The purpose of this study was to investigate the effect of cooking activities on the unbalanced dietary food habits of elementary school students and develop the effective cooking activity program for the improvement of unbalanced dietary behaviors as well as the food intake and menu acceptance. The subjects of this study were 256 elementary school students. The cooking activity group and control group were consisted of 128 students of $3^{rd}$ & $5^{th}$ grader each. Both cooking activity and the control group took the same 1-hour nutritional theory based class for 10 sessions. Only Cooking activity (CA) group took additional 10 sessions of 1-hour cooking class. Programs for cooking activity were developed and 10 cooking activity sessions were taken place for 4 months. The questionnairs were used to evaluate the effect of the cooking activities over the intake of food group, unbalanced dietary behavior, eating attitudes, menu acceptance before and after the completion of all the cooking activities. Cooking activities affect the unbalanced dietary behaviors and the intake of food groups. Fish, cereals, milk products, fruits, potatoes, vegetables were more eaten by CA group than control group. Eating attitudes and unbalanced dietary behaviors of CA group are also improved significantly than control group. From these results, it was concluded that cooking activities had the positive effect on the improvement of unbalanced dietary food habits over vegetables, cereals, fish, milk product and fruits as well as the unbalanced dietary behaviors of the elementary school children.
This study investigated the effect of different dietary fats and fibers on colon tumor incidence and cell proliferation, the levels of eicosanoids and polyamines in colonic mucosa of DMH-treated rats. The experiment was conducted on male Sprague Dawley rats using a 2 $\times$3 factorial design with two fats (corn oil and DHA-rich fish oil) and two fibers (cellulose and pectin) and a fiber-free control. The rats were find an experimental diet containing 15% (w/w) dietary fat and 6% (w/w) fiber for 25 weeks. Tumor incidence was Bower in rats fed fish oil as opposed to corn oil. The levels of arachidonic acid (AA) and eicosanoids ($PGE_2, and TXB_2$) in normal colonic mucosa were significantly lower in rats fed fish oil and there was a concomitant increase of docosahexaenoic acid (DHA). The levels of eicosanoids and AA in tumor tissues were significantly higher than those of normal colonic mucosa. The level of polyamines in normal colonic mucosa was not affected by dietary fats but was significantly lower than that in rumor tissues. Dietary fiber did not have a significant effect on rumor incidence and the levels of AA, eicosanoids and polyamines. Overall, fish oil rich in DHA reduced cell prolifiration and thus inhibited colon carcinogenesis through its effect on the distribution of AA and production of eicosanoids in normal colonic mucosa. However, its effect on colon carcinogenesis revealed a lack of consistency depending on the type of dietary fiber in diet.
The physicochemical, rheological and sensory characteristics of Backsulgies added with dietary fibers-cellulose, pectin and wheat bran-were investigated. The maximum acceptable ratio of fibers was 10% for wheat bran or cellulose, 3% for pectin. As me results of physicochemical analysis, cellulose and pectin had larger water-binding capacity man wheat bran. Swelling power was increased with temperature increment. But the type of added dietary fiber did not make significant differences. The degree of gelatinization was measured by maltose content. The retrogradation of backsulgies was significantly delayed by the addition of dietary fibers. The retardation effect of dietary fibers for retrogradation of backsulgies was also proved by textural analysis and time constant determination of Avrami equation. Pectin had especially excellent delaying effect while me storage time extended. There were no significant differences in sensory characteristics between me backsulgi with no dietary fibers and backsulgies added with cellulose 3%, pectin 1% and wheat bran 3%. Therefore, we concluded mat cellulose 3%, pectin 1% and wheat bran 3% were me optimum addition ratios, which have the delaying effect of retrogradation, and which could be accepted as same as conventional backsulgies organoreptically.
The present study was conducted to investigate effect of dietary protected amino acid on milk yield and composition in dairy cow using meta-analysis. Total 21 research papers were employed in analysis, and mixed model was used for the analysis of effects. Effect of protected methionine (PM) and combination of protected methionine and lysine (PML) were investigated under two different levels of dietary crude protein (CP, <18% and >18%). For performance of dairy cow, milk yield, milk composition including milk fat and protein content and yield and 4% FCM (fat corrected milk) production were used for analysis. In case of milk yield, a trend of increment was found at PM supplementation at low CP (P=0.055). However, the effect of PM at high CP was detected as not significant (P>0.05). In case of milk protein, inclusion of PM at low CP showed significant decrement (P<0.05). However, there was no significant effect of MP on milk protein at high CP (P>0.05). Supplementation of MP at high CP level showed significant increment of milk fat (P<0.05). MP supplementation represented significant increment of 4% FCM production (P<0.05) regardless of dietary CP levels. Effects of PML on milk yield and composition at both of low and high dietary CP were not significant in this study. However, it seem to be that there was a possible positive effect of MPL application at high dietary CP on performance of dairy cow.
The main purpose of this study is to investigate the effect of housewives' dietary awareness and habits on the reduction and recycling of food waste products. We have done statistical analyses of 501 questionnaires answered by housewives living in Taegu city. The results are as follows: The dietary awareness is significantly different according to the housewives' ages. The group of above 50's age and the group of housewives and their husbands with a lower education level have a more traditional awareness and eating up habits. Also the younger group, and those with a higher education level who grew up in a big city have a more progressive dietary awareness. But the younger, higher income, small family, higher education level groups, and also employed housewives, produced more food waste products than the other groups, The groups thsose have traditional or rational awareness concerning dietary awareness, and those with good eating up and accurate cooking habits turned out to have more affirmative effects on the reduction and recycling of food waste products.
The present study was performed to assess nutritional status of thiamin in 104 elementary school children, living in rural areas of Chungbuk. Dietary intake was obtained by 24 hour recall method and blood was collected to analyze the transketolase activity in erythrocytes. Average dietary intake of thiamin was found to be adequate (1.l5mg, 109.2% of RDA), even though dietary intake of energy was not more than 1,719kcal, 81.5% of RDA. Transketolase activity in erythrocytes was distributed in the range of 0.294-0.744mU/mgHb and the mean value was 0.540mU/mgHb. The mean value of TPP effect was 7.9% and the range was 0-77.4%. It appeared that 7.7% of children were deficient in thiamin, severely or marginally. There were no significant correlations between transketolase activity and dietary thiamin intake, and between TPP effect and dietary thiamin intake. Mean DVS (Dietary variety score) of the children was 14.2${\pm}$3.2 and DVS was apparently correlated with thiamin intake.
BACKGROUND/OBJECTIVES: The consumption of dietary supplements has shown an increase among young people in their 20s. We aimed to compare the use of dietary supplements and related factors between Chinese international and Korean college students living in South Korea. SUBJECTS/METHODS: We conducted online surveys of 400 Chinese international students and 452 Korean college students from January to February 2021. We analyzed the factors related to the use of dietary supplements by these students using multi-group structural equation modeling and logistic regression analysis. RESULTS: Approximately 65% of the Chinese international students and 93% of the Korean college students consumed dietary supplements at least once in the year preceding the survey. The common types of dietary supplements consumed by both groups of students were vitamin and mineral supplements, Lactobacillus products, and red ginseng products. Structural equation modeling showed that perception of the consumption of dietary supplements by family and friends positively influenced attitude toward dietary supplements. This effect was higher for Korean college students than for Chinese international students (P < 0.01). Attitude toward dietary supplements positively influenced their use, and this effect was higher for Chinese international students than for Korean college students (P < 0.001). Logistic regression analysis showed that the use of dietary supplements by Chinese international students was significantly associated with age, self-reported health status, interest in health, perception of and attitude toward dietary supplements, and length of residence in South Korea. Among Korean college students, it was associated with exercise frequency and attitude toward dietary supplements. CONCLUSION: This study showed significant differences in the use of dietary supplements and related factors between Chinese international and Korean college students. Therefore, nutrition education programs on dietary supplements need to have differentiated content for each group. Such differences also suggest that the industry should consider the relevant characteristics of college students while developing and marketing dietary supplements.
The effect of dietary pectin, tangerine pulp meal, propionate, lactate or fumarate on cholesterol (C) and triacylglycerol(TG) levels in the serum and liver, and the effect of pectin on dietary C absorption were studied in a series of three experiments. Mature female Sprague Dawley rats were fed a control diet or diets containing 5% pectin, 5% tangerine pulp meal, 3% propionate, 3% lactate 3% fumarate, or 10% pectin. Serum total C levels were lower(p<0.05) in rats fed the diet containing 5% pectin than in control rats after a 4-week feeding period(93.8 vs 119.2mg/100mL). Serum HDL, LDL+VLDL C levels were not different among diet groups. Liver total C level was also lower(p<0.05) in rats fed the diet containing 5% pectin than in control rats, but liver TG level was not influenced by diet. Dietary propionate, lactate or fumarate did not reduce serum C, indicating that propionate is not a regulator of serum C. However, dietary pectin(10%) increased fecal excretion of dietary C(or its metabolites) more than 70% over a control value. Our data indicate that dietary pectin reduces serum and liver C levels by increased fecal secretion of dietary C, but not by its fermentation product propionate or other gluconeogenic substrates. The objective of this study was to investigate the effect of dietary education on undergraduate student's health, environment, and consideration. A total of 54 participants were recruited from an undergraduate student in Seoul. We conductive quantitative analysis of a structured questionnaire and qualitative analysis of interviews recorded by photovoice. There are significant differences among knowledge, dietary attitude, and food behavior in the field of health (p<0.001). In the field of health, photovoice data were categorized as 'health care practice', 'Korean dietary lifestyles', or 'awareness of importance of health' (p<0.001). In the field of environment, photovoice data were categorized as 'environment-friendly dietary lifestyle' and 'environmental contamination minimization'(p<0.001). In the field of consideration, photovoice data were categorized as 'gratitude for others', 'joy of cooking'or 'eating meals together'(p<0.01). In conclusion, we found that dietary education about health, environment, and consideration may affect healthy dietary lifestyle among undergraduate students. Our findings may warrant further studies to develop significantly effective dietary education for undergraduate students.

This study was conducted to evaluate the effects of dietary onion supplementation on the growth rate and blood cholesterol level in finishing pigs. Sixty $Duroc\;{\times}\;Yorkshire\;{\times}\;Landrace$ pigs ($69.75{\pm}0.79kg$ average BW) were used in a 50 day growth assay. Dietary treatments included 1) corn-SBM (Con), 2) 1)+dietary onion rice bran 1.0% (ORB1), 3) 1)+dietary onion rice bran 2.0% (ORB2). For overall period, average daily weight gain and average daily feed intake were increased by the addition of dietary onion compared with Con (linear effect; p<0.01). Feed efficiency ratio was successfully improved by supplementation of dietary onion (linear effect; p<0.01). The total cholesterol concentrations in serum decreased as the concentration of onion in the diets was increased (linear effect, p<0.06). Also, LDL-cholesterol concentrations in serum tended to decrease in pigs fed onion than in those fed Con diet group (linear effect, p<0.04; quadratic effect, p<0.09). The HDL-cholesterol and triacylglyceride concentrations in serum were not influenced by the onion supplementation. The results obtained from this feeding trial suggest that the dietary onion supplementation for finishing pigs weighed 70 to 108 kg had improved growth performance and reduced total cholesterol level of serum.
