A strain of Dictyophora echinovolvata ASI 32002 showing good fruiting body formation was selected. Analyses of chemical and nutritional components as well as antimicrobial activity of different parts of the mushroom such as mycelium, egg, and fruiting body were carried out. There were differences in the chemical compositions and the quantities depending on developmental stages of veiled lady mushroom, D. echinovolvata ASI 32002. Nitrogen, phosphate, magnesium, and calcium in inorganic chemicals were abundant in mycelium, and potassium and mineral elements were abundant in the egg and fruiting body. Mannitol and trehalose were abundant in free sugar contents. Glutamic acid and arginine in mycelium and aspartic acid and glutamic acid in egg and fruiting body were abundant in free amino acid contents. Linoleic acid, an polyunsaturated fatty acid, was abundant in all parts of the Dictyophora species, but compositions and quantities of other fatty acids varied depending on the different parts of the mushroom. It was detected that malic acid, lactic acid and acetic acid in mycelium, formic acid, acetic acid and fumaric acid in egg, and malic acid, citric acid, lactic acid, fumaric acid in fruiting body were abundant. The methanol extracts of D. echinovolvata ASI 32002 mycelium showed antifungal activity with minimal inhibition concentration (MIC) of $62{\sim}125\;{\mu}g/ml$ that was similar levels of cyclohexamide against Aspergillus awamori, Hypocrea nigricance and Trichoderma virens. The MIC of extracts from mycelium and fruiting body against Candida albicans was $250\;{\mu}g/ml$, similar to that of tetracycline. In addition to the above results, further as food additives and ingredient of cosmetics.
Rice bran was employed as a main medium component for ethanol fermentation by Saccharomyces species. Among the several strains of .Saccharomyces yeasts. S. cerevisiae IF0 2346 was selected as the hest strain in view of the interest in the production of ethanol and amino acids. It was found that S. cerevisiae IF0 2346 showed $3\times 10^8$cells/d and 4.7% (v/v) ethanol production after 72 hr cultivation. Although total amount of free amino acids was decreased from 1.099 mg/l to 829 mg/l during the fermentation, glutamic acid. histidine, and isoleucine were increased considerably. With the supplement of 5% glucose to the ferrnentation medium, both ethanol and amino acid production were increased up to 134% and 264%, respectively. compared to the control case. Glutamic. acid, leucine, alanine. phenylalanint:, and valine were the major amino acids in the fermentation broth.
The community size of culturable heterotrophic bacteria and community level physiological profiles (CLPP) in the rhizosphere of Brassica rapa subsp. pekinensis (Chinese cabbage) were analyzed in two different sites. The average community size of culturable heterotrophic bacteria ranged between $2.65\times10^6CFU\;g^{-1}$ soil (Suwon) and $3.75\times10^6CFU\;g^{-1}$ soil (Yesan), whereas those of bulk soils ranged between $2.45\times10^6CFU\;g^{-1}$ soil (Suwon) and $2.97\times10^6CFU\;g^{-1}$ soil (Yesan). The average functional richness of Suwon rhizoshpere was 90.8, whereas that of Yesan rhizosphere was 154.1. High level of correlation was found between the community size and functional richness. The most actively utilized substrates in both rhizospheres were adonitol, L-asparagine, D-gluconic acid, L-glutamic acid and D-galacturonic acid. Clear differences were seen in the utilization patterns between the two sites. Differences were also observed for the patterns of bulk soils between the two sites, although D-raffinose and D-mannose were found as the commonly utilized substrates.

Changes in the nutritional components of Toha-jeot, salt-fermented Toha shrimp(Caridina denticulata denticulata $D_{E} H_{AAN}$), which was salted with 20%(w/w) sodium chloride and fermented during 60 days at $4\pm1^{\circ}C$ were investigated. The free amino acid contents in Toha-jeot, of which glutamic acid, leucine, Iysine, arginine, glycine and alanine occupy the majority, in order of abundance, increased gradually up to 50 days of fermentation. Most of the nucleotides were decomposed to hypoxanthine; thus ATP and ADP were not detected. Fermentation decreased inosine, IMP and unsaturated fatty acid contents and increased saturated fatty acid contents of Toha-jeot. Palmitic acid was the most abundant fatty acid, followed by palmitoleic acid, linoleic acid, EPA and stearic acid. Among the mineral constituents of Toha-jeot, Na and Ca were dominantly occupying. The Hunter "L" and "b" values of Toha-jeot increased during fermentation while "a" value remained unchanged.
The major compositions of Lentinus edodes seasoning(LES) compose of 30.3% of Lentinus edodes fruit body, 18.1 % of anchovy (Engraulis japonicus) powder and 51.6% of sea tangle (Laminaria japonica), prawn and green tea powder and so on were investigated in order to evaluate the nutritional value. Sodium concentration in LES was high up to 5,042.99 mg/IOO g and K, Ca, P, Mg, Fe, Zn, Mn and Cu were followed. There were nineteen total amino acids in LES. The glutamic acid content was high up to 4.62 mg/100 mg and glycine, leucine, alanine, aspartic acid were followed. Among twenty free amino acids, glycine content was high up to 2.37 mg/100 mg and glutamic acid, asparanine, proline, taurin and aspartic acid were followed. The contents of vitamin C in LES was high up to 224.78 mg/100 g and pantothenic acid, vitamin B$_{6}$, niacin, vitamin E, folic acid, vitamin B$_{l}$ vitamin B$_{2}$, vitamin D$_{3}$, vitamin A, vitamin B$_{12}$ and vitamin $K_{l}$ were followed.wed.

This study was Conducted to investigate the effect of ${\gamma}-PGA\;({\gamma}-poly\;glutamic\;acid)$ on Ca absorption and bone metabolism in rats. Weaned 4-week old male rats were fed Ca-deficient diets for 3 weeks after the adjustment period. Rats were divided into 6 groups and were fed experimental diets for four weeks. Experimental groups were basal (Ca deficient), control (Ca diet: Ca 0.45%), CP1(Ca 0.45%+casein phosphopeptide 1%), PG1(Ca 0.45%+gamma poly glutamic acid 1%), CPG (Ca 0.45%+casein phosphopeptide 1%+gamma poly glutamic acid 1%) and PG3(Ca 0.45%+gamma poly glutamic acid 3%). Though daily Ca intake and food intake of experimental groups showed no significant difference that of control group. The values of fecal Ca excretion and urinary Ca excretion in groups fed ${\gamma}-PGA$ were significantly lower than that in tile control group. The values of Ca absorption in groups fed ${\gamma}-PGA$ were significantly higher than that in the control group. The levels of femur Ca in ${\gamma}-PGA$ supplemented group were significantly increased compared to the control group. Also, breaking force of femur in ${\gamma}-PGA$ supplemented group showed about 40% increase compared to the control group. These results show that ${\gamma}-PGA$ supplement could be helpful to increase Ca absorption as well as to intensify the femur strength and to increase the Ca content of femur in rats.
Chemical properties of the different parts of watercress(Oenanthe javanica D.C.) grown and harvested from the culture fields under different cultivating methods were studied. In proximate analyses of watercress in parts, moisture contained more in stem than in root or in leaf, but crude protein and crude lipid contents were lower in stem than in root or in leaf. Crude ash in root contained up to about double amount in leaf or stem. Major mineral elements detected in watercress were Fe, Mg, Ca, and K, and their contents in root was higher than those in stem or leaf. Especially, Fe in root was significantly higher than that in stem or in leaf. Total free sugar composed mainly with fructose and glucose, was the highest in watercress from Hwasoon and followed the watercress from Jeonju and Donggok in order. Free sugar content was highest in leaf and the lowest in root. Major water-soluble vitamins were vitamin C, thiamin and biotin and the content of vitamin C was higher than others. These vitamins contained more in leaf than in stem or root. Niacin contained 6.09 mg/100 g in leaf of watercress from Hwasoon, which was much higher than others, but it was not detected in stem of watercress from Jeonju. Organic acids detected were oxalic acid, citric acid and malic acid and other 12 organic acids were not detected. In fatty acid composition, there were significant differences among watercresses from different parts and different culture fields. Linoleic acid, linolenic acid and palmitic acid were major fatty acids contained in watercress and it took about 80% of the total content. Amino acid content in leaf was higher than that in root and in stem. Glutamic acid and proline were major amino acids in stem of watercress from Jeonju and in stem of watercresses from Hwasoon and Donggok, respectively. In leaves of all three watercresses glutamic acid content was the highest.
After establishment of methodology for the separation and quantitation of optical isomer existed in food or biomaterial, the relationship between isomer and nutrient or biological sample was investigated. The optical isomers of standard amino acids and free amino acids were quantitized and the protein was assayed from the Korean bean, pasted bean, soy sauce, gochujang, powderd milk and cataract followed by hydrolysis and dervatization with TFA-IPA for GLC analysis with chirasil val column. Amino acids showing the racemization were alanine, aspartic acid, glutamic acid and phenyl alanine. The most convenient amino acid deducing age and biological activity was aspartic acid. Glutamic acid and phenyl alanine have shown poor resolution with less racemization. The ratio of d-form amino acids was 3~6% for home made pasted bean, about 3% for commerical pasted bean, 2~4% for soy sauce, about 1% for bean, 1~2% for cataract, 1.0~1.5% for powdered milk. The racemization during fermentation process was significant.

A bacterium with high productivity of poly-$\gamma$-glutamic acid (PGA) was isolated from the traditional Korean seasoning, ChungKookJang. The 16s ribosomal RNA sequence of isolated strain showed 97.6, 98.9 and $90.3{\%}$ of similarity to those of Bacillus sp. WL-3, Bacillus subtilis; ENV1 and B amy-loliquefaciens (T), respectively. Accordingly, this bacterium was identified as a Bacillus sp. However, some biochemical characteristics of this strain were different from those of B. subtilis: D-xylose fermentation and glycogen utility were negative. Maximum production of PGA was achieved when it was grown aerobically in a culture medium containing glutamic acid ($3{\%}$) and fructose ($4{\%}$) as carbon sources. The volumetric yield of PGA reached up to 27 g/l in the optimum culture medium. These results suggest that the present strain can be applicable for industrial purposes such as a prototype strain for food or cosmetics industry.
This study was conducted to determine the prevention effect of poly-gamma-glutamic acid (${\gamma}-PGA$) on tissue damage induced by gamma irradiation for development of xenograft. Porcine tendons were treated at various doses of ${\gamma}-PGA$ (0.1, 0.5, 1 and 5%) and then gamma-irradiated (30 kGy). Prevention effects on tissue damage were measured as the result of tensile strength, hydroxyproline contents and viscosity of ${\gamma}-PGA$. Tensile strength was remarkably decrease in gamma-irradiated porcine ligament, but increased by ${\gamma}-PGA$ treated one. Among the ${\gamma}-PGA$ treatment doses, 1% treated group showed the highest values of tensile strength compared to non-treated group. Hydroxyproline contents was significantly increased by gamma irradiation, but decreased by the ${\gamma}-PGA$ treatment. Particularly, 1 and 5% ${\gamma}-PGA$ treated group were exhibited lower values of hydroxyproline contents than other group. In the result of viscosity, gamma-irradiated ${\gamma}-PGA$ (1%) was remarkably increased. Base on the results, it demonstrated that gamma irradiation induces severe alteration of mechanical property and collagen contents on porcine ligament, but ${\gamma}-PGA$ can effectively prevent these tissue damage.
