Healthy living is an essential element of human happiness. Quality eating provides the basis for life, and the health of livestock, which provides meat and dairy products, has a direct impact on human health. In the case of calves, diarrhea is the cause of all diseases.In this paper, we use a sensor to measure calf 's biometric data to diagnose calf diarrhea. The collected biometric data is subjected to a preprocessing process for use as meaningful information. We measure calf birth history and calf biometrics. The ontology is constructed by inputting environmental information of housing and biochemistry, immunity, and measurement information of human body for disease management. We will build a knowledge base for predicting calf diarrhea by predicting calf diarrhea through logical reasoning. Predict diarrhea with the knowledge base on the name of the disease, cause, timing and symptoms of livestock diseases. These knowledge bases can be expressed as domain ontologies for parent ontology and prediction, and as a result, treatment and prevention methods can be suggested.

The significance of pork meat quality extends far beyond mere consumer satisfaction, encompassing crucial aspects such as health and nutrition, economic impact, reputation and branding, food safety, and sustainability within the global food system. Influenced by a multitude of factors, each playing a pivotal role in shaping its sensory attributes and consumer appeal, pork meat quality stands as a cornerstone of the meat industry. Thus, understanding these factors are imperative for ensuring consistent high-quality pork production, aligning with consumer preferences, and elevating overall satisfaction levels. In this review, we provide a comprehensive overview of the diverse factors affecting pork meat quality, including genetic characteristics, rearing systems, feed composition, gender differences, pre-slaughter handling, and meat aging processes.

A balanced intestinal microbiome controls intestinal bacterial diseases, helps regulate immunity, and digests and utilizes nutrients, ultimately having a positive effect on the productivity of industrial animals. Yeasts help in the digestion process by breaking down indigestible fibers and producing organic acids, vitamins, and minerals. In particular, polysaccharides such as beta-glucan and mannan-oligosaccharides, which are present in the cell wall of yeast, inhibit the adhesion of pathogens to the surface of the gastrointestinal tract and increase resistance to disease to help maintain and improve intestinal health. Among the yeast additives used in animal feed, Saccharomyces cerevisiae is one of the most commonly used probiotics. However, it does not naturally reside in the intestine, so if it is supplied in combination with other species of probiotics that can compensate for it, many benefits and synergies can be expected for pigs in terms of maintaining intestinal health such as supplementing the immune system and improving digestion. A number of previous studies have demonstrated that dietary complex probiotic supplementation has growth-promoting effects in pigs, suggesting that multiple strains of probiotics may be more effective than single strain probiotics due to their additive and synergistic effects. In practice, however, the effects of complex probiotics are not always consistent, and can be influenced by a variety of factors. Therefore, this review comprehensively examines and discusses the literature related to the effects of complex probiotics using Saccharomyces cerevisiae in pig production.
Obesity, as defined by the World Health Organization (WHO), is excessive fat accumulation that can pose health risks and is a disorder of the energy homeostasis system. In typical westernized diets, ω-6 polyunsaturated fatty acids (PUFAs) vastly exceed the amount of ω-3 PUFAs, with ω-6/ω-3 ratios ranging from 10:1 to 25:1. ω-6 PUFAs, such as arachidonic acid, have pro-inflammatory effects and increase obesity. On the other hand, ω-3 PUFAs, including eicosapentaenoic acid and docosahexaenoic acid, have anti-inflammatory and anti-obesity effects. Linoleic acid (LA) and alpha-linolenic acid (ALA) are synthesized in almost all higher plants, algae, and some fungi. However, in humans and animals, they are essential fatty acids and must be consumed through diet or supplementation. Therefore, balancing LA/ALA ratios is essential for obesity prevention and human health. Monogastric animals such as pigs and chickens can produce meat and eggs fortified with ω-3 PUFAs by controlling dietary fatty acid (FA). Additionally, ruminant animals such as feeder cattle and lactating dairy cows can opt for feed supplementation with ω-3 PUFAs sources and rumen-protected microencapsulated FAs or pasture finishing. This method can produce ω-3 PUFAs and conjugated linoleic acid (CLA) fortified meat, milk, and cheese. A high ω-6/ω-3 ratio is associated with proinflammation and obesity, whereas a balanced ratio reduces inflammation and obesity. Additionally, probiotics containing lactic acid bacteria are necessary, which reduces inflammation and obesity by converting ω-6 PUFAs into functional metabolites such as 10-hydroxy-cis-12-octadecenoic acid and CLA.
An integrated wastewater treatment pond system is developed for treatment and recycling of excreta from dairy cattle. It is composed of three ponds in series. A pit with a capacity of $10m^3$, 2-day hydraulic residence time, and overflow velocity of $1.5m^3m^{-2}day^{-1}$ is located internally in primary pond. It is designed for efficient sludge sedimentation and effective methane fermentation. It receives $5m^3/day$ of diluted cattle excreta by the water used for clearing stalls. A submerged gays collector for the recovery of methane is installed on the top of the pit. The average BOD_5 concentration of influent is 398.7mg/l. That of the effluent from primary pond is 49.2mg/l. About 88% of BOD_5 are removed in primary pond. It is assumed that about 60% of the influent BOD_5 is removed in the pit and that almost all of the carbon of the removed BOD_5 in the pit is converted to methane and carbon dioxide. Methane fermentation of the pit is well established at $16^{\circ}C$. This phenomena results from temperature stability, complete anaerobic condition, and neutral pH of the pit. Gas from the collector is almost 90% methane, less than 9% nitrogen, and less than 1% carbon dioxide. Thus a purified methane is produced, which can be used as energy source.

This study was conducted to confirm the rumen fermentation characteristics of large-scale CoenzymeQ10(CoQ10) producing bacteria R. spharoides in rumen. We conducted in vitro continuous culture test to investigate the characteristics of rumen fermentation with 5% R. spharoides as a direct fed microorganism. A rumen microbial fermentation characteristic has stability at after 12 days for 15 day of experimental period. pH value, NH3-N, microbial protein synthesis, ADF digestibility and NDF digestibility were not shown significantly differences between control and treatment. However, UDP was significantly higher in treatment than control (p<0.05). CoQ10 concentration was 336.0mg/l with 5% R. spharoides. On the other hands, CoQ10 was not detected without R. spharoides. Our study was shown that R. spharoides can produce CoQ10 in rumen environment without harmful effects on rumen fermentation parameter. CoQ10 in rumen may transfer into cow milk through cow metabolism. This strategy might be helpful for producing functional dairy cow milk.

This study estimated characteristics and genetic parameters for milking traits in Holstein dairy cattle. Daily records (12,561) were available from a hundred fifty four lactating cows with sixty six sires at National Livestock Research Institute from November, 2005 to April, 2006. The cows were fed same rations, and were milked twice daily using milking parlour equipped with Alpro-system?? to collect milking records automatically. The experimental cows have averaged 1.9 parities, 139.7 days in milk, and 13kg milk yield per milking. Average milk flow was 64% of peak milk flow. Milking duration, peak milk flow, average milk flow, and milk yield per milking were 5.57±1.67 minutes, 3.58±0.79kg/minute, 2.28±0.51kg/minute, and 13.02±4.09kg, respectively. All traits in the morning milking were higher than those of in the evening milking, and were also increased with parity. Heritabilities for milking duration, peak and average milk flow, and milk yield per time were 0.49, 0.70 0.58 and 0.36, respectively. The genetic correlations of milking duration with peak milk flow, average milk flow, and milk yield per time were 0.48, 0.54, and 0.41, respectively. The correlations of milk yield per milking with peak milk flow and average milk flow were 0.23 and 0.30, respectively. In conclusion, milk flow was increased with milk yield; however milk flow was opposite relationship with milk duration. Further studies are not only necessary to warranty genetic parameters, but pre-installation of automatic recording system to collect daily milking record is also necessary.

Korean government will set up the nationwide food safety system with strict control of hazardous nutrients like sugar, fatty acids and sodium as well as advanced nutrition education system. In addition, almost one hundred percent of school food service rate forced the government to consider more effective ways to upgrade the nutritional status of school meals. The object of our study was to provide the data on content and consumption of sugar in school meal for the nationwide project. For this purpose, we surveyed the sugar content of 842 school meal menus and their intake level for 154 days in 8 schools in Daejeon and Chungcheong Province. Sugar contents, the sum of the quantity of 5 sugars commonly detected in food, were analysed with HPLC-RID (Refractive Index Detector). Sugar intakes were calculated by multiplying the intake of each menu to the sugar content of that menu. The sugar content was highest in the desserts, which include fruit juices, dairy products and fruits. Sugar content of side dish was high in sauces and braised foods. Sugar intake from one dish is high in beverage and dairy product, and one dish meals contribute greatly to sugar intake because of their large amount of meal intake. The average lunch meal intakes of second grade and fifth grade elementary school students were 244 g/meal and 304 g/meal, respectively. The meal intake of middle school student was 401 g/meal. The average sugar intake from one day school lunch was 4.22 g (4.03 g on elementary and 5.31 g on middle school student), which is less than 10% of daily sugar reference value for Koreans. The result of this study provides exact data of sugar intake pattern based on the content of sugar which is matched directly to the meals consumed by the students.

This study was performed to evaluate the effects of replacing basic total mixed ration (TMR) with fermented soybean curd, Artemisia princeps Pampanini cv. Sajabal, and spent coffee grounds by-product on rumen microbial fermentation in vitro. Soybean in the basic TMR diet (control) was replaced by the following 9 treatments (3 replicates): maximum amounts of soybean curd (SC); fermented SC (FSC); 3, 5, and 10% FSC + fermented A. princeps Pampanini cv. Sajabal (1:1, DM basis, FSCS); and 3, 5, 10% FSC + fermented coffee meal (1:1, DM basis, FSCC) of soybean. FSC, FSCS, and FSCC were fermented using Lactobacillus acidophilus ATCC 496, Lactobacillus fermentum ATCC 1493, Lactobacillus plantarum KCTC 1048, and Lactobacillus casei IFO 3533. Replacing dairy cow TMR with FSC treatment led to a pH value of 6 after 8 h of incubation-the lowest value measured (p<0.05), and FSCS and FSCC treatments were higher than SC and FSC treatment after 6 h (p<0.05). Gas production was higher in response to 3% FSC and FSCC treatments than the control after 4-10 h. Dry matter digestibility was increased 0-12 h after FSC treatment (p<0.05) and was the highest after 24 h of 10% FSCS treatment. $NH_3-N$ concentration was the lowest after 24 h of FSC treatment (p<0.05). Microbial protein content increased in response to treatments that had been fermented by the Lactobacillus spp. compared to control and SC treatments (p<0.05). The total concentration of volatile fatty acids (VFAs) was increased after 6-12 h of FSC treatment (p<0.05), while the highest acetate proportion was observed 24 h after 5% and 10% FSCS treatments. The FSC of propionate proportion was increased for 0-10 h compared with among treatments (p<0.05). The highest acetate in the propionate ration was observed after 12 h of SC treatment and the lowest with FSCS 3% treatment after 24 h. Methane ($CH_4$) emulsion was lower with A. princeps Pampanini cv. Sajabal and spent coffee grounds treatments than with the control, SC, and FSC treatments. These experiments were designed to replace the by-products of dairy cow TMR with SC, FSC, FSCS, and FSCC to improve TMR quality. Condensed tannins contained in FSCS and FSCC treatments, which reduced $CH_4$ emulsion in vitro, decreased rumen microbial fermentation during the early incubation time. Therefore, future experiments are required to develop a rumen continuous culture system and an in vivo test to optimize the percentages of FSC, FSCS, and FSCC in the TMR diet of the dairy cows.

Objective: Glucose is an essential fuel in the energy metabolism and synthesis pathways of all mammalian cells. In lactating animals, glucose is the major precursor for lactose and is a substrate for the synthesis of milk proteins and fat in mammary secretory (alveolar) epithelial cells. However, clear utilization of glucose in mammary cells during lactogenesis is still unknown, due to the lack of in vitro analyzing models. Therefore, the objective of this study was to test the reliability of the mammary alveolar (MAC-T) cell as an in vitro study model for glucose metabolism and lactating system. Methods: Undifferentiated MAC-T cells were cultured in three types of Dulbecco's modified Eagle's medium with varying levels of glucose (no-glucose: 0 g/L, low-glucose: 1 g/L, and high-glucose: 4.5 g/L) for 8 d, after which differentiation to casein secretion was induced. Cell proliferation and expression levels of apoptotic genes, Insulin like growth factor-1 (IGF1) receptor, oxytocin receptor, ${\alpha}S1$, ${\alpha}S2$, and ${\beta}$ casein genes were analyzed at 1, 2, 4, and 8 d after differentiation. Results: The proliferation of MAC-T cells with high-glucose treatment was seen to be significantly higher. Expression of apoptotic genes was not affected in any group. However, expression levels of the mammary development related gene (IGF1 receptor) and lactation related gene (oxytocin receptor) were significantly higher in the low-glucose group. Expressions of ${\alpha}S1-casein$, ${\alpha}S2-casein$, and ${\beta}-casein$ were also higher in the low-glucose treated group as compared to that in the no-glucose and high-glucose groups. Conclusion: The results demonstrated that although a high-glucose environment increases cell proliferation in MAC-T cells, a low-glucose treatment to MAC-T cells induces higher expression of casein genes. Our results suggest that the MAC-T cells may be used as an in vitro model to analyze mammary cell development and lactation connected with precise biological effects.
