This study was conducted to investigate the dietary behavior and utilization of university foodservice in Incheon area. Self administered questionnaires were collected from 305 students. Statistical data analysis was completed using a SPSS v. 10.0 program. The results are summarized as follows: Most students had poor dietary behavior, such as skipping meals. Only 21.4% of male students and 30% of female students responded to have breakfast regularly. About 60% of students were utilizing for lunch at the university foodservice and 3.9% of them for dinner, which mainly caused by the reasons “low price”, “time saving”, “near place”. In particular, only 21% of students used the university foodservice daily. More than 80% of students responded to have lunch at restaurants around campus when they did not have meals at the university foodservice. Reasons for not utilizing the university foodservice were responed as simple menus and tasteless, etc. Recommendations for the improvements of the university foodservice can be summarized as menu variation, emphasis on taste, reducing of noise, expending opening time, reducing waiting time, sanitation, change of old utensils and comfortable atmosphere of dining hall.
The purpose of this study was to investigate the dietary behavior of people with type 2 diabetes mellitus and to improve their quality of life through medical nutrition therapy. The subjects were 38 persons with type 2 diabetes mellitus visiting a public health center to participate in a dietary education program from Jun, 2003 to Nov. 2003 in Daegu, Korea. The interviews were tape-recorded and analyzed attitude, knowledge, and awareness of patients by focus group interview. Most of the patients were mainly dependent on drug therapy and had little experience of diet education. Barriers to dietary practice adherences were limitations in food selection, lack of will and feel of burden. Barriers to follow guidelines were lack of self-control, confliction with food habits of their family, accessibility, economical problems, fear for the change after dietary practice, food difficulties in meal distribution and difficulties for eating out. After 4 weeks of intensive nutrition education, fasting blood sugar levels were decreased and postprandial and waist circumference were significantly decreased in all patients and 26.9% of patients were under decreased oral hypoglycemic agent dosage due to improved blood sugar level. dietary knowledge of subjects were greatly improved in such items as dietary intake, saturated fat, HbA1C, ideal body weight, and waist circumference.
Purpose: This study examined the dietary behavior and the effects of nutrition education according to the stages of behavioral changes in sodium reduction of healthy male adults (20~69 years) in Gwangju Chonnam Regions. Methods: The research subjects were 200 male adults. Results: A significantly higher mean age was observed in the stage of Action Maintenance (A M) than in the stage of Precontemplation (PC) and stage of Contemplation Preparation (C P). Significant differences in the frequency of exercise, eating out, and preference for salty food, intake frequency of Udon, Ramen and Sundae according to the stages of behavior change in sodium reduction were observed. The dietary behavior scores and intake frequency-related dietary behavior scores of A M were significantly higher than PC and C P. Nutrition education for sodium reduction improved the dietary behavior score significantly in PC and C P, as well as the rate of correct answers of sodium-related nutrition knowledge in all stages. After the nutrition education, PC decreased greatly, and A M increased. Conclusion: Subjects in PC and C P had an undesirable propensity in dietary behavior, and nutrition knowledge compared to A M, but the nutrition education for sodium reduction greatly improved their dietary behavior and nutrition knowledge.
Objectives: We aimed to examine health-related nutritional knowledge and dietary behavior related to caffeine intake among high school students (n = 310) in the Yongin region of Korea. Methods: Data were collected using a face-to-face survey, and analyzed using chi-square test, t- test, and logistic regression analysis. Results: The level of caffeine intake in respondents was divided into low (< 30 mg/d; n = 208) and high caffeine intake groups (> 30 mg/d; n = 102). Total nutritional knowledge related to bone disease was higher in the low intake group (score 2.75) than the high intake group (score 2.39; p < 0.05). The high intake group had lower scores for nutritional knowledge (score 0.70; p < 0.05) related to how caffeinated beverages affect sleep and for dietary behavior (score 3.25; p < 0.001), based on "I avoid caffeinated foods before sleep," than the low intake group (nutritional knowledge score, 0.80; dietary behavior score, 3.76). Conclusion: In the overall analysis, the low caffeine intake group had better nutritional knowledge related to bone and sleep health, and healthier dietary behavior related to sleep health compared with the high intake group.
This study was conducted to examine the effect of children's dietary quality, dietary habits, food behavior and health-related lifestyles according to the mother's lifestyles of health and sustainability (LOHAS). The subjects were 580 children. Mother's LOHAS attitude index was 66.85 points and 100 points was a perfect score. The mother's high LOHAS attitude items that children perceived were "My mother often communicates with the family"(3.99 points) and "My mother thinks that the family's health is more important than her health"(3.93 points). In contrast, the LOHAS attitude items for "My mother does community service activity on weekends"(2.78 points), and "My mother participates in environmental protection service activity for the local community"(2.78 points) were very low. The high LOHAS behavior index of mothers was "resource saving", whereas "social welfare" scored low. When self-perceived health status and monthly income of children was high, the mother's LOHAS score was high. The LOHAS attitude index of mothers had a meaningful impact on the children's dietary quality, dietary habits, food behavior and health-related lifestyles. The most frequent food behavior variables were "high skipping rate", "frequency of snacks is 2~4 times per week", "speed of eating is rapid", and 'meals' amount is sufficient. The highest daily life habits item was "I try to maintain a pleasant and enjoyable life style"(3.42 points). The highest nutrient intake attitude score was "I tend to eat rice everyday."(3.41 points). They were highly recognized with "moderate physical activity", "high exercise preference", "positive posture exercise", "exercise <2 days per week", and "over 30 minutes exercise time per day" for the exercise performance status items. It was verified that the higher mother's LOHAS lifestyle score is, the higher children's food behavior, daily life habits, nutrient intake, exercise performance state score are.
This study examines the relationships between dietary self-efficacy, social support, depression, and weight-control behavior of children and adolescents. A total of 593 students (280 children and 313 adolescents) from schools in Seoul, Gyeonggi-do, Jeollabuk-do, and Daegu were surveyed using scales for dietary self-efficacy, social support, depression, and weight-control behavior. The data were analyzed through a frequency analysis, means and standard deviations, a t-test, a one-way ANOVA, the Tukey test, the Pearson's correlation, and a stepwise multiple regression analysis. According to the results, weight-control behavior was more likely in girls than boys, high-school students than elementary-school students, and obese/overweight students than normal/underweight students. The factors influencing children's weight-control behavior were general eating habits, the BMI, depression, food choice, and family support, in that order, and those influencing adolescents' weight-control behavior were general eating habits, gender, and the BMI, in that order. These results are expected to be useful as basic data for developing weight-control programs for children and adolescents.

For the correct dietary habit and balanced dietary intake of aged people, the nutrition management that fits to the dietary behavior change stage has to be accomplished. In order to do so, in this paper, we chose 175 women that are aged more than 65 years old who are rural long life community residents and surveyed the dietary intake for 2 days including a twice depth interview and the 24 hour recall method. Also, for the sake of our aim, using the transtheoretical model, the dietary behavior change stage group was divided into the contemplation stage group, the preparation stage group, the action stage group and the maintenance stage group. The results are as follows: In the intake amount of protein (p < 0.01), vitamin $B_1$ (p < 0.05) and vitamin $B_6$ (p < 0.05), the intake amount of these nutrients in the action stage group and the maintenance stage group were significantly larger than the intake amount in the contemplation stage group and the preparation stage group. The nutrition evaluation according to the dietary behavior change stage, the ratio of subjects who took insufficient amount of energy, protein, vitamin A, and vitamin C were low as the dietary behavior change stage was upgraded. The subjects of maintenance stage group were most likely to consume vegetables more than once a day, and consume fruits and milk and milk products more than 5 times/week. MAR [13], MAR [10] and MAR [4] of subjects in the action stage group and the maintenance stage group were significantly higher than MAR [13], MAR [10] and MAR [4] of subjects in the contemplation stage group and the preparation stage group (p < 0.001). From the above results, there were differences of nutrient intakes according to the dietary behavior change stage. Therefore, it is considered that the intervention for the dietary behavior motivation induction has to be advanced before accomplishing the individually fitting intervention at the time of nutrient management intervention.
This study was performed in order to investigate to dietary behavior, perceived stress level and their correlations for University students. Dietry behavior of 72% subjects was poor and only 1.8% was good. The dietary behavior of subjects was correlated with their residence type. The overage stress point was $1.76{\pm}0.53$ and female students was more stressed than male. The goal of this study is to identify how different types of messages can contribute to the effectiveness of social media in healthier dietary behavior. The sample consisted of 160 participants who use social media and participants were randomly assigned to one of the four experimental conditions. The study shows that a positively framed message paired with a health focused message and a negatively framed message paired with a body image focused message exhibit a positive eWOM and message perception. This research offers direction for development of appropriate message types to improve social media effectiveness. Social media marketers and advertisers can develop social media content on healthier dietary behavior.
Hypertension is the major risk factor for cardiovascular disease which is considered the leading cause of death in Korea. Since nonpharmarologic dietary intervention is recommended as the first step in the management of hypertension, evaluation of intervention programs is needed to formulate strategies for improving patients' dietary adherence. This study was designed to evaluate the overall effectiveness of a hypertension nutrition education program (HNEP) at a public health center, by assessing changes in nutrition knowledge, food attitude, self-efficacy, dietary behavior, and nutrient intake after program completion. An HNEP was conducted in Suwon city for 5 months in 1999 by a public health center. The program provided 3 sessions of group education with individual nutrition counseling. Thirty-five patients participated fully in the program out of 62 enrollees. Data about nutrition knowledge, food attitude, self-efficacy, dietary behavior, and intake (24-hour recall) were collected before (baseline) and after the program. Post program results indicate the following : 1) nutrition knowledge and perception of importance of nutrition significantly increased, 2) food attitudes also improved, 3) the self-efficacy for maintaining a low salt diet was increased significantly, whereas self-efficacy for maintaining a low fat diet or dietary guidelines was not improved, 4) frequency of intake of processed food, animal fat, and sweets as well as frequency of dining out were significantly reduced, 5) nutrient intake was not improved after the program, 6) the most serious barrier for participating in the program and practicing diet therapy was lack of time and willingness. In conclusion, it appears that HNEP might improve food attitudes, individual perceptions and self-efficacy for desirable eating behavior, but it might not improve dietary intake. It follows then, that a long term intervention program may need to increase effectiveness of patient dietary adherence.
