The purpose of this study was to investigate the relationships of dietary nutrients and serum heavy metals in college women living Choong-Nam area of Korea. The mean age, height, weight, and BMI were 22.9years, 158.74cm, 53.39kg, and 21.71kg/$m^2$ respectively. The mean daily energy intake was 85.9% of RDA for Koreans. The ratio of energy from carbohydrate, fat, and protein was 61:23:16. And the daily vitamin A, B$_2$, Ca were 90%, 78%, 60% of RDA for Korea, respectively. The mean serum levels of Pb, Cd, Cr were 0.190, 0.005, 0.025$\mu\textrm{g}$/$m\ell$, respectively. The serum Cd was significantly different with dietary carbohydrate(p<0.05). And the serum Cr was significantly different with dietary protein intake(p<0.05), phosphorus(p<0.01), potassium(p<0.05). respectively.
An experiment was conducted (28 to 44 weeks) to study the laying performance, shell quality, and nutrient retention of White Leghorn layers fed different levels of non-phytate phosphorus (NPP). Six levels of NPP (0.15, 0.18, 0.21, 0.24, 0.27 and 0.30%) at a constant calcium (Ca) level (3.5%) in maize-soya-deoiled rice bran based diets were formulated, and each experimental diet was offered ad libitum for 16 weeks to five replicates with five birds in each replicate. The body weight of WL layers fed diet containing 0.15% NPP was significantly (p<0.05) lower than those fed diet with 0.30% NPP, at 44 weeks of age. However, the hen day egg production, egg weight, daily feed intake and feed consumed per dozen eggs were not influenced by the variation in the NPP levels in the diet. The bone ash content was significantly (p<0.05) higher in the birds fed 0.30% NPP as compared with those fed diets up to 0.24% NPP. Bone ash content was intermediate in the birds fed diet containing 0.27% NPP. The tibia strength followed the same trend as that of bone ash. Dietary NPP content had no influence on serum Ca and protein concentration and activity of alkaline phosphatase. However, serum inorganic P concentration increased linearly with NPP content in the diet. The concentration of P was significantly (p<0.05) higher in the birds fed 0.27% NPP or higher as compared with those fed 0.15% NPP. Levels of dietary NPP had no influence on egg quality parameters like shell wt, shell thickness, shell strength and specific gravity. The retention of nutrients such as DM, N and Ca were comparable among the WL layers fed different levels of NPP. However, the retention of P decreased linearly with increase in the level of NPP in the diet. The retention of P in the birds fed diets up to 0.24% NPP in the diet was comparable, however further increasing the content of NPP (either 0.27% or 0.30%) reduced the retention of P. Based on the results of the present study, 0.15% NPP (180 mg/b/d) in the diets of WL layers is adequate for optimum production performance during 28 to 44 weeks of age, however, WL layers require 0.27% NPP (324 mg /b/d) in the diet for optimum production with better bone mineralization.
The study was designed to observe the effect of dietary calcium and fats on plasma cholesterol level, hepatic microsomal fluidity and HMG-CoA reductase activity as well as the excretion of fecal bile acids and neutral sterols in 1, 2-dimethylhydrazine(DMH)-treated rats. Male Sprague Dawley rats, at 7 weeks of age, were divided into 2 groups, 0.3% and 1.0% Ca levels and each group again subdivided into 2 groups of corn oil and perilla oil. Each rat was intramuscularly infused with DMH for 6 weeks to give total dose of 180mg/kg body weight and also fed experimental diet containing 15%(w/w) different fit and Ca(0.3% or 1.0%) for 20 weeks. High dietary calcium(1.0%) did not significantly influence on plasma cholesterol as well as hepatic microsomal fluidity and HMG CoA reductase activity, but significantly reduced the excretion of total bile acid per gram of faces and increased the excretion of total neutral sterol. However, high dietary Ca reduced the excretion of secondary bile acid(deoxycholic and lithocholic acids) which was known as promoter for colon cancer. Perilla oil rich in n-3 ${\alpha}$-linolenic acid significantly decreased plasma cholesterol by increasing hepatic microsomal fluidity compared with corn oil, but did not influence on HMG CoA reductase activity. Perilla oil did not influence on fecal excretion of total and primary bile acids, but reduced the excretion of secondary bile acids. Therefore, it could be recommended to consume more fish product and food rich in calcium and use more perilla oil in meal preparation to prevent from coronary hear disease and colon cancer especially when high fit diet has been practiced. It is controversial whether low calcium intake, commonly associated with osteoporosis, results in calcium accumulation in soft tissues. This study was conducted to investigate the effects of low calcium (Ca) and oxalate (ox) intake on soft-tissue Ca deposits and bone metabolism in ovariectomized (ovx) rats. Eight week old female Sprague-Dawley rats were ovariectomized and divided into four groups. The rats were fed experimental diets containing low (0.1%, w/w) or normal (0.5%, w/w) Ca with or without sodium oxalate (1%, w/w); Sham/NCa, Ovx/NCa, Ovx/LCa, Ovx/NCa-ox, Ovx/LCa-ox for 6 weeks. All ovx rats showed a remarkable increase in body and tissue weight, glutamic oxaloacetic transaminase, glutamic pyruvic transaminase, blood urea nitrogen, alkaline phosphatase, and decreases in weight, ash, and Ca contents, as well as bone breaking force compared to those in sham rats. Serum Ca concentration was not significantly affected by dietary Ca levels or ox intake. Kidney Ca, ox acid content, and microscopic Ca deposition increased remarkably in the Ovx/LCa-ox group compared to those in the other groups. Ca content in the spleen and aorta also increased significantly, but the weight contents, Ca, bone breaking force, and Ca and oxalic acid in feces decreased significantly in the Ovx/LCa-ox group. Serum parathyroid hormone levels were not significantly different among the groups. These results indicate that low Ca intake decreased bone mineral content and increased Ca deposits in soft tissues, which was aggravated by ox intake in ovx rats. Thus, high ox intake may result in a kidney disorder in patients with osteoporosis who eat a low Ca diet.
In this study, we assessed changes occurring in the characteristics of Aralia continentalis Kitagawa (AcK) Kimchi prepared using different CaCl$_2$ treatments and seasonings by documenting the changes occurring in over the course of preparation and preservation. No visible changes were detected in the degree of total vitamin C although the levels of reducing sugar in the AcK-preserved products decreased over the storage period; the samples overall evidenced relatively high retention rates. Among the qualities of the AcK-preserved products, soluble dietary fiber generally increased over the storage period but the levels of insoluble dietary fiber decreased, and total dietary fiber increased to some degree or was maintained at a constant level. The total soluble solid content evidenced an increasing tendency over the storage period.
The relationships among physical growth, dietary intakes, and Zn & Cu status were investigated in total of 128 eight-year-old children selected from the primary school in Seoul. The mean weight and height were 28.3Kg and 129.6cm and the average BMI and R hrer index were 16.75 and 129.25. These values were a little higher than the ones for the average Korean children at the same age. The average serum Zn & Cu levels were 109.98$\mu\textrm{g}$/100ml and 84.13$\mu\textrm{g}$/ml. About 2.4% of the subjects had blood Zn level below the normal range and 8.6% had above the normal level. For Cu, about 43% of the subjects fell into the subnormal level. Daily dietary intakes of calorie, protein and ascorbic acid were relatively adequate but Fe, thiamin, riboflavin, and niacin were insufficient. Ca and vitamin A intakes were very poor. More than 50% of the subjects onsumed Ca and vitamin A less then 2/3 of RDA. There was no consistant relationship among the serum Zn and Cu levels, growth, and the nutrients intakes. But it was observed that serum Zn contents were higher as consumption of milks, fats and oil groups were high in the serum Zn contents were higher as consumption of milks, fats and oil groups were high in the several BMI groups, and lower in taller and heavier children within the group of 110-119% BMI rate. Therefore, it could be summarized that the Zn status of the children was favorable but the Cu status was inadequate. Serum Zn and Cu levels were found to be related to the overall quality and/or the quantity of diet and physical growth pattern of children.
This study was carried out to investigate the effects of mulberry-leaf powder Tofu (MPT) on serum lipids profiles, Ca levels, Ca/P ratio and Pb levels in 30 middle aged obese women living in the Choongnam area. 100 g/day MPT was consumed for 4 weeks. The nutrient contents per 100 g MPT were 86.71 kcal (energy), 8.98 g protein, 0.53 mg fiber, 211.33 mg Ca and 1.59 g fat. Anthropometric measurements, 24 h recall dietary intakes, serum levels of protein, albumin, glucose, Ca and Pb, lipid profiles (cholesterol, triglyceride, HDL-cholesterol, LDL-cholesterol), and the Ca/P ratio were analyzed before and after consumption of MPT. After consumption of MPT, there were no significant differences in anthropometric measurements, the levels of serum protein, albumin, glucose, total cholesterol, HDL-cholesterol, lipase activity, HTR (HDL-cholesterol/total cholesterol), CRF (cardiac risk factor), Ca, Ca/P ratio and Pb. There were decreases in the levels of serum triglyceride, LDL-cholesterol, AI (atherogenic index) and LHR (LDL-cholesterol/HDL-cholesterol). Significantly increased dietary intakes of plant protein, total Ca, and plant Ca were observed.
Correlations of adolescents' blood pressure with dietary factors and blood or urinary electrolytes were investigated in this study. Through the screening for blood pressures of 960 middle school students aged 13-16 years, 30 students with the mean value of SBP and DBP above 96th percentile(high blood pressure group) and the other 30 with the mean blood pressure between 48th and 52th percentiles(normal blood pressure group) were selected as the subjects. SBP/DBP of the high and talc normal blood pressure groups were $141.8{\pm}9.0$ / $83.6{\pm}5.1$ mmHg and $116.4{\pm}3.5$ / $69.8{\pm}3.7 mmHg$, respectively. The average values of age, weight, height, BMI, degree of relative crude physical activity, and family income were not different between two groups. Among nutrients for which intakes were determined by 24 hour-recall and expressed as percent RDA, intakes of total and animal calcium were lower in the high blood pressure group compared to the normal, and were negatively correlated with both SBP and DBP even when the effects of related general and other dietary factors were excluded. Whereas energy, total, animal and vegetable protein, total and animal lipid, and riboflavin were higher in intake in the high blood pressure group than in fille normal, and they were in positive correlations with SBP and/or DBP. Vitamin A and ascorbic acid intakes were also negatively correlated with DBP, though ascorbic acid intake was not different between two groups. High blood pressure group preferred higher concentration of thin rice gruel than normal group and talc preferred salt concentrations was ill positive correlation with SBP. Serum and urinary levels of Ca, Mg, Ca/Mg ratio, Na, K and Na/K ratio did not show any differences between two groups. However serum Ca/Mg retio was in negative and se겨m Mg was ill positive correlations with SBP, and urinary Na excretion was negatively correlated with SBP. Calcium intake showed negative correlation with serum Ha and Na/K ratio. Our data indicated that dietary intake of Ca, energy, protein, lipid, vitamin A and C as well as salt preference were associated with blood pressure in adolescents. It might be assumed that Ca lowered blood pressure by increasing serum Ca/Mg ratio and decreasing serum Ca/K ratio though urinary excretion of Na.
Two experiments on commercial broiler chickens (3-37 d) and WL layers (252-364 d) were conducted to study the relative bioavailability of phosphorus (P) from different P supplements in comparison to tricalcium phosphate (TCP), at constant dietary calcium (Ca):P ratio. The P sources tested were dicalcium phosphate (DCP), steam sterilized bone meal (SSBM), commercial mineral mixture (CMM), phosphoric acid (PA) and a combination of CMM + PA. Fluorine (F) content in CMM and SSBM was 13.12 and 0.14 g/kg, respectively. In commercial broiler diets, DCP, SSBM or PA could be used as supplemental P sources without affecting (p<0.05) weight gain, feed intake, tibia ash and, P and Ca contents in tibia ash when compared to TCP. Severity of leg abnormality and deposition of F in bone were higher (p<0.05) in group fed CMM. P retention and serum inorganic P content was significantly reduced (p<0.05) in CMM fed birds compared to those fed TCP, SSBM, PA or CMM+PA. Among other P sources (TCP, SSBM, PA and CMM+PA) the serum inorganic P levels did not vary significantly (p<0.05). The P retention also significantly reduced in CMM fed groups compared to those fed DCP or PA. The P retention significantly increased from 0.183 to 0.216 units by supplementation of PA to CMM diet. In layers, egg production was not affected by replacing TCP with DCP, SSBM, PA or CMM+PA, but significantly (p<0.05) reduced with CMM. Feed (kg)/kg egg mass, egg weight, shell quality (shell weight and shell thickness) and serum Ca levels were not influenced by dietary variation in P source. The poor performance of both broilers and layers fed on CMM based diets could be attributed to the presence of hlgher levels of F (647.8 and 630.1 mg/kg, respectively) and low P utilization. Based on growth, bone mineralization and P retention it is concluded that DCP, SSBM or PA can be used as alternatives to TCP in broiler diets. In WL layer diets, in addition to above P sources, CMM can also be used as supplemental P source by replacing one half of P from CMM with PA without affecting egg production and shell quality.

A total of 720 slow-growing Korean meat-type (Hanhyop 3) chicken were used to evaluate the effect of stocking densities and dietary protein levels on growth performance, meat quality, bone mineral composition, and serum corticosterone. Three (6.3, 9.5, and $12.6birds/m^2$) stocking densities and two dietary protein levels (19% and 18%) were factorially ($3{\times}2$) arranged for six treatments. Overall body weight gain (BWG) was highest (p<0.001) at the lowest stocking density ($6.3birds/m^2$). The feed intake (FI) of birds at the highest density ($12.6birds/m^2$) was lower than that of birds at the other densities, but resulted in better feed/gain (F/G). Among 18% protein groups, the overall FI of birds at $9.5birds/m^2$ was higher than that at the lowest density; therefore, birds at $9.5birds/m^2$ had poorer F/G than birds at the lowest density during days 61~75. Difference in F/G among densities was only significant (p<0.05) during days 61~75 but not significant (p>0.05) during days 41~60. Although there were no significant differences (p>0.05) in BWG and F/G between 19% and 18% dietary protein levels, FI of the 18% protein diet was less (p<0.05) than that of the 19% diet. Although there was no difference (p>0.05) in meat TBARS values, meat color differed (p<0.05) with stocking density and dietary protein levels. There was no effect (p>0.05) of stocking density and dietary protein levels on bone mineral composition. Serum corticosterone concentration increased (p<0.05) with increasing stock density but was not affected (p>0.05) by dietary protein levels. This study indicated that a density of $12.6birds/m^2$ is not recommended for slow-growing chickens. Between 19% and 18% dietary protein levels, 18% would be recommended for the Korean Hanhyop 3 chicken in the finishing stage.
