Accessibility of Korean Cultural Values at Screens: Decoding Patterns of North American Audiences

  • This research investigates the accessibility of Korean modern values at screens from the perspectives of North American audiences while consuming Korean films and TV dramas. In order to decode Korean cultural values at screens, this study collects the data of 266 Korean films and TV dramas distributed in North America from IMDb platform, unlocking that the success of box office for Korean projects in North America is positively correlated with the characteristics of Violence & Gore and Profanity. Meanwhile, the audiences' positive responses to the violent project mainly depends on the degree of "Sex and Nudity", the plots of "social groups". The current success of Korean cultural and creative industry as well as the future global markets strengths are analyzed in this research. Stuart Hall's cultural studies approach and cultural psychological account theory are applied to discuss the success of Korean entertainment industry in the transnational cultural communication.

유아교육기관에서 간식 급식으로 활용하기 위한 새우 쿠키의 품질특성 평가 (Assessment of Quality Characteristics of Cookies Prepared with Shrimp Powder for a Snack Served to Kindergarteners)

  • The purpose of this study was to investigate the quality characteristics of cookies prepared with shrimp powder (0, 3, 5, 7, 9%) substituted for flour as a snack food for Kindergarteners. The pH of the cookie dough decreased significantly in response to the addition of all levels of shrimp powder. However, there were no significant differences in the dough values among the test groups. Furthermore, when the spread factor values were compared among groups, they were found to be inversely proportional to the shrimp powder concentration. In addition, the Hunter's color L, a and b values decreased significantly as the level of shrimp powder increased. Moreover, the addition of 3${\sim}$9% shrimp powder resulted in increased hardness, cohesiveness, springiness, and brittleness when compared to the control. Finally, the results of acceptance test showed that the cookies containing 5% shrimp powder had the highest scores.

쌀가루를 첨가한 양배추 크림수프의 제조조건 최적화 (Optimization of Mixing Condition of Cabbage Cream Soup)

  • The principal objective of this study was to determine the optimal mixing condition of two different amounts of cabbage and rice flour for the preparation of a cabbage cream soup. The experimental design was based on the central composite design methodology of response surface, which included 10 experimental points, including two replicates for the cabbage and rice flour. Physiochemical and sensory properties were measured, and these values were applied to the mathematical models. A canonical form and perturbation plot showed the influence of each ingredient on the mixed final product. Water content and pH values increased with increasing quantities of rice flour. Neither cabbage or rice flour affected the L and a values, but the b value increased with greater quantity of both ingredients. Viscosity increased with increasing added cabbage. Sensory evaluation results were significant in the predicted model for flavor (p<0.05), concentration (p<0.01) and overall quality (p<0.01). As a result, the optimum formulations by numerical and graphical methods were calculated as 111.79 g cabbage and 8.99 g rice flour.

발효숙성마늘 추출물 첨가 초콜릿 제조 조건의 최적화 (Processing Optimization of Chocolate with Fermented and Aged Garlic Extract)

  • This study was conducted to aid in the development of the optimal recipe for chocolate with fermented and aged garlic extract (Allium sativum var. pekinense). We added garlic extract in order to increase the nutritional value of the chocolate. The optimal sensory composite recipe was determined, following Central Composites for chocolate with different levels of fermented and aged garlic extract (A) and cream (B), while analysis was performed by Response Surface Methodology, from the date that the sensory evaluation was performed. Ten experimental recipes, including 2 reference points in the composition, were selected. The compositional and functional properties were measured, and physical and sensory values were applied to the mathematical models. Perturbation plots showed the influence of each ingredient on the final product. Measurements showed significant values in lightness, sweetness, pH, hardness and cohesiveness, while sensory measurements showed significant values in color, texture, sourness, bitterness and overall quality. The optimum formulations were calculated by numerical and graphical methods, as being 34.61g fermented and aged garlic extract and 72.68g cream for each 200g chocolate. As well it was revealed that the aptitude of chocolate was more influenced by fermented garlic extract than it was by cream.

연잎 분말 첨가가 국수의 품질특성에 미치는 영향 (Quality Characteristics of Dried Noodle Added with Lotus Leaf Powder)

  • The principal objective of this study was to evaluate quality characteristics of dried noodles when different concentrations of lotus leaf powder (LLP) were added to the wheat flour, thereby determining which noodle recipe was preferred. The cooking quality, mechanical texture properties, and viscosity were measured, and then a sensory evaluation was conducted with the prepared noodles. The gelatinization points of the composite LLP-wheat flours were shown to have an increased, viscosity at $95^{\circ}C$ after 15 minutes. As measured via amylograph, the maximum viscosity values of those samples were decreased as the LLP content was increased. As well, when increased amounts of LLP were added, both the L and a values were reduced, whereas the b value was increased. The color values, weight and volume of the cooked noodle increased, as did the turbidity of the soup. With regard to the textural characteristics, the LLP additive increased hardness and cohesiveness, and reduced adhesiveness and springiness. Overall, according to the results of our sensory evaluation, the noodles prepared with 5% LLP were preferred over the other noodles.

스피루리나 첨가 쌀엿강정의 항산화 특성 (Antioxidant Activities of Riceyeotgangjung with Added Spirulina Powder)

  • The objective of this study was to develop high quality Riceyeotgangjung (RYG) with high antioxidant activity and a longer shelf-life. Spirulina (1, 2, and 3%) with added RYG was prepared, and antioxidant activities were examined under storage at $60^{\circ}C$ for 15 days. The total phenol content remaining in the spirulina with added RYG at 15 days of storage was much higher than that of fresh RYG without spirulina. The IC50 values for DPPH and hydroxyl radical scavenging activities decreased with increasing amounts of spirulina, whereas these values increased with storage time. TBA and peroxide values decreased with increasing amounts of spirulina. From these results, adding spirulina to RYG delayed lipid rancidity and prolonged shelf-life. Adding spirulina powder to RYG, which is a healthy functional food material, improved antioxidant activity and delayed deterioration during storage.

재료의 종류가 다른 지역별 김국의 품질 특성 (Quality Characteristics of Laver (Pyropia sp.) Soup Containing Different Ingredients by Region)

  • This study was conducted on four types of laver soup prepared using recipes from Gangwon-do (GW), Gyeongsangnam-do (GN), Jeollanam-do (JN), and the media (MD). Salinities, soluble solids, free amino acids, color values, turbidities, and pH values of soups were measured, and sensory evaluations were done. pH values were significantly higher for GW and GN recipes than the JN and MD recipes (p<0.05). The salinities of JN and MD were significantly higher than those of the other soups (p<0.05). Regarding soluble solids, JN had the highest at 2.64°Brix, whereas GW had the lowest at 0.86 °Brix (p<0.05). GW and JN had higher concentrations of valine, phenylalanine, and glutamic acid (p<0.05). JN had significantly higher redness (a) than the other soups but significantly lower lightness (L) and yellowness (b) (p<0.05). Regarding transmittance, GW had a significantly higher value (67.67%T) than the other soups. JN and MD had higher acceptability results than GW or GN in terms of flavor, mouthfeel, and overall acceptability. Sensory intensity evaluations revealed that JN and MD had higher "soy sauce aroma" and "saltiness" and a greater "broth turbidity" than the other soups. These results indicate that the physicochemical and sensory characteristics of regional laver soups differ.

Values of Infographics for Promoting Cultural Learning Resources and Tourist Attractions: A Case of Patum Village in Thailand

  • Infographics are influential and valuable communication tools for providing information, and can be used for promoting cultural learning resources and cultural tourism destinations. Therefore, this article presents values of using infographics for promoting Patum's culture and tourism in Phrao District, Chiang Mai, Thailand as cultural learning resources and tourist attractions. Employing a research and development approach, this study utilized three distinct instruments: (1) an interview form engaging 40 locals to uncover insights on promoting Patum village, (2) an assessment form evaluated by three arts and design experts, and (3) questionnaires distributed to 92 participants to gauge perceptions and satisfaction. The findings showcased the high quality and appropriateness of the eight infographics. Audiences derived six key values, including acquiring knowledge, fostering the promotion of Patum's culture, festivals, religions and beliefs, deriving aesthetic enjoyment, encouraging cultural tourism, contributing to the education sector, and enhancing comprehension of Patum's history. Participants expressed high satisfaction ($\bar{x}$=4.46) with the infographic use. The developed infographics are usable and valuable information to help audiences recognize Patum cultural learning resources and tourist destinations. They might be further tailored to the recognition of Patum village in the near future, affecting the area's development by increasing local people's incomes through cultural learning resources and tourism activities.

Effect of Ionic Copper Toxicity on the Growth of Green Alga, Selenastrum capricornutum

  • The growth of Selenastrum capricornutum in culture was investigated as a function of ionic copper concentrations to verify the toxicity and physiological variation. In a $Cu^{++}$ excess culture (E: $Cu^{++}$ of $130{\mu}g/l$), the growth rate (K)(0.32) was lower than that of the control culture (C: $Cu^{++}$ of $0.065{\mu}g/l$) (0.61) after 8 days and the exponential growth rate ($R_E$) was also found to be lower in culture E (1.1) than culture C (2.9). On the contrary, the K of S. capricornutum in trace $Cu^{++}$ culture ($T_1$ and $T_2$, 0.72) after 6 days tended to be more increased than culture C (0.68). From 8 to 14 days of culture, the amounts of chlorophyllls a and b were increased in culture C (chlorophyll a, $106->126{\mu}g/g$ dry wt; chlorophyll b, $158->208{\mu}g/g$ dry wt; chlorophyll b were decreased in culture E (chlorophyll a, $309->235{\mu}g/g$ dry wt; chlorophyll b, $405->352{\mu}g/g$ dry wt). The amounts of chlorophylls in ionic copper trace culture ($T_1$ and $T_2$) [(chl a/b) of $T_1$: $384/620\;{\mu}g/g$ dry wt; (chl a/b) of $T^2$:$320/467{\mu}g/g$ dry wt] were increased more than the culture C($260/387{\mu}g/g$ dry wt). Howeveer, when photosynthetic rates were normalized to the dry weight of algae, the control culture continued to showed higher values than the treated culture ($T_1$). An appropriate amount of ionic copper ($T_1:\;26\;{\mu}g/l$) stimulated the grwoth of S. capricornutum than the ionic copper content of $13\;{\mu}g/l$ ($T_2$), while the excess amount of ionic copper ($130\;{\mu}g/l$) resulted in the highest toxicity to the growth of S. capricornutum.

부유망식과 수하식 양성방법에 따른 참굴(Crassostrea gigas)의 영양상태 (Evaluation of Nutrients during Rack and Bag Culture or Suspended Culture of Pacific Oyster Crassostrea gigas)

  • The mineral contents, and free amino acid, and fatty acid composition of rack and bag or suspended cultured oysters Crassostrea gigas were compared. The moisture content did not change much from 82.8% to 86.3% in the different culture methods. The glycogen level was low 4.7% during rack and bag culture but high 7.2% during suspended culture. The sodium level was the highest during suspended culture, while copper and zinc level were highest during rack and bag culture. The taurine level was 1,385-1,375 mg/100 g in oyster cultured using the rack and bag method, but that in the market sample was lowest at 1,015.8 mg/100 g. Hydroxyproline, glutamic acid, proline, glycine, and alanine were detected at high levels in the experimental oysters. The polyunsaturated fatty acid content was similar among samples. The docosahexaenoic acid level was 14% with rack and bag culture and 12% with suspended culture, whereas the eicosapentaenoic acid level was 15% with rack and bag culture and 20% with suspended culture. The atherogenic index (AI), thrombogenicity index (TI), and hypocholesterolemic/ hypercholesterolemic (h/H) ratio were important factors in the nutritional evaluation. The AI and TI values were 0.5-0.2, and the h/H ratio were 2.0 and 2.4 with the rack and bag and suspended culture, respectively.
