intake. In the end, this study aims to provide basic data on the development and marketing strategy of customized nutrition-reinforced snacks. Regarding whole wheat ratios, the acceptance of taste of whole wheat flour was highest in ZF but didn't seem significant difference with HF's. The familiarity of taste and flavor (P <0.001), purchase intention (p <0.001) and recommendation intention (p <0.001) were higher in order of ZF, HF and TF. Regarding information provision, familiarity of taste and flavor (P <0.05), purchase intention (p <0.05) and recommendation intention (p <0.05) were higher in order of detailed information group, non - information group and simple information group. Therefore, developing calcium-fortified biscuit, mixing whole wheat flour with normal flour might reduce consumer's resistance, Also, providing detailed information on the degree of fortification of calcium and dietary fiber might cause a synergistic effect on consumption.

Association Between Parental Socioeconomic Level, Overweight, and Eating Habits with Diet Quality in Korean Sixth Grade School Children (부모의 사회경제적 수준 (가구 월수입, 부모 교육수준)과 초등학교 6학년 학생의 과체중 및 식습관, 식사 질과의 관계)

  • This study investigated the association among parental socioeconomic level, overweight, and eating habits with diet quality in Korean sixth grade school children. A 3-day dietary survey was conducted, and a questionnaire and anthropometric data were collected from the Korean child obesity cohort (320 boys and 345 girls). The children were classified into two groups (low or high level) based on monthly household income and paternal and maternal education status. Lower maternal education status was associated with a higher risk for overweight in girls (odd ratio, 1.91; 95% confidence interval 1.07-3.44), whereas belonging to a higher socioeconomic group in terms of parental income or parental education level resulted in the consumption of significantly more fruit. Boys did not show significant differences in the intake of most nutrients or diet quality regardless of socioeconomic status. However, girls in the lower socioeconomic group had a lower food habit score (higher frequency of breakfast skipping and ramen noodle consumption), diet quality, and intake of nutrients (carbohydrate, vitamin C, potassium, and fiber) than those in the higher socioeconomic group. Therefore future nutrition policies and interventions should support parents and children with lower socioeconomic status to develop health-related behaviors that may prevent childhood overweight.

A Study on the Menu Development for the Elderly during Busy Farming Season in Gyeongbuk Andong (경북 안동시 농번기 농촌노인 식단개발 연구)

  • Dietary life style of the elderly living in rural areas of Gyeongbuk Andong during the busy farming season was surveyed and a monthly meal plan for the elderly was developed using eco-friendly native crops and considering the characteristics of a busy farming season and their preferences. A week meal plan was selected and applied to those fields. The meal plan was developed for an elder's house in Gyeongbuk Andong during the busy farming season. Especially, to increase the intake of calcium and dietary fiber, bamboo sprouts, pepper leaves, dried slices of whitebait, and fried anchovies were used. Considering the busy farming season, the ginseng chicken soup and the soybean noodle soup were served to provide high quality of protein and to improve health condition. A cold soup of cucumber and brown seaweed was used to supplement liquid, vitamins, and minerals. The results are as follows: the highest score of the preference on a staple was 8.77 for the boiled barley of menu 5; the favorite soup was the ginseng chicken soup (8.73) in menu 4; for side dishes, those in menu 5 were most popular (8.69); the favorite meal was the ginseng chicken soup of menu 4 (8.69). Regarding the amount of leftover foods, the lightest was 30.14 g in Gyeongbuk Andong menu 3 which significantly indicates high preference (p<0.05). The current study was a planned meal service menu using local crops and seasonal foods, which was actually applied to the field resulting in high preference and satisfaction levels.

  • It has been reported that trans fat (tFA) may have adverse or beneficial effect depending upon the position and number of double bonds. The presence of tFA in human tissues and fluids is related to dietary intake, intestinal absorption, metabolism and storage, exchanges among compartments. This study investigated the effect of breads containing tFA, soybean or rice on postprandial plasma fatty acid and lipid composition. 33 healthy volunteers were divided into 3 groups and fed soybean bread, rice bread or wheat bread groups containing equivalent amounts of tFA (elaidic acid rich, 3.75 g/day), respectively. Postprandial lipid profiles at 0, 1, 2, 3 and 4 hours after a respective meal were studied. Plasma fatty acid was extracted by the method of Folch and methyl ester of fatty and prepared by acid transmethylation and analyzed by Gas Chromatography. Peaks were identified using pure reference compounds and quantified. Postprandial data indicated that consumption of soybean and rice breads with 3.75 g tFA retarded the appearance of C18:1 and C18:2 tFA in plasma lipid compared to that of wheat bread. Futhermore, soybean and rice bread groups showed lower plasma saturated fatty acid levels than wheat bread group. Postprandial TG level was significantly lowered in soybean bread group compared to that of rice and wheat bread groups. These results imply that soybean bread with high dietary fiber content and biologically active substances may inhibit or delay lipid absorption.

Prevalence of Constipation, Bowel Habits and Nutrient Intakes of College Students in Incheon Area (인천지역 대학생의 변비유병률, 배변습관 및 영양소섭취)

  • This study was conducted to estimate the prevalence of constipation, bowel habits and nutrient intakes of college students. The subjects were 353 college students (166 males and 187 females) aged 19 to 29 years in Incheon area. The subjects were asked about bowel habits and dietary intake using questionnaires during march, 2008 and the prevalence of functional constipation (FC) was based on the Rome II criteria. The prevalence of FC in male and female students was 12.7% and 28.9%, respectively. The prevalence of self-reported constipation in male and female students was 12.0% and 36.9%, respectively. Both were higher in female students compared to male students. Among the subjects that have self-reported constipation, proportions of FC were 35.0% in male students and 55.1% in female students. Of subjects that did not self-reported constipation, the proportions of FC were 9.6% in male students and 13.6% in female students. Over 90% of respondents that self-reported constipation in male students, had neither visited a hospital and nor used laxatives or functional foods for constipation relief. Seventy five point three percent of male students, and 40.1% of female students, had a defecation frequency of over 5 times per week (p < 0.001). Ratios intaken under the estimated average requirement (EAR) of Vit A, Vit C, folic acid and Ca were over the 50% regardless of functional constipation. Mean daily consumption of total dietary fiber was 15.0 g/day in male students and 13.5 g/day in female students. According to these results, both functional constipation and self-reported constipation are more frequent in female college students and further studies are required in case-control study and related to psychological factors as well as nutrients to relieve of constipation.

A Study on Correlations between Dietary Nutrients and Body Composition of College Students (남녀 대학생의 영양소 섭취 상태와 체성분 조성의 상관관계)

  • A survey was conducted for 221 male and 191 female college students to study correlations between dietary food intakes and body composition. Among the subjects 75 male and 82 female students were analyzed body protein mass, body mineral mass, percent body fat, waist-hip ratio (WHR), body mass index (BMI) and fitness score using Inbody 3.0. The results show that 94.6% of the males and 24.7% of the females were observed at high level in body protein mass. As for body mineral mass, 86.4% of the males were observed below the normal range. As for WHR, 32.1% of the males and 43.5% of the females were evaluated as abdominal obesity. As for BMI, 34.8% of the males were observed above the normal range. In female students, correlation coefficient between sodium intakes and age showed significantly negative 0.232 while correlation between calcium intakes and self-reported health status showed significantly positive 0.234. In males, correlation coefficient between fiber intakes and self-reported health status resulted in significantly positive 0.237 and that between BMI and age showed significantly positive 0.276. In females, correlation coefficient between type of living and WHR showed significantly positive 0.253 and that between self-reported health status and percent body fat showed significantly positive 0.230. Also correlation coefficient between body protein mass and sodium intakes showed significantly negative 0.276 in female students.

Effects of Partial or Total Replacement of Maize with Alternative Feed Source on Digestibility, Growth Performance, Blood Metabolites and Economics in Limousin Crossbred Cattle

  • Increasing cost and scarcity of maize has stimulated the use of alternative feed sources (AFS) in the diets of cattle. In this study, we investigated the effects of partial or total replacement of maize on nutrient digestibility, growth performance, blood metabolites, and economics in Limousin crossbred feedlot cattle. Forty-five $Limousin{\times}Luxi$ crossbred bulls were randomly assigned to the three treatment groups, orthodox diet (OD; 45.0% maize), partial replacement diet (PRD; 15% maize, 67% AFS), total replacement diet (TRD; 0% maize, 100% AFS). The growth feeding trial lasted for 98 days. Dry matter intake (DMI) and average daily gain (ADG) were recorded. The digestion trial was carried out after the end of the growth trial. Total faeces and feed samples were measured daily. Digestibilities of dry matter (DM) and organic matter (OM), crude protein (CP), neutral detergent fiber (NDF) and acid detergent fiber (ADF) were calculated. After the feeding trial, blood metabolites were measured in 12 animals from each group. Initial and final body weights did not differ significantly among treatment groups (p>0.05). The ADG and DMI were 1.72 and 8.66, 1.60 and 9.10, and 1.40 and 9.11 kg/d for OD, PRD, and TRD, respectively. The PRD and TRD exhibited lower ADG (p<0.01) and higher DMI (p<0.01) than OD. The DMI (%body weight) was comparable between groups (p>0.5). Feed efficiency of PRD and TRD were lower than OD (p<0.01). The DM digestibility decreased with reduced level of maize (p = 0.10), OM digestibility was higher in OD (p<0.05), and CP, NDF and ADF digestibilities were similar for all groups (p>0.05). Blood urea nitrogen (mg/dL) in PRD and TRD was higher than OD (p<0.01), while other blood parameters did not differ significantly. Feed costs ($/head/d) were 1.49, 0.98, and 0.72 for OD, PRD, and TRD, respectively (p<0.01). Feed costs per kg gain ($) were significantly lower for PRD (0.63) and TRD (0.54) than OD (0.89; p<0.01). Overall profit ($/head) and daily profit ($/head/d) did not differ significantly between treatments (p>0.05), although TRD showed the highest economic benefits overall (p<0.01). While a traditional diet maximized the growth rate, partial or total replacement of dietary maize with AFS proved economically feasible due to their lower costs and comparable nutrient digestibilities of DM, CP, NDF, and ADF. Partial replacement may prove economically competitive in the current situation of China.

Study of Radiological Approach to Treat a Chronic Constipation (만성변비환자의 방사선학적 접근방법에 관한 고찰)

  • I. Introduction : The constipation is one of the common gastrointestinal symptoms seen in the clinical practice. When people come to the clinic complaining of the constipation, it is generally one of the cases of infrequent, painful or difficult evacuation as well as the hardened feces and unsatisfactory evacuation sense. Since the constipation is heavily influenced by dietary habit as well as the social and medical environment, the diagnostic radiology is useful to establish the objective and standardized definition in consideration of those various factors before diagnosis and treatment of the constipation patient. This paper describes the study of such diagnosis. II. Main Subject : Testing of CTT (colon transit time) is key study of the colon performance. CTT is very helpful in classifying the pathologic physiological types and defining the treatment plan for the chronic constipation. The study methods include using the radipaque marker, multiple marker technique and scintigraphic measurement. The defecography is the functional radiologic examination a that provides not only the anatomical information of anorectal but also performance of the pelvic floor and rectal change during evacuation. Study of dynamic movement of the anorectal during evacuation is helpful for diagnosis and treatment planning as well as follow-up testing for the constipation patient. One of the issues essential for the case history is the thorough observation of whether the patient shows the psychic psychological symptoms such as the behavior disorder or emotional disturbance. In that case, the decision must be made whether or which type of medication is needed for such psychiatric problem. III. Conclusion : The main causes of the constipation are insufficient intake of fiber or liquid. The key objective of such tests is to check etiology of the constipation. In general, the radiological examination does not provde the colon or anorectal performance information. It is envisaged that this study will provide the information to decide the testing and treatment plans and predict the prognosis of the patient by classifying the pathologic physiological types.
